Increasing concerns about food quality and animal fat in the human diet have promoted research into the effects of different forage species on carcass quality and fat content. This trial investigated the effect on carcass composition and the intensity of sheep meat flavour and odour of five different pure pasture species: Grasslands Lancelot plantain (Plantago lanceolata), Grasslands Puna chicory (Cichorium intybus), Grasslands Huia white clover (Trifolium repens), Grasslands Nui high-endophyte perennial ryegrass (Lolium perenne) and Grasslands Goldie lotus (Lotus corniculatus). Although pasture species did affect meat quality and fat content, there appeared to be an inverse relationship with carcass weight: larger lambs had more fat, which was related to difference in body size and relative maturity rather that pasture species. Pasture species also influenced muscle ultimate pH, sheep meat odour, foreign odours, and flavours, but did not affect sheep meat flavour. Lamb performance was evaluated for three consecutive summer-early autumn periods on ryegrass (Lolium perenne), white clover (Trifolium repens), chicory (Cichorium intybus), plantain (Plantago lanceolata) or lotus (Lotus corniculatus). Lamb liveweight gains, fasted liveweights at slaughter and hot carcass weights tended to be highest on legumes and chicory and lowest on plantain and ryegrass. Greasy wool weights were significantly higher on lotus and white clover than on chicory, plantain and ryegrass. Greasy wool weight was significantly related to fasted liveweight (R2=0.94-0.99). Protein (%) in herbage accounted for 83-92% of the variability in animal performance; food intake accounted for 57-69% of the variability and was negatively correlated with hemicellulose and cellulose (R2=97.2 and 80.9%, respectively). Thus quality of feed was more important than intake alone in determining animal performance. The development of genetic markers and their application to farm animals has progressed rapidly, opening new prospects for identifying chromosomal regions that control quantitative traits (quantitative trait loci or QTL). However, there is less activity in QTL identification in sheep than in other livestock species. Surprisingly few QTL have been published for traits of direct relevance to sheep meat production, apart from studies of individual major genes such as the callipyge locus (Freking et al, 2002). This suggests there may be more QTL effects still to be found in sheep. Hence, this study aims to identify QTL for carcass composition and meat quality traits. This will provide a basis for targeting genomic regions to verify QTL in independent sheep populations.

The combined effects of age and genetics and Poll Dorset sire and growth path were studied in two separate experiments (n = 595 and 627, respectively). In the first experiment, containing genotype crosses typically used in Australia (Merino, Poll Dorset, Border Leicester) and sires selected for growth or muscling, sheep were slaughtered at 4, 8, 14 and 22 months. The second experiment used Poll Dorset sires selected for high muscling, fat or growth with progeny having two levels of nutrition postweaning. Border Leicesters expressed higher levels of carcass fat percentage and intramuscular fat and produced the heaviest carcass. Merinos had the lowest subcutaneous fat depth and highest carcass lean percentage when compared at the same age. The progeny of Poll Dorset sires selected for high muscling (PDm) expressed a shift toward glycolytic fibres relative to those from Merino sires, and PDm sires produced progeny with reduced spine and limb length and higher carcass muscle : mineral ratios, suggesting skeletal stunting. Genotype meat quality differences were minimal except that PDm sire topsides were tougher and Merinos produced higher pH meat. With age (4–22 months), lambs became heavier and fatter, fibres shifted towards oxidative and away from glycolytic, muscle myoglobin increased, the meat became darker and redder and tenderness declined. Early weaning had no effect on the time to reach slaughter weight, provided nutrition was not restricted. The sire genetics influence on the carcass composition far outweighed the effect of nutrition postweaning. Lambs on a restricted diet tended to have less acceptable meat quality but this was not evident in lambs from sires selected for high fatness. Sensory tenderness was improved and intramuscular fat was higher in lamb progeny from sires selected for high fatness.

Lotus corniculatus (Birdsfoot trefoil, 'Grassland Goldie') may have a role in dryland pastoral systems in New Zealand, but there is little information available on its production under sheep grazing in these conditions. Dry matter (DM) production of L. corniculatus was measured monthly for 2 consecutive years in a systems approach experiment comparing it with perennial ryegrass (Lolium perenne)/white clover (Trifolium repens) pasture in the Wairarapa on the east coast of the North Island. The total DM produced for 2 years was 8.5 and 10.5 t /ha for L. corniculatus compared with 7.3 and 9.9 t /ha for pasture. Also, the moderate concentration of CT (18- 29 g/kg DM) in L. corniculatus has been shown to increase sheep productivity (Wang et al. 1996ab; Min et al. 1999, 2001). This production advantage, combined with improved sheep performance, supports the potential use of L. corniculatus as a specialist forage in dryland areas. AbstractGenetic parameters for carcass composition and meat quality traits were estimated in Scottish Blackface sheep, previously divergently selected for carcass lean content (LEAN and FAT lines). Computerized X-ray tomography (CT) was used to obtain non-destructive in vivo estimates of the carcass composition of 700 lambs, at ca. 24 weeks of age, with tissue areas and image densities obtained for fat, muscle and bone components of the carcass. Comprehensive measures of meat quality and carcass fatness were made on 350 male lambs, at ca. 8 months of age, which had previously been CT scanned. Meat quality traits included intramuscular fat content, initial and final pH of the meat, colour attributes, shear force, dry matter, moisture and nitrogen proportions, and taste panel assessments of the cooked meat. FAT line animals were significantly (P<0·05) fatter than the LEAN line animals in all measures of fatness (from CT and slaughter data), although the differences were modest and generally proportionately less than 0·1. Correspondingly, the LEAN line animals were superior to the FAT line animals in muscling measurements. Compared with the LEAN line, the FAT line had lower muscle density (as indicated by the relative darkness of the scan image), greater estimated subcutaneous fat (predicted from fat classification score) at slaughter, more intramuscular fat content, a more ‘yellow’ as opposed to ‘red’ muscle colour, and juicer meat (all P<0·05). All CT tissue areas were moderately to highly heritable, with h2 values ranging from 0·23 to 0·76. Likewise, meat quality traits were also moderately heritable. Muscle density was the CT trait most consistently related to meat quality traits, and genetic correlations of muscle density with live weight, fat class, subcutaneous fat score, dry matter proportion, juiciness, flavour and overall liking were all moderately to strongly negative, and significantly different from zero. In addition, intramuscular fat content was positively genetically correlated with juiciness and flavour, and negatively genetically correlated with shear force value. The results of this study demonstrate that altering carcass fatness will simultaneously change muscle density (indicative of changes in intramuscular fatness), and aspects of intramuscular fat content, muscle colour and juiciness. The heritabilities for the meat quality traits indicate ample opportunities for altering most meat quality traits. Moreover, it appears that colour, intramuscular fat content, juiciness, overall liking and flavour may be adequately predicted, both genetically and phenotypically, from measures of muscle density. Thus, genetic improvement of carcass composition and meat quality is feasible using in vivo measurements.

The objective of Experiment 1 was to examine the diet selection and grazing preference of ewe lambs for plantain (Plantago lanceolata), chicory (Cichorium intybus), red clover (Trifolium pratense) and white clover (Trifolium repens). This was examined in a herb and legume sward mix containing plantain, chicory, red clover and white clover between seasons under both hard- and lax-grazing. During early spring, the sward predominately comprised plantain (63%) and chicory (21%) and ewe lambs grazed a greater proportion (P < 0.05) of these species and displayed greater (P < 0.05) grazing preference for plantain and chicory ahead of red and white clover. From late spring onward, ewe lambs had a greater (P < 0.05) defoliation rate and a greater (P < 0.05) grazing preference for red clover than for all other species. This greater selection of red clover was particularly evident in summer and autumn when red clover made a greater (P < 0.05) contribution to the sward composition (8–9%) and the overall sward nutritive value dropped. This supports previous evidence, suggesting that diet selection is intrinsically affected by availability, access and palatability. The objective of Experiment 2 was to determine whether ewe lamb grazing behaviour during late summer was affected by time since a pure plantain sward was previously grazed. Ewe lambs were observed while grazing plantain of varying weeks since previous grazing (3, 6,10 or 16 weeks). Experiment 2 found no difference (P > 0.05) in the average number of ewe lambs grazing each sward of varying weeks since previous grazing. However, ewe lambs grazed the 3-week-old plantain growth to a lower (P < 0.05) post-grazing sward height than the height of the swards of greater number of weeks since previous grazing. Organic matter digestibility and metabolisable energy content did not differ (P > 0.05) among all swards, regardless of weeks since previous grazing. This suggests that the palatability of plantain is not affected by the time since it was last grazed.

Bioactive forages such as chicory (Cichorium intybus) or tanniferous legume sulla (Hedysarum coronarium), have been reported to lower the parasite intensities or faecal egg counts (FEC) of parasitised ruminants (Waller and Thamsborg, 2004). To our knowledge, there is no report studying the effects of these forages on established worm populations when grazed in combination. This knowledge could guide us towards optimum grazing management using special forage species as de-worming paddocks. The aim of the present study was to use the bioactive forages alone or in combination for a short period to test their effects on established T. circumcincta adult population in sheep. The tested bioactive forages were chicory and sulla, with grass/clover (Lolium perenne/Trifolium repens) providing the control forage.

Salmonids are valuable fish in the human diet due to their high content of bioactive omega-3 very long-chain polyunsaturated fatty acid (VLC PUFA). The aim of this study was to assess the omega-3 VLC PUFA content in selected salmonid fish present on the food market regarding whether they were farm-raised or wild. It was assumed that farm-raised fish, by eating well-balanced feed enriched with omega-3 PUFA, might contain omega-3 VLC PUFA in levels similar to that of wild fish. Fat content, fatty acid composition and omega-3 VLC PUFA content in fish fillets were measured. Farm-raised salmon from Norway, wild Baltic salmon, farm-raised rainbow trout and brown trout were bought from a food market whereas wild trout (rainbow and brown) were caught alive. The fat content in fish ranged from 3.3 to 8.0 g/100 g of fillet. It was confirmed that although wild salmonid fish contain 10–25% more omega-3 VLC PUFA in lipid fraction, the farm-raised ones, due to the 60–100% higher fat content, are an equally rich source of these desirable fatty acids in the human diet. One serving (130 g) of salmonid fish fillets might provide a significant dose of omega-3 VLC PUFA, from 1.2 to 2.5 g. Thus, due to very high content of bioactive fatty acids eicosapentaenoic (EPA), docosapentaenoic (DPA) and docosahexaenoic (DHA) in their meat, salmonid fish currently present on the food market, both sea and freshwater as well as wild and farm-raised, should be considered as natural functional food.
