The aim of the present study was to determine the fatty acid composition, the content of cis9trans11 C18:2 acid (CLA), and lipid quality indices in yogurts made of cow’s milk, available on the Polish market. The test material consisted of: natural yogurts, natural yogurts with additives (muesli, cereal grains), bio yogurts, bio yogurts with additives (millet groats, quinoa, chestnuts), probiotic yogurts, and eco yogurts. All the products were bought in the period from May to June 2021. The conducted research showed that the analyzed yoghurts were characterized by a varying content of fatty acid groups, different values of the calculated lipid quality indices, as well as a different content of conjugated linoleic acid cis9trans11 C18: 2 (CLA). Natural yogurts with additives had the highest content of polyunsaturated fatty acids (PUFAs) and n-3 PUFAs. Natural and bio yogurts with additives had a higher content of n-6 PUF than the other analyzed yogurts. The n-6/n-3 ratio was lower in bio yogurts and eco yogurts. Natural yogurts with additives featured the lowest index of atherogenicity (AI) and index of thrombogenicity (TI) and the highest hypocholesterolemic/hypercholesterolemic ratio (H/H). The fat extracted from the bio yogurts had the highest (0.90% of total fatty acids) mean content of cis9trans11 C18:2 (CLA). In fat of the other analyzed yogurts, mean CLA content in total content of fatty acids varied from 0.48% in natural yogurts with additives to 0.81% in bio yogurts with additives.

The influence of modifying a traditional 24-mo dairy steer calf to beef production system on the fatty acid composition of the longissimus muscle and its potential to authenticate beef provenance was examined. Fifty-four male calves (n = 18 per sire breed), progeny of Holstein-Friesian cows mated with Holstein-Friesian (HF), Aberdeen Angus (AA) and Belgian Blue (BB) bulls were at pasture from March until August of their second year when they were assigned to a 3 (breed types) × 3 (finishing strategies) factorial experiment. The three finishing strategies were (i) pasture only for a further 94 d prior to slaughter (21 mo of age) (Grass), (ii) concentrates ad libitum indoors for 94 d prior to slaughter (21 mo of age) (EC) and (iii) pasture only for a further 94 d followed by concentrates ad libitum indoors for 98 d prior to slaughter (24 mo of age) (LC). Compared to EC, muscle from Grass had a lower intramuscular fat concentration and omega-6: omega-3 polyunsaturated fatty acid (PUFA) ratio and higher proportion of conjugated linoleic acid. A longer period at pasture pre-concentrate finishing increased the concentration of omega-3 PUFA which was still lower than in Grass. To maximise the omega-3 PUFA concentration, a late-maturing breed is more appropriate while to maximise conjugated linoleic acid, an early-maturing breed is more appropriate and both should be finished on grass. Chemometric analysis confirmed that the fatty acid profile can authenticate “Grass-Finished” beef per se and has potential to distinguish “Concentrate-Finished” beef based on the length of grazing prior to finishing, but not distinguish between sire breeds.

Objetivou-se descrever estratégias nutricionais para aumentar as propriedades nutracêuticas do leite, incluindo principalmente estratégias para o aumento nas concentrações de enterolactona (EL) e ácido linoleico conjugado (CLA). Os compostos EL e CLA, ambos produzidos endogenamente a partir de componentes da dieta, são compostos bioativos presente no leite e têm sido apontados como compostos nutracêuticos, capazes de melhorar a saúde humana através da prevenção e tratamento de doenças. Estratégias nutricionais aplicadas na alimentação de vacas leiteiras possibilitam o aumento da concentração destes compostos no leite, tornando possível a produção de leite com maior potencial de beneficiamento a saúde humana. A inclusão de fontes de lignanas vegetais, como por exemplo, o farelo de linhaça e a inclusão de fontes de sacarose na dieta de vacas leiteiras possibilitam aumentar a concentração de EL no leite. Da mesma forma, o fornecimento de fontes ricas de ácidos graxos polinsaturados, como por exemplo, os óleos vegetais, possibilita o aumento da concentração de CLA no leite. A temática da nutrição animal voltada para o aumento das propriedades nutracêuticas do leite, apesar de estar iniciando, apresenta grande perspectiva, e é uma ferramenta valiosa para promoção da associação do leite com benefícios a saúde humana. Palavras-chave: nutracêutico; compostos bioativos; lignanas; vacas de leite; benefícios do leite; redução do risco de doenças.   Nutritional strategies to improve nutraceutical proprieties of milk: improvements on milk enterolactone and conjugated linoleic acid   ABSTRACT: This study aimed to describe nutritional strategies to increase milk nutraceutical properties, including mainly strategies to increase the concentrations of enterolactone (EL) and conjugated linoleic acid (CLA). Enterolactone and CLA are endogenously produced from dietary components and have been identified as nutraceutical compounds with the potential of improving human health through the prevention and treatment of diseases. The concentration of these compounds in milk can be modulated through nutritional strategies which enable to produce milk with greater potential for improving human health. The inclusion of vegetable lignans sources, such as flaxseed meal and the inclusion of sucrose sources in the diet of dairy cows increase the concentration of EL in milk. Feeding sources of polyunsaturated fatty acids, such as vegetable oils, results in increased concentration of CLA in milk. The application of animal nutrition to increase nutraceutical properties of milk is a valuable tool for promoting the association of milk with human health benefits and is of great interest. Stephen L. Defelice, founder and chairman of the Foundation of Innovation Medicine, created the term "Nutraceuticals" in 1989 as a combination of the words "nutrition" and "pharmaceutical." Nutraceuticals are food-derived products that are claimed to give additional health advantages in addition to the fundamental nutritional content present in meals. Their kinds may be more significant than their quantity in terms of health and disease. The aim of this review is to provide a summary of the research on the role of functional lipids namely: Omega -6 fatty acid, Omega -3 fatty acid, Conjugated linoleic acid, Medium chain triglycerides and Phytosterols as nutraceuticals in human health. Functional lipids have been related to the prevention and treatment of a variety of ailments, according to new study. With the use of supplementary and dietary forms of functional lipids, scientific data has demonstrated positive improvements in patients and favorable benefits in healthy people.
