Thermal bicarbonate mineral water belong to sought-after balneological resources. This kind of water are a balneological product and valuable raw material used in health resorts for the wider health strategy - prophylaxis and recreation. The discovery of thermal bicarbonate mineral water in Grabin near Opole in 1983 was purely incidental when a intake was made for the recognition of the geological structure of the crystalline basement of Mesozoic and Cenozoic sediments. Thermal bicarbonate mineral water existing in Grabin can be found in the Fore-Sudetic block and is a unique phenomenon. Its chemical composition, and especially high total mineral salt content of the waters from Grabin, indicate a type of mineral water unparalleled in Poland. The content of solids is much higher than in all other waters existing in e.g. Lower Silesian health resorts. Its special feature is also the source performance, which is 150-200m3/h and is unprecedented when compared to other sources in the region. The discovery of thermal bicarbonate mineral water in Grabin also puts a new light on the presence of perspective areas for drawing waters useful in medical care and prevention.

AbstractVarved clay deposits from ice-dammed lakes are a particularly important and broadly applied raw material used for the production of high-quality ceramics (red bricks, roof tiles, etc.), but the mineralogy and geochemistry of these sediments are not fully understood. The aim of the present study was to determine the chemical and mineralogical composition of ice-dammed lake sediments of the Lębork deposit. Major-element analysis of the compositions of selected samples from the ice-dammed lake clays was performed by X-ray fluorescence (XRF) and trace elements were determined by inductively coupled plasma-mass spectrometry. The mineralogical composition of clay samples was determined by X-ray diffraction (XRD). Analyses of the chemical composition of the ice-dammed lake clays of the Lębork deposit showed that the dominant component was SiO2 with a mean content of 56.13 wt.%; the second most abundant component was Al2O3, with a mean content for the entire deposit of 11.61 wt.%. Analysis by ICP-MS indicated the presence of rare earth elements (REE), e.g. cerium, neodymium, lanthanum, and praseodymium; their mean contents are: 56.9, 27.0, 26.3, and 7.3 ppm, respectively. Mineralogical analysis of the varved clays identified quartz, muscovite, calcite, and clay minerals – illite, kaolinite, and montmorillonite. The material filling the Lębork basin is characterized by small lateral and vertical variability in chemical composition. The results of the present study may be of considerable importance in determining the parent igneous, metamorphic, and sedimentary rocks, the weathering products of which supplied material to the ice-dammed lake, as well as in determining the mechanisms and character of the sedimentation process itself.

Celiac disease (CD) is defined as an autoimmune pathology mediated by specific antibodies and is associated with genetic factors, which causes an inflammatory process of the intestinal mucosa in response to gluten ingestion. A study was conducted to evaluate some gluten-free cookie formulations using rice and green banana flour as raw material, and to evaluate the acceptance and chemical composition of the cookies elaborated. Three different cookie formulations were prepared to contain 100% rice flour, 50% rice flour and 50% green banana flour and 100% green banana flour. The following sensory attributes were evaluated: crispness, flavor, and overall impression, using the 9-point hedonic scale and purchase intention using the 5-point structured scale, to check the acceptance of cookies. The chemical composition of the formulation most accepted by sensory analysis was quantified. Sensory evaluation showed that all cookie formulations were accepted; however, the increase of the green banana flour content has resulted in lower acceptance, which may be due to the slightly bitter flavor that green banana flour gives the product. The most accepted cookie formulation had 15.78% protein, 0.80% ash, 4.31% moisture content, 12.35% lipid, and 66.77% carbohydrate. These nutritional characteristics are following Brazilian legislation. Therefore, all cookie formulations have marketing potential, which is very important, especially for people with gluten sensitivity.

The Lower Silesia area in SW Poland is characterized by a geological structure that is conducive to mining activity. The exploitation of rock raw materials plays an important role in this sector of the economy. By the end of 2017, there were in total approximately 400 current concessions for the exploitation of rock raw materials in the analysed area (Polish Geological Institute, MIDAS database—Management and Protection System of Polish Mineral Resources). The conducted mining activity results in waste, which in the greatest amount occurs in the process of obtaining crushed road and construction aggregates, natural aggregates, carbonate raw materials for the cement and lime industry, as well as stone elements for construction and road engineering. At the end of 2016, the mining plants accumulated 26,569,600 Mg of waste. As part of the European Regions Toward Circular Economy (CircE) project, research was conducted on the volume and composition of the mining waste of rock raw materials in the years 2010–2016 within Lower Silesia. This research used the methods of statistical, descriptive and spatial analysis to identify mining plants with the highest potential for using their wastes. In the course of this study, 6 mining plants with the highest potential of using their waste for industrial production purposes were selected. In order to objectively select these plants, the methodology of qualitative multi-criteria analysis was developed, and 7 criteria were selected for assessing the economic potential of using waste from the mining of rock raw materials. An additional result of this research is a database and graphical presentation of changes in the spatial distribution of generated waste in the Lower Silesia region in the years ranging from 2010 to 2016.

This work describes the role of chemical composition and curing conditions in geopolymer strength, leachability of chemical elements and porosity. The study focuses on geopolymer material prepared from calcined kaolinite claystone, which is not studied frequently as a raw material for geopolymer production, although it has a high application potential as it is easily commercially available and allows preparation of geopolymers with low viscosity. The composition of geopolymers and their curing methods were selected considering their ease of use in the praxis. Therefore, the potassium water glass itself was used as alkali activator without any KOH or NaOH addition. Chemical composition was changed only by the density of water glass in the range of 1.2 to 1.6 g·cm−3. Geopolymers were cured at a temperature within the range of 5 °C–70 °C to speed up the solidification process as well as by microwave radiation. High compressive strengths were obtained for geopolymers with the highest densities of the water glass (1.5 and 1.6 g·cm−3) in dependence on various curing conditions. Higher strengths were achieved in the case of samples where the solidification was not accelerated. The samples cured at lower temperatures (5 °C) showed lower porosity compared to the other curing types. The lowest leachability of Si and alkalis was reached for the samples with water glass density 1.5 g·cm−3.

The processing of pangasius fish has produced a number of by-products with economic and biological value such as heads, bones, and fins, but these products have not been fully utilised. The hydrolysed protein powder from pangasius by-products has a high nutritional content, attractive taste and mainly used as the raw material in the production of some value-added food products. The purpose of this study was to develop a formula to create seasoning products from protein powder hydrolysed pangasius by-products. The main ingredients such as pangasius protein powder, starch, basic spices (salt, sugar, onion powder, ginger, pepper, etc.) were studied and selected in the recipe for seasoning powder. In which, the research process to determine the ratio of the main ingredients was done with 25-45% protein powder from pangasius by-products combined with 20-35% modified starch; 16-24% salt; 5-20% sugar; 0.5-2% spice mixture of onion powder, ginger powder, pepper powder. Product quality was assessed through sensory criteria, protein content, carbohydrates, etc. Research results had built a formula for producing nutritional seasoning products from protein powder hydrolysed pangasius by-products with protein content 18-22%, carbohydrates 30-33%, salt content 18-20%, moisture content ≤10%, and food safety criteria meet the requirements according to current regulations.

The aim of the study was to determine the variability in the chemical composition and nutritive value parameters of smoked and unsmoked short-ripened rennet cheeses and unsmoked long-ripened rennet cheeses produced by traditional methods. The raw material for the production of short-ripened cheeses was pasteurized cows’ milk obtained from a dairy, whereas the long-ripened cheeses were manufactured from raw cows’ milk obtained from the producer’s farm. All three varieties of cheese examined were produced with commercial dairy starter cultures. The material for the study was collected in winter, directly at the producers’ retail outlets in southern and eastern Poland. The basic chemical composition was determined according to the Polish Standards, whereas the amino acid profiles of proteins from the cheeses were determined by ion-exchange chromatography. The result analysis revealed significant differences between the different varieties of cheese in terms of their water content, ranging from 32.2% to 42.1%, as well as protein content, which varied from 25.6% to 31.6%. Fat levels ranged between 22.2% and 24%, whereas total ash content amounted to 5.1-5.8%. The significantly highest salt content was found in unsmoked short-ripened cheeses. In all three cheese varieties, the total exogenous amino acid content was comparable, ranging from 46.17 g to 47.36 g/100 g protein, and that of endogenous amino acids varied from 52 g to 53 g/100 g protein. The biological value of proteins was determined by calculating to the chemical score (CS), as described by Mitchell and Block, and the essential amino acid index (EAAI), as described by Oser. A comparison of the results with the standard chicken egg white proteins showed that the limiting amino acids for all varieties of cheese were methionine and cysteine. On the other hand, a comparison with the FAO/WHO-suggested pattern of amino acid requirements (1991) for all age groups over 1 year of age showed that the limiting amino acids were methionine and cysteine in smoked and unsmoked short-ripened cheeses, and treonine in long-ripened cheeses. Considering the chemical indices, such as CS and EAAI, it may be concluded that the traditional rennet cheeses produced in southern and eastern Poland have a favourable amino acid composition of proteins and a high nutritive value..
