Jurnal ini bertujuan untuk 1) menghasilkan resep serta membuat kemasan yang tepat untuk produk kue lumpur ketan hitam, 2) mengetahui daya terima panelis terhadap produk kue lumpur ketan hitam. Jenis penelitian yang digunakan dalam pembuatan produk ini yaitu R&D (Research and Development) dengan model pengembangan 4D (Define, Design, Develop, Dissemination). Tempat dan waktu penelitian yaitu Program Studi Boga Fakultas Teknik Universitas Negeri Yogyakarta di mulai dari bulan Januari 2019 sampai Maret 2019. Bahan pengujian berupa sampel dari produk, sedangkan alat pengujian berupa borang. Metode analisis data secara statistik deskriptif dengan prinsip penyajian data komunikatif dari kuesioner. Hasil yang didapat dari penelitian ini adalah: 1) resep yang tepat untuk produk kue lumpur ketan hitam adalah dengan substitusi tepung ketan hitam sebanyak 100%, dan tahap akhir dipanggang dan dikemas dengan wadah tertutup berupa mika agar produk higienis dan terjaga kualitasnya. 2) Uji kesukaan terhadap produk kue lumpur ketan hitam dengan substitusi tepung ketan hitam menunjukkan bahwa produk tersebut dapat diterima oleh konsumen dengan presentase 88,89%. AbstractThis journal aims to 1) making recipes and making the right packaging for black sticky rice cake products, 2) learning panelists acceptance of black sticky rice cake products. The type of research used in making this product is R&D (Research and Development) with a 4D development model (Determine, Design, Develop, Disseminate). The place and time of the study are the Program Study of Culinary, Faculty of Engineering, and Yogyakarta State University from January 2019 to March 2019. The test material consists of product samples, while the testing tool consists of forms. Methods of data analysis with descriptive statistics with the principle of presenting communicative data from the questionnaire. The results obtained from this study are: 1) the right recipe for black sticky rice cake products is with the substitution of 100% black sticky rice flour, and stored finally filled with a closed container containing mica to ensure hygienic products and guaranteed quality. 2) The preference test for black sticky rice cake products with the substitution of black sticky rice determines the product can be accepted by consumers with a percentage of 88.89%.

Jurnal ini bertujuan untuk 1) menghasilkan resep yang disukai serta membuat kemasan yang tepat untuk produk kue kering kacang hijau, 2) menghasilkan resep kue kering yang mempunyai kandungan zat gizi yang lebih tinggi untuk penderita anemia. Jenis penelitian yang digunakan dalam pembuatan produk ini yaitu R&D (Research and Development) dengan model pengembangan 4D (Define, Design, Develop, Dissemination). Bahan pengujian berupa sampel dari produk, sedangkan alat pengujian berupa borang. Metode analisis data secara statistik deskriptif dengan prinsip penyajian data komunikatif dari kuesioner. Hasil yang didapat dari penelitian ini adalah: 1) resep yang tepat untuk produk kue kering kacang hijau adalah dengan substitusi tepung kacang hijau sebanyak 50%, dan tahap akhir dioven dan dikemas dengan wadah tertutup berupa stoples agar tekstur tetap renyah. Uji kesukaan menunjukkan bahwa 86,67% panelis menyukai produk ini. 2) Kandungan zat besi kue kering kacang hijau meningkat 100% dari resep acuan yakni kue kacang (dari 16,15mg menjadi 33,2mg). AbstractThis journal aims to 1) produce the preferred recipe and make the right packaging for green bean pastry products, 2) produce pastry recipes that have a higher nutrient content for anemia sufferers. The method of research used in making this product is R&D (Research and Development) with the 4D development model (Define, Design, Development, and Dissemination). The test material is a sample of the product, while the testing tool is in the form. The method of data analysis is descriptive statistics with the principle of presenting communicative data from the questionnaire. The results obtained from this study are: 1) the right recipe for green bean pastry products is by substituting green bean flour as much as 50%, and the final stage is woven and packaged in a closed in a jar so that the texture remains crisp. The preference test shows that 86.67% of panelists like this product. 2) The iron contain of green bean cookies increases 100% from the reference recipe namely peanut cake (from 16.15mg to 33.2mg).

In the submitted study the problem of the formation of financial literacy of students at informatics lessons and relevant training of future informatics teachers is considered. Financial literacy is understood as a set of basic knowledge in the field of finance, banking, insurance, as well as budgeting for personal finances that allow a person to choose the right financial product or service, soberly assess and take risks that may arise during the use of these products, correctly accumulate savings and identify doubtful (fraudulent) investment schemes. The authors conclude that successful development of meaningful lines of the course of financial literacy requires integration of a few school subjects, such as mathematics, history, informatics, social science and literature. The role of modern informatics teacher in the formation of financial literacy of students is great. Therefore, in the training of a future informatics teacher, it should be paid the attention to issues related to the study of elements of financial literacy in informatics lessons. In order to solve the problem, the authors propose to use the special course “Basics of work in 1С:Enterprise”, which is implemented at Penza State University. The article contains a program of the course and the methodological recommendations for its implementation.

Celiac disease (CD) is defined as an autoimmune pathology mediated by specific antibodies and is associated with genetic factors, which causes an inflammatory process of the intestinal mucosa in response to gluten ingestion. A study was conducted to evaluate some gluten-free cookie formulations using rice and green banana flour as raw material, and to evaluate the acceptance and chemical composition of the cookies elaborated. Three different cookie formulations were prepared to contain 100% rice flour, 50% rice flour and 50% green banana flour and 100% green banana flour. The following sensory attributes were evaluated: crispness, flavor, and overall impression, using the 9-point hedonic scale and purchase intention using the 5-point structured scale, to check the acceptance of cookies. The chemical composition of the formulation most accepted by sensory analysis was quantified. Sensory evaluation showed that all cookie formulations were accepted; however, the increase of the green banana flour content has resulted in lower acceptance, which may be due to the slightly bitter flavor that green banana flour gives the product. The most accepted cookie formulation had 15.78% protein, 0.80% ash, 4.31% moisture content, 12.35% lipid, and 66.77% carbohydrate. These nutritional characteristics are following Brazilian legislation. Therefore, all cookie formulations have marketing potential, which is very important, especially for people with gluten sensitivity.

The aglutenics biscuits are intended to those persons who are suffering due to gluten intolerance, also named celiac disease. The fabrication technologies of the aglutenics products can be developed in on two ways: by separating the gluten from the grain or by replacing the grain flour with other types of gluten less flour, in case of bakery and pastry products. In this experiment, the gluten-free biscuits were obtained from the following flours mixture: maize flour (MF), rice flour (RF) and soybeans flour (SF). Other raw materials were used, such as: palmtree oil, honey, maize starch, eggs, sugar powdered, vanilla essence and sodium bicarbonate. Four experimental variants (gluten-free biscuits) were obtained by varying the proportion of flours ; these variants were coded as follows T1, T2 T3 and T4. The optimization of the aglutenics biscuits manufacture recipe was realized through sensory analyze, using the hedonic test (9 point scale). Samples of biscuits was subjected to the following physico-chemical analysis: moisture content, alkalinity, total carbohydrate content, total fat and protein content. Also the physical properties (length, width, thickness, weight and spread ratio) were determined in order to asses the blending influence on the biscuits quality. The blend with flour levels 30:30:40 (MF:RF:SF) led to the highest acceptability.

ABSTRACT: Brazilian pine seeds (pinhão) are gluten-free seeds produced by the native pine species named Araucaria angustifolia. In this study, gluten-free cake mixes composed of Brazilian pine seed flour and rice flour were developed. The cake mixes were produced following a Simplex Centroid experimental design, with rice flour and Brazilian pine seed flour contents ranging from 50 to 100% and from 0 to 50%, respectively. Mixes were analyzed for chemical composition, apparent paste viscosity, and particle size distribution. The resulting cakes were analyzed for sensory acceptance, texture, specific volume and chemical composition. The Brazilian pine seed flour showed a peak viscosity on heating of 1.761Pa.s against 4.747Pa.s for the 100% rice flour sample. The variation of firmness of cakes decreased with increasing percentage of Brazilian pine seed flour. Cakes containing Brazilian pine seed flour at 25-37.5% of the formulation presented highest overall acceptance.

Addition of hydrocolloids (H/C) in gluten-free (GF) bread formulation is necessary in order to act as polymeric substances that should mimic the viscoelastic properties of gluten and increase the dough’s gas-retaining ability. The properties of H/C vary depending on their origin and chemical structure. Addition of H/C (hydroxypropylmethylcellulose (HPMC), xanthan, κ-carrageenan and guar gum) of different origins at 1%, 1.5% and 2% (w/w) in GF formulations based on corn starch and rice flour was carried out to investigate the effects on dough rheology and bread quality. The consistency, viscosity and thermal properties of doughs were evaluated. According to results, 1% and 1.5% addition of H/C (except from xanthan) contributed to bread with higher loaf volume and better color compared to control GF bread as well as to increased shelf life due to its moisture-absorption ability. Sensory evaluation by a trained panel revealed a preference for bread containing 1.5% HPMC because of its loaf volume, appearance and firmness characteristics. The micrographs of the dough showed a continuous matrix between starch and HPMC obtaining a more aerated structure.
