Biological active compounds and valuable characteristics of some apple varieties and candidates were measured in our trials. Fruits of ’Rosmerta’, ’Hesztia’, ’Cordelia’ and ’Artemisz’ are recommended to enrich the Hungarian assortments for fresh consumption and choice of new tastes. Based on examined parameters it can be assumed that novel Hungarian resistant varieties are suitable for juice and fruit concentrate production, and due to high pectin content of their remaining pomace these varieties can be raw material of pectin production as well as they are also suitable for jam production mixed with other fruit species. Furthermore, functional food industrial product having high quality can be produced by using novel resistant varieties because of their high pectin and polyphenol content. Beside of their high market value their suitability for growing among orchard conditions is confi rmed by lower costs of production because of less plant protection treatments.

Three apple varieties, Atlas, Erstaa, and Dolgo, were studied for their suitability for juice production and for the effect of polyphenols and added ascorbic acid on the juice quality. The Atlas and Erstaa varieties were found to be very suitable as raw material for apple juice production. The juices of Atlas were best in quality but they were sensitive to browning while Erstaa juices were not. The juices of Dolgo were considered too tart, but with an exceptionally interesting flavour. Dolgo juices could probably be used in mixtures together with sweeter apple varieties. Ascorbic acid could be used to prevent browning or to stop it to the desired degree and to stabilize the colour of the juice. The second alternative was found to be better because light brownish apple juices are generally preferred. The browning of apple juice was influenced not only by the polyphenolase activity and the polyphenol concentration but also by the type of phenolic compounds. In this respect proanthocyanidins and flavanols were most significant.

The Pikad Tri-phol-sa-mut-than (TS) remedy, a Thai traditional medicine, is officially recorded in Tamra Paetsart Sonkrau Chabub Anurak for its capabilities in treating kidney deficiency. TS remedy is composed of three fruit species—Aegle marmelos (L.) Corrêa., Coriandrum sativum L., and Morinda citrifolia L.—in an equal part by weight. The quality of the raw material is one of the essential factors that can affect the effectiveness and safety of treatment by herbal remedy. The pharmacognostic evaluation and DNA barcode of the three fruit species and TS remedy were performed in this study to authenticate them from contamination, and to provide the scientific database for further uses. Macroscopic and microscopic examination, chemical profile by TLC, and DNA barcoding were employed to positively identify the raw materials bought from the herbal market, especially the powder form. Consequently, the outcomes of this investigation can be used to develop an essential and effective tool for the authentication of crude drugs and herbal remedies.

The polyphenol content of cocoa beans and the products derived from them, depend on the regions in which they are grown and the processes to which they are subjected, especially temperature. The aim of the study was to compare the total content of polyphenols and antioxidant activity of chocolates obtained from roasted and unroasted cocoa beans. The chocolates produced from each of the six types of unroasted beans and each of the five types of roasted beans were investigated. The seeds came from Ghana, Venezuela, the Dominican Republic, Colombia and Ecuador. The highest total polyphenol content was determined in cocoa beans originating from Colombia and in the chocolates obtained from them. A higher content of total polyphenols was found in unroasted cocoa beans, which indicates the influence this process had on the studied size. The ability to scavenge free DPPH radicals was at a high level in both the beans and the chocolates produced from them, irrespective of the region where the raw material was grown. A positive correlation between the total polyphenol content and the ability to scavenge free radicals was found.

AMINO-1,2,4-TRIAZOLES AS A RAW MATERIAL FOR THE FINE ORGANIC SYNTHESIS INDUSTRY (REVIEW) © V.N. Nazarov, PhD in technical sciences, D.V. Miroshnichenko, Doctor of Technical Sciences, A.A. Ivakh, B.V. Uspensky (NTU "Kharkov Polytechnic Institute", 61002, Kharkov, Kirpicheva st., 2, Ukraine) The review summarizes the information on the industrial use of 3- and 4-amino-1,2,4-triazoles - the basic raw material for the industry of fine organic synthesis. 3 and 4-substituted amino-1,2,4-triazoles have been used for a long time in the production of agricultural products, pharmaceuticals, dyes, high-energy materials, and anti-corrosion additives. Less well known is their use for the production of analytical reagents, flotation reagents, as well as for the production of heat-resistant polymers, products with fluorescent properties and ionic liquids, which are used in applied sciences, biotechnology, energy, and chemistry. The purpose of this communication is to consider in detail the participation of 3- and 4-amino-1,2,4- triazoles in the production and use of various agricultural and medical products. Descriptions and schemes of chemical reactions of existing production methods for the synthesis of 3- and 4-amino-1,2,4-triazoles, as well as some methods of obtaining these substances in laboratory conditions, are given. The two main areas of use of these amines and their derivatives: agriculture and medicine have been highlighted. It is shown that one of the most well-known branches of widespread use of 3- and 4- amino-1,2,4-triazoles in agriculture is the production of plant protection products. On the basis of these substances, the mass production of various insecticides, fungicides, plant growth regulators, retardants (means for suppressing the growth of stems and shoots), inhibitors of nitrification of nitrogen fertilizers is organized. The use of these amines in medicine consists in the production of known drugs on their basis, such as furazonal (has a pronounced antimicrobial effect, is effective against Staphylococcus aureus, dysentery bacteria, salmonellosis), thiotriazoline and cardiotril (cardiological drugs with anti-ischemic and membrane stabilizing effects) (platelet growth factor antagonist). The purpose of these studies is to assess the adaptive resistance of the apple tree to winter stresses in terms of physiological and biochemical parameters, to identify the most resistant varieties for cultivation in the Krasnodar region. Objects of research are apple varieties of various origins: Orfey, Idared, Ligol, Prikubanskoe. It was found that the cryoprotective function of water-soluble sugars was maximally manifested in the varieties Orfey and Ligol, their content increased by 2.56 and 2.7 times, respectively. Soluble proteins made the greatest contribution to the formation of a protective response in Orfey and Prikubanskoye varieties in January, their content increased 1.8 and 1.9 times, respectively, compared to December. The protective function of anthocyanins was maximally manifested in December in the Orfey variety, in the bark of which their content increased by 5.6 times. Physiological and biochemical adaptation of apple varieties to low negative temperatures of the winter period is achieved by increasing the content of water-soluble sugars, proteins in anthocyanins in the bark and buds. According to the obtained data, the apple varieties Orfey and Prikubanskoye showed themselves to be more adaptive in comparison with other studied varieties and are recommended for cultivation in the Krasnodar region.

Passion fruit peel obtained after juice extraction was used for extraction experiments of pectin. The effect of pH, water to peel ratio, and number of extractions, extraction time and temperature on the yield and quality characteristics of pectin were investigated. The optimized conditions for extraction of pectin frompassion fruit peel yielded 2.5 g/100 g of fresh peel.Powder pectin extracted from the fresh peels had pectin content of 95 %. The average degree of esterification of pectin was found to be 35-45 % and did not contain pathogenic microorganisms so it is suitable as a raw material for pectic oligosaccharide (POS) production
