The aim of this chapter is to challenge the context of entrepreneurship competences and management capabilities needed for innovation. We build our arguments in step with actual practice analyzing data from over 200 innovative companies which have been created under the formal requirements of a regional business plan competition during the last 10 years. This study explores the crucial capabilities to start an innovative business and discuss the capabilities have to be developed to sustain innovation and business growth. Therefore, it can be hypothesised that entrepreneurship and innovation education provided by Universities, Centres for Entrepreneurship and through coaching by Business Plan Competitions should focus on building awareness for the necessity of innovations and prepare inventors, entrepreneurs and students for not simply starting an enterprise but the change process in growing companies. The questions are not of whether or not to educate people about entrepreneurship and innovation but rather what are the context and the capabilities needed to sustain business and become an innovative and successful entrepreneur?

Summary: A typical business plan for a new business focuses upon sales, expenses and profits. Can the new business produce enough sales to exceed fixed and variable expenses and make a profit. If the answer is yes, then the decision is to proceed to the next step, which is to determine the amount of initial asset investment needed to start the business and how to finance it. There is oft en little or no focus the additional investments in assets needed to support growth in sales after the business is begun and become successful. Failure to recognize the additional assets needed to support sales growth can come as a total surprise and, if not financed properly, can lead to financial distress, loan default and even bankruptcy.

The research methodology starts from the calcu- lation of the coefficient for each individual com- pany in order to obtain the indicators by calculat- ing the arithmetic mean, median and quartile. As econometric stochastic models have little value for predicting or explaining the growth process at the level of individual companies, the central subject of interest is understanding the growth process at the level of an individual company. The sustainable growth rate of a company depends on the activity of the company. Numerous factors can affect the growth of a company, but the influence of individu- al factors on the growth of a company is rarely sig- nificant and permanent. The results of the research indicate a very asymmetric distribution of the size of enterprises, with a small number of large enter- prises and a large number of small enterprises. The model of sustainable growth is an effective tool for financial planning and directing business policy to- wards stimulating growth in certain industries.

The authors evaluate the best alternatives to offer eggfruit in foreign markets, by stressing the fruit’s advantages and looking for an appropriate by-product attractive for exportation. Their evaluation is based on a research on eggfruit, its types, characteristics, uses, growing in Peru and industrialization methods, and also on statistical data collection, and production and exports projections. Italy was found to be the most appropriate destination, because of its traditional ice cream market, where freeze-dried eggfruit powder can be used as main fl avoring input. Taking these fi ndings into account, the authors propose a 10-year business plan which includes a strategic proposal for installation and business growth, both at the production integration level and the product development level. It is about the search for a feasible, profi table and sustainable business opportunity
