In recent years, the success of scientific research in the field of biotechnology has led to the development of new technologies to accelerate the production of smoked sausages, improve their organoleptic properties and significantly increase the guarantee of production of high-quality products. One way to intensify the process of raw smoked sausages is to use starter crops. The paper presents the results of a study of individual strains and a consortium of microflora used in the production of raw smoked sausages. The results and justification of changes in the functional and technological properties of raw meat after making starter crops are presented.

The decrease in the number of raw meat and the deterioration of its quality, requires manufacturers of meat products to introduce advanced technologies. The development of biotechnology has given an impetus to the development and implementation of new technologies aimed at intensifying the complex of complex biochemical transformations that occur in meat raw materials in the production of sausages. The paper presents the results of a study of the effect of starter crops on raw meat in relation to the production of ham. The results of the main functional and technological properties of raw meat subjected to biomodification are presented.

In conditions of Ukraine`s  membership in WTO new system of market regulation are created, which must meet requirements of EU to quality and safety of food products. Recently, in total amount of meat  which  comes to processing , part of pork with PSE and DFD defects are increased according to Ukrainian and foreign researchers. It is 50% of total amount. In this article shown the results of  quality assesment of pork with  PSE and DFD defects in comparison  with NOW raw by organoleptic indicators and by pH level. Recently, the total amount of meat that goes to processing, the share of raw meat with signs PSE (pale, soft, watery) i DFD (dark, hard, dry) according to Ukrainian and foreign researchers it is 50% of raw materials. Processing of the meat on the traditional technological scheme there is instability quality indicators and output finished products. Increasing the number of meat with signs PSE i DFD leads not only to find ways to identify it, to prevent the emergence of such raw materials, but also requires the use of rational methods of processing such meat, because it conveys uncharacteristic technological properties, texture, taste, color and smell, which complicates the process of getting him meat products of high quality. In developed European countries, the amount of meat with signs PSE and DFD ranges from 5 to 40%, in CIS countries the quantity reaches 80% more meat with signs PSE recorded in pork and DFD is more typical for beef . It was established that organoleptic indicators of pork with PSE defects was differed  from high quality meat(NOR), and pork with DFD defects differed, it was darker than quality meat. PH level difference between NOR and DFD pork decreased while store process, and between NOR and PSE – increased.

The production technology of high-quality vodka used in Russia involves filtration through activated charcoal. To approach the quality of renowned Russian vodka, one prominent Czech spirit-producing company installed on its production premises a filtration device including a charcoal column, and launched test runs during which different filtration conditions were tested. Samples collected during the test runs were analysed by GC-FID and GC-MS with the aim to compare their composition; sensory analysis was an integral part of the evaluation. The results documented a positive effect of charcoal filtration on the quality of produced vodka, which was not reduced when higher flow rates were applied.

Abstract This paper reveals the technological properties of lactic acid bacteria isolated from raw milk (colostrum and mature milk) of Wagyu cattle raised in Okayama Prefecture, Japan. Isolates were identified based on their physiological and biochemical characteristics as well as 16S rDNA sequence analysis. Streptococcus lutetiensis and Lactobacillus plantarum showed high acid and diacetyl-acetoin production in milk after 24 h of incubation at 40 and 30°C, respectively. These strains are thought to have potential for use as starter cultures and adjunct cultures for fermented dairy products.

IntroductionMobile health (m-health) technology has been growing rapidly in the last decades. The use of this technology represents an advantage, especially for reaching patients who otherwise would have no access to healthcare. However, many ethical issues arise from the use of m-health. Health equity, privacy policies, adequate informed consent and a competent, safe and high quality healthcare need to be guaranteed; professional standards and quality of doctor-patient relationship in the digital setting should not be lower than those set for in-person practice.AimsTo assess advantages and threats that may arise from the wide use of m-health technologies, in order to guarantee the application of the best medical practices, resulting in the highest quality healthcare.MethodsA literature search has been conducted to highlight the most pressing ethical issues emerging from the spreading of m-health technologies.ResultsFew ethical guidelines on the appropriate use of m-health have been developed to help clinicians adopt a professional conduct within digital settings. They focus on the need for professional associations to define ethical guidelines and for physicians to take care of their education and online behavior when using m-health technologies.ConclusionsThe rapid spreading of m-health technologies urges us to evaluate all ethical issues related to its use. AbstractThe Japanese National Large Telescope is an 8-metre class optical-infrared reflector with a monolithic thin meniscus mirror, to be constructed at the Mauna Kea summit, Hawaii. The JNLT will be characterised by high quality performance in the optical and infrared regions, achieved by adopting new technologies such as active mirror support, fast optics and a thermally controlled dome. In particular, high infrared qualities are regarded as the most important characteristics among various design goals.The JNLT project is now close to the final study phase before construction. This paper reviews the scientific motivations and the special technical features of the JNLT. Finally, the promotion of international collaboration around the JNLT is emphasised.
