Sprouts of agricultural crops seeds are considered to be functional food products with high content of antioxidants. Though seeds of Allium species plants are used in some countries as spices the possibilities of appropriate sprouts utilization have never been investigated so far. Evaluation of perennial and A. cepa seeds biofortification with selenium revealed high nutritional value of the resulting sprouts characterized not only by high selenium content exclusively in a form of selenomethyl selenocysteine (a natural anti carcinogen) but also with high levels of antioxidant activity and high polyphenol content. It was demonstrated that among seven studied representatives of Allium species Allium cepa variety Krasnoye krugevo and perennial onion Allium fistulosum give seeds sprouts with the highest levels of selenium (10500-11000 μg/kg d.w.), polyphenols (9.3-10.8 mg-eq GA/g d.w) and the largest values of antioxidant activity (14.7-17.1 mg-eq GA/g d.w.). Utilization of one g of dried seeds sprouts powder, fortified with selenium provides up to 15.7% of the adequate consumption level of selenium exclusively in a form of selenomethyl selenocysteine possessing powerful anti carcinogenic activity.

Relevance. Evaluation of nutritional value of seeds of agricultural crops is considered to be highly significant for revealing new sources of antioxidants for humans.Material. The aim of the present investigation was antioxidant status and selenium accumulation levels by chicory seeds (13 cultivars) and comparison of the results with antioxidants status of seeds of other root vegetables: celery (5 cultivars), parsley (2 cultivars), parsnip (3 cultivars) and carrot (7 cultivars).Results. Among agricultural crops studied chicory was characterized by 3-4 higher levels of selenium accumulation by seeds and relatively low total antioxidant activity and polyphenol content. Anomalously high protein content in chicory seeds may explain the efficiency of selenium accumulation while relatively low antioxidant activity may be connected with lower levels of essential oil. Direct correlations between polyphenol content and total antioxidant activity were demonstrated for carrot (r=+0.924; P<0.01) and chicory (r= 0.803; P<0.01) seeds.

AbstrakKebiasaan masyarakat Indonesia dalam mengkonsumsi teh, memberikan peluang yang besar dalam pengembangan kombucha. Kombucha merupakan minuman yang terbuat dari teh yang difermentasi menggunakan mikroorganisme, yang mempunyai lebih banyak manfaat dibandingkan dengan teh biasa. Aktivitas mikroorganisme selama fermentasi akan menghasilkan berbagai senyawa yang bermanfaat bagi kesehatan, diantaranya adalah terbentuknya senyawa fenolik. Semakin tinggi senyawa fenolik yang dihasilkan maka semakin tinggi pula aktivitas antioksidannya. Selain itu kombucha mengandung senyawa-senyawa organik yang bermanfaat bagi tubuh sehingga sangat berpotensial sebagai pangan fungsional. Makalah ini bertujuan untuk memaparkan peluang kombucha sebagai pangan fungsional, manfaat kombucha, nilai gizi, jenis mikroba yang berperan, proses pembuatan kombucha serta aktivitas antioksidan minuman kombucha dari berbagai komoditas seperti rosela, daun salam, daun jambu, daun sirih, daun sirsak, daun kopi, daun teh, bawang tiwai, teh hijau, teh oolong, daun coklat, daun mangga dan daun tin. Diharapkan minuman kombucha sebagai alternatif diversifikasi pangan fungsional yang dapat bermanfaat bagi kesehatan dan meningkatkan immunomodulator.AbstractThe habits of the Indonesian people in consuming tea, provide a great opportunity in the development of kombucha. Kombucha is a beverage made from fermented tea using microorganisms, which has more benefits compared to original tea. Microorganism activity during fermentation will produce various compounds that are beneficial to health, including the formation of phenolic compounds. The higher the phenolic compound produced, the higher the antioxidant activity. In addition kombucha contains organic compounds that are beneficial to the body so it is very potential as a functional food. This paper aims to explain the opportunities of kombucha as functional food, the benefits of kombucha, nutritional value, the type of microbes that play a role, the process of making kombucha and the antioxidant activity of kombucha drinks from various commodities such as rosella, “salam” leaves, guava leaves, “sirih” leaves, soursop leaves, coffee leaves , tea leaves, onion tiwai, green tea, oolong tea, cocoa leaves, mango leaves and tin leaves. Kombucha drinks are expected as an alternative to functional food diversification that can benefit health and enhance immunomodulators.

Objective: To investigate the content and antioxidant activities of polyphenol, the correlation between polyphenol content and their antioxidant activities, and phytochemistry compositions of different extracts from marine sponge Aaptos suberitoides commonly found growing in Nhatrang bay, Vietnam orienting application into functional food and pharmacy. Methods: Evaluating the toxicity of antioxidant polyphenol powder preparing from the initial concentrated extract was by the adjusted Behrens Karber method and a correlation between polyphenol content and antioxidant activities basing on the Pearson coefficient in Excel. Separating antioxidant polyphenol content was base on solvents polarization of n-hexane, chloroform, ethanol, ethyl acetate and n-butanol which the quantification of polyphenol content and antioxidant activities, and preliminary phytochemical compositions qualitative. Results: Antioxidant polyphenol powder did not affect mice weight during the assay time of 28 d. Polyphenol content and antioxidant activities got the highest value at chloroform extract in comparison to other extracts, a significant difference (p<0.05) and strong correlation (R2>0.9). Polyphenol content (122.682 mg gallic acid equivalent ml-1), total antioxidant activity (368.183 mg ascorbic acid equivalent ml-1), reducing power activity (24.08 mg FeSO4 equivalent ml-1) and DPPH scavenging (72.48±1.54 %) were the highest values. Alkaloids, flavonoids, steroids, tannins and triterpenoids existed in initial methanol extract. Weakly polarized polyphenol content was 70.27% in comparison to initial methanol extract. Conclusion: Antioxidant polyphenol of sponge Aaptos suberitoides has the potential for application into the field of functional food and pharmaceuticals.

Relevance. Biofortification of agricultural crops with selenium is considered to be the most promising method for the human selenium status optimization.Methods. Effect of foliar biofortification of cauliflower, Polyarnaya Zvezda cv, with sodium selenate of different concentrations on yield, selenium content and biochemical characteristics of plants were investigated.Results. Enrichment of plants with selenium increased yield by 1.23-1.31 times, sugar content – 1.6 times, ascorbic acid concentration – 1.52-2 times. On the contrary, the treatment did not affect pholyphenol content and antioxidant activity of ethanolic extracts of plants. Selenium accumulation levels decreased according to inflorescences > leaves > roots. Sodium selenate solution at 75 mg/L concentration increased mass of cauliflower leaves 1.9 times and roots – 1.5 times. Consumption of 100 g of cauliflower fortified with 50 mg/L sodium selenate solution provided 100% of the daily adequate selenium consumption level. Utilization of higher sodium selenate concentrations ensured 127% and 418% of the daily adequate consumption level in case of 75 mg/L and 100 mg/L concentrations respectively. Taking into account insignificant differences between sugar content and antioxidants in cauliflower inflorescences fortified with different doses of selenium the most suitable concentration to be used was 50 mg/L.

Wild garlic (Allium ursinum L.) is a member of the Allium genus. However, wild garlic is still unexplored. To date, there are few publications that deal with this Allium species. The samples of plant material were collected from the three areas near Bratislava (Bratislava region), Krajné (Trenčin region) and Becherov (Prešov region). The aim of this study was to analyse the content of total polyphenols (TPC) and the value antioxidant activity (AOA) in selected morphological parts of wild garlic. The samples of wild garlic were homogenized and a methanolic extract was prepared. These extracts were used for analyses. Total polyphenol content in the samples ranged from 253.19 ± 5.72 mg GAE.kg-1 FW (bulbs from area Becherov) to 1069.51 ± 5.49 mg GAE.kg-1 FW (leaves from area Krajne). The values of antioxidant activity were from 2.54 ± 0.83 (bulbs from area Krajne) to 47.98 ± 0.54 % inhibition (leaves from area Bratislava).

Production of functional food with significant antioxidant and anti-carcinogen activity is considered to be extremely significant in conditions of global ecological crisis. Among Allium species, wild garlic (Allium ursinum L.) along with the ordinary garlic are known to be the leaders in accumulation of natural antioxidants and sulfur-containing compounds with strong anti-carcinogen activity. Taking into consideration that Allium species belong to a group of natural accumulators of selenium, foliar biofortification of wild garlic with sodium selenate was achieved in Gudermes region of the Chechen republic. It was demonstrated that fortification of plants with selenium resulted in significant increase of chlorophyll a and b as well as carotene content, and two-fold increase of both polyphenol concentration and total antioxidant activity. Total dose of 2 mg Na2Se04 per square meter provided 14.4-fold increase of selenium content in A. ursinum leaves. Biofortification of plants with selenium resulted in 1.36, 1.28 and 1.38-fold increase of Cr, Fe and V concentration in leaves compared to leaves of non fortified plants. Leaves of A. ursinum fortified with selenium showed anomalously low Si content compared to non fortified plants. Compared to A. ursinum grown in Moscow region, wild garlic of the Chechen republic accumulated 2-fold lower levels of dry matter and 4.8-fold higher levels of monosaccharides. Compared to non fortified garlic leaves, those of A. ursinum demonstrated significantly higher levels of Cu, Fe, Mg и Zn. The results obtained suggest that A. ursinum fortified with selenium may be considered as a new functional food with strong antioxidant activity.

Abstract Vegetables from the genus Ziziphus (Rhamnaceae) have been identified as one of the main dietary antioxidants, especially phenolic compounds. However, their chemical composition varies according to the specie or the part of the plant. Mineral composition (potassium, magnesium, calcium, sodium, iron, and zinc), polyphenolic content (Flavan-3-ol, Proanthocyanidin, total polyphenol content) and antioxidant capacity (DPPH, ABTS, and ORAC Assay) in four different matrices (whole fruit, pulp, seed and almond) of Ziziphus (Z. Lotus and Z. Spina Christi) commonly grown in Morocco were investigated. As a result, minerals, polyphenolic contents and antioxidant capacity fluctuated significantly (p ≤ 0.05) between different matrices and Ziziphus species analyzed. Seeds displayed a significantly higher mineral level, polyphenolic content and antioxidant capacity in comparison to whole fruit, pulp and almond. Among species, Z. spina-christi have a significantly higher content of mineral, phenolics and antioxidant activity. These results suggest that the mineral level, polyphenolic content and antioxidant capacity vary considerably depending on the Ziziphus species and part of the plant analyzed. Furthermore, Z. spina-christi seeds presented properties desirable for use in functional food.
