The present study aimed to evaluate the effect of Jerusalem artichoke processing methods and drying methods (freeze drying, sublimation drying, vacuum drying) on the basic physicochemical parameters, profiles and contents of sugars and polyphenolic compounds, and health-promoting properties (antioxidant activity, inhibition of the activities of α-amylase, α-glucosidase, and pancreatic lipase) of the produced purée. A total of 25 polyphenolic compounds belonging to hydroxycinnamic phenolic acids (LC-PDA-MS-QTof) were detected in Jerusalem artichoke purée. Their average content in the raw material was at 820 mg/100 g dm (UPLC-PDA-FL) and was 2.7 times higher than in the cooked material. The chemical composition and the health-promoting value of the purées were affected by the drying method, with the most beneficial values of the evaluated parameters obtained upon freeze drying. Vacuum drying could offer an alternative to freeze drying, as both methods ensured relatively comparable values of the assessed parameters.

The vast majority of fruits and unprocessed vegetables, have a very short shelf life, mainly due to its high-water activity. Drying technology is an effective process, used to increase the shelf life of these products. It also can provide an effective method of consumption of fruits in food products. In this study, the influence of the maturation stage and drying method on the phenolic compounds and antioxidant activities of Japanese grape pseudo-fruits (Hovenia dulcis T.) were studied. The centesimal composition, reducing sugars and nonreducing sugars, ratio, color, phenolic compounds and antioxidant activity by oxygen radical absorbance capacity (ORAC) of the unprocessed pseudo-fruits, at different maturation stages (immature, in maturation and mature), were analyzed. Two drying methods were employed in the pseudo-fruits (oven with air circulation and freeze drying) obtaining flour from which moisture content, instrumental color, phenolic compounds and antioxidant activity were determined. The unprocessed pseudo-fruits of Japanese grape showed significant content of phenolic compounds at the early stages of maturation and high antioxidant capacity when mature (at the final stages of maturation). In addition, they showed a high content of fibers and sugars, and can be used as raw material in the food industry. After dehydration, the freeze-drying process provided a more stable color, because this process minimizes the enzymatic browning reactions, and preserved a greater number of phenolic compounds. The antioxidant activity, however, showed to be associated with the drying method, being higher in the flour obtained from lyophilized immature pseudo-fruits.

AbstractDried vegetables are widely used in food production. Kale leaves, due to their high health-promoting properties, can be a valuable raw material for drying. The aim of the study was to evaluate the effect of blanching, drying methods (air-drying, freeze-drying), the time and temperature of storage on the content of ash, minerals, vitamins B1, B2, and tocopherols in dried kale products. The dried products were evaluated directly after processing and after 12 months of storage at ambient temperature, 18–20 °C and cold temperature, 8–10 °C. In 100 g dry matter from fresh raw material the dominant minerals were potassium (2613 mg), calcium (1346 mg), phosphorus (432 mg), magnesium (129 mg). Kale leaves had 0.828 mg vitamin B1, 1.533 mg vitamin B2 and 16.55 mg total tocopherols per 100 g of dry matter. Blanching, applied prior to drying, significantly reduced the levels of minerals (3–38%) and vitamins (8–45%), except for calcium, zinc and manganese. This pre-treatment had, however, a beneficial effect, especially on vitamin retention during the storage of dried products. After 12 month storage, the losses of vitamin B1, B2 and total tocopherols in dried, previously blanched, raw materials ranged from 3 to 10%, 1 to 4%, and 1 to 16%, respectively, depending on the type of sample. In the dried products obtained from unblanched raw material, the losses were larger and amounted to 10–17%, 8–16% and 4–17%, respectively. Throughout drying and storage, the minerals examined were fairly stable. Dried kale is generally a good source of minerals and vitamins. However, blanching before drying is recommended. In addition, freeze-drying and storage in cold temperature allows for higher vitamin preservation in dried kale.

Abstract The aim of the study was to determine the influence of four different growing locations of apples cv. ‘Jonagold’ in Europe on the drying kinetics and the physical properties of dried apple slices. The drying methods applied in the study (freeze-drying, convective drying, microwave-vacuum drying and combined drying) significantly affected the drying time, which was the shortest in the case of microwave vacuum drying. The geographical origin of the apples affected the chemical and physical properties of the raw material used for drying, and, consequently, the drying time. Water activity of dried samples was connected with the final dry matter, regardless of the geographical origin of the apples. Freeze-drying resulted in the lightest in colour products (L*), whereas microwave-vacuum dried products had the highest levels of yellow pigments (b*). The highest chroma and browning index values were noted for microwave-vacuum dried samples and were strongly influenced by the drying temperature. The mechanical properties of the apple slices were more dependent on the drying method and temperature of the process than on the geographical origin when the temperature exceeded 83 °C.

Polyethylenimine (PEI)-coated biomass-chitosan composite fiber (PBCF) was fabricated to recover Ru from acetic acid waste solution. The present work aimed to understand the effects of molecular weight of chitosan and drying method on stability and sorption performance of the PBCF. For this, the PBCF was prepared by extruding the mixed solutions of chitosan and Corynebacteriumglutamicum to form the composite fibers which were modified with ionic polymer, PEI. The degree of swelling of PBCFs prepared by hot-air, natural, and freeze drying methods were 1.25, 1.34, and 1.07 %, respectively, indicating that the freeze-drying method was the best. Batch biosorption studies showed that the maximum Ru uptake could be achieved with PBCF prepared with medium molecular weight chitosan, and could reach 34.1 mg/g, which was 7.9 times higher than that of the commercial ion exchange resin, LEWATIT® MonoPlus M 500 (4.3 mg/g). Therefore, PBCF can be considered as an alternative sorbent to synthetic resin for recovery of Ru form industrial acetic acid waste solution.

Although extrusion is a promising process to develop ready to eat cereals and snacks, thermal treatment to raw material during extrusion results in degradation of phenolic compounds. Therefore, an approach was made to enhance the total phenolic content (TPC) and antioxidant activity (AA) of apple pomace (AP) prior to extrusion process. In this study, AP powder was naturally fermented (F) for 12 h and then was subjected to ultrasonication (U) at various conditions [25, 37, and 50 µm ultrasonication amplitude (UA) for 1, 2, and 3 min of ultrasonication time (UT)]. AP was then dried in oven (O) and microwave (MW), separately and thus four drying methods, i.e. O<sub>F</sub>-O<sub>U</sub>, O<sub>F</sub>-MW<sub>U</sub>, MW<sub>F</sub>-O<sub>U</sub>, MW<sub>F</sub>-MW<sub>U</sub> were used in combinations. Full factorial design was used for experimental plan and results were analyzed using statistical software. It was observed that drying method significantly affected the TPC and AA of AP powder followed by UA. UT did not have any significant effect on TPC, and AA. Maximum TPC, and AA observed for the AP powder dried in MW after fermentation and ultrasonication (MW<sub>F</sub>-MW<sub>U</sub>) at 50 µm UA for 3 min UT were 372.98 mg GAE/100g DW, and 729.67 µmol TE/100 g DW, respectively. MW<sub>F</sub>-MW<sub>U</sub> drying exhibited a more prominent disrupted and porous structure of AP powder compared with that of O<sub>F</sub>-O<sub>U</sub> drying.

Summary Birch wood discolours during artificial drying, which is a considerable problem for the use of birch as raw material in the mechanical wood industry. In this investigation sample boards of Betula pendula were sawn to the dimensions used as raw material for parquet billets. The variables studied were those that may affect wood discolouration: growing site, felling date, length of the storage period for logs and location of the wood in the trunk. Discoloration of birch wood was studied in conventional and vacuum drying processes. The wood layer of about 2–5 mm under the yellow surface of conventionally dried boards remained light-coloured, while the inner wood of the boards became discoloured. During vacuum drying, however, the inner wood of sample boards clearly became discoloured. The radial location of the wood in the trunk affected the colour of dried wood more than the longitudinal location did. To keep the colour of dry wood as light as possible, it may be best to fell birch in winter and store the wood for several weeks before conventional drying. On the other hand, the lightest coloured wood obtained during vacuum drying was from autumnfelled five weeks stored birches, which may indicate differences in the process of discoloration in these two drying methods.

The sustainable development of agro-industry requires the efficient use of all raw matters, which implies physicochemical and functional studies of by-products for finding their potential usage in industrial processes. The objective of the present study was to assess some physicochemical and functional properties of fIour obtained from the bean pod. Two types of drying methods were tested: convection and vacuum. The fIours tended to yellow color according to b* parameter values (convection drying: 17.54; vacuum drying: 18.35), with a slight red hue. They also showed high water-holding (convection drying: 8.30 g g-1; vacuum drying: 7.56 g g-1) and oil holding capacity (convection drying: 2.53 g g-1; vacuum drying: 2.56 g g-1), polyphenols content (convection drying: 26.62 mg GAE g-1 DW; vacuum drying: 3.77 mg GAE g-1 DW) and antioxidant capacity (convection drying: 33.42 µmol Trolox g-1; vacuum drying: 5.27 µmol Trolox g-1). The results were similar for the two types of drying methods, except for the antioxidant capacity. Since convection drying is more economical and available than vacuum drying, only the fIour obtained by convection method was analyzed on compositional and structural characteristics. This fIour showed to be a good source of dietary fiber (66.93%), being the insoluble fiber the predominant fraction (59.97%). Moreover, a high content of ash (6.65%) and low lipid content (0.58%) were also found. The IR spectrum showed signs corroborating the presence of dietary fiber, which also was evidenced morphologically. Overall, the results obtained indicated that the bean pod fIour obtained by convection drying has potential use as a raw material for the food industry.

Abstract The objective of this study was to investigate different drying methods (oven-drying, vacuum-drying, and freeze-drying) applied to cooked mussels meat and the resulting rehydration and water-holding capacity. Drying curves were obtained using an online weighting system that allows continuous monitoring of sample weight during processing. The influence of the processing temperature on the drying rates and on the properties of dehydrated samples was assessed. In the studied conditions, freeze-drying presented higher drying rates and less structure alterations compared to the other drying methods investigated. The equilibrium rehydration capacity of oven-dried and vacuum-dried mussels was about 37 % lower than rehydration capacity of freeze-dried samples for the rehydration performed at 20 °C and about 21 % lower for rehydration performed at 80 °C.

Purpose – This paper aims to evaluate effects of the fortification of polyphenolic compound mixtures of quercetin, caffeic acid, tryrosol and hydroxytyrosol in olive oil oxidation. Design/methodology/approach – The authors measured olive oxidation initiated by copper using thiobarbituric acid reactive substance, as an indicator of lipid peroxidation. Findings – Overall, most mixture combinations exhibited oxidation similar to olive oil alone. Some mixture combinations of polyphenolic compounds acted as antioxidants; however, as the concentrations were changed, they became prooxidant in nature. Research limitations/implications – In vitro studies have limitations for extrapolation to in vivo and clinical studies. Practical implications – Such information will be useful in determining optimal concentrations and combinations of antioxidants for reducing rancidity and perhaps as models that could be used to modulate various chronic diseases that are associated with oxidative stress. Originality/value – Olive oil, along with fruits, vegetables and fish, are important constituents of health promoting diets, such as the Mediterranean diet. Active ingredients include monounsaturated fatty acids, oleic acid and a variety of antioxidants including various polyphenolic compounds.

SUMMARYThe influence of different drying conditions on the chemical composition, physical properties,in vitroorganic matter degradability and fermentation kinetics of forages was investigated using young and old grass (Lolium perenne) samples (harvested on 15 June and 9 July 1992 at Lelystad, The Netherlands) and young and old maize (Zea mayscv. Scana) stem samples (harvested on 19 August and 30 September 1991 at Lelystad). The samples were either freeze-dried with a maximum sample temperature of 10 °C, dried in a vacuum at 20 °C or air-dried at 30, 50, 70 and 105 °C. The different drying methods had little effect on ash, acid detergent fibre (ADF), acid detergent lignin (ADL), crude fibre and crude protein (CP) contents andin vitrodegradation of the forage samples. However, some effects were found for sugars and phenolic acids. The neutral detergent fibre (NDF) content in protein-rich samples and the fermentation kinetics in rumen fluid differed significantly according to drying method. In samples dried other than by freeze-drying, proteins were bound to the NDF content and in some cases an effect on the amount of soluble sugars was also seen. Physical properties of the samples were determined by differential scanning calorimetry (DSC) and differences were found between freeze-dried materials and those dried at 70 °C. The influence of age on the maize samples was very pronounced, whereas it had little effect on the characteristics of the grass samples, with the exception of a decreased CP content and an increased sugar content after acid hydrolysis.
