The purpose of this study was to determine the physical and organoleptic qualities of milk-based caramel with variations in the use of pineapple (Ananas comosus (L) Merr.). The design of this study used a completely randomized design (CRD) with five treatments and four replications. The tested treatments include milk-based caramel, which was processed with pineapple juice at T0=0%; T1=5%; T2=10%; T3=15%; T4=20%. The research variables included physical quality testing consisting of water content and crude fiber content, further testing of texture, color, and panelists' preference as organoleptic parameters tested using sensory tests. The observations obtained will be processed using analysis of variance (ANOVA) with a level of 5% and will be further tested using Duncan's Multiple Range Test (DMRT) if it shows a significant effect. Based on the results of analysis of variance (ANOVA), the variation in various treatments with the addition of pineapple fruit in the milk-based caramel processing showed a significant effect (P<0.05) on the physical quality of caramel (crude fiber content and water content) and organoleptic quality (texture, color), and preference) on milk-based caramel products. The percentage of crude fiber content is 0.35%-4.50%; moisture content 10.15%-15.63%; texture score is hard to not hard; the color score is light brown to brown and liking score is slightly like to like. The conclusion of this research was the addition of pineapple affects crude fiber content, milk caramel water content, texture, color, and milk caramel preference.

The purpose of this research was to know the effect of germination time of millet (Panicum milliaceum) on the characteristics of flakes and to know the right germination time of millet on the characteristics of flakes. The experimental design used was completely randomized design with the germination time of millet treatment, namely 24 hours (T1), 48 hours (T2), 72 hours (T3), 96 hours (T4), and 120 hours (T5). The treatment was repeated 3 repetitions then obtained 15 units of the experiment, the data obtained from the result were analyzed by variance and if the treatment had an effect on the variable then continued with Duncan test. The results showed that the germination of millet had significant effect to water content, ash content, protein content, fat content, crude fiber content, tannin content, taste level (hedonic test), and overall acceptance of flakes. 120 hours germination time of millet had the best characteristics with water content 1,36%, ash content 2,65%, protein content 9,93%, fat content 7,86%, carbohydrate content 78,20%, crude fiber content 5,93, tannin content 0,31%, color liked, flavor liked, texture crispy and liked, taste liked  and overall acceptance liked.

This research aims to determine the comparison effect of coconut pulp flour with grated cassava on the characteristics of klenyem cake, and to find out the exact ratio of coconut flour and grated cassava so as to produce the best characteristics of klenyem cake. The experimental design used Completely Randomized Design (CRD) with treatment of coconut pulp flour and grated cassava ratio consist 6 levels : 20% : 80%; 30% : 70%; 40% : 60; 50% : 50%; 60% : 40%; 70% : 30%. Each treatment was repeated 3 times so obtained 18 experimental units. The parameters observed were water content, ash content, protein content, fat content, carbohydrate content, crude fiber content and the sensory test of the klenyem cake.The data obtained were using Analysis of Variance (ANOVA) and if the significant effect to the variables, followed by The Duncan Multiple Range Test (DMRT). The results showed that the comparison of coconut pulp flour and grated cassava have a significant effect on the water content, ash content, protein content, fat content, carbohydrate content, crude fiber content, color and texture (scoring), aroma, taste and overall acceptance (hedonic). Comparison of coconut pulp flour with grated cassava 40%: 60% has been able to produce the best characteristics of klenyem cake. The parameter results of 40% coconut pulp flour with 60% grated cassava that is water content 32.54%, ash content 1.78%, protein content 2.85%, fat content 33.72%, carbohydrate content 33.61%, crude fiber content 21.62%, yellow color, soft texture, aroma liked, taste liked and overall acceptance liked.

Comparison of fig leaves with stevia leaves and drying time were evaluated for their effect on the quality of fig leaf teabags. The study was designed using a factorial completely randomized design with 2 factors: the ratio of fig leaves to stevia leaves (D) and drying time (P). The results of the analysis showed that the ratio of fig leaves and stevia leaves had a very significant effect on the water content, total sugar, and total phenol and had no significant effect on the crude fiber content. Drying time has a very significant effect on water content, total phenol, and crude fiber content, and has no significant effect on total sugar. The interaction between the 2 factors gave a very significant effect on the total phenol. The best fig leaf tea formulation is 95% fig leaf: 5% stevia leaf and 120 minutes drying time with antioxidant activity content of 23.81 g/mL.

The amount of fibre consumption in Indonesia is lower than recommended by WHO.  The use of nypa flour as wheat substitution in biscuit formulation is able to increase fibre content in biscuit.  The aims of this research were to determine the effect of Nypa fruticans flour to the physicochemical and sensory properties of high-fiber biscuit. This research used a completely randomized design (CRD) with the concentration of Nypa fruticans flour (0, 10, 20, 30, 40, 50, and 60%) as the treatments.  Data was analysed by ANOVA and DnMRT at 95% confidence level. The result showed that Nypa flour had 10% water content , 3,18% crude fiber content and color characteristic L * = 87,57; a * = -3,33; and b * = 20,17. The concentration of Nypa flour significantly affect water and crude fiber content, color characteristic, crispyness and grit, but did not significantly affect hardness, spread ratio, color (sensory), taste, aroma, overall acceptance and multiple comparison.  The concentration of  40% nypa flour  was the best treatment to produce high-fiber biscuit with 2,78% water content, 1,47% crude fiber content, hardness 1301,3 gF, spread ratio 5,15, color characteristic (L * = 75,51; a * = 0,18; b * = 30,00), color description (brownish yellow), slightly crunchy, rough, taste (rather liked), aroma (rather liked), and overall acceptance (rather liked).  Multiple comparison tests showed that the biscuit  favored by panelists similar to the reference biscuit.

This research aims to identify the effect of apple peels puree consentrations on the characteristics of pineapple fruit leather and to identify the right consentration of apple peels puree to produce pineapple fruit leather with the best characteristics. This research used randomized block design with one treatment factor of the addition of apple peels with the consentrations of 5%, 10%, 15%, 20%, 25% and 30%. Each treatment was repeated 3 times, resulting in 18 experimental units. The data were then analyzed with Analysis of Variance method and if the treatment had an effect on the variable, the Duncan test were performed. The results showed that apple peels had significant effect to crude fiber content, antioxidant activity, vitamin C, color, texture and overall acceptance of pineapple fruit leather. The addition of 30% apple peels puree consentration resulted in the best characteristic under the following criteria: 10.73% water content, 8.33% crude fiber content, 2.55% antioxidant activity with the IC50 value, 3.03 mg AAE/g vitamin C, brown to yellow and indifferent color, texture flexible and rather liked, flavor and taste rather liked, and overall acceptance liked.

This research aims to determine the comparison effect of mackerel with jackfruit seeds on the characteristics of nuggets, and to find out the exact ratio of it’s to produce the best characteristics of fish nuggets. The completely Randomized Design (CRD) was used in this treatment with mackerel and jackfruit seeds ratio as a treatment consist 6 levels : 100%: 0%; 90%: 10%; 80%: 20 ; 70%: 30%; 60%: 40%; 50%: 50%. Each treatment was repeated 3 times to obtain 18 experimental units. The data obtained were analysis ANOVA and if variance nuggets effect to the variables, followed by The Duncan Multiple Range Test (DMRT). The results showed that the comparison of mackerel and jackfruit seeds give a significant effect to the water content, fat content, protein content, carbohydrate content, crude fiber content, hardness, taste (hedonic), texture (hedonic and scoring), and overall acceptance (hedonic). The 50%: 50% ratio of mackerel with jackfruit seeds produces the best characteristics of the product,contain (32,92% water content, ash content 1,90%, fat content 17,63%, protein content 4,65%, carbohydrate content 42,87%, crude fiber content 10,14%) taste liked, aroma liked, texture and overall acceptance liked.

This research aimed to determine the addition of lesser yam flour on water content, texture, crude fiber content, and reducing sugar content of donut made from wheat flour. This research was arranged using completely randomized design with 5 treatments and 4 replications consisted of 5 different lesser yam flour concentrations (0–30%) from total flour that had been used. Water content, texture, and crude fiber content were analyzed using Analysis of Variance (ANOVA) at 5% significance level and reducing sugar content was analyzed using regression equation. The result showed the addition of lesser yam flour can reduce water content. However, it can increase texture, crude fiber content, and reducing sugar content. As conclusion, the concentration of lesser yam flour affected the water content, texture, crude fiber, and reducing sugar in donut.

ABSTRACT          The Aim of this research was to determine the effect of addition of snakehead (Channa Striata) and seaweed (Sargassum sp.) meat on chemical and organoleptic composition with sensory analysis parameters (appearance, aroma, taste, color, texture) and chemical test (moisture, protein, carbohydrate, fat , and crude fiber content). This research  used a Completely Randomized Design (CRD) consisting of three treatments, namely P1 (milk fish and seaweed Sargassum sp. 20%), P2 (cork and seaweed Sargassum sp. 30%) and P3 (milk fish) and Sargassum sp. 40% seaweed) and repeat 3 times. The gathered were analyzed using ANOVA (Analysis of Variance) at the 95% level, if there were significant differences (P> 0.05) then a further test was carried out by the DMRT (Duncan Multiple Range Test) at 95% significant level. The results showed that the addition of milk fish  and seaweed fish from Sargassum sp. Brownies had no significant effect on sensory values which include appearance, color, taste, and texture, but sensory aroma had a significant effect. Based on the results of research on brownies with the addition of cork and seaweed Sargassum sp. The best treatment for sensory test in treatment P3 had 3.56 appearance value, 3.48 texture, 4.02 aroma, the best treatment for taste in P2 treatment is 3.08, and the best treatment for color in treatment P1 is 4, 44. The best treatment for chemical tests was found in treatment P3 with a moisture of 40.29%, carbohydrate 47.49%, protein 17.89%, fat 28.99%, and crude fiber content 27.73%. Keywords: brownish, chemical composition, sensory value, snakehead (Channa striata),ABSTRAKTujuan penelitian ini untuk mengetahui pengaruh penambahan daging ikan gabus (Channa Striata) dan rumput laut (Sargassum sp.) terhadap komposisi kimia dan organoleptik dengan parameter uji sensori (kenampakan, aroma, rasa, warna, tekstur) dan uji kimia (kadar air, kadar protein, kadar karbohidrat, kadar lemak, dan kadar serat kasar). Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari  tiga perlakuan yaitu P1 (daging ikan gabus dan rumput laut Sargassum sp. 20%), P2 (daging ikan gabus dan rumput laut Sargassum sp. 30%) dan P3 (daging ikan gabus dan rumput laut Sargassum sp. 40%) dan ulangan sebanyak 3 kali. Data hasil pengamatan dianalisa menggunakan ANOVA (Analysis of Variance) pada taraf  95%, apabila terdapat beda nyata (P>0,05) maka dilakukan uji lanjut dengan uji DMRT (Duncan Multiple Range Test) pada taraf nyata 95%. Hasil penelitian yang diperoleh menunjukkan bahwa penambahan daging ikan gabus dan rumput laut Sargassum sp. terhadap brownis memberikan pengaruh tidak nyata terhadap nilai sensori yang meliputi kenampakan, warna, rasa, dan tekstur tetapi pada sensori aroma memberikan pengaruh nyata. Berdasarkan hasil penelitian brownis dengan penambahan daging ikan gabus dan rumput laut Sargassum sp. diperoleh perlakuan terbaik uji sensori pada perlakuan P3 dimana memiliki nilai kenampakan 3,56, tekstur 3,48, aroma 4,02, sedagkan perlakuan terbaik untuk rasa pada perlakuan P2 yaitu 3,08, dan perlakuan terbaik untuk warna  pada perlakuan P1 yaitu 4,44. Perlakuan terbaik pada uji kimia terdapat pada perlakuan P3 dengan nilai kadar air 40,29%, karbohidrat 47,49%, protein 17,89%, lemak 28,99%, dan serat kasar 27,73%.Kata kunci:  brownis, ikan gabus (Channa striata), komposisi kimia, nilai sensori.

This aims of this research was to know the effect of comparison between green bean flour and wheat flour on characteristic of analogue meatball and to know the right comparison of green bean flour and wheat flour to produce analogue meatball with the best characteristics. The design used in this research was completely randomized design (CRD) with the comparison between green bean flour and wheat flour i.e. (70 g :30 g), (60 g :40 g), (50 g :50 g), (40 g :60 g), and (30 g :70 g). Data were analysed by analysis of variance, followed by Duncan test. The result of this research showed that the comparison between green bean flours and wheat flour had no real effect on water content and aroma of analogue meatball, but significant effects were found on ash content, protein content, fat content, crude fiber content, texture, sensory characteristic such as color, flavour, texture, and overall acceptance of analogue meatball. The best characteristic of analogue meatball was comparison between green bean flour and wheat flour 30 g : 70 g i.e. 59.00 percent of water content, 1.34 percent of ash content, 6.88 percent of protein content, 1.77 percent of fat content, 1.77 percent of crude fiber content, level of elasticity 6.38 N, color (liked), aroma (neutral), texture (liked) with chewy characteristics, with the taste is rather not typical of green beans and liked, and overall acceptance (liked).

This study aims to determine the effect of wheat flour ratio with corn sprouts flour on the characteristics of flakes produced and the exact composition of wheat flour with corn sprouts flour that is able to produce flakes with the best characteristics. The experimental design used was Completely Randomized Design with treatment factor that is the comparative treatment of flour with corn sprouts flour which consist of 5 levels: 50%:50%; 40%:60%; 30%:70%; 20%:80%; 10%:90%. The treatment was repeated 3 times to obtain 15 units of experiment. The data obtained were analyzed by variance and if the treatment had an effect on the observed variable then continued with Duncan test. The comparison of wheat flour with corn sprout flour significantly affected water content, ash content, fat content, protein content, carbohydrate content, coarse fiber content, tensile strength, color (hedonic test), aroma (hedonic test), texture (hedonic test and scoring ), taste (hedonic test) as well as overall acceptance (hedonic test) flakes. Comparison of 30% wheat flour : 70% corn sprouts flour produces flakes with the best characteristics, namely: water content was 2.94%, ash content was 2.99%, fat content was 11.60%, protein content was 14.40%, carbohydrate content was 68.08%, crude fiber content was 6.25%, tensile strength was 4.24 N, color liked, aroma some liked, texture crispy and liked, taste liked and overall acceptance liked.
