The article presents the results of research on the determination of rational technological parameters for the production of culinary products using dry mixtures and emulsions based on animal raw materials for additive technologies. It was found that when making products using mixtures and emulsions based on broiler chicken meat, as well as a combination of broiler chicken meat and pork, pork and beef (ratio 1:1) rational height of the layer, which makes it possible to ensure stability and safety of the product shape (with a fixed diameter of the opening of the culinary syringe – 7 mm and the optimal length of the layer - 100 mm), is from 14–21 mm (with a layer width of 7 mm) and up to 133–154 mm (with a layer width of 98 mm), which allows for improved structural and mechanical (SSL – 1090.7–1099.9 Pa) and functional and technological indicators of these products (WHC – 92.7–97.5%). The rational sequence of application and the duration of chopping of the main and auxiliary raw materials for the manufacture of emulsions, the duration of preparation (3 minutes), the degree of hydration (1:2 – 1:3) and the temperature of water for the reduction of dry mixtures (60±1° C) were established, which made it possible to develop technological schemes for the production of culinary products using additive technologies.

The article presents the results of research on the determination of rational technological parameters for the production of chopped semi-products using emulsions from collagen-containing raw materials fermented by bacteria of the genus Lactobacillus. Water dosages are installed in the composition of chopped semi-finished products: 12% – with emulsions from pork skin and tails and 11% - with emulsion from connective tissue. Duration of ingredients mixing (5 minutes), sequence of raw materials laying during manufacture of articles, as well as duration of heat treatment of chopped semiproducts is determined: 25 minutes – during steaming (t = 95–100 °С), 20 minutes – during baking (t = 180 °C), 15 minutes – during frying (t = 110 °C), while recommended methods of bringing semifinished products to culinary readiness are steam treatment and baking, which allow for improved functional and technological (TUS – 79.3-81.8%, weight loss during heat treatment – 5.1–7.9%), structural and mechanical (PNS - 1413.9–1470.4 Pa) and organoleptic indicators (juiciness, appearance, consistency, taste, smell) of these products (9 points according to the 9-point system).

Determination of reliable values of filtration parameters of productive strata is the most important task of monitoring the processes of developing reserves. One of the most effective methods for solving the problem is hydrodynamic testing of wells using the pressure recovery method, as well as modern methods - the pressure stabilization method and the method based on production analysis (Decline Analyze). This article is devoted to the assessment of the reliability of these three methods in determining the filtration parameters of terrigenous and carbonate productive deposits of oil fields in the Perm Krai. To solve the problem, multivariate regression analysis was used. A series of multidimensional mathematical models of well flow rates was built using filtration parameters determined for each of the methods. It is proposed to consider the filtration parameters included in the models with the maximum statistical estimates of performance as the most reliable. With regard to the fields under consideration, it was found that in terrigenous reservoirs, all three methods demonstrate stable results. In carbonate reservoirs, reliable values of filtration parameters are determined by processing pressure build-up curves. Pressure stabilization and production analysis methods show less robust results and require additional research in order to develop sound recommendations for their practical application. The cultivation of seedlings in forest tree nurseries for reforestation and afforestation is an important task of forestry. For sowing seeds of coniferous species in forest nurseries seeder with coil sowing machines are used, which do not provide the desired uniformity of seeding and damage seeds when sowing. Pin sowing machines allow you to eliminate these drawbacks, so research process is interested for forestry. As a result of the research of the process of sowing seeds of conifers by sowing machines with pin metering apparatus, formulas for determination of its angular velocity and rotational speed of the drive of furrow making roller. Formulas to determine seeding rate are proposed, taking into account constructive parameters of seeding machine and size of pins. It is noted that the increase in height and width of pins and also fill factor and number of rows of pins leads to the increase in standards; and increase in gear ratio of the actuator causes its decrease. Uneven supply of seed increases with increased size of pins, so thickness of pins is recommended to be minimum one, taking into account its sufficient strength. Conducted analytical research of the process of work of pin sowing unit enabled to obtain the necessary expressions for calculating structural and technological parameters of the forest sowing machine for sowing seeds of coniferous species in forest nurseries.

ISO organization (https://www.iso.org) in early 90s defined an industry standard for the communication protocol among electronic devices of different manufacturers of agricultural machines. After that, all of the market actors recognised that this technology would be very important for agricultural electronics. The appearance of ISOBUS products in the market was in the mid-2000s. ISOBUS description could be found in ISO-11783 (https://www.iso.org). Through the standards and the related technical background, the production processes and the operations could be followed and monitored by the extensive Data Management. Farmers' and users legitimate needs and developing goal is to elaborate a decision support systems that follow-up the utilisation of the machines and ensure the quality of operations. For this purpose, it is essential to determine which technical, economical, technological parameters detection, measurement, transmission, processing, and evaluation becomes necessary. In our work, we reviewed which mechanical characteristic, settings are monitored within the ISOBUS system by the major machine manufacturers. We developed the system of parameters and derived features that provide effective farm-, and land-management in case of attached equipment for spreading of input materials, plant protection and tillage implements.

The algorithm of the study that includes theoretical analysis and physical experiment was elaborated for the study of technological parameters of pectin containing raw material processing in the vegetable-milk forcemeats technology. The expedience of using carrot Shantenee, pumpkin Guiley and marrow Zolotinka as the sources of pectin substances in the technology of combined forcemeats on the milk base was grounded. Technological parameters of pectin containing raw material processing for realization of its target properties as an amendment and stabilizer of the structure in milk-vegetable forcemeats technology were theoretically grounded. The methods of determination of soluble pectin and protopectin content and also the methods of determination of рН medium were chosen. The methods of experiment planning and mathematical processing of experimental data were carried out using computer programs MS Excel 97 2003 and MatCAD. The influence of рН medium, temperature and duration of thermal processing of carrot, pumpkin and marrow on the process of accumulation of soluble pectin in them was studied. The formation technology of puree of the vegetables that have the increased viscosity and are not stratified at the storage and further use. Accumulation of soluble pectin that expresses the properties of structure stabilizer and favors the increase of vegetable puree viscosity causes the expedience of its use in milk-vegetable forcemeats technology. The use of vegetable puree in milk-vegetable forcemeats technology allows widen the assortment and provide the mutual enrichment of the receipt components of combined forcemeat masses with milk proteins, β-carotene, food fibers, vitamins and other functional ingredients.

The goal of the work. Investigate the influence of the relative position of the depth of processing with a chisel, the speed of movement of the unit and the distance between the cutting side discs on the lumpiness of the processed strip. Methods of research: analytical - quantitative determination of the quality of strip tillage; laboratory-field - for research, an experimental installation was completed with an MTZ-892 tractor and a section of the unit for strip tillage; statistical with generally accepted agronomic and economic methods. Results. Experimental studies of changes in the design and technological parameters of the unit for strip processing with the determination of lumpiness have been carried out. To study the main parameters, the depth of processing of the subsoiler (chisel) is taken from 13 to 27 cm, the distance between the cutting side discs is from 10 to 30 cm, the speed of the MTA is from 4 to 11 km/h. Unchanged parameters during the study: the distance from the axis of the front disc to the chisel is 50 cm, the distance from the chisel to the axis of the cutting side discs is 50 cm, the immersion depth of the cutting side discs is 10 cm. Experimental background is winter wheat stubble. Soil cultivation for winter wheat - deep (18 cm) disking, before that plowing to a depth of 25 cm. According to the research results, graphs of the dependence of lumpiness on the relative position of the chisel, cutting side discs and changes in the speed of the MTA were built. As the speed and distance between the side cutting discs increase, the lumpiness value decreases. Conclusions. Based on the results of the studies, the dependences of lumpiness on the relative position of the chisel and cutting side disks were obtained when the speed of the MTA was changed. It was determined that with an increase in the processing depth, the distance between the cutting side discs of 20 cm and the MTA movement speed of 7.5 km / h, a uniform increase in lumpiness is observed. The distance between the side cutting discs of 10 cm is not suitable for work.

Feed production, feeding of animals and poultry is an integral part of animal husbandry and poultry farming. Proper feeding of animals and poultry, which implies the making of an optimal diet with the input of useful premixes and vitamins, can increase their productivity. In Russia the predominant type of feeding is complete feed, which includes compound feed. Regardless of the type of feed in the process of its production, it is necessary to observe the proportions of its components. Dispensers are used for dosing, which depending on the purpose, are divided into mass and volume. We have made an attempt to generalize, systematize and implement the accumulated experience in the form of a scheme that allows us to understand the principle of operation of modern systems for dosing feed components, in which augers are used as feeding mechanisms. The purpose of the research was to build a scheme for selecting parameters and develop a methodology for studying the dosage system of feed components based on it. The results of the analysis of intellectual property protection documents and scientifi c works in the fi eld of dosing have been used to make a scheme for selecting parameters of the feed components dosing system. The results of observations on the operation of the developed system under production conditions and design features have been also taken into account. As a result of the research developed the scheme of selection of the operating parameters of the dosing system, revealed its shortcomings in the form of lower dosing accuracy with the decrease in the mass of the weighed components and the long search settings when composing the new diet. The methods have been developed to address the identifi ed defi ciencies in the determination of limit values of technological parameters.
