Red Sayer is one of the date varieties from the United Arab Emirates. This variety is one type of dates that is imported into Indonesia and used as processed date palm juice producing waste, namely date seeds. Date seeds can be made into some coffee that is rich in antioxidants and does not contain caffeine. The purpose of this study is to determine the chemical characteristics, antioxidant activity, total phenol, and caffeine contents in coffee of the Red Sayer variety date seeds. Coffee of date seeds is made into powder and then analyzed for its contents of water, ash, protein, fat, carbohydrates and total sugar, besides its antioxidant activity, total phenol, and caffeine levels. The results of the analysis obtained are, as follows: 4.42±0.01% water, 1.17±0.04% ash, 8.55±0.64% protein, 7.34±0.07% fat, 78.52±0.76% carbohydrate, 16.39±0.01% total sugar, 23.81±0.22 µg/mL antioxidant activity (IC50) and 340.65±1.53 mg GAE / 100g total phenol, while caffeine is not detected. Red Sayer date seed coffee, therefore, can be a source of carbohydrates and natural antioxidants that does not contain caffeine.

Palm date fruits (Phoenix dactylifera L) have been used for medical treatment, one of the medical purpose as antioxidant, which is the coumpound for free radical scavenging. In this study used palm juice makes with non sentrifuged method by grounds 200 grams of palm fruit with 20 ml of aquadest and store in room temperature. For date palm syrup used in this study were from certain brand distributed on the market. Antioxidant activity was testing by using DPPH method and determined by spectrophotometry Uv-Vis in wavelength 517nm, and Total Phenolic Content was testing by Folin Ciocalteu method and determined by spectrophotometry Uv-Vis in wavelength 774nm.11 sample of date palm syrup was sampling by purposive sampling methods and then got 2 sample to tested. Date Palm Juice were made by Non Cetrifuged methods. All sample were tested antioxidant activity using DPPH and Total Phenolic Content using Folin Ciocalteu. This study obtained that best operating time for all sample in antioxidant activity is 30 minutes with the highest point is Date Palm Juice 91,54%, Sample X for 86,93% and Sampel Y 89,92%. There was a linear correlation between with the result Total Phenolic Content for Date Palm Juice 9,25 mgGAE/g, Sample X 4,13 mgGAE/g and Sampel Y 4,28 mgGAE/g. Date Palm Juice and Date Palm Syrup could scavenge free radical DPPH in huge concentration and contain phenolic compound.

Dates seeds are one of the byproducts of the date palm juice industry which has the potential for further processing. Dates seeds contain active compounds that are known to have ability to inhibit αglucosidase. This study aims to measure the activity of 70% ethanol extract and the fraction of date palm seeds with a mechanism in inhibiting αglucosidase. The measurement of inhibitory activity was carried out by extracting date palm seeds using 70% water and ethanol. The extraction product is then fractionated with n-hexane, ethyl acetate, n-butanol, and water. Then the total phenolic and flavonoid calculations were calculated for each extract and fraction. Measurement of α-glucosidase inhibition activity was measured based on reaction of substrate to enzyme by the addition of inhibitors. The results showed that the ethanolextract had the highest total phenolic and flavonoid, which were 76.86 mg GAE / g and 21.19 mg QE / g, respectively. n-hexane fraction have the best inhibitory activity seen from the IC50 value, which is 12.69 mg/L. The kinetics of inhibition of 70% ethanol extract of date palm seeds are mixed inhibition. Keywords: α-glucosidase, date seeds, flavonoids, kinetic inhibition, phenolics

This study is a contribution to valorise date palm sap (Phoenix dactylifera L.) by elaboration of high quality syrup. Sap was concentrated by evaporation and the obtained product was characterized by its physicochemical, rheological, thermal, sensory properties and by its antioxidant activity. Syrups from date palm sap have a good nutritional value marked by high amounts of sugars (58—75 g/100 g fresh matter basis), minerals (2.1—2.6 g/100 g fresh matter basis) and phenolics (147.61—224.55 mg of ferulic acid equivalents/kg fresh weight). Syrup also presents an antioxidant activity that appears related to total phenolic content. Rheological properties indicate that syrup preserves a Newtonian behavior from 10 °C to 55 °C well modeled by Arrhenius equation. Hedonic evaluation showed that consumers’ appreciation of date palm syrup was not significantly different to the most known sap syrup: maple syrup.

The study was conducted on date palm fruit (Phoenix dactylifera L.) c.v. Ashrassi, wich included tow experiment: first one field study carried out during the growing season 2017 at Mandali date palm station/ Ministery of Agriculture, the second one was A laboratory experiment conducted at Post harvest physiology lab at the Department of Horticulture and Landscape Grading/ College Agriculture University of Diyala,9 trees were selected at 10 years old homogeneous in size and growth planted at 5x5 m, The experiment was designed as factorial experiment using Complete Block Designed (RCBD), with two factor: tryptophan spraying at 0, 100, 200 ml. L- 1 concentration five times one spray each month, at Hababok stage, the second factor: some artificial ripening method to promote fruit Ripening, included (heat treatment at 20ºC for 10 minutes, freezing the fruit at- 18 ºC for 42 hours, and soaking the fruit in ethephon solution at 1000, 1500 ml. L- 1. The results can summarized as follow, The interaction between tryptophan spray with 200 ml. L- 1 and freezing the fruit gave the highest values for fruit weight, length and total sugar percent, also the interaction between tryptophan spray with 200 ml. L- 1 and soaking the fruit in ethephon solution at 1500ml.L- 1 resulted significant increase in reducing sugar percent.

The fatty acid composition of date seed oil from two different date palm ( Phoenix dactylifera L.) cultivars, locally known as Degla-Baïdha and Tafezouine, were investigated. GC analysis revealed the presence of five dominant fatty acids: oleic C18:1 (46.51; 39.15%), lauric C12:0 (22.1; 28.5%), myristic C14:0 (10.7; 11.4%), palmitic C16:0 (9.6; 8.7%) and linoleic C18:2 (6.9; 6.1%). The oils was characterised by a low content of tocopherols (0.53; 1.41 μg/g). The antioxidant activity of the oils was investigated using the DPPH•(1,1-di-phenyl-2-picryl-hydrazyl) scavenging assay. The oils had a weak bleaching effect on DPPH• free radicals. This study showed that the qualities of the tested oils are highly comparable with those of some commercial seed oils of other plants. Furthermore, a statistical analysis using the hierarchy ascendant classification method was conducted in order to highlight the similarities and/or the differences regarding the contents of the main fatty acids found in some common plants and in the five most famous cultivars of Phoenix dactylifera of south eastern Algeria (Tafezouine, Degla-Baïdha, Deglet-Nour, Ghars, Tamdjouhert).
