Edible wild and acclimatized plants of Pavlodar region

In Pavlodar region and neighbouring northern regions of Kazakhstan the authors revealed more than 1,5 hundreds wild plants (aboriginal and acclimatized) which may be used as the surrogates of traditional food-stuffs. All the plants recommended for the cooking of food or drinks were distributed among the next groups. 1. Plants with edible green parts and organs as the substitutes of salad green vegetables. 2. Plants with starch and protein parts as the basic source of nutritiousness. 3. Fruit and berry wild plants, origins of dessert courses and potential sugar surrogates. 4. Herbal raw materials for the drinks (fruits, overhead and underground vegetative plants). 5. Spicy wild plants (including new plant species proposed by the authors for this purpose firstly, which earlier didn’t used by this way). Using of weed plant Erigeron Canadensis as the surrogate of pepper and using of linden flower for the coagulation of milk casein and preparing of fermented milk drinks were elaborated by authors and defended by invention patents of Kazakhstan Republic.

The northern regions of Kazakhstan, including the Pavlodar region, are distinguished by a rich and diverse nature, combining floodplain, steppe and forest landscapes. More than 500 species of wild higher plants grow in our region, and many of them can be used as food. However, the problem of using regional wild plants for food has not yet been sufficiently studied. However, plants serve not only as a direct source of food, but also as a technological raw material for processing traditional food products – to obtain original taste qualities and maximum benefit. This paper offers investigation of fruit and berry fillers on the rheological properties of fermented milk drinks. The research was conducted as part of a scientific research effort. Local wild plants were used as fillers. This type of research allowed expanding the range of products at the enterprise and improving the organoleptic and nutritional properties of products. The purpose of this article is to find additional local vegetable raw materials as filler for fermented milk products. The importance of the results is that the data obtained can be used by specialists of dairy farms. During the period of coronavirus infection, when there were interruptions in the supply of raw materials, such directions it sets for future research as the development and improvement new food products by using local plant raw materials were revealed. The experimental samples of fermented milk drink from goat’s milk with various fillers (tayberry, shadberry, black chokeberry and blackcurrant). The pH of the samples were measured with a pH meter (Exspert-рН, Russia). Total solids, protein, fat, ash, and titratable acidity were determined according to the methods described by the standard method. Goat's milk is subjected to ozonization for 10 minutes at an ozone concentration of 80 mg/m3 before entering the container. The pasteurized goat milk (at 37 °C) was inoculated with freeze-dried culture bacterial starter culture (thermophilic lactic acid bacteria and bifidobacteria (Breve B 10, Bifidobacterium adolescentis B 14, Bifidobacterium adolescentis B 37) in the ratio 2:1 at 5 % inoculation level. The sensory aspects were undertaken using 10 panellists. The degree of influence of the introduced bacterial starter culture on the duration of fermentation of fermented milk beverages was studied by taking into account the rheological characteristics and structural and technological parameters. A mathematical model of the dependence of the strength and acidity of a fermented milk clot on the dose of fruit and berry fillers is constructed.

Milk and dairy products are staple foods in the diet of all social groups. Plant additives are of multifunctional use in the dairy industry. Wild plants are a source of vitamins, minerals, and other biologically active substances. Due to these compounds, they improve digestion, cardiovascular activity, and emotional state. This review describes the latest trends in creating functional milk drinks enriched with plant components. They include drinks based on whole milk and cream, dairy by-products (whey, buttermilk), as well as fermented milk drinks with probiotic cultures (kefir, drinking yogurt). We found that aqueous extracts were most commonly introduced into milk raw materials. Fruits and berries were dried and added to milk raw materials in the powder form. Special attention was paid to ‘hairy roots’ as a promising technology for producing various functional foods. In addition to being economically viable, this technology can help us expand the range of plant materials with endangered species. Functional milk-based drinks enriched with plant extracts can improve the immune system and be used as part of supportive therapy. They are also suitable for daily use to replenish the balance of essential nutrients. These properties make their production a promising direction in the dairy industry.

Most current studies on the relationships between plans and engineered nanomaterials (ENMs) are focused on food crops, while the effects on spontaneous plants have been neglected so far. However, from an ecological perspective, the ENMs impacts on the wild plants could have dire consequences on food webs and ecosystem services. Therefore, they should not be considered less critical. A pot trial was carried out in greenhouse conditions to evaluate the growth of Holcus lanatus L. (monocot) and Diplotaxis tenuifolia L. DC. (dicot) exposed to cerium oxide nanoparticles (nCeO2). Plants were grown for their entire cycle in a substrate amended with 200 mg kg−1nCeO2 having the size of 25 nm and 50 nm, respectively. nCeO2 were taken up by plant roots and then translocated towards leaf tissues of both species. However, the mean size of nCeO2 found in the roots of the species was different. In D. tenuifolia, there was evidence of more significant particle aggregation compared to H. lanatus. Further, biomass variables (dry weight of plant fractions and leaf area) showed that plant species responded differently to the treatments. In the experimental conditions, there were recorded stimulating effects on plant growth. However, nutritional imbalances for macro and micronutrients were observed, as well.

Plant is not only closely related to human beings’ life, but also an integral part of raw materials in production. Protection of nature and plant resources is an increasingly urgent needs around the world. Cognition is a prerequisite for the protection of plant. But the way of plant science popularization is old, the knowledge of plant is too obscure to the general public. The system of plant science popularization based on the QR code spreads the knowledge of plant with illustrations interactively, to facilitate ordinary users to learn, understand and identify plant species. The article will detail all aspects of development of the system, allowing more scholars to understand the digitized plant science popularization under the new media.

Because of preparing new edition of “Krasnoyarsky Region Red book (plants and fungi)”, the change of approaches to formation of specially protected vascular plants list are proposed. The changes of principles for adding species to this list are proposed, as well as offers by including and excluding the species. In particular, conferring conservation status is necessary not only for species at whole, but for separate large populations. The special approaches is necessary for species, hard to definite in nature. Besides, it is necessary to supplement new edition by Appendix “The list of Krasnoyarsky Region plant species needing special attention by their condition in nature”.

Wild food plants play an important role in the diet of inhabitants of Oyam District. Some of these plants are drought -resistant and gathered throughout the year . These wild foods are an important source of nutrients. However, there is a lack of comprehensive data re garding the nutrient content s of these indigenous plants. The purpose of this study was to document and assess the nutrient and mineral content s of the selected food plants. Ethnobotanical surveys were used to collect data through formal and informal inter views and focused group discussions. Voucher specimens were collected during field excursions and taken to Makerere Herbarium for proper identification . Nutrients and mineral analyses of wild and cultivated fruits, seeds, underground organs and vegetables from Ngai and Otwal sub counties were carried out using known procedures. They were analysed for mineral nutrients such as calcium, iron, potassium, and phosphorus concentrations. Additionally nutrients such proteins, beta carotene, vitamin C and dietary fibre were determined . On average, vegetables were found to be richer in organic nutrients and minerals followed by fruits and seeds in that order . Generally the wild food plant species were found to be richer sources of mineral nutrient than their cultivated relatives. F or example , the highest concentration of calcium 867.59 mg/100g was found in Acalypha bipartita leaves compared to 294.18 mg/100g in Cleome gynandra . Plant species that showed high iron contents [>30% ] were leaves of swamp hibiscus , African spider flowers , fruits of Tamarind , Black night shade and Jews mallow . It was also noted that among the food plant species analysed, fruits were low in nutrients and mineral elements. Some of these food plants were also considered to have medicinal properties by the locals such as African spider flower, Rattle pod among others. However, it should be noted that there is a general decline in the consumption of wild plants , despite the apparent high nutritional values . T he conservation of wild food plants is not taking place among the communities in the study area, thus the poor rural communities who are limited on balancing their diet could be faced with diseases associated with nutrient deficiencies .

The study covered 10 small rivers in the North-Eastern part of the Samara Volga region. The author studied the vegetation cover, which is understood as a set of phytocoenoses and their constituent plant species. On the territory of Pokhvistnevsky District, there are two groups of river valleys that are heterogeneous in geobotanical terms. The first group includes the rivers with forested valleys (Kutlugush, Murakla, Karmalka). Their slopes are more or less symmetrical and steep. The vegetation cover of an undeveloped floodplain is usually uniform, and there is usually no belt. The valleys of the second group are treeless; their slopes are sharply asymmetrical (Amanak, Tergala, Talkish). The right-bank tributary of the Maly Kinel River the Lozovka River with its length of 20 km and the left tributary Kuvayka River with its length of 16 km were studied on the territory of Kinel-Cherkassky District. The Padovka and Zaprudka rivers and the right tributaries of the Bolshoi Kinel River (Kinelsky District) were also studied. The most common associations are (Salix fragilis heteroherbosa, Scirpus sylvaticus purum, Agrostis stolonifera Amoria repens, Elytrigia repens + Poa angustifolia heteroherbosa). In total, 19 types of phytocoenoses were noted, 4 of them are found in half of the studied rivers. In the plant communities of small river valleys there are 232 species of higher wild plants, which belong to 139 genera from 48 families. This is 60% of the total number of higher plants registered in the flora of small river valleys of the Samara Region. Rare protected plant species are registered here: Adonis volgensis Steven ex DC., Cacalia hastata L., Delphinium cuneatum Stev. ex DC., Globularia punctata Lapeyr.

Determination of the directions of formation of the contemporary level of quality and assortment concept of the species diversity of functional bread of mass assortment with the use of wild berry plants Ericaceae for health improving nutrition. The materials were questionnaires of a survey of potential consumers of functional bread of the city of Krasnoyarsk, wild berry plants of the Heather family (Ericaceae): fruits of cranberry (Vaccinium oxycoccos), of cowberry (Vaccinium vitis-idaea), of bilberry (Vaccinium myrtillus), of blueberry (Vaccinium uliginosum) and powders from them. The method of isolation of the average sample according to GOST 24.027.0-80 was used in the work. The content of toxic elements in berries was determined according to GOST 26927-86, GOST 26930-86, GOST 30178-96 using an atomic emission spectrometer with inductively coupled plasma-iCAP 6500. Generally accepted theoretical and statistical research methods, combinatorial analysis, and data processing using standard mathematical programs were used in the work. Study of the consumer survey, literature data of the chemical composition of berries of wild plants Ericaceae, data on the possibility of procurement of raw materials on the territory of Krasnoyarsk region, investigation of safety performance of the raw material and powders out of him for compliance with the requirements of TR CU 021/2011 and 027/2012 indicate the possibility of their use in the composition of functional bread as a source of biologically active compounds with a variety of positive physiological properties. The multivariance of the development of the range of functional types of bread with additives from Ericaceae berries is confirmed by the data of combinatorial analysis. As a result, an assortment concept of the species diversity of functional bread of a mass assortment of contemporary quality with additives from wild berry plants Ericaceae for improving nutrition was formed. Researches is promising in the formation of the range and actual quality of functional types of bread of mass assortment using local wild-growing raw materials, the advantage of which is naturalness, the content of functional ingredients, and contribute to the development of the range and technologies of healthy food products.
