More than 250 rice varieties are grown in Indonesia from new superior varieties and local varieties with aromatic, non-aromatic aromas and pigmented rice. Rice quality is one factor that must be considered in addition to high productivity. Generally, the quality of grain and rice quality in Indonesia have met the quality standards set based on SNI 0224-1987/SPI-TAN/01/01/1993 and SNI 6128:2020. Ricequality is determined by several factors such as grain appearance, nutritional value, cooking and eating quality and become one of the foremost considerations for rice buyers. Such information can be utilized as basic data of character of genetic resources on assembling of new superior varieties by rice breeders. Those information can be used as a descriptive information for farmers and rice productivity, high yield, and better rice quality. Good quality local cultivar can be used as parents for the formation of new superior varieties.

Abstract As a staple food for more than half of the world’s population, the importance of rice is self-evident. Compared with ordinary rice, rice cultivars with superior eating quality and appearance quality are more popular with consumers due to its unique taste and ornamental value, even if their price is much higher. Appearance quality and CEQ (cooking and eating quality) are two very important aspects in the evaluation of rice quality. Here, we performed a genome-wide association study on chalkiness rate in a diverse panel of 533 cultivated rice accessions. We identified a batch of potential chalky genes and prioritize one (LOC_Os03g48060) for functional analyses. Two floury outer endosperm mutants (flo19-1 and flo19-2) were generated through editing LOC_Os03g48060 (named as FLO19 in this study), which encodes a class I glutamine amidotransferase. The different performance of the two mutants in various storage substances directly led to completely different changes in CEQ. The mutation of FLO19 gene caused the damage of carbon and nitrogen metabolism in rice, which affected the normal growth and development of rice, including decreased plant height and yield loss by decreased grain filling rate. Through haplotype analysis, we identified a haplotype of FLO19 that can improve both CEQ and appearance quality of rice, Hap2, which provides a selection target for rice quality improvement, especially for high-yield indica rice varieties.

SUMMARYIn experiments conducted with three rice varieties at different plant populations and N levels, the non-lodging varieties responded to 150 kg N/ha. The highest yield in non-lodging varieties were at the highest transplanted density, but at the lowest density in the lodging variety. The percentage of total milled rice of all varieties was not significantly affected by N application, which improved head-rice recovery in chalky IR-8, but had no significant effect on non-chalky varieties. Competition for nutrients could be a major factor limiting head rice return at high densities.

The effects of temperature and solar radiation on milling and appearance quality of rice (Oryza sativa L.) were evaluated to find the optimal temperature and solar radiation for optimizing milling and appearance quality of rice in the lower reaches of Huai River. Field experiments were conducted with two medium-maturing japonica soft rice varieties (SMR), two late-maturing japonica soft rice varieties (SLR) and two late-maturing japonica non-soft rice varieties (LR) as experimental materials. Seeds were sown on 10 May (T1), 17 May (T2), 24 May (T3), 31 May (T4), 7 June (T5), 14 June (T6), and 21 June (T7) in 2017 and 2018. Compared with solar radiation, temperature was the main environmental factor affecting the milling and appearance quality of rice in the lower reaches of Huai River. Under the condition of ensuring relatively high-yield, the milling quality of SMR and SLR can reach the second grade of China’s national standard of high quality paddy. The mean daily temperature (Tmean) range were 20.2–22.7 °C and 20.4–22.0 °C respectively. The temperature range for LR to obtain a relatively high-yield, good milling and appearance quality was 20.4–20.7 °C. The optimal sowing dates of SMR, SLR and LR were 15 May to 1 June, 15 May to 20 May and 15 May to 20 May, respectively.

The physical of paddy and milled rice qualities, physicochemical properties and the functional properties of milled rice were analyzed to study the grain characteristics of four local paddy varieties derived from West Kalimantan. The study was conducted at Post Harvest Grain Quality Laboratory, Indonesian Center for Rice Research in 2013. Method used for physical and milling quality properties followed IRRI method. Functional characteristic was analyzed using LC-MS. The observations were done in six replications. The data was analyzed for the correlation among characters. Significant correlation between characters was further analysed for regression equation. The shapes of grains of local rice varieties were slim to medium. There was correlation between paddy moisture content and head rice percentage, between damaged grain and paddy density, between yield of brown rice and yield of milled rice, and percentage of head rice, between percentage of head rice and yield of milled rice, and between empty grain and broken grain. The functional character relationship showed that Cyanidin 3 Glucosidase (C3G) content of brown rice influenced the C3G content of milled rice. “Sanik” red rice, “Beliah” purple rice and “Balik” black rice may be useful to be used as parent for crossing in the breeding program for functional rice varieties, due to their good quality of milled rice and their high content of C3G. The C3G is considered as anticancer, antioxidant, anti coronaria heart disease and it improves fat profiles in the blood. Therefore, colored rice is recommended to be consumed in a form of brown rice or milled rice with 80% degree milling to retain the C3G content which is beneficial for the human health.

<p>In the middle of 1980s, rice self-sufficiency in Indonesia has been achieved, but the growth of rice production slowed down since the 1990s. Narrow genetic variability of released rice varieties contributed largely to the occurrence of leveling of potential rice yield over the past decades. To enlarge the genetic variability, an intersubspecies crossing of Koshihikari (japonica) and IR36 (indica) has been performed. Through this crossing, three high yielding and high yield quality promising lines of KI 37, KI 238, and KI 730 have been obtained. The objective of this study was to evaluate the superiorities of these lines through multi-location yield trials, pests, diseases, and grain qualities examinations. Examination methods used followed the release food crops variety procedure issued by the Indonesian Ministry of Agriculture. The result of examinations showed that the average yield of KI 730 was 7.47 t/ha, it was significantly higher than that of Ciherang (6,73 t/ha). KI 730 has a good grain quality, with translucent milled rice, a high percentage of milled rice (78.0%) and head rice (91.01%). The texture of its cooking rice was soft, sticky, with the amylose content of 20.41%. In addition, pests and diseases resistances of KI 730 were better than those of other lines tested. After evaluation by National Food Crops Release Variety Team, the KI 730 line was released as a national superior variety with the name of Tropiko. Tropiko should become an alternative variety to grow widely in order to increase national rice production and farmers income.</p>

Evaluating the impact of increasing CO2 on rice quality is becoming a global concern. However, whether adjusting the source-sink ratio will affect the response of rice grain quality to elevated CO2 concentrations remains unknown. In 2016–2018, we conducted a free-air CO2 enrichment experiment using a popular japonica cultivar grown at ambient and elevated CO2 levels (eCO2, increased by 200 ppm), reducing the source-sink ratio via cutting leaves (LC) at the heading stage, to investigate the effects of eCO2 and LC and their interactions on rice processing, appearance, nutrition, and eating quality. Averaged across 3 years, eCO2 significantly decreased brown rice percentage (−0.5%), milled rice percentage (−2.1%), and head rice percentage (−4.2%) but increased chalky grain percentage (+ 22.3%) and chalkiness degree (+ 26.3%). Markedly, eCO2 increased peak viscosity (+ 2.9%) and minimum viscosity (+ 3.8%) but decreased setback (−96.1%) of powder rice and increased the appearance (+ 4.5%), stickiness (+ 3.5%) and balance degree (+ 4.8%) of cooked rice, while decreasing the hardness (−6.7%), resulting in better palatability (+ 4.0%). Further, eCO2 significantly decreased the concentrations of protein, Ca, S, and Cu by 5.3, 4.7, 2.2, and 9.6%, respectively, but increased K concentration by 3.9%. Responses of nutritional quality in different grain positions (brown and milled rice) to eCO2 showed the same trend. Compared with control treatment, LC significantly increased chalky grain percentage, chalkiness degree, protein concentration, mineral element levels (except for B and Mn), and phytic acid concentration. Our results indicate that eCO2 reduced rice processing suitability, appearance, and nutritional quality but improved the eating quality. Rice quality varied significantly among years; however, few CO2 by year, CO2 by LC, or CO2 by grain position interactions were detected, indicating that the effects of eCO2 on rice quality varied little with the growing seasons, the decrease in the source-sink ratios or the different grain positions.

A 10-12 member tasting panel appraised cooked samples of 26 rice varieties as to appearance, cohesion, tenderness, and flavor; and judged 25 of those varieties for eating quality using a +2, -2 (acceptable-not acceptable) scale. All samples had good cooking characteristics. The eating quality of IR-8 and Chontalpa 59 was questionable. An additional test showed preference for Sunbonnet and Starbonnet. Bluebelle was very close to the significant level of preference. The commercial sample came close to a significant level of preference over Chontalpa 59.
