Aim: This study was designed to introduce the callipyge (CLPG) and 50% of Rambouillet sheep genes to improve meat quality and quantity of Awassi (AW) sheep. Materials and Methods: The CLPG mutation was introduced into the AW sheep through frozen semen of homozygous Rambouillet rams for the CLPG mutation. Four ram lambs from the first-generation Rambouillet callipyge Awassi (F1-RCA) and five from pure AW were recruited for a fattening trial conducted in individual pens using standard ration, following which ram lambs were slaughtered for carcass and meat evaluation. Results: Final body weight, dry matter intake, average daily gain, and feed conversion ratio were significantly higher in F1-RCA than AW. Hot and cold carcass weights and the other carcass cuts' weights, except for the fat tail, were heavier in F1-RCA than AW. There was no difference in dressing percentage between the two genetic groups (p>0.05). All non-carcass components' weights, except spleen, kidney, and testis, were higher in F1-RCA. Total lean, total bone, and intermuscular fat weight were greater in F1-RCA, but bone-to-lean ratio was lower in F1-RCA when compared with AW (p<0.01). No differences (p>0.05) were observed in all meat quality parameters for muscle longissimus with the exception of pH, redness color, and tenderness that were lower (p<0.05) in F1-RCA than AW. F1-RCA lambs had larger longissimus muscle area (30.9 vs. 16.9 cm2) and less leg fat depth (11.1 vs. 17.4 mm). Conclusion: The implications of this research show the potential of 50% of Rambouillet genes and the CLPG mutation to improve growth and meat characteristics in AW-Rambouillet crosses and can be used further to develop a meat-type AW with improved productivity and muscle mass.

This study aimed to evaluate the effect of incorporating different levels of carob pulp (CP) on fattening performance, carcass characteristics and meat qualityof the Moroccan sheep breed Deroua. Thirty-six entire maleMoroccan breed Deroua lambs with aninitial body weight of 23.5±3.1 kg and age 120±10 days, were randomly divided into three diet’streatmentsof 12 animals: T0(0%CP), T1(10%CP) and T2(20%CP) containing 0, 10 and 20 % of CP, respectively. The experiment lasted 80 days, including 5 days of adaptation to different diets. Lambs were weighed every 15 days, while feed intake was determineddaily. At the end of the experiment, 27 lambs (9per treatment) were slaughtered to determinecarcass characteristics and meat quality. Final body weight and average daily gain (P<0.05) were affected by treatment diet. The inclusion of 10% CP led to a decrease in feed conversion ratio and feeding costs. Carcass characteristics were not affected by diets (P>0.05),except, in case of mesenteric fat (P<0.05) with superiority recorded in treatment diet T1(10%CP). Meat quality parameters were not affected by diets. The meat of lambs feddiets T1 and T2 tended to be lighter in color and less red than those fed diet T0. The results of this work showed that carob pulp can be used as an alternative feedstuff from fattening lambs to reduce feeding costs without affecting fattening performance.

Advances in molecular genetics have allowed the identification of genes that can enhance livestock production. The aim of this study was to investigate possible relationships between the calpastatin (CAST) Hha1 gene polymorphisms and growth performance, carcass characteristics, and meat quality in Awassi sheep. A total of 87 blood samples were collected from two-week-old Awassi ram lambs. The amplification of the CAST Hha1 gene yielded a fragment of 622 bp. Three CAST genotypes were found in Awassi sheep: MM for two fragments (385 bp and 281 bp), MN for three fragments (622 bp, 385 bp, and 281 bp), and NN for only one fragment (622 bp). The M and N allele frequencies of the CAST Hha1 genotypes were 0.765 and 0.235, respectively, while the genotypic frequencies of MM, MN, and NN were 0.586, 0.356, and 0.057, respectively. Based on CAST Hha1 gene polymorphisms, three groups of lambs (MM: n = 8; MN: n = 6; and NN: n = 3 genotypes) were subjected to a fattening period of 70 days to investigate growth performance and meat characteristics. Only the final body weight and longissimus muscle width were significantly different between the three genotypes, while no significant differences were detected in any other carcass characteristics and meat quality parameters. In this study, new variants were observed in CAST using the Hha1 restriction site, potentially assisting in Awassi sheep breeding and selection programs to improve final body weight and longissimus muscle width.

The objective of this experiment was to evaluate the effects of metabolizable energy (ME) levels in diets with high digestible lysine concentration on performance, carcass traits, and meat quality of barrows from 95 to 158 days of age. Eighty commercial hybrid barrows (50 ± 1.82 kg) selected for lean meat deposition, were assigned to four dietary treatments (3,150, 3,235, 3,320, and 3,400 kcal EM kg-1) in a randomized design with 10 replicate pens per treatment and two pigs per pen. From 95 to 116 days of age, we observed no effects of ME on final body weight (FBW), average daily gain (ADG), metabolizable energy intake (MEI), and feed conversion (F: G). Average daily feed intake (ADFI) decreased linearly with increasing ME levels (? = 5.79961 - 0.00096790X - r2 = 0.89). From 95 to 137 days of age, no effects of ME were observed on final body weight (FBW), average daily gain (ADG), metabolizable energy intake (MEI), and feed conversion (F: G). Average daily feed intake (ADFI) decreased linearly with increasing ME (?= 6.1176 - 0.001X - r2= 0.97). From 95 to 158 days, of age no effects of ME were observed on FBW and ADG. Dietary ME influenced the ADFI and F: G, which decreased linearly with increasing ME concentrations (?= 8.12951 - 0.00149X - r2= 0.99; ?= 6.0914 - 0.001X - r² = 0.75, respectively). There was a linear increase in loin eye area (LEA) with increasing ME (? = - 29.851 + 0.0207 X - r² = 0.87). Backfat thickness, pH, and temperature, measured at different times after slaughter (0 min, 45 min, 3 h, and 24 h), were not affected by dietary ME. The level of ME also did not affect the meat quality parameters Color L*, Color a*, Color b*, Warner-Bratzler shear force, thaw water losses, cooking water losses, sum of water losses, intramuscular fat content, and TBARS. Diets with 3,400 kcal kg-1 ME, corresponding to 2.75, 2.57, and 2.31 g digestible lysine/Mcal of ME for pigs from 95 to 116, 116 to 137, and 95 to 158 days of age, respectively, resulted in best performance and carcass traits, without negative effects on meat quality.

This study considers the impact of dried distillers’ grain with solubles (DDGS) in diets of lambs. Randomly; 27 lambs were distributed to one of three diets. Diets were: a control diet (CON; n = 9), a 125 (DDGS125; n = 9) or a 250 g/kg DDGS (DDGS250; n = 9) of dietary dry matter (DM). The lambs were fed using these diets for 91 days. To assess carcass traits; five lambs were randomly selected at the end of the study. No significant differences were detected in intake and digestibility of DM; crude protein and fiber. Average daily gain did not differ among diets. Carcass characteristics did not differ among diets. With the exception of shear force and redness, which were greater in DDGS250 than in DDGS125 and CON diets, meat quality parameters were unaffected. Eye muscle area decreased in DDGS125 than in DDGS250 and CON diet. These results demonstrate that the feeding of lambs on DDGS at 125 or 250 g/kg DM did not have any impact on growth. These diets only had a simple effect on the characteristics of carcass and meat quality. These results suggest that it would be suitable to introduce these feeds into sheep nutrition in the future.

AbstractAn experiment was conducted to determine the effects of supplementing different amounts of daidzein in a diet on the growth performance, blood biochemical parameters and meat quality of finishing beef cattle. Thirty finishing Xianan steers were distributed in three groups equilibrated by weight and fed three different dietary treatments (concentrate ratio = 80%): (1) control; (2) 500 mg/kg daidzein and (3) 1000 mg/kg daidzein, respectively. Steers were slaughtered after an 80-day feeding trial. Results showed that daidzein supplementation had no effect on the final body weight, average daily gain and feed conversion rate of steers. Steers fed with 1000 mg/kg daidzein had greater dry matter intake than those fed with control diets. Compared with the control group, the 1000 mg/kg daidzein group had a higher fat thickness, lower shear force and lightness. The pH, drip loss, cooking loss, redness (a*), yellowness (b*), moisture, ash, crude protein and intramuscular fat of the Longissimus dorsi muscle were unaffected by daidzein supplementation. Compared with the control group, the 1000 mg/kg daidzein group significantly increased the serum concentrations of insulin, free fatty acid and Glutamic-pyruvic transaminase. The 500 mg/kg daidzein group significantly increased the serum concentration of tetraiodothyronine compared with the control group. Supplemental daidzein did not affect the blood antioxidant ability and blood immune parameters in serum. In conclusion, daidzein supplementation above 500 mg/day modifies feed intake and metabolic and hormonal profile, with positive and negative effects on meat quality.

The use of insects can be a possible source of protein. This study uses Calliphora sp. larvae (CLM) as a protein source in 320 one-day-old medium-growing male chicks (RedBro) during their first month of life. Chickens were randomly assigned to four dietary treatments. Each group consisted of 10 animals, and a total of 8 replicas. Control group was fed with a certified organic feed. The experimental treatments were supplemented with 5% (T2), 10% (T3), or 15% (T4) of CLM, reducing in each case the corresponding percentage of feed quantity. Productive development and meat quality were analyzed, and near infrared spectroscopy (NIRS) was used as a tool for classifying the samples. Chickens of T4 showed greater final body weight and total average daily gain, but they reduced consumption and feed conversion ratio (FCR). The chicken breast meat of T4 had lower cooking losses and higher palmitoleic acid content (p < 0.01). NIRS classified correct 92.4% of samples according to the food received. CLM is presented as a potential ingredient for the diet of medium-slow growing chickens raised in organic systems.

Abstract The goal of this study was to evaluate the performance and the carcass traits of Nelore cattle progenies from bulls selected by contrasting traits for precocity, growth and muscularity, through the Expected Progeny Difference (EPD). One hundred and five Nelore bulls (initial weight of 350kg±15kg) and 20 months of age were confined and fed with same diet (73% of concentrate). Thirty-two animals were selected to create the contrasting groups for precocity, growth and muscularity (16 animals assigned as a low EPD group - LEPD and 16 animals assigned as a high EPD group - HEPD), based on the EPD of their parents. The ribeye area and backfat thickness were performed by ultrasonography of 12–13th rib fat thickness and longissimus muscle area (LMA), as well as rump fat thickness (RF) measurements. Animals were harvested after 100 days and during the deboning, meat cuts were weight for cutting yield. The animals selected for the HEPD group had greater average daily gain (P = 0.006), which can be explained by the higher feed intake (P = 0.006). However, there are no difference between groups for the final body weight (P = 0.254) and feed efficiency (P = 0.715). The LEPD group presented higher dressing percentage (P = 0.028). Although the groups evaluated did not presented difference in LMA (P = 0.329) and weight of longissimus muscle (P = 0.480), the weight of rump displayed heaviest in the HEPD (P = 0.037). There was no difference between groups for RF (P = 0.086). Nevertheless, backfat thickness was higher in HEPD group (P = 0.006). The present study indicates that Nelore cattle progenies, with parents displaying higher potential for precocity, growth, and muscularity, show greater backfat thickness and weightiest of rump than the other genetic backgrounds. The objective of the study was to determine the effects of probiotic bacteria Bacillus licheniformis and Bacillus subtilis on microbiological properties of feed mixtures and on the digestive tract content as applicable to production traits and carcass characteristics of fatteners. The experiment was performed on 83,838 fatteners from four successive (insertions) productions in two groups. From the seventy eighth day of age till marketing to the slaughter plant, the pigs were supplied with BioPlus YC probiotic (Chr. Hansen) in the amount of 400 g/t. The preparation contained a complex of probiotic bacteria Bacillus licheniformis DSM 5749, and Bacillus subtilis DSM 5750 spores in a 1:1 ratio. From the fourth insertion, after reaching a body weight of approximately 112 kg, 60 fatteners were selected from each group to measure carcass quality and half of them for meat quality evaluation. Moreover, microbiological analyses in feed and colon were performed. The study showed that BioPlus YC probiotics supplementation resulted in a significantly higher count of B. subtilis and B. licheniformis in the feed, a higher count of B. subtilis, B. licheniformis and LAB, as well as a lower count of Enterobacteriaceae, Enterococcus, Clostridium and Bacillus sp. in the mucosa and in the colorectal content of the test pigs. Our work has shown that supplementation with the BioPlus YC probiotic had a positive effect on the production traits of pigs mainly by reducing mortality (2.83%, p = 0.010), lowering feed conversion ratio—FCR (2.59 kg/kg, p = 0.013), better average daily gain—ADG (0.95 kg/day, p = 0.002) and shorter fattening period (77.25 days, p = 0.019) when compared to the control group (4.19%; 2.79 kg/kg; 0.89 kg/day; 92.8 days, respectively). The addition of the specific Bacillus bacteria did not influence carcass and meat characteristics of the test fatteners.

Background: The effects of the probiotics vary with the doses and strains used for this reason, a study was conducted over 35 days to determine the effect of live yeast supplementation in the diet of growing rabbits on growth performance and apparent nutrient digestibility.Methods: A total of 60 New Zealand and California rabbits (5 weeks old, average body weight 0.881±0.015 kg) were housed in 30 cages. They were fed with a control diet based on alfalfa and maize or barley grains and supplemented with Procreatin®7 (Saccharomyces cerevisiae CNCM I 1077) or Biosaf® SC47 (Saccharomyces cerevisiae NCYC Sc47) at three doses, namely 0, 6.4, or 12.8 ×109 CFU per kg basal diet.Result: The higher yeast concentration had a positive effect (P less than 0.01) on final body weight (BW), average daily gain (ADG) and carcass weight (CW). However, there were no significant differences in dry matter intake. As a result of this, the feed conversion ratio (FCR) decreased (P less than 0.01). Significant increases (P less than 0.05) in nutrient digestibility (DM, OM, NDF and ADF) were observed with both grains. The use of yeast in maize and barley-based diets of rabbits has positive effects on growth performance and nutrient digestibility.

AbstractThis study investigated the effects of the percentage of Texel or Rouge de l’Ouest (Rouge) genes in lambs (0, 50, 75 or 100%; the remainder being Greyface (Border Leicester × Scottish Blackface)) on lamb carcass characteristics and meat quality. Ewe lambs were slaughtered at 34, 40, 46 and 52 kg and ram lambs were slaughtered at 40, 46, 52 and 58 kg live weight. Dressing proportion increased (P < 0·001) by 0·53 and 0·27 g carcass weight per kg live weight for each 1% increase in Texel or Rouge genes respectively. Carcass conformation classification increased (P < 0·001) by 0·016 and 0·007 units (on a five-point scale) for each 1% increase in Texel or Rouge genes respectively. Carcass fat depth measures were reduced by Texel and Rouge genes such that at a constant fat depth end point, carcass weight could be increased by 0·029 and 0·023 kg for each 1% increase in Texel or Rouge genes. Carcass lean content increased (P < 0·001) by 0·99 and 0·27 g/kg for each 1% increase in Texel or Rouge genes. Subcutaneous fat content was reduced (P < 0·001) by 0·36 and 0·29 g/kg for each 1% increase in Texel or Rouge genes. Intermuscular fat content was reduced (P < 0·01) by 0·38 g/kg per 1% increase in Texel genes, whereas Rouge genes had no effect. Similarly, bone content was reduced (P < 0·01) by Texel genes only (0·31 g/kg per 1% increase in Texel genes). Warner-Bratzler shear force values showed a quadratic effect with increasing Texel and Rouge genes, with an initial decrease from 0 to 50% followed by an increase to 100%. Cooking loss increased (P = 0·05) as the percentage of Rouge genes in lambs increased. Increasing the percentage of Texel or Rouge genes significantly increased L* values (P < 0·01 and P < 0·05 respectively), b* values (P = 0·05 and P< 0·05 respectively) and H° values (P < 0·001).
