Sweet potato (Ipomoea batatas L.) is a new crop for soil and climatic conditions of Ukraine, the active implementation of which is hindered by the lack of recommendations on technological aspects of cultivation. One of the important technological measures for growing sweet potatoes is the use of soil mulching, which improves the water regime and regulates the thermal regime of the soil; prevention of weed growth and growth of sweet potato shoots to the soil. Thus, the aim of the research is to determine the efficiency of growing sweet potatoes in the Forest-Steppe of Ukraine by different methods of soil mulching. Field research was carried out on typical low-humus light loamy chernozem on loess loam. It was noted, that when growing sweet potatoes on ridges, the introduction of mulching the soil with black polyethylene film provides more active growth of the vegetative mass throughout the growing season (5.33 shoots/plant with a total length of 252.1 cm), while growing without ridges has a positive effect on plants growth due to the general absence of mulch (2.53 shoots/plant with a total length of 107.8 cm). The use of ridges and mulching the soil with black polyethylene film causes the yield of sweet potato tubers at 34.8 t/ha, while the mulching of the soil with straw, the yield was 18.3–21.9 t/ha, without mulching – 13.0–17, 1 t/ha. Mulching with black polyethylene film ensures the accumulation of vitamin C and starch in sweet potato tubers. When growing the culture on ridges by this method of mulching, the maximum level of vitamin C according to the experiment (4.78 mg/100 g) and starch (11.73 %) was noted. The introduction of mulching and ridge formation involves additional material and labor costs, but helps to reduce weed control and tuber digging costs. When growing sweet potatoes on ridges with mulching with black polyethylene film, the minimum additional labor costs for the formation of a unit of yield (1.95 man-minutes/kg of tubers) were noted, while without mulching and without ridges this figure was 6.76 man-minute/kg

The goal until the last day was to create a new sort with high indicators of productivity, adaptability and quality of grain on the basis of the directed selection process and comprehensive study of hybrid material on field and laboratory estimations. Creation of initial material with high productivity, adaptability and grain quality by directed selection and hybrid material comprehensive study is described. General scientific, special genetic, field, laboratory methods, morphological analysis and statistical methods were used in the research. Given that the weight of grain from 1 ear is a marker in breeding for high yield (r=0.53), the largest (50 %) positive transgressions were in F1 hybrids using new genetic plasma varieties. Among hybrid populations F2, F3 and F4, selection value is represented by hybrid populations 4971 and 4976, which have the lowest stress resistance (–16.1, –18.6) and variation (16.9, 19.9) and the highest genetic stability (50.0, 50.2) and homeostaticity (19.1, 14.3), respectively. Among Control, Preliminary and Competitive tests, lines UK2621/18 and UK9855/18 have high stress resistance (–4.7, –5.8), homeostaticity (1416.0, 1008.0) and low variability (2.6 %, 3.5 %), respectively. They are the most adaptive and malleable to average and adverse environmental conditions. Line UK1182/17, which in 2020 was submitted for consideration to the State variety testing as "Blahovishchenska" (Kiev, Ukraine), was created using the purposeful method of pedigree in each link of selection. It has high adaptability, resistance to lodging, major diseases, high average yield (90.8 c/ha), and grain quality – it is strong wheat (protein amount 13.5–14.0 %, gluten – 30–35 %). Pedigree is the most effective method of continuous individual selection, which allows creating source material with high productivity, resistance to disease and adverse environmental factors

The use of intra-varietal crossing is an important element to increase seed yield and improve a variety. The aim of the research was to identify the influence of different options of intra-varietal pollination of sweet pepper on seed productivity and other quantitative traits. It has been established, that re-pollination of sweet pepper within the variety in relation to self-pollination causes a reduction in the offspring of the period before fruit ripening by 3–7 days. For all options of pollination, there was also a significant increase in plant height by 7–8 cm, fruit weight by 7–16 g, the number of fruits on a plant by 2–6 units. Different methods of re-pollination of plants significantly affected fruit productivity, increasing it by 62–106 %, increased seed yield from one fruit by 28 %. Seed productivity of sweet pepper plants increased by 78–163 % when re-pollination was used. Options of using the pollen of different flowers (from 2–5 other plants) showed the greatest effect. This technique is one way to increase the yield of sweet pepper seeds

The work is aimed at the selection of linear samples of zucchini (Cucurbita pepo L. var. Giromontia Duch.) with increased complex resistance to abiotic factors of cultivation – zucchini yellow mosaic virus (ZYMV), powdery mildew, bacteriosis and other viral pathogens. Selection studies on choosing virus-resistant zucchini lines from the United Kingdom, Italy, the United States and Spain have identified a number of important correlations levels of resistance to ZYMV and to harmful microorganisms and viruses, belonging to other genera. The assessment of the resistance of the selected zucchini lines to the complex of studied diseases was performed on a 9-point scale of the classifier of the Council for Mutual Economic Assistance (CMEA). In total, during 2017–2019, 20 lines of zucchini were studied in the field. According to the complex resistance to all pathogens (zucchini yellow mosaic virus, green speckled mosaic, white mosaic and cucumber mosaic, bacteriosis and fusarium wilt), four lines have been identified – LZ 17-11, RVL-19, LZ 17-45 and LZ 17-49, which were resistant at the level of points 7 and 9 on the scale of CMEA. The possibility of selecting potentially resistant linear zucchini genotypes for ZYMV based on correlations with the manifestation of other diseases that occurred in the field has been confirmed. The highest level of correlation 0.59<rp<1.0) is observed when comparing the degree of powdery mildew development and symptoms of ZYMV (17 statistically confirmed values of the pairwise correlation coefficient or 80.95 %). A similar indicator for the pair “bacteriosis/ZYMV” is 14 statistically confirmed values of the pairwise correlation coefficient or 66.67 % (–1.0<rp<0.99), and for the pair “field viruses of other origin/ZYMV” – 11 values, which is 52.38 % (–1.0<rp<0.93). Zucchini samples were identified, in which statistically significant correlations were observed for all pairs of comparative traits. Among them, the variety-standard Chaklun and 4 more lines – LZ 17-1, LZ 17-8, LZ 17-50 and LZ 17-44 (–1.0<rp<0.92). The analysis of correlations shows a complex genetic organization of signs of resistance in zucchini lines to the studied pathogens and a high dependence of the manifestation of these signs on the response of the genotype of the line. One of the proofs of this experimental fact is that in all comparative pairs of indicators of the degree of development of certain diseases there are linear genotypes with both positive and negative values of Pearson correlation coefficients (rp). The high level of statistically significant correlations revealed gives grounds for wide use of correlation analysis in selection work for choosing lines potentially resistant to the complex of the most common diseases in vegetable agrocenoses

The aim of the work is to determine the color formation of multicomponent fruit and vegetable pastes and dried powder fractions at the stages of low-temperature pre-concentration and drying, as one of the factors, maintaining the quality of the products. In the production of organic plant semi-finished products an important factor is the implementation of high-quality technological operations, including heat and mass transfer, which affects the final organoleptic characteristics of products. It is important to take into account the color of raw materials at the stages of blending puree in the production of paste and powder semi-finished products, which requires the introduction of a unified method for assessing the color of raw materials at each stage of the technological operation. An analysis of traditional methods for determining color formation has been performed, as a result of which it has been found, that the most effective method of evaluation is digital, based on photo processing of the prototype. According to this method, the evaluation of color formation in the manufacture of semi-finished fruits and vegetables in accordance with the proposed recipes has been conducted. Color indices of multicomponent pastes and dried fractions based on them for three prototypes were obtained. The brightness of all samples of pastes is in the range - 36.4… 37.0 % with a purity of tone 64.7… 78.2 %, which corresponds to the reddish-orange color, was obtained. After drying the test samples of pastes to the dried fraction, it has been found, that the brightness, depending on the percentage of raw materials in a sample falls in the range of 30.5… 33.2 %, at that the coloration corresponds to colors from bluish-purple to bluish-red with a purity of tone within 34.7… 34.9 %. As a result of evaluation of organoleptic indicators, it has been found, that according to the presented research samples, the best indicators have a sample with 40 % of raw apples, 20 % of pumpkin, 30 % of cranberries and 10 % of hawthorn. The obtained research data will be useful in the development of methods for the production of semi-finished products from vegetable raw materials. The purpose of research was to make people aware about traditional foods of Nepal and use of cereals in traditional foods. Nepal, country is home for people of many races, ethnicity and religion. This country is rich in natural beauty and traditional beliefs and practices. In Nepal, the primary occupation of many people is agriculture. Cereals like finger millet, buckwheat etc. are among the underutilized crops in this country. Nepal is rich in traditional and indigenous foods because of the richness in ethnic diversity. During the research we came to know that traditional food is attached to emotional and cultural level for the old generational residents of this country, but this trend seems to be decreasing in today’s generation due to Western culture influence and modernization. During preparation the process followed was still same as followed decades ago. The advancement in food technologies can be followed by the advancement in traditional foods for their own benefits. We should protect and promote our traditional foods, as it is deeply rooted with our cultural aspects; which results in preservation of culture and traditions. This article is about the use of cereals in traditional food of Nepal and their preparation process

The article presents a scientific study of the functional and technological properties of hydrocolloids, namely thickeners of polysaccharide nature, which are used as thickeners and stabilizers in dessert products. According to the monitoring of literature sources and the experience of manufacturers, the most commonly used thickeners of polysaccharide nature are carrageenan, locust bean gum, xanthan gum, pectin, starch, etc. However, each of these polysaccharides has both positive and negative sides, more polysaccharides are able to form dense gels, but with a high synergistic effect. Thickeners, such as k-carrageenan, low-esterified pectins, can form gels only in the presence of Са2+. There are also polysaccharides that form gels only at low temperatures and are not stable during external factors (temperature of sale and storage, mechanical impact, etc.). Therefore, the study was conducted on the combination of polysaccharides in order to obtain creams with an airy gel-like structure. It has been determined, that it is expedient to use the combination "xanthan gum 0.75 % – locust bean gum 0.5 %" to obtain cream

The results of a field experiment to study the effect of seed treatment with the biological product Rhizoactive (сompany BioNorma, Ukraine) on the formation and functioning of the symbiotic apparatus of common bean (grain) plants are presented. The experiment examined six varieties of common beans (grain), included in the State Register of plant varieties suitable for distribution in Ukraine: Bukovynka, Halaktyka, Slaviia, Ros, Otrada, Nata. The influence of bacterial fertilizer based on nodule bacteria " Rhizoactive " on the indicators of symbiotic and grain productivity of these varieties of common beans was studied. It was found, that the maximum number and raw weight of active nodules in the studied varieties of common beans were formed in the flowering phase. A larger number of nodules, compared to the variety Bukovynka (control), was formed on the root system of bean varieties Ros, Otrada and Nata. The maximum raw weight of rhizobia in the plots without the use of Rhizoactive was formed by the common bean variety Otrada – 0.297 g/plant of active nodules. Inoculation of the seeds of the studied common bean varieties with Rhizoactive increased the raw weight of active nodules in the flowering phase by 0.016–0.042 g/plant. A larger mass of nodules, compared to the Bukovynka variety, was formed on the root system of Ros, Otrada and Nata beans. The maximum raw weight of rhizobia in areas without the use of Rhizoactive was formed by the variety of beans Otrada – 0.297 g/plant of active nodules. Inoculation of seeds of the studied varieties of beans with Rhizoactive increased the raw weight of active nodules in the flowering phase by 0.016–0.042 g/plant. The highest increase in grain yield from seed inoculation was obtained in 2018, which was more favorable in terms of moisture. Thus, the largest increase in grain yield from the use of Rhizoactive was provided by the varieties Halaktyka (0.14 t/ha or 5.7 %), Ros (0.15 t/ha or 5.5 %) and Otrada (0.22 t/ha or 7.7 %). On average, in 2018–2020, inoculation of bean seeds with Rhizoactive, depending on the variety, provided an increase in grain yield from 2.4 to 6.7 %. And the highest level of bean grain yield on average in 2018–2020 was provided by the varieties Otrada (2.60 t/ha), Nata (2.50 t/ha) and Ros (2.40 t/ha) for inoculation of seeds with Rhizoactive

The aim of the research was to determine the crop productivity, yield of tubers of seed fraction and infection of basic potato seeds with viral infection depending on the period of potato desiccation, application of mineral oil Sunspray, the number and species of winged aphids in the Polissia region of Ukraine. The study was conducted in the prebasic seed production nursery garden of the Institute for Potato Research, NAAS under the conditions of spatial isolation from the main sources and vectors of viral infections of potatoes, located in Nemishaieve, Borodiаnka distr., Kyiv region in the southern part of the Polissia region of Ukraine. The subject of the research is pre-basic and basic seed material of potatoes of mid ripening varieties Myroslava, Predslava, Alians. On average for 2018-2020 years of studies, the highest seed yield was obtained by potato desiccation 10 days after flowering of potatoes - 82.4-85.3 %. However, the level of total and seed yields was low. The efficiency of seed potato production increased with the haulm removal after 20 days - with the total yield depending on the variety 20.6-30.0 t/ha, the yield of seed tubers was in the range of 20.6-22.9 t/ha with the seed content in the crop structure - 71.0-76.3 %. Late haulm removal – on 30th and 40th days after potatoes flowering caused an increase in the yield of tubers of non-standard fraction, with desiccation on 30th day, the seed content in the crop decreased by 61.1-66.0 %, and with desiccation on 40th – by 54-59.8 %. Thus, during the early haulm removal, part of the crop was lost, which during haulm removal in the late stages consisted of large tubers. It has been found out, that potato plants, where the haulm removal during 2018, 2019 was carried out within 10 days after flowering, which was 4.0 % (9.0 % for the check) for the Myroslav potato variety, 3.0 % (10.0 % for the check) for the Predslava potato variety and 4.0 % (9.0 % for the check) for the Alians potato variety were the least infected with PVM. The level of PVM infection when removing the haulm on the 10th day after flowering with the application of Sunspray mineral oil at a rate of 6.0 l/ha decreased on average for the three varieties by 1.5–2.5 %. The best option to preserve the quality characteristics of seed potatoes was to desiccate the potato haulm on 20th day after flowering of potato varieties Myroslava, Predslava and Alians and the application of mineral oil Sunspray - 6.0 l / ha. The yield was 28.8-30.0 t/ha, seed fraction 20.6-22.9, seed yield - 71.0-76.3 %, viral PVM infection was 2.0 3.0 %

Relevant in the selection of each crop, including watermelon is a comprehensive study of the source material to identify sources of valuable traits and include them in the selection process in order to expand the genetic diversity of the culture. According to the results of research, to create a new source material for heterosis selection of watermelon, screening and monitoring of the vegetation period duration (number of days from germination to ripening) and its components 118 (101 varieties, 17 hybrids) genotypes of watermelon in the forest-steppe of Ukraine have been conducted. Research methods are generally accepted: field experiment, observation, accounting, analysis, statistical. According to the results of determining the duration of the components of the vegetation period, the samples were divided into five groups of ripeness: early (65–80 days) – 80 (68 %), medium-early (81–85 days) – 14 (12 %), medium (86–95 days) – 18 (15 %), medium-late (96–105 days) – 4 (3 %) and late (106 days) – 2 (2 %). Variety-samples, selected by morphological and economically valuable characteristics, belong mainly (80 %) to early and medium-early. Only 6 % of genotypes belong to the medium-late and late-ripening groups. 52 samples with the smallest separate interphase periods were isolated. According to the results of the research, 8 sources with the high early ripeness were identified, the vegetation period of which was 66–70 days: Yellow early 108105 (66 days), Karapuz 108109, Surprise 108121 (67 days), Gift of the sun 108109, Lezheboka honey 108116, Thailand №1 108153 ( 69 days), Sweet Diamond 107874, Northern Lights 108127 (70 days). Sources are involved in the selection process
