The algorithm of the study that includes theoretical analysis and physical experiment was elaborated for the study of technological parameters of pectin containing raw material processing in the vegetable-milk forcemeats technology. The expedience of using carrot Shantenee, pumpkin Guiley and marrow Zolotinka as the sources of pectin substances in the technology of combined forcemeats on the milk base was grounded. Technological parameters of pectin containing raw material processing for realization of its target properties as an amendment and stabilizer of the structure in milk-vegetable forcemeats technology were theoretically grounded. The methods of determination of soluble pectin and protopectin content and also the methods of determination of рН medium were chosen. The methods of experiment planning and mathematical processing of experimental data were carried out using computer programs MS Excel 97 2003 and MatCAD. The influence of рН medium, temperature and duration of thermal processing of carrot, pumpkin and marrow on the process of accumulation of soluble pectin in them was studied. The formation technology of puree of the vegetables that have the increased viscosity and are not stratified at the storage and further use. Accumulation of soluble pectin that expresses the properties of structure stabilizer and favors the increase of vegetable puree viscosity causes the expedience of its use in milk-vegetable forcemeats technology. The use of vegetable puree in milk-vegetable forcemeats technology allows widen the assortment and provide the mutual enrichment of the receipt components of combined forcemeat masses with milk proteins, β-carotene, food fibers, vitamins and other functional ingredients.

One of the effective ways to intensify heat exchange processes in the bulk tank is organization of gas filtration through the tank. However, it is necessary to compare the positive effect obtained by reducing the heating time and, hence, the required amount of heat input with the resistance of the bulk tank, which affects the choice of equipment. The existing formulas for determining tank layer resistance, as a rule, have a limited application range due to a number of structural parameteres. Thus, obtaining the value of the aerodynamic resistance of bulk tanks of different structures is an important task for determining the amount of energy consumed for the organization of the filtration process. The work employed the data obtained in the experimental study of fluid filtration through a porous medium in the range of porosity values. The method of nonlinear regression analysis was used to approximate the desired dependence. Based on the data on the resistance of bulk tanks of different porosity obtained in the experimental study, the authors have derived an empirical polynomial dependence of the resistance of bulk tanks on the fluid mass flow rate and porosity. This equation can be applied for the filtration rate values from 2 to 8 m/s and porosity values from 0,345 to 0,888 regardless of the structural parameters of the bulk tank layer. The authors carried out mathematical modeling of the air filtration process through the tank by replacing the real structure with a fractal-like model. The obtained results allow optimizing the operating parameters of the equipment in thermal heating furnaces, and the presented dependence can be used to determine the aerodynamic resistance of bulk tanks, affecting the choice of traction equipment in the reconstruction of furnaces. The accuracy of the obtained results is determined by the experiment error, which does not exceed 7 %.

The U-shaped steel-concrete composite hollow waffle (CHW) floor is an innovative slender large-span floor composed of a thin slab and bidirectional orthogonal steel-concrete composite hollow beams. Large vibrations may occur under human excitations, and vibration guidelines for CHW floors are still lacking. Thus, this paper undertook a parametric and experimental study to explore the vibration performance of the CHW floors. First, the modal properties and vibration response under walking tests considering the varying frequencies and routes were obtained from the measurements, which validated the accuracy of the finite element analysis (FEA). Then, the influence of the structural parameters on the floor vibration was investigated by numerical modeling. The parametric study shows that the medium-sized long-span (MLS) (28[Formula: see text]m) CHW floors present the best vibration serviceability, the small-sized long-span (SLS) (14[Formula: see text]m) CHW floors vibrate substantially under walking excitation, and the large-sized long-span (LLS) (42[Formula: see text]m) CHW floors are vulnerable to resonance. Finally, this paper provides recommendations for design guidelines for CHW floors and indicates that controlling the span-to-height (SH) value and beam spacing (BS) at a small value are the most effective methods of vibration control.
