The present study aimed to analyze total ascorbic acid content (TAC), total phenolic content (TPC), total flavonoid content (TFC), phenolic composition, fatty acid profiles, and antioxidant activity of Diospyros lotus L. fruits grown in Turkey. The TAC, TPC and TFC of D. lotus extracts were 13.9, 130.3, and 12.7 mg/100 g, respectively. Phenolic compounds, gallic acid, vanillic acid, caffeic acid, p-coumaric acid, trans-ferulic acid, sinapic acid, naringin, rutin trihydrate, resveratrol, ellagic acid, trans-cinnamic acid, and quercetin were identified in persimmon samples. The 2,2’-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) – ABTS and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activities and ferric reducing antioxidant power (FRAP) of fruit extracts were found to be 556.3 µmol/g, 69.6%, and 52.4%, respectively. Fructose was identified as the major sugar (371.01 mg/g), while sucrose was not detected. A total of 17 different fatty acids were identified. Most abundant saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), and polyunsaturated fatty acids (PUFA) were palmitic acid (19.66%), palmitoleic acid (13.28%), and linoleic (18.04%) and gamma-linolenic (11.66%) acids, respectively.

AbstractWe conducted this study to determine and compare the content of phenolic compounds and flavonoids in the argan and olive leaves as well as their antioxidant capacity in aqueous, methanolic, and ethyl acetate extracted fractions. In vitro antioxidant activity was evaluated in comparison with synthetic antioxidants by assessing DPPH• radical scavenging capacity, ferric reducing antioxidant power, scavenging ability by inhibiting the β-carotene/linoleic acid emulsion oxidation, and by the ABTS radical scavenging activity assay. Total phenolic content in argan samples ranged from 221.69 ± 2.07 to 1.32 ± 0.01 mg GAE/g DW and in olive samples from 144.61 ± 0.82 to 1.21 ± 0.02 mg GAE/g DW. Total flavonoids content in argan samples varied from 267.37 ± 1.12 to 25.48 ± 0.02 mg QE/g DW, while in olives from 96.06 ± 0.78 to 10.63 ± 0.05 mg QE/g DW. In vitro antioxidant studies strongly confirmed the antioxidant potency of argan and olive leaves and their richness in secondary metabolites that are effective in free radicals scavenging and metal chelating capacities, indicating their antioxidant power.

Background: Consumption of traditional herbal beverages has been generally increased in the last decades, Terebinth coffee, known as ‘‘menengic coffee’’ in Turkish, is one of the most consumed herbal coffees in Turkey, turpentine tree is one of the components of the Mediterranean bush, particularly in Algeria, known as Betoum el Kiffan is largely used as food and in traditional medicine. Aims: In this study, Total phenol, flavonoid content, and antioxidant activity of three extracts of Pistacia trebinthus fruit growing in Algeria was measured using radical scavenging activity tests and metal-related tests including, ferric-reducing antioxidant power (FRAP). The chemical composition profile of the fruits and the coffee brands was identified by thin-layer chromatography, the effects of roasting method of this fruit was rivaled also. Materials and Methods: The total phenolic content of the extracts was determined using the Folin-Ciocalteu method. All extracts of the terebinth fruits and coffee brands displayed a high DPPH scavenging effect. Results: The results of the ferric-reducing antioxidant power show that the reduction capacity is proportional to the increase in the concentration of the samples. All the extracts of the plant exhibit antioxidant activities lower than those of the reference product besides the infusion extract of the P. terebinthus roasted coffee, which is the most active with an optical density of 1.68 nm at a concentration of 400 μg/mL. The chromatography results show that the various extracts of Pistacia terebinthus fruit carry a large number of polyphenols, in particular the carboxylic acids phenols. Conclusions: The plant can be considered as a coffee substitute and opens up promising avenues for the food and pharmaceutical industry in Algeria. The aim of this work was to determine the total phenolic content (TPC) and the antioxidant activity of methanol extracts of Hericium erinaceus, Hericium americanum and Hericium coralloides, including free radical scavenging method (DPPH), ferric reducing antioxidant power (FRAP) and radical cation scavenging method (ABTS). Hericium spp exhibited moderate to high antioxidant activity. The highest TPC (3.27 ±0.01 mg GAE g–1) and antioxidant activity values (17.0 ±0.68 mmol TE g‒1 in FRAP; EC50 = 4.12 ±0.12 mg mL‒1 in DPPH•; EC50 = 2.83 ± 0.10 mg mL‒1 in ABTS•+) were found for methanol extracts of H. coralloides. The TPC and antioxidant activity of H. erinaceus isolates varied from strain to strain. H. americanum possessed considerably lower total phenolic content (2.31 ±0.01 mg GAE g‒1) and antioxidant activity (10.5 ±0.59 mmol TE g‒1 in FRAP; EC50 = 7.82 ±0.09 mg mL‒1 in DPPH•; EC50 = 6.36 ± 0.12 mg mL‒1 in ABTS•+) than H. coralloides and H. erinaceus. A high correlation was determined between TPC and ABTS•+ (r2 = 0.855), DPPH• (r2 = 0.969) and FRAP (r2 = 0.942). According to results obtained in the present study, Hericium spp., especially H. coralloides and some of H. erinaceus isolates, might be promising natural source of antioxidants for food and pharmaceutical industry.

Objective: This study aimed to evaluate the effect of oven and microwave drying on total phenolic content (TPC), total flavonoid content (TFC), and antioxidant capacity of unfermented and fermented tea developed from Strobilanthes crispus leaves.Methods: TPC and TFC were estimated using a spectrophotometric method, while antioxidant capacity was determined using ferric reducing antioxidant power assay and 2,2-diphenyl-1-picrylhydrazyl radical scavenging assay. Camellia sinensis (tea plant), that is, used for the production of all varieties of commercial tea and fresh S. crispus leaves were served as controls in this study.Results: The highest antioxidant activity and TPC were observed in S. crispus tea developed from microwave-dried leaves, while the highest TFC was observed in oven-dried tea. Unfermented S. crispus tea showed significantly higher values (p<0.05) for antioxidant activity, TPC, and TFC as compared to fermented S. crispus tea. A strong and moderate correlation was observed between antioxidant activity and TPC as well as TFC values.Conclusion: The present work clearly showed that S. crispus tea developed from microwave-dried leaves able to preserve the polyphenols and hence contribute to excellent antioxidant capacity. Incorporation of unfermented S. crispus tea in the diet can be a good source of natural antioxidant.

Chicken (Broiler) breast fillets were dipped separately for 10 min in distilled water, 100 ppm solution of BHT and 0.1, 0.3 and 0.5% aqueous solutions of custard apple (Annona squamosa) seed extract (CSE), stored under refrigeration (4±1oC) and analyzed on 0th, 3rd, 6th and 9th day of storage. Ascorbic acid content, Total Phenolic content, Ferric Reducing Antioxidant Power and DPPH radical scavenging assay of CSE were respectively 645.07±0.32 µgAA/mg, 234.30±0.44 µgGAE/mg, 882.95±0.34 µMFe(II)equi/g and 78.35±0.49%. The fillets treated with 0.5% solution of CSE had significantly (p 0.01) lower score than the control on 5 point hedonic scale on zero day of storage. However, they were acceptable till ninth day with significantly (p 0.01) higher scores than the controls. The ERV, WHC, pH, TBARS value, Tyrosine value, Total plate count and Psychrophillic count of the ninth day samples treated with 0.5% CSE were respectively 18.06±0.14ml, 63.63±0.46%, 5.72±0.01, 0.490±0.002 mgMDA/Kg, 9.78±0.20 mg/100g, 5.07±0.01 log10CFU/g and 3.83±0.01 log10CFU/g.

Curcuma aeruginosa Roxb. is one of the plants from the Zingiberaceae family which the rhizome has been used for medicinal purposes. However, the biological properties of the leaves have not been fully explored. Therefore, this study was conducted to evaluate the effects of different drying methods and solvents on total phenolic content, antioxidant and anti-hyperglycemic activities of C. aeruginosa leaf extract. Samples were dried by oven drying (OD) and freeze drying (FD), and then extracted using different ratios of ethanol:water (100:0, 50:50 and 0:100). The amount of phenolic content (TPC) was determined using a spectrophotometer. Antioxidant activity was tested using the Free Radical Scavenging (DPPH) test and the Ferric Reducing Antioxidant Power assay (FRAP), while the anti-hyperglycemic test was evaluated by determining the percentage of α-glucosidase inhibition. The results showed that FD at 100:0 and 50:50 concentrations had the highest phenolic content (30.88 and 33.06 mg GAE/g extract, respectively) and highest antioxidant activity value (38.24 and 42.46 mg TEAC/g extract, respectively). For DPPH, FD at 50:50 showed the highest inhibition of 71.48% compared to other extracts. Whereas FD at 100:0, 50:50 and 0:100 showed the highest α-glucosidase inhibition of 25.65, 30.78 and 27.65%, respectively. However, compared to Quercetin, the extract showed mild anti-hyperglycemic activity. The results indicated that FD is the best method of drying while 50:50 showed as the best solvents. Positive correlation between TPC with antioxidant and anti-hyperglycemic activities showed that C. aeruginosa leaf has potential as a source of natural antioxidant with the presence of phenolic compounds.

This study was aimed to evaluate the cytotoxicity of methanolic extract (ME) and aqueous extract (AE) of the rhizomes of Bergenia purpurascens through the Brine-shrimp bioassay, which revealed that ME possessed cytotoxicity with LC50 = 181.97 ìg/ml value. The plant extracts were also evaluated in vitro for antioxidant activity using different redox [Folin-Ciocalteu (FC) and Ferric Reducing Antioxidant Power (FRAP)] and radical scavenging [(2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azinobis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS)] assays. Both ME and AE possessed antioxidant activity and ME displayed comparatively a greater potential. The total phenolic contents in ME and AE was 1.27 and 0.06 g gallic acid equivalent (GAE)/100 g dry mass (DM), respectively. The FRAP values determined for ME and AE were 15.82 and 2.58 ìmol Fe(II)/100 g DM, respectively. The DPPH radical scavenging effect (IC50) was for ME 19.86 ìg/ml and 295.91 ìg/ml for AE. At 100 ìg/ml concentration, up to 94% inhibition of ABTS+ was observed in 6 min incubation. A systematic study was conducted about the solvent effect on the purslane total phenolic, flavonoid, alkaloid, carotenoid, saponin, vitamin E, and vitamin C contents as well as to evaluate their contribution to overall antioxidant activity. Among three solvents investigated, water could extract the highest levels of solid and saponin contents, whereas methanol was more effective for obtaining phenolic, flavonoid, and alkaloid compounds than other solvents. Meanwhile, ethanol was the best choice for extracting carotenoids and vitamin E. In various experimental models including DPPH radical scavenging activity, ABTS+ radical scavenging activity, and ferric reducing antioxidant power, methanol extract consistently showed significantly greater antioxidant activity than other extracts, while ethanol extract provided the most efficient inhibiting activity against ferrous chloride-induced oxidation of linoleic acid. In addition, the scavenging efficiency of ethanol extract toward DPPH and ABTS+ radicals was significantly higher than the water extract, and vice versa was the case for ferric reducing antioxidant power. Overall, methanol was found to be the most favorable solvent for the extraction of phenolic, flavonoid, and alkaloid compounds that are promising as natural antioxidants. However, different solvents may be used to extract specific antioxidant compounds with distinctive antioxidant activity.

Abstract This study investigated the effects of different heat treatments, namely boiling, microwaving and pressure cooking, on the reduced ascorbic acid content and antioxidant activity in Momordica charantia extracts. The total antioxidant activity of M. charantia extracts was determined by ferric reducing-antioxidant power and 2,2-diphenyl-1-picrylhydrazyl radical scavenging assays. The reduced ascorbic acid content was estimated by ferric reducing-antioxidant power-ascorbic acid assay and confirmed by high performance liquid chromatography. Regardless of the cooking method, all cooked M. charantia extracts had significantly (p < 0.05) higher total antioxidant activity, radical scavenging potency and reduced ascorbic acid content than the uncooked sample. The decreasing order of reduced ascorbic acid in M. charantia was as follows: microwaved > boiled > pressure-cooked > uncooked. The reduced ascorbic acid in M. charantia strongly correlated with the total antioxidant activity (r = 0.958, p < 0.05) and radical scavenging potency (r= 0.951, p < 0.05). The principle component analysis showed that 87% of the variation in the antioxidant values of M. charantia extracts was attributed to the different cooking methods. Heat treatment either by boiling or microwaving for a short period of time (10 minutes) improved the reduced ascorbic acid content in the M. charantia extract. This study showed that the reduced ascorbic acid could be retained under high temperature and pressure in M. charantia extracts.

This study investigated the impact of Parinari curatellifolia peel flour on the nutritional, physical and antioxidant properties of formulated biscuits. Biscuits enriched with 5%, 10%, 15% and 20% of Parinari (P). curatellifolia peel flour were formulated and characterised. Thermal, physicochemical, polyphenolic compounds and antioxidant properties of flour and biscuits were determined. The incorporation of P. curatellifolia peel flour significantly increased (p < 0.05) thermal properties (onset, peak and conclusion temperatures) of flour. However, enthalpy of gelatinisation, viscosity and pH of flour samples decreased. Nutritional analysis revealed an increase in ash (0.74% to 2.23%) and crude fibre contents (0.39% to 2.95%) along with an increase of P. curatellifolia peel flour levels. Protein content and carbohydrates decreased while moisture content was insignificantly affected by the addition of P. curatellifolia peel flour. The L*, b* values and whiteness index of formulated biscuits decreased while parameter a* value (10.76 to 21.89) and yellowness index (69.84 to 102.71) decreased. Physical properties such as diameter (3.57 mm to 3.97 mm), spread ratio (2.67 to 3.45) and hardness (1188.13 g to 2432.60 g) increased with the inclusion levels of peel flour while weight and thickness decreased. The inclusion of P. curatellifolia improved the polyphenolic compounds and antioxidant activity of biscuits with values of total flavonoids content ranging from 0.028 to 0.104 mg CE/g, total phenolic content increasing from 20.01 mg to 48.51 mg GAE/g, ferric reducing antioxidant power (FRAP) increasing from 108.33 mg to 162.67 mg GAE/g and DPPH (2,2-diphenyl-1-picrylhydrazyl) from 48.70% to 94.72%. These results lead to the recommendation of the utilisation of P. curatellifolia peel flour to enhance the nutritional value, polyphenolic compounds and antioxidant activity of bakery products such as biscuits.
