Dates seeds are one of the byproducts of the date palm juice industry which has the potential for further processing. Dates seeds contain active compounds that are known to have ability to inhibit αglucosidase. This study aims to measure the activity of 70% ethanol extract and the fraction of date palm seeds with a mechanism in inhibiting αglucosidase. The measurement of inhibitory activity was carried out by extracting date palm seeds using 70% water and ethanol. The extraction product is then fractionated with n-hexane, ethyl acetate, n-butanol, and water. Then the total phenolic and flavonoid calculations were calculated for each extract and fraction. Measurement of α-glucosidase inhibition activity was measured based on reaction of substrate to enzyme by the addition of inhibitors. The results showed that the ethanolextract had the highest total phenolic and flavonoid, which were 76.86 mg GAE / g and 21.19 mg QE / g, respectively. n-hexane fraction have the best inhibitory activity seen from the IC50 value, which is 12.69 mg/L. The kinetics of inhibition of 70% ethanol extract of date palm seeds are mixed inhibition. Keywords: α-glucosidase, date seeds, flavonoids, kinetic inhibition, phenolics

This study is a contribution to valorise date palm sap (Phoenix dactylifera L.) by elaboration of high quality syrup. Sap was concentrated by evaporation and the obtained product was characterized by its physicochemical, rheological, thermal, sensory properties and by its antioxidant activity. Syrups from date palm sap have a good nutritional value marked by high amounts of sugars (58—75 g/100 g fresh matter basis), minerals (2.1—2.6 g/100 g fresh matter basis) and phenolics (147.61—224.55 mg of ferulic acid equivalents/kg fresh weight). Syrup also presents an antioxidant activity that appears related to total phenolic content. Rheological properties indicate that syrup preserves a Newtonian behavior from 10 °C to 55 °C well modeled by Arrhenius equation. Hedonic evaluation showed that consumers’ appreciation of date palm syrup was not significantly different to the most known sap syrup: maple syrup.

In this study, long term preservation of butter oil was achieved through ethanolic extract of date palm fruit (Phoenix dactylifera L.). Butter oil was supplemented with date palm fruit extract (DPFE) at three different concentrations i.e. 250, 500 and 750 ppm (T1, T2 and T3) and compared with a control. Total phenolic content, DPPH free radical scavenging activity and inhibition of linoleic acid peroxidation of the DPFE was 5.19 GAE, 74.2 and 81%, respectively. IC50 value of date extract for the inhibition of DPPH and linoleic acid peroxidation was 2.45 and 0.82 mg/mL, respectively. The loss of oleic acid and linoleic acid in control after six months of storage was 16 and 52% as compared to T3 which was 4% and 14%. T3 yielded the lowest concentration of primary and secondary oxidation products with no effect on sensory attributes. DPFE can be used to enhance the shelf life of  butter oil at ambient temperature.

The total phenolic content of date palm (Phoenix dactylifera L.) seeds (samples 1 and 2) and leaves were determined and for the first time their antioxidant activity in a food system investigated. The anti-inflammatory activity and potency of samples in the inhibition of radical-induced DNA scission and human low-density lipoprotein (LDL) cholesterol oxidation was also evaluated. The total soluble phenolic content of the date palm leaves was 106.96 mg gallic acid equivalents (GAE)/g sample and ranged from 68.73 to 82.62 mg GAE/g of date seeds. Extracts showed good radical scavenging activity in the different in vitro tests conducted in this work and were found to be effective in inhibiting the oxidation of cooked ground meat. Soluble phenolic extract from date seeds of sample 1 was most effective in inhibiting DNA strand scission by 74.15%, while soluble phenolics from palm leaves showed the highest inhibition of LDL cholesterol oxidation (87.82%). Both samples significantly inhibited mRNA level of COX-2 at concentrations as low as 5 μg/mL, with the most potent inhibitory effect being for date palm leaf extracts at 50 μg/mL. A number of phenolic compounds including proanthocyanidin dimers, catechin, epicatechin, 5-O-caffeoylshikimic acid isomers, ferulic acid, rutin and isorhamnetin hexoside, among others, were detected in date palm seeds and leaves.

This study was designed to evaluate the antioxidant activity of phenolic compounds for six cultivars of date from In Saleh region (Phoenix dactylifera L.), which were extracted by reflux with solvents, 80% methanol and 70% aceton after the phenolic and flavonoid content were estimated. The total phenolic content (TPC) and total flavonoid content (TFC) of the extracts were measured using Folin–Ciocalteau and aluminum chloride colorimetric methods, respectively. Antioxidant activity acetone/H2O and methanol/H2O extracts using ABTS, DPPH, FRAP, TAC and CUPRAC assays. The results showed that methanolic solvent reflux gives better yields. The highest level of phenolic compounds for all dates varieties was found in the 80% methanol extract. This level ranged from 8.04 ± 0.14 to 46.81 ± 1.22 mg GAE/100 g fresh weight and flavonoid content was observed relatively low for both two solvents. However, extraction into 70% acetone gave the highest antioxidant activity with all assay. These results showed that dates had strongly scavenging activity on DPPH reaching 3.12 µg/mL in methanol/H2O from Cul1 (6.9 µg/mL with ascorbic acid), also on ABTS reaching 6.51 µg/mL in acetone/H2O from Cul2 (104.98 µg/mL with ascorbic acid).
