Nutritional Value and Microbiological Safety of Fresh Fruit Juices sold through Retail Outlets in Qatar

Improperly prepared fresh fruit and vegetable juices are recognized as an emerging cause of food borne illnesses. Therefore, this study was aimed at evaluating the microbiological safety of fresh fruit juices marketed in Debre-Markos town and their hygienic conditions of preparations. Thirty six fruit juices samples were collected from 6 cafés and restaurants of Debre-Markos town and analyzed for total aerobic viable bacterial count (TAVBC), total staphylococcal count (TSC), aerobic spore forming bacterial count (ASFBC), total coliform count (TCC), fecal coliform count (FCC), yeast and mould count (YMC). The spread plate method was used for the isolation of microorganisms on appropriate selective media. All isolates were characterized following standard methods. Bacterial and fungal species were isolated following standard methods. Questionnaires were distributed for 30 juice makers to obtain preliminary information on hygienic and safety practices of fruit juice makers. Results show that the mean TAVBC, ASFBC, TSC, yeast and mold, TCC and FCC of mango were 2.2±0.48x106,0.13±0.04x105 ,0.004x105 ,1.1±0.2x106 ,0.15±0.05x105,5.7±3.73x104 and 0.06±0.04x104 cfu/ml respectively. The mean of TAVBC, ASFBC, TSC, YMC, TCC, and FCC of avocado juice were 3.6±0.6x106, 0.08±0.02x105, 0.27±0.07x105, 1.2±0.4x106, 0.02±0.01x105, 6.46±3.7x104, and 0.2±0.1x104 cfu/ml respectively. The bacterial isolates were identified as Staphylococcus aureus, Escherichia coli, Klebsiella spp. Bacillus cereus, Enterobacter spp., Enterococcous spp., Streptococcus spp., and Serratia spp. while the identities of the fungal isolates were Fusarium spp., Mucor spp. and Saccharomyces cerevisiae. The results also showed that the microbial loads of most of the fruit juices were higher than the specifications set for fruit juices sold in the Gulf region and other parts of the world. Most venders obtained fruit from the open market and all juice makers lacked special training in food hygiene and safety. Therefore, regular training and health education on food hygiene and safety is recommended for juice handlers to improve the quality of fresh fruit juices in the study area.

AbstractIn addition to properly balancing nutritional value in accordance with the needs of a dog, estimating the microbiological quality of dog food is crucial in providing healthy and safe foods. The aim of this study was to examine the quality of dry food for adult dogs, with particular reference to: (1) evaluating the nutritional value and compliance with nutritional guidelines for dogs, (2) comparing the nutritional value of dog foods, with particular emphasis on the division into cereal and cereal-free foods, and (3) evaluating their microbiological safety. All thirty-six evaluated dry dog foods met the minimum European Pet Food Industry FEDIAF requirement for total protein and fat content. The total aerobic microbial count in the analyzed dry dog foods ranged from 2.7 × 102 to above 3.0 × 107 cfu/g. In five (14%) dog foods the presence of staphylococci was detected; however, coagulase positive Staphylococcus (CPS) was not found. Mold presence was reported in one cereal-free dog food and in six cereal foods. In none of the analyzed foods Enterobacteriaceae were found, including coliforms, Escherichia coli and Salmonella spp. Bacteria of the genus Listeria and Clostridium as well as yeasts were also not detected. In conclusion, the evaluated dry dog foods had varied microbiological quality. The detected number of microorganisms may have some implications for long-term consumption of contaminated food. The lack of European Commission standards regarding the permissible amounts of microorganisms in pet food may result in insufficient quality control of these products.

  Objective: The objective of this investigation was to assess the biological activity of fresh fruit juices and freeze dried fruit juices including antioxidant and antibacterial activity.Methods: The fruits used in this study were Schleichera oleosa (Lour.) Oken, Carissa carandas L., and Sandoricum koetjape (Burm.f.) Merr. The fresh juice sample (FJS) was extracted and also prepared for freeze drying sample (FDS) by freeze dryer. The antioxidant capacity of FJS and FDS was assessed using the 2,2-diphenyl-1-picryl-hydrazyl (DPPH) assays and determination for total phenolic contents (TPCs) by Folin–Ciocalteu’s reagent. Antimicrobial tests were carried out by agar diffusion methods and evaluated by measuring the zone of inhibition against 10 isolates of pathogenic bacteria.Results: The highest antioxidant activity of FJS and FDS was found in S. oleosa and related to the scavenging effect on DPPH radical of FJS (100% concentration) and FDS (200 mg/ml) was found in the value of 93.05±0.31% and 82.18±0.33%, respectively. TPC of FJS and FDS from S. oleosa at the same concentration as in the DPPH assay was 1,003.53±1.96 ug GAE/300 g of matter and 827.77±23.15 ug GAE/100 ml of matter, respectively. Both FJS and FDS revealed antibacterial activity. The zone of inhibition of FJS was ranging from 8.3±0.6 to 24.0±1.0 mm and FDS values of 7.3±0.5-21.0±0.9 mm. The most potent sample against bacteria was FJS and FDS from S. oleosa which FJSs against Escherichia coli ESBL and FDS against Pseudomonas aeruginosa MDR2.Conclusion: Fruit juices of S. oleosa, C. carandas, and S. koetjape associated with antioxidant activity in the form of both fresh fruit juices and FDS. The result of this study showed that the value of DPPH and TPCs were slightly decreased in FDS compare with fresh juice. Screening of FJS and FDS of C. carandas revealed broad spectrum antibacterial activity. However, FJS of S. oleosa and S. koetjape showed inhibition of growth of bacteria, but few of FDS from these fruits could inhibit limited bacterial isolates. For antibacterial activity against pathogenic bacteria, the samples of fresh and freeze dried exhibited a different degree of activity.

The fresh fruit industry is a highly dynamic sector in the food market. Fresh fruit chain actors have to adapt to the changing market environment in order to face upcoming challenges. The objective of this study is to analyze the market sustainability of red-fleshed apples (RFA) by exploring consumers’ and fresh fruit industry experts’ and stakeholders’ opinions in Italy and New Zealand. The study was carried out in Italy and New Zealand from December 2018 to June 2019 including 778 consumers and 29 expert and stakeholder interviews. Results show a promising market potential of RFA. Innovative attributes and nutritional value of RFA are the most important factors that push consumers’ interest and willingness to buy RFA. New Zealand consumers and women show a higher appreciation of RFA. The nutritional value of the fruit can be a strategic marketing management attribute especially for health-conscious consumers. However, experts think the market for RFA will develop slowly, and will remain a niche product. Some stakeholders are skeptical about consumer RFA appreciation, and fear that RFA are too radical a novelty on the market. The RFA may be perceived as not natural. There is the need to coordinate food chain stakeholders’ management practices on RFA. This allows to mitigate risks, set food standards acceptable for all chain stakeholders, and make sustainable economic investment on innovation.

Purpose The purpose of this paper is to evaluate the prevalence and antibiograms of bacteria isolated from various fresh fruit juices at a local market in Faisalabad. Design/methodology/approach Fresh fruit juice samples (n=125) were randomly collected using aseptic technique. Each sample (10 mL) was serially diluted with 90 mL of sterile peptone water, from 1×10−1 to 1×10−5. Each dilution was then used to inoculate nutrient agar by surface spread plating. Aerobic colony counts (ACCs) were determined by colony counting. The isolates were sub-cultured on blood and MacConkey agar. Preliminary identification was achieved on the basis of colony morphology and culture characteristic, and confirmed by API® 20E, 20NE, and API® Staph testing. Antimicrobial susceptibility testing was carried out using the Kirby-Bauer disk diffusion assay, per CLSI 2015 guidelines. Findings The mean ACC ranged from 2.0×106 CFU/mL to 4.93×106 CFU/mL, with the highest ACC determined for orange juice. Overall, 153 polymicrobial were identified in 125 samples; 103 of these were Gram-negative rods (GNR) and 28 were Gram-positive cocci (GPC). Escherichia coli (n=38), Klebsiella pneumoniae (n=32) and Pseudomonas aeruginosa (n=24) were the predominant GNR; Staphylococcus aureus (n=28) was the predominant GPC. Antibiogram analysis revealed that all GNR were resistant to ampicillin. However, most E. coli isolates were resistant to ceftazidime (72.4 percent of isolates), and ceftriaxone and cefepime (68.9 percent), while most K. pneumoniae isolates were resistant to cefepime (72 percent) and ceftriaxone (64 percent). All S. aureus isolates were resistant to penicillin, while most (64 percent) were resistant to piperacillin; the most effective drugs against bacteria were vancomycin and imipenem. Practical implications The findings suggest that the local government regulatory food and public health authorities should take immediate emergency measures. Appropriate surveillance studies and periodic monitoring of food items should be regularly performed to safeguard public health. Originality/value The current study revealed the prevalence of multidrug-resistant bacteria in freshly prepared fruit juices sold by local street vendors.
