Abstract. Title of the paper: Effect of feeding on the composition of the intramuscular fat in longissimus muscle and different fatty tissues of Hungarian Grey and Holstein Friesian bulls. 1. Fatty acid profile The aim of this study was to analyse the effect of nutrition, genotype and nutrition x genotype interaction on the fatty acid composition of intramuscular fat from longissimus dorsi muscle and different fat deposits using Hungarian Grey cattle bulls (HG) in comparison to Holstein Friesian bulls (HF) kept under extensive and intensive conditions. The extensive group was kept on pasture and was fed a concentrate supplemented with linseed meal in the last month of the trial. The extensive diet influenced the linoleic and linolenic acid ratio and the CLA content of longissimus muscle more advantageous concerning human nutrition. The meat from HG contained more CLA and less n-6 fatty acids also in case of the intensive diet than that of HF bulls. In the fat deposits from HF the PUFA mainly the linoleic acid was in a significant higher proportion available, however in the fat deposits of HG was the percentage of linol- and linolenic acid favourable. The extensive nutrition resulted in a lower linoleic acid and a higher linolenic acid content in both breeds and all three fat deposits. The PUFA content in the fat samples was altered contrary in both analysed breeds because of the different diet. In case of the extensive UG was the PUFA higher in all three fat deposits. In conclusion, the fatty acid composition of beef can be modified favourably by extensive feeding and concentrate which is rich in unsaturated fatty acids, however the beef of Hungarian Grey has a more wholesome influence on human health, than that of Holstein-Friesian bulls.

The production of neutral lipids and phospholipids by submerged cultures of the mushroom Tricholoma nudum, as well as the fatty acid composition of these two fractions, was studied as a function of time. The bulk of the neutral lipids was produced after 2 days when the organism appeared to be in a non-proliferative phase. The major fatty acids of the neutral lipids were palmitic, oleic, and linoleic acid (23–35% each); stearic acid was a minor component (8–13%); myristic, palmitoleic, and linolenic acid were present in small amounts (0.5–4.8%). The major fatty acid of the phospholipids was linoleic acid (55–70%); palmitic (15–19%), stearic (1.8–4.6%), and oleic (7–19%) acid were minor components; myristic, palmitoleic, and linolenic (0–2.3%) were present in small amounts. Linolenic acid was a major fatty acid (26–30%) only in the early stages of growth.A preliminary investigation was carried out with a 4-day-old culture to establish the identity of the various components of the neutral lipids and phospholipids. The neutral lipids were mainly triglycerides (92%). Small amounts of ergosterol esters (1%), free fatty acids (< 1%), ergosterol (1.7%), and unidentified non-saponifiable compounds were also present. The phospholipids contained phosphatidyl choline (59%) as the major component; phosphatidyl ethanolamine (26%), phosphatidyl serine and phosphatidic acid (7.8%), and an inositol containing phospholipid were minor components.Some of the techniques applied were specially developed for the present type of studies and are described in detail.

Fatty acid is known as a physiologically active compound, and its composition in rice may affect human health in countries where rice is the major diet. The fatty acid composition in brown rice of 120 Korean native cultivars was determined by one-step extraction/methylation method and GC. The average composition of 9 detectable fatty acids in tested rice cultivars were as followings: myristic acid; 0.6%, palmitic acid; 21.2%, stearic acid; 1.8%, oleic acid; 36.5%, linoleic acid; 36.3%, linolenic acid; 1.7%, arachidic acid; 0.5%, behenic acid; 0.4%, and lignoceric acid; 0.9%. Major fatty acids were palmitic, oleic and linoleic acid, which composed around 94%. The rice cultivar with the highest linolenic acid was cv. Jonajo (2.1%), and cvs. Pochoenjangmebye and Sandudo showed the highest composition of palmitic (23.4%) and oleic acid (44.8%), respectively. Cultivar Pochuenjangmebye exhitibed the highest composition of saturated fatty acid (28.1%), while cvs. Sandudo and Modo showed the highest mono-unsaturated (44.8%) and poly-unsaturated (42.4%) fatty acid composition, respectively. The oleic acid showed negative correlation with palmitic and linoleic acid, while positive correlation between behenic and lignoceric acids was observed.

AbstractSixty Angus steers (413 ± 8.0 kg) were used to determine the effects of copper (Cu), maize type, and finishing system (confinement v. pasture) on performance, carcass characteristics, and fatty acid composition of longissimus muscle in steers. Steers in confinement were given individually high concentrate diets containing either typical or high-oil maize, using Calan gate feeders. Steers grazing pasture (tall fescue) were maintained in four pastures with each pasture containing five steers. Salt was used to limit concentrate intake in pasture steers to approximately 0.6 of that observed in confinement steers. One half of the steers in each treatment received a CuO needle bolus at the initiation of the study while the remaining steers received no supplemental Cu. Equal numbers of steers per treatment were harvested after 91, 112 or 133 days on food. Rate of gain was lower (P < 0.01; 1.2 v. 1.6 kg/day) for pasture-fed steers compared with steers receiving typical maize. Cu supplementation increased (P < 0.05) ADG in steers given typical maize (1.8 v. 1.5 kg/day) and those on pasture (1.3 v. 1.1 kg/day) but not in steers given high-oil maize diets (1.5 v. 1.5 kg/day). Gain, dry-matter intake and gain/food did not differ between steers given typical or high-oil maize. Plasma cholesterol concentrations were lower (P < 0.01) in steers given typical maize relative to steers given high-oil maize. Steers receiving a Cu bolus had higher plasma (P < 0.05) and liver (P < 0.01) Cu concentrations than steers not receiving a Cu bolus. Steers receiving typical maize had lower (P < 0.05) liver Cu concentrations than steers receiving high-oil maize. Steers finished on pasture with limited concentrate had conjugated linoleic acid (CLA) concentrations in longissimus muscle that were approximately three times higher (P < 0.01) than steers given typical maize. Cu supplementation tended (P < 0.10) to increase muscle CLA. Longissimus muscle from pasture-fed steers was lower (P < 0.01) in C16: 0 and higher (P < 0.05) in C10: 0, C17: 0, C18: 3, C20: 3 and total polyunsaturated fatty acids than steers given typical maize. Muscle C18: 1 trans and C17: 0 tended to be reduced (P < 0.10) by Cu supplementation. These results indicate that finishing cattle on pasture with limited grain increases CLA in longissimus muscle and that Cu supplementation also alters the fatty acid composition of muscle.

Abstract. Polyunsaturated fatty acids (PUFAs) play a role in a wide variety of physiological processes. They are produced by a series of desaturation and elongation reactions. Δ-6-desaturase is a membrane-bound enzyme that catalyzes the conversion of α-linolenic acid (C18:3n-3) and linoleic acid (C18:2n-6) to stearidonic acid (18:4n-3) and γ-linolenic acid (18:3n-6). It is encoded by the FADS2 gene located on bovine chromosome 29. The aim of this study was to identify a single nucleotide polymorphism in the FADS2 gene and to determine possible associations with milk fatty acid composition in two breeds of dairy cattle, i.e., Jersey and Polish Holstein-Friesian. Direct DNA sequencing revealed the presence of an A-to-G substitution in intron 3 of the FADS2 gene (rs209202414). Both populations were genotyped with an appropriate PCR-RFLP assay. The following genotype distributions were observed: for Jerseys, AA = 0.24, AG = 0.63, and GG = 0.13; for Polish Holstein-Friesians, AA = 0.17, AG = 0.40, and GG = 0.43. In Jerseys, statistically significant relationships were found between the FASD2 genotypes and the following milk fatty acids: lauric (P=0.0486), behenic (P=0.0199), lignoceric (P=0.0209), oleic (P=0.0386), eicosatrienoic (P=0.0113), and docosadienoic (P=0.0181). In Polish Holstein-Friesian cows, significant associations were observed for erucic (P=0.0460) and docosahexaenoic (P=0.0469) acids. The study indicated the A-to-G substitution (rs209202414) in the bovine FADS2 gene as a potential genetic marker for fatty acid composition in cattle milk.

The aim of this study was to provide information on the fatty acid profile of different adipose depots - subcutaneous (upper and inner backfat layers) and intramuscular (m. Longissimus dorsi) in East Balkan pigs. The animals were reared in free-range conditions and slaughtered at an average live weight of 107?1.65kg. The results of the study showed that the various adipose tissues in pigs have different lipid metabolism and hence differ in their fatty acid composition. Intramuscular fat had significantly higher content of the saturated C16:0 and C18:0 (P<0.001), as well as the C16:1 (P<0.001) than the subcutaneous fat. In regards to the content of the polyunsaturated fatty acids, the latter displayed considerably higher content of both C18:2 and C18:3 (P<0.001) in comparison to the intramuscular fat in m. Longissimus dorsi. The differences between the subcutaneous and intramuscular adipose tissue in the individual fatty acids determined the similar trend of change in the total content of saturated and polyunsaturated fatty acids. Significant differences between the backfat layers were detected for C16:1, C18:0 and C18:3 (P<0.001). Stearic acid (C18:0) displayed higher content of the inner, while both C16:1 and C18:3 had higher proportion in the outer backfat layer in the East Balkan pigs. Except for C20:2, the long chain polyunsaturated n-6 and n-3 fatty acids had significantly higher proportions in the intramuscular fat, however no differences were determined between the two backfat layers.

ABSTRACT The fatty acid composition of cholesterol esters, phospholipids, and triglycerides of the serum has been studied in groups of hyperthyroid and hypothyroid women and also in control material matched for age. In hyperthyroidism, a decrease in the proportions of linoleic acid and an increase in the proportions of some saturated and mono-unsaturated fatty acids were observed. When absolute concentrations were considered, it appeared that the decrease in linoleic acid was almost equivalent to the entire decrease in total fatty acids in the serum of the hyperthyroid patients. In hypothyroidism no changes were noted in the proportions of linoleic, saturated and mono-unsaturated fatty acids, and the absolute concentrations reflected the general increase in serum lipids. It is believed that these findings may be explained by the changes in lipid turnover which are known to occur in disturbances of thyroid function. In hyperthyroidism, they lead to a linoleic acid deficiency, while a sparing effect must be operating in hypothyroidism. The finding of relatively high linoleic acid values combined with hyperlipaemia in hypothyroidism seems to be characteristic of the condition, since other types of hyperlipaemia are almost invariably combined with low percentages of linoleic acid. Results regarding arachidonic and eicosatrienoic acid are consistent with increased synthesis in hyperthyroidism, and decreased synthesis in hypothyroidism.

Chemical parameters involved in technological meat quality for dry cured processing of Gascon pigs were studied in longissimus dorsi (LD) and biceps femoris (BF) muscles. Muscles from Gascon pigs showed 2.60 and 2.84% of intramuscular fat content, 23.64 and 22.14% protein content and 1.34 and 4.63mg of myoglobin per gram of muscle (respectively LD and BF). Intramuscular fat (IMF) and myoglobin levels were higher than those reported for commercial pigs, but lower than those previously found in Iberian pigs. A similar situation was detected in the fatty acid composition of neutral and polar lipids of both muscles. Thus, monounsaturated fatty acids (MUFA) in neutral lipids of Gascon pig muscles (LD and BF respectively) were 58.27 and 51.98%, while polyunsaturated fatty acids (PUFA) levels were 5.61 and 14.13% respectively; values similar to those found in Iberian pigs and quite different to usual values in commercial pig breeds. The same trend was found in polar lipids. Both muscles showed a low susceptibility to induced lipid oxidation, in agreement with their fatty acid composition. These results pointed out that meat from pigs of the Gascon breed showed optimal characteristics for dry cured processing.
