COMPARATIVE ASSESSMENT OF PRODUCTIVE CHARACTERISTICS PURE-BREED AND MIXED BRED STORE PIGS OF CANADIAN SELECTION

The aim of the research was to compare the productive qualities of the purebred and cross-breeding young pigs on the fattening of Canadian breeding in two- and three-breed crossings. Object of the study: youngsters of the Landras pigs, two-breed hybrids (Landras x Yorkshire), three-breeders (Landras x Yorkshire x Duroc), imported from Canada to the KFKH "Il'tyakov VN", Oftenozero district of the Kurgan region. The results of the experiment showed that under the same feeding conditions and the content of purebred, two- and three-breeded young pigs of Canadian breeding, differences in the character of the change in the dynamics of the live mass are observed. The gross increase in live weight was the highest in three-breed hybrids and amounted to 128.32 kg, which is 4.27% (P <0.05) higher than for pure-landrace. The age of reaching a live weight of 100 kg was the smallest in the three-breed hybrids in comparison with the two-breed hybrids and purebred landrace at 2.69 and 5.83 days. The slaughter yield in tri-tribe hybrids exceeded the purebred landrace by 1.25% (P <0.01). The weight of the paired carcass was also higher in tri-hybrids compared to the bipedal hybrids at 2.49 and purebred landrasas - by 7.36% (P <0.05). The highest content of dry matter was characterized by meat obtained from pure-earthland, while the protein and intramuscular fat content did not differ significantly and was within the range of 22.35-22.45% and 2.52-2.55%, respectively.

SummaryThe subcutaneous, intermuscular and cavity fat depots of the half carcasses of 15 Large White × Landrace castrated male pigs, forming a growth series from 8 to 62 kg live weight, were dissected. Seventy individual muscles of these pigs were analysed for intramuscular fat content. The growth rates of each of the four fat depots, relative to total fat, were similar. Subcutaneous fat was the predominant fat depot over the growth range studied. Both intramuscular fat and non-fat dry matter grew faster than the entire muscles containing them. Growth gradients for the intramuscular fat of muscle groups, relative to either total intramuscular fat or to total fat, were similar to those for the entire muscles. The growth gradients for muscle groups were affected by neither the growth of the contained intramuscular fat nor the contained non-fat dry matter. Intramuscular fat density, but not non-fat dry-matter density, varied throughout the carcass. The fat content of muscles was highest in those that could be useful as subcutaneous insulators.

The aim of study was to evaluate the effect of intramuscular fat content on physical parameters and proximate composition in musculus longissimus dorsi (MLD) from Mangalitsa breed and Slovak Large White x Mangalitsa crossbreed. In the study, sixteen pigs of Mangalitsa and twenty-two pigs of Slovak Large White x Mangalitsa crossbreed were used. The pigs were reared under intensive condition and all animals were fed ad libitum with complete fattening feed mixture. The fattening period started from 30 kg of live weight. Then the pigs were slaughtered at 100 kg of live weight. Chemical analysis showed that MLD from Mangalitsa had lower protein content, higher moisture content (p <0.05) and higher content of intramuscular fat compared to Slovak Large White x Mangalitsa crossbreed. As regarding the cholesterol content in MLD, no significant differences were found between genotypes, but the cholesterol content was higher in MLD from Mangalitsa than in MLD from crossbreeds. The MLD from Mangalitsa exhibited lower CIE L* (p <0.01) and CIE b* (p <0.01) values 45 min post mortem compared to crossbreeds. Colour parameters increased after 7 days post mortem, which is normal due to the maturing process of the meat. Then the CIE L* value was lower in MLD from Mangalitsa (p <0.01), but CIE a* value was higher in relation to crossbreeds (p <0.05). As regards the Warner-Bratzler shear force, the meat from Mangalitsa was tenderer than in crossbreeds (p <0.05). Intramuscular fat in the meat positively correlated with colour parameter CIE a* (r = 0.324; p <0.05) as well as cholesterol content (r = 0,656; p <0.001). In contrast in the study was found negative correlations between intramuscular fat in meat with moisture content (r = -0.399; p <0.05) and protein content (r = -0.812; p <0.001). It can be concluded that the percentage of intramuscular fat significantly influenced the physical and the chemical parameters of pork. The meat from Mangalitsa is more suitable for production of special meat products (fermented and smoked).

AbstractWe aimed to determine whether the dietary carbohydrate source altered body fat composition and distribution in finishing lean (Landrace) and obese (Iberian) swine. To this end, twenty-four finishing castrated male pigs (12 Iberian and 12 Landrace; 108 kg live weight) were offered two diets differing in the main carbohydrates source, maize (diet M) or acorn-sorghum-maize (diet A). Diets were formulated to have the same nutrient content, except for carbohydrate fractions: diet M contained higher amount of starch (537 v. 389 g/kg) but less non-starch polysaccharides (118 v. 148 g/ kg) than diet A. At an average weight of 133 kg live weight pigs were slaughtered and their carcasses were sampled to study lipogenesis, backfat and intramuscular fat composition. Iberian pigs showed a higher voluntary food intake than Landrace pigs (3·6 v. 2·4 kg/day; P < 0·001) but no significant differences in the daily weight gain. Diet M tended to promote the highest food intake (P = 0·09). Iberian pigs showed higher (P < 0·01) lipogenic enzyme activities, backfat thickness (71·7 v. 31·9 mm) and intramuscular fat content (40 to 95 g/kg fresh muscle) than Landrace pigs, which was associated with their higher food intake. Furthermore, fat depots from Iberian pigs had higher (P < 0·001) monounsaturated fatty acids (MUFA) and lower (P < 0·05) polyunsaturated (PUFA) proportions than those from Landrace pigs. The backfat thickness of pigs given diet M tended to be higher (P = 0·07) than that of pigs given diet A, without differences in the intramuscular fat content. The higher backfat thickness found for diet M was correlated with a lower PUFA proportion in diet than for diet A (P < 0·001). We conclude that body fat content, composition and lipogenic enzyme activities are markedly influenced by the animal breed and to a lesser extent by dietary characteristics.

AbstractCarcass quality was evaluated in 35 male and 41 female lambs, 38 expressing the callipyge phenotype (Cg) and 38 controls expressing the normal phenotype (N). Lambs were from Romanov and Suffolk × Romanov ewes mated to two rams heterozygous for the callipyge locus and slaughtered at approximately 44 kg live weight. The Cg lambs reached slaughter weight at 163 days of age, 13 days younger, and had a dressing proportion 0·524 , 0·029 points higher. Also they had more leg (341 v. 308 g/kg), less loin (315 v. 328 g/kg) and less shoulder (340 v. 360 g/kg) than the N lambs. The leg, loin and shoulder wholesale cuts and half the carcass of Cg lambs had 81, 113, 77, and 92 g/kg more lean and 52, 98, 59, and 72 g/kg less fat than N lambs, respectively. The Cg lambs also had larger loin-eye area (18·5 v.13·1 cm2), less backfat at the C (4·1 v. 6·1 mm) and at the GR locations (11·0 v. 15·2 mm) and less internal fat (202 v. 339 g) than the N lambs. Dissection of the 12th rib indicated that Cg lambs had more muscle (574 v. 462 g/kg), less fat (276 v. 358 g/kg) (both P < 0·001) and similar (V > 0·05) bone (155 v. 265 g/kg) to N lambs. Colour of the longissimus muscle was significantly paler in Cg lambs. Intramuscular fat and dry matter of longissimus muscle were significantly lower (49 v. 120 and 247 v. 253 g/kg) in Cg than in N lambs. Cg lambs were significantly different (P < 0·05) from N lambs for all traits studied except age at slaughter, tissues at the GR location, proportion of bone in the 12th rib and the L* colour of the longissimus muscle. Breed type effect was significant only for age at slaughter, whereas the effect of sex was significant for all traits except for proportion of lean in the leg, b* colour and intramuscular fat content of the longissimus muscle. No interactions were significant except phenotype × breed type on fat thickness over the longissimus muscle. Post-mortem ageing of the longissimus muscle for 9 or 15 days caused a significant reduction in muscle toughness in Cg lambs compared with those aged for 3 days (113 v. 98 Newtons) but the muscle was still tougher than that from N lambs (with a shear force of 64 and 51 Newtons at 3 and 9 or 15 days post mortem). The principle component analysis including carcass conformation and composition traits as well as meat quality traits was indicative of a distinctly different carcass ofCg compared with N lambs. The first two principal components explained 0·70 of the total variation.

AbstractThe objective of the study was to investigate the influence of amino acid-deficient diets and high dietary leucine levels offered for intervals of either 21 or 35 days pre-slaughter on the intramuscular fat content of pig muscle. Twenty-four hybrid gilts were offered individually ad libitum one of four diets that comprised combinations of amino acid levels (supplemented or deficient: 5·6 v. 4·0 g lysine per kg) and low or high leucine levels (10·3 v. 30·3 g leucine per kg). Live weights at the start of the study were 74·5 and 87·0 kg for pigs on the 35- and 21-day feeding regimens, respectively. There were no significant effects of dietary amino acid level, leucine level, or feeding interval on food intake, daily live-weight gain or food efficiency. Pigs given the amino acid-deficient diets had lower killing-out proportions (736 v. 747 (s.e. 3·4) g/kg; P < 0·05) and longissimus dorsi muscle areas (32·6 v. 35·7 (s.e. 0·71) cm2, P < 0·01) than those given amino acid-supplemented diets. Subjective score for longissimus dorsi colour indicated that pigs on the high leucine diet had darker muscle than those on the low leucine diet. Intramuscular fat contents of the longissimus dors i muscle at the Wth/llth rib and the 3rd/4th lumbar vertebra and of the semimembranosu s muscle were increased by 19, 18 and 18 g/kg, respectively (P < 0·05), for pigs given amino acid-deficient compared with those given amino acid-supplemented diets. Dietary leucine level had no significant effect on intramuscular fat level. Pigs given the diets for 35, compared with 21, days had higher fat levels in the semimembranosu s muscle (52 v. 30 (s.e. 5·2) g/kg; P < 0·01) but not in the other two muscle locations studied. This study suggests that relatively short-term feeding of amino acid-deficient diets can produce substantial increases in intramuscular fat levels.

Tenderness and intramuscular fat content are key attributes for beef sensory qualities. Recently some proteomic analysis revealed several proteins which are considered as good biomarkers of these quality traits. This study focuses on the analysis of 20 of these proteins representative of several biological functions: muscle structure and ultrastructure, muscle energetic metabolism, cellular stress and apoptosis. The relative abundance of the proteins was measured by Reverse Phase Protein Array (RPPA) in five muscles known to have different tenderness and intramuscular lipid contents: Longissimus thoracis (LT), Semimembranosus (SM), Rectus abdominis (RA), Triceps brachii (TB) and Semitendinosus (ST). The main results showed a muscle type effect on 16 among the 20 analyzed proteins. They revealed differences in protein abundance depending on the contractile and metabolic properties of the muscles. The RA muscle was the most different by 11 proteins differentially abundant comparatively to the four other muscles. Among these 11 proteins, six were less abundant namely enolase 3 (ENO3), phosphoglucomutase 1 (PGK1), aldolase (ALDOA), myosin heavy chain IIX (MyHC-IIX), fast myosin light chain 1 (MLC1F), triosephosphate isomerase 1 (TPI1) and five more abundant: Heat shock protein (HSP27, HSP70-1A1, αB-crystallin (CRYAB), troponin T slow (TNNT1), and aldolase dehydrogenase 1 (ALDH1A1). Four proteins: HSP40, four and a half LIM domains protein 1 (FHL1), glycogen phosphorylase B (PYGB) and malate dehydrogenase (MDH1) showed the same abundance whatever the muscle. The correlations observed between the 20 proteins in all the five muscles were used to construct a correlation network. The proteins the most connected with the others were in the following order MyHC-IIX, CRYAB, TPI1, PGK1, ALDH1A1, HSP27 and TNNT1. This knowledge is important for understanding the biological functions related to beef tenderness and intramuscular fat content.
