Among the global problems of today to the victims of the Chernobyl accident areas Zhytomyr region priority is safety and quality of animal products in Postchernobyl period. Safety and quality of food and raw materials is one of the key factors that ensure public health and preserve its gene pool. At the request of the Law of Ukraine. On the safety and quality of food and other regulatory legal acts, subject to the provisions of international law Codexalimentarius State Veterinary and Phytosanitary Service of Ukraine took the implementation in practice of veterinary medicine guidelines of good manufacturing and hygienic practices (GMP / GHP) «meat production», according to which «the conditions of growing animals for meat production should contribute to the production of safe and quality meat».Conducted research found that addressing diet, nutrition of the population, especially children and the elderly, as environmentally hazardous environments rabbit should take the lead. For radionuclide content in rabbit meat is very low. The specific activity of meat rabbits 4–month old was at <1.9 ± 0.47 Bq/kg for the content of 137 Cs and 3.7 ± 0.88 Bq/kg for the content of 90 Sr. In adult rabbit meat, these figures were respectively 4.8 ± 0.46 Bq/kg and 6.2 ± 1.2 (at a rate of 200 and 20 Bq/kg). In comparative perspective Meat 4–monthly Californian rabbits precocious meat breed has a high performance organoleptically–tasting than in adults. The taste, juiciness, color and flavor overall GPA was, neck and chest muscles – 4.3 points, lumbar–pelvic – 4.7 points, while the rate in adult animals was respectively 3.6 and 3.8 points. . Index zbytosti California precocious males breed in 4–months of age was 74.9%, and in two years – 86.2%. Slaughter output respectively – 49.2% and 44.2%, out of pure meat – 82.0% and 81.8%. In the carcass of rabbits that were grown in the farm, prosperous in infectious and parasitic diseases, pathological changes available.

AbstractProcedures that result in poor welfare of animals are unacceptable to many people. Consumers have become demanding about the quality of meat, but are also concerned about animal welfare during the production, transport, and slaughter stages. There is a well-known, clear relationship between animal welfare and the quality of animal products. Improper handling of farmed animals contributes to low meat quality. This rule refers to all animals raised for meat, including rabbits. Fasting, loading for transport, long distance transport in difficult environmental conditions, improper stocking density, lying down during transport, lairage, and stunning methods may negatively affect the quality of rabbit meat. A general conclusion from reviewed scientific articles is that many pre-slaughter factors influence the physiological and productive measurements of rabbits, through the effect on their welfare. Because of the complexity of the rabbit meat production chain, the possibility of excluding all the defined stressors is limited.


This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

Abstract Background Neglected tropical diseases (NTDs) are a group of communicable diseases which are prevalent in the tropics affecting more than one billion people. Treatment and prevention of these infections is very costly to developing economies. Helminthiases are classified among NTDs. The communities afflicted are poor and have limited access to essential resources for their livelihood. Poor-quality drugs for NTDs may lead to death or prolonged treatment without achieving the desired results. The limited resources used in purchasing poor-quality drugs will therefore be wasted instead of being put to good use. Most of the methods available for the analysis of benzimidazole anthelminthics utilize high-performance liquid chromatography. They are therefore time consuming, require sophisticated and expensive equipment, utilize rare and expensive reagents and solvents, and call for skilled personnel. A simple, rapid, and inexpensive ultraviolet spectrophotometric method of analysis would therefore come in handy especially in the analysis of many samples as occurs during post-authorization market surveillance for quality. Results The suitable solvent for the spectroscopic analysis was established as 0.1 M methanolic HCl. The wavelength of analysis was set at 294 nm. Upon validation, the method was found to have good linearity. The range over which linearity was established was way beyond the 80 to 120% of the working concentration specified by the ICH. The method exhibited good precision. Out of 32 commercial samples analyzed, five (15.6%) did not comply with compendial specifications. Intra-brand batch variation was also observed. Out of three batches of product A002T analyzed, one did not comply with compendial specifications. Conclusion A major limitation in the analysis of benzimidazole anthelminthics is the lack of reliable, simple, rapid, and low-cost methods of analysis with high throughput. The developed method serves to fill this gap. It can be used in the analysis of raw materials and finished products. It can also be used in the establishment of the quality of products prior to registration. The method will prove very useful in post-market surveillance of quality of benzimidazole anthelminthics.

High pressure processing (HPP) is a cold pasteurization technology by which products, prepacked in their final package, are introduced to a vessel and subjected to a high level of isostatic pressure (300–600 MPa). High-pressure treatment of fruit, vegetable and fresh herb homogenate products offers us nearly fresh products in regard to sensorial and nutritional quality of original raw materials, representing relatively stable and safe source of nutrients, vitamins, minerals and health effective components. Such components can play an important role as a preventive tool against the start of illnesses, namely in the elderly. An overview of several food HPP products, namely of fruit and vegetable origin, marketed successfully around the world is presented. Effects of HPP and HPP plus heat on key spoilage and pathogenic microorganisms, including the resistant spore form and fruit/vegetable endogenous enzymes are reviewed, including the effect on the product quality. Part of the paper is devoted to the industrial equipment available for factories manufacturing HPP treated products.

Introduction. In conditions of the high density of urban development, efficient use of municipal lands is of particular relevance. Food production facilities make up a significant sector of many cities’ economy, including centers of ferrous and non-ferrous metallurgy, chemistry, petrochemistry, mining, etc., i.e., settlements where significant areas are limited in use by sanitary protection zones. Resolution of the Government of the Russian Federation dated March 3, 2018, No. However, such a justification is a scientific and methodological problem since there is no regulatory consolidation of the procedure. The purpose of the study was to develop and practically test methodological approaches to justification the admissibility (inadmissibility) of placing a food production facility in the sanitary protection zone of enterprises in other line of the industry. Material and methods. Design and technical documentation were studied on sources of data on air quality at the industrial site and indoors, and the quality of food products. Authors performed hygienic assessment of the safety and quality of air, raw materials, water, and manufactured food products for compliance with sanitary requirements and standards. When analyzing potential threats to contamination of food products, a mechanism was used to isolate critical points of the technological process. Results. An algorithm for the formation of the evidence base of the absence (presence) of the negative impact on food quality, the fact of the location of the production facility in the sanitary protection zone of a large industrial enterprise on the quality of food products is proposed. On the example of the production of juices from natural concentrated products, each step of the algorithm has been worked out: analysis of the technological process of production; hazard identification, instrumental measurements of the quality of environmental objects and raw materials and products. Conclusion. The proposed algorithm allows creating a reliable evidence base for deciding on the admissibility (inadmissibility) of the location of the food production facility in the sanitary protection zone of the enterprise with a different type of activity, tested in real conditions of a large industrial unit. The algorithm can be used as a base for the widespread use and further improvement.

The main direction of state policy regarding the guaranty safety and quality of animal products is the creation of conditions that are safe for human health during the production and sale of food raw materials. According to current legislation of Ukraine responsibility for the safety of food products placed on the manufacturer but government control plays an important role. This is especially true today, when almost 69.5% of meat is produced in private home farms. It is mainly sold in the agro-industrial markets. The State Service of Ukraine for Food Safety should perform the conditions of modern European regulation and base its activities on the basis of risk assessment. One of the risks are parasitosis, as their negative effect affects the health of millions of people in the world. In this cjnnection the purpose of the study was to analyze the dynamics of the identification of invasive diseases at the stages of slaughter of animals and the sale of slaughter products. Research material was reporting on veterinary medicine (Form № 5-vet and Form № 6-vet) of a number of districts of Odessa region for 2014‒2017. It was founded that 75943 animals were slaughtered in 2014‒2017: 91.18% pigs, 8.14% cattle and 0.68% sheep. The analysis of the dynamics of slaughter, depending on its location, showed that from 41.85% to 99.81% of animals were slaughtered at courtyard. According to the results of veterinary-sanitary control and supervision during the slaughter for the studied years there were no cases of diseases. It was founded that 22617 animal’s carcasses came to the agrofood markets of the regions for the years 2014‒2017, among which 89.56% were pig carcasses, 10,11% cattle carcasses and only 0.33% sheep. According to results of veterinary-sanitary examination in the conditions of SLVSE in the markets, specialists established 351 cases of diseases. In the study of pig carcasses 246 cases of diseases were detected: among them of non-communicable (45.93%) and invasive (54.07%) etiology (echinococcosis). Luring the expertise of cattle carcases was founded 96 cases of diseases: – dicroceliosis (98.96%) and exinococcosis (1.04%); during the expertise of sheep’s carcases – 9 cases of diseases – dicroceliosis (66.67%) and exinococcosis (33.33%). Considering that during the reporting period, according to the results of veterinary-sanitary control and supervision during the slaughter of animals, no cases of diseases were detected, but at the same time the number of cases of detection of invasive diseases during veterinary-sanitary examination in SLVSE on markets constantly increases risk management at the stage of slaughter can be considered not sufficiently effective. Also, the results of our research indicate that the current system for managing the safety of slaughter products is still based primarily on the study of the final product. It does not take into account all possible risks at the previous stages of production. This system can’t fully guarantee to consumer safety of products.
