Many factors contribute to the stress of transporting broilers from the farm to the processing plant. Using a motion simulation machine, a total of 144 male broilers were employed to determine the effect of motion, vibration, and feed withdrawal during transportation on serum biochemical parameters, postmortem muscle metabolism, and meat quality of broilers. The results indicated that transportation did not affect the activity of lactate dehydrogenase, γ-glutamyl transferase, aspartate aminotransferase, creatine kinase, and glucose in the serum, glutathione peroxidase in the breast and thigh muscle, nitric oxide synthase (NOS) in the breast, and heat stress protein 70 mRNA expression level in the liver (p > 0.05). Serum triiodothyronine, thyroxine, and insulin concentration declined with 2 h transportation (p < 0.05) and recovered with 4 h transportation (p < 0.05). NOS concentration in the thigh increased with 2 h transportation (p < 0.05) and recovered with 4 h transportation (p < 0.05). Two-hour and 4 h transportation increased the activity of superoxide dismutase in both muscles. Malondialdehyde, lactic acid, and drip loss24 h in both thigh and breast muscles increased, and glycogen in both muscles decreased with increasing transportation times (p < 0.05). Two-hour transportation did not influence pH45 min and pH24 h in the breast and thigh muscle, but these indexes decreased with 4 h transportation. This experiment supports and extends previous work that identified transportation as a major risk in relation to bird welfare and meat quality.

Abstract. The study of carcass and meat quality of four male genotypes namely: Thai native (TH), crossbred (Thai native x Barred Plymouth Rock; THB), Barred Plymouth Rock (BPR) and Shanghai (SH) chickens was conducted. Three hundred and twenty birds receiving from four equal groups were allotted in Completely Randomized Design (CRD). They were fed from one day and slaughtered at 16 weeks of age. Breast (M. pectoralis major) and thigh (M. biceps femoris) muscles were investigated for meat quality. TH had lower slaughtered weight (P<0.001) but higher lean : bone as well as less bone percentage (P<0.05) than all groups. Thigh muscle fiber of TH had higher type I and lower type IIB whereas there were similar in breast muscle fiber. Meat quality in terms of IMF, cholesterol and triglyceride contents as well as n-3 fatty acid and the ratio of n-6/n-3 of Thai indigenous male strain was more favorable compared to those all genotypes. Breast and thigh muscle were higher in shear force value and collagen content but the sensory evaluation was not significantly different. Since they were similar in sensory evaluation, the male layer and the male crossbred chickens have the potential to substitute TH in a market serving consumers who prefer chewy chicken meat.

The aim of the study was to evaluate the sensory quality of carcass of layer males ISA Brown. The males were fattened to 90 and 132 days. In both ages samples of breast and thigh were used for the sensory evaluation.The birds were provided by a private producer. There were 20 birds in each experimental group. Both the groups were housed on deep litter and fed a commercial broiler diet. The first group was slaughtered at 90 days of age at a processing plant, the second group continued fattening till 132 days at the Department of Animal Breeding. At 132 days, the birds were slaughtered at the in-house abattoir.The sensory evaluation was carried out at the sensory laboratory at the Department of Food Tech­no­lo­gy at MZLU in Brno. The sensory evaluation was carried out by the trained staff of the Department. Samples were evaluated by the sensory profile method with description of edge points.The higher age had highly significant (p < 0.01) effect on tenderness of the breast muscle (meat from the older birds was assessed as tougher). The age had significant effect (p < 0.05) also on the colour of thigh muscle (the meat of the older birds was assessed as darker). Thus, the evaluators concluded the shorter fattening period as more favourable.However, as for carcass weight, weight of carcass parts and processing at an automatic slaughtering line, the longer fattening period (132 days) seems to be more convenient. It is also necessary to take into account increased cost and marketing possibilities for such products.

Grazing Swan geese (Anser cygnoides) have good meat quality but grow slowly. This study aimed to study whether supplemental feeding could improve growth performance of grazing Swan geese and investigate a suitable dietary metabolizable energy (ME) level of supplemental diet for grazing Swan geese. Naturalized healthy male Swan geese (n = 144; 42 ± 2.0 days and 1.21 ± 0.17 kg) were randomly allocated into 4 groups and grazed on pasture alone (control, CON) or offered supplemental diets with ME of 9.5, 11.5, or 13.5 MJ/kg of DM after grazing. Growth performance and body-size measurements (including bone development) were lower (p < 0.05) in CON versus supplemented geese, as well as slaughter measurements on days 28 and 56. The DM intake linearly decreased (p < 0.01) with increasing dietary ME from day 29 to 56. Slaughter, semi-eviscerated, eviscerated, and thigh muscle yield linearly (p < 0.01) decreased with increasing dietary ME on day 56. Lightness (L*) and yellowness (b*) for breast and thigh muscle on days 28 and 56, and breast muscle shear force on day 56, were lower (p < 0.01) in supplemented versus CON geese. In conclusion, supplemental feeding improved growth performance and carcass characteristics of grazing Swan geese, and supplemental feed with ME of 9.5 MJ/kg of DM could be offered to improve growth and meat quality of grazing Swan geese.
