Nutrition is an important factor that affects human health. The use of plant proteins as various additives in food production has now been actively developed. The rich chemical composition of pea grains determines the possibility of application in the food industry. Peas are characterized by good assimilability and degree of digestion.

PurposeHalal food market has grown significantly over the years. As consumers are becoming more aware of the significance of halal food products and certification, food industries will benefit from a model that controls and assures halal food production. Quality function deployment (QFD) is a tool to support product design and improve food quality systems. Thus, the purpose of this study is to propose a multi-phased QFD model to identify key processes and prioritise programmes to improve halal food production.Design/methodology/approachThe matrix in the first phase was designed using the halal assurance system (HAS) requirements and the set of production process. The relationships between HAS requirements and a set of halal critical factors [i.e. raw material (chicken), workers, procedures and documentation, equipment and premises] were established in the second phase. In the final phase, potential problems and improvement programmes arising under each critical halal phase were identified. The QFD model was developed and applied in a chicken processing plant in Indonesia.FindingsIn Matrix 1, slaughtering, meat processing and meat delivery were identified as the key process, whilst equipment, procedures and documentation and workers were determined as the most critical halal factors in Matrix 2. The final phase of the QFD approach assisted the chicken processing plant in reducing potential issues by identifying key improvement programmes. The prioritisation of improvement programmes also supports the company in decision-making and allocating their resources accordingly.Practical implicationsThe multi-phased QFD model can be designed and adapted to specific food industry. It can be used to assure halal food production and inform food industry which area to prioritise and to allocate resources accordingly. The improvement of halal food production will assist food companies to target and access international markets.Originality/valueThis study proposed a new multi-phased QFD model that can be used as a halal food assurance and prioritisation tool by the food industry. This model will benefit food industry intending to implement halal assurance scheme in their process, halal auditors and policymakers.

Poplar plants (Populus L.) are one of the promising species for inclusion in the State Pharmacopoeia of Ukraine. To date, extensive experience has been accumulated in the use of extracts from buds, leaves and bark of various types of poplars in folk and official medicine as effective anti-inflammatory, antipyretic, analgetic, antibacterial agents. According to literature data only buds are pharmacopoeial raw materials in some countries of the world. Poplar leaves are of interest as a new promising type of medicinal plant raw material, since they have a chemical composition close to the buds, moreover, they are much easier to harvest and the possible volume of raw materials procurement is much larger. The laurel-leaf poplar (Populus laurifolia Ledeb.) is assigned to the section of balsamic poplars (Tacamahaca). It is grown in forest culture, used for landscaping and creation of field-protective plantations in Ukraine. Continuing a comprehensive pharmacognostic study of raw materials of plants of the genus poplar, purpose of this work was to study composition and content of compounds distilled with water vapor of leaves of laurel-leaf poplar cultivated in Ukraine. Leaves for research were harvested in June 2019, from trees growing on the shores of the Murom reservoir in the village of Russkiye Tishki, Kharkiv region (50°09′30″N 36°29′10″E). The composition of compounds distilled in water vapor was investigated on Agilent Technologies 6890N (USA) chromatograph with a 5973N mass spectrometric detector. The total content of compounds distilled with water vapor was 2 126.1 mg/kg. 46 compounds were identified. Terpenoids were presented by 20 compounds with a total content 1 444 mg/kg, the remaining 26 compounds were aromatic substances (256.2 mg/kg) and compounds of various groups (216.8 mg/kg). The dominant compounds in content were β-eudesmol (776.4 mg/kg), γ-eudesmol (298 mg/kg), α-bisabolol (125.9 mg/kg), eugenol (70.9 mg/kg). The data obtained indicate the rich chemical composition of leaves of laurel-leaf poplar and are the basis for further in-depth study of this raw material for assessment the possibility of using it as a medicine.

In this study, the medicinal and aromatic plants sector of the Hatay province was evaluated with the SWOT Analysis (strengths, weaknesses, opportunities, and threats), and aimed to offer solutions for the development of the sector based on the opinions of the companies which are operating in the province. According to the research results, the rich natural vegetation of the province and its proximity to raw material resources, were found as the main 'strengths'. Insufficient incentives, lack of coordination, problems in accessing quality raw materials, and adulteration were found as the 'weaknesses'. Increase in demand and high added value potential, and the EXPO 2021 exhibition were found as the 'opportunities'. Security problems in the region due to the ongoing war in Syria were determined as the prominent 'threat'.

In the food processing industry disinfectants should ensure the quality and microbiological safety of food without the risks for the human health or environment. One of the potential and alternative less toxic disinfectants is the ozone. It is highly effective and environmentally acceptable disinfectant applicable on several places of food production premises, e.g. on equipment and directly on food products.

Currently, it is necessary to search for non-traditional sources of plant raw materials characterized by a high content of indigestible polysaccharides having a beneficial effect on human body functions. One of the rich sources of high-molecular carbohydrates is the chickling vetch valves. The use of a new type of raw material in food production will expand the range of functional food products. The technology of powder from chickling vetch valves is developed, its organoleptic quality indicators are determined and the period of storage in warehouse premises is set. Based on the results of the study of the chemical composition of the powder, it was found that it is a valuable source of fiber, lignin, hemicellulose and pectin substances. It was found that when the powder is introduced into the recipe of biscuits in the amount of 1.1-2.2 % by weight of flour, the best organoleptic and physico-chemical quality indicators of finished products are achieved. It was found that when consuming 100 g of the developed products, the human body’s need for dietary fiber is met by 18.3-23.2 %.

Some aspects of the chemical composition were studied in extracts of unexplored Phemeranthus confertiflorus L, an alien plant collected from Bucharest delta. 16 polyphenols and 10 short-chain organic acids were analysed and quantified by capillary electrophoresis in Phemeranthus extracts and antioxidant activity was investigated. The results obtained could promote Phemeranthus as an eligible plant with potential in food industry and for human health, because of the high antioxidant activity, high content of flavonoids (naringenin, rutin, daidzin) and lactic acid.

Oat grain has a great national economic significance. Firstly, it is a concentrated feed for farm animals. Secondly, it is the raw material for food production, most of all, for baby diet. In this regard, when used for feed purpose or for food production, it is necessary to knowledge the chemical composition of the oat grain. Our results demonstrated that by the content of chemical elements, among 70 species the differences were in membranous and hull-less oats. The grain of membranous oat of Ulov variety contained more silicon, potassium and calcium, comparing with the content of hull-less oat grains of Vyatkskiy variety. In a relatively favorable weather conditions of 2010 year, the Ulov oat grains contained more boron, sodium, aluminum, potassium, calcium. Vyatskiy hull-less oat grains at relatively favorable weather conditions of 2011 year, have a higher content of magnesium, phosphorus, calcium, manganese and zinc. Chemical composition of Ulov and Vyatskiy oat grain according to the 70 element have differs and depends on the meteorological conditions of the vegetation period. The membranous and hull-less oat grains did not contain heavy metals above the permissible values, regulated by Sanitary rules and norms 2.3.2.1078-01.

The author studies the collection of glassware of the 8th–10thcenturies, found in the medieval town of Shamkir, which is located in the western region of the Republic of Azerbaijan. On a functional basis, this collection is represented by tableware, perfumery and drugstore dishes. Drinking vessels prevail among tableware. Perfumery and pharmaceutical utensils are represented mainly by samples of bottles. In the manufacture of glassware, various manufacturing techniques were used, in particular, blowing into a mold and free blasting. The techniques of stretching, welding, polishing, grinding were also used. Glassware of Shamkir belongs to the chemical class Na–Ca–Si with a predominance of the type Na (K)–Ca(Mg)–Al–Si. Most of the glass vessels were decorated with relief geometric ornaments in the form of ovals, circles, and radiating figures, "vortical rosette", "honeycomb" ornaments. The rich raw material resources, professional traditions and innovations which existed here created favorable conditions for the development of glassware production. In the everyday life glassware for various purposes was widely used. Material evidences testify to a great shift in the glass production of Shamkir in the 8th–10th centuries and the production of glassware had a prominent role in the city's economy.

At the present stage of development, the entire world industry has faced the problem of rational use of renewable natural resources, in particular the most efficient ways of wastewater treatment and the use of accumulated waste in the production process as a secondary raw material. In particular, the alcohol industry, as one of the components of food, medical, chemical and various industries,leads to the formation of huge amounts of waste, including wastewater. The food industry, like any other industry, has a negative impact on the environment. Water bodies are the most affected by the food industry. Almost the first place in terms of water consumption per unit of production is the production of alcohol. Consumption of large amounts of water leads to the formation of wastewater, which is highly polluted and adversely affects the environment. Due to the high chemical and biological consumption of oxygen, specific color and odor, suspended solids, low pH value, the purification of such waste in the filtration fields and discharge into water bodies is not possible. The purpose of our work is: 1) conducting the analysis of the alcohol industry potential in Ukraine in recent years, and methods of waste disposal as a potential source for the development of bioenergy. 2) environmental aspects of the alcohol industry modernization at present stage of development and implementation of modern wastewater treatment technologies.
