Determination of the directions of formation of the contemporary level of quality and assortment concept of the species diversity of functional bread of mass assortment with the use of wild berry plants Ericaceae for health improving nutrition. The materials were questionnaires of a survey of potential consumers of functional bread of the city of Krasnoyarsk, wild berry plants of the Heather family (Ericaceae): fruits of cranberry (Vaccinium oxycoccos), of cowberry (Vaccinium vitis-idaea), of bilberry (Vaccinium myrtillus), of blueberry (Vaccinium uliginosum) and powders from them. The method of isolation of the average sample according to GOST 24.027.0-80 was used in the work. The content of toxic elements in berries was determined according to GOST 26927-86, GOST 26930-86, GOST 30178-96 using an atomic emission spectrometer with inductively coupled plasma-iCAP 6500. Generally accepted theoretical and statistical research methods, combinatorial analysis, and data processing using standard mathematical programs were used in the work. Study of the consumer survey, literature data of the chemical composition of berries of wild plants Ericaceae, data on the possibility of procurement of raw materials on the territory of Krasnoyarsk region, investigation of safety performance of the raw material and powders out of him for compliance with the requirements of TR CU 021/2011 and 027/2012 indicate the possibility of their use in the composition of functional bread as a source of biologically active compounds with a variety of positive physiological properties. The multivariance of the development of the range of functional types of bread with additives from Ericaceae berries is confirmed by the data of combinatorial analysis. As a result, an assortment concept of the species diversity of functional bread of a mass assortment of contemporary quality with additives from wild berry plants Ericaceae for improving nutrition was formed. Researches is promising in the formation of the range and actual quality of functional types of bread of mass assortment using local wild-growing raw materials, the advantage of which is naturalness, the content of functional ingredients, and contribute to the development of the range and technologies of healthy food products.

The purpose of this article is to consider the definition of a firm's competitiveness on the basis of scientific works of domestic and foreign authors, which will help to consider this category in more detail from the point of view of various authorship and identify the main criteria of competitiveness, which, according to the authors, are key in determining the high competitiveness of a firm. A retrospective direction of analysis and synthesis will help to track the evolution of competitiveness from the standpoint of the main criterion put forward by the author and formulate an actual definition of this category, which together will give a clear understanding of the assessment of this economic category and will be able to reflect the essence of already existing theoretical approaches to determining the competitiveness of a firm. The results of the analysis can be used as a theoretical basis for studying the evolution of the definition of the competitiveness of a company both for classes in the classroom and for independent study. The clearly formulated essence of determining the competitiveness of a firm in the future can become the basis for conducting research on the main criteria for the competitiveness of a firm, methods for assessing the competitiveness of a firm and the formation of a system of economic indicators for assessing the competitiveness of a firm, however, due to the specificity and relative novelty of this economic category, namely its close connection with a multitude of external factors that affect the change in its essence over time, and in particular constant technical progress and digitalization of the economy, there is a high probability of losing the relevance of a number of formulated theoretical points that are relevant for a given period of time, which will require refinement and additional study of the essence of the company's competitiveness.

The information base of the study was the works of economists in the field of the theory of consumer demand. The article is devoted to the influence of consumer demand on the dynamics of the national economy. The hypothesis of the study is the assumption of increasing influence of Keynesian-institutional factors on the development of the Russian economy. In this study, the authors apply a Keynesian approach to the analysis of the Russian economy, based on the premise that consumer demand, which is the most significant component, is a key factor in macroeconomic dynamics. The discussion on the impact of consumer demand on the dynamics of the national economy continues. The article examines the evolution of scientific approaches related to the theory of consumption and consumer demand of households, their formation at the microeconomic level and the transition to the macroeconomic level. The analysis of the dynamics of consumer demand of households, the relationship of the dynamics of income and expenditure of the population with the composite index of consumer confidence is presented. Consumers expectations regarding the pandemic had a negative impact on consumer confidence and consumer demand in 2020 dynamics of consumer demand in the Russian economy in modern conditions shows an unstable trend. There is a drop in consumer demand, a decline in the level of savings and a drop in the index of consumer confidence of households. The results of the study can be used as guidelines for the state's economic policy aimed at stabilizing the national economy. The article examines the issues of improving trade and food security in the Arctic territories of the region in terms of the rapid development of mining projects and processing of ores of non-ferrous metals, oil, gas transportation and the development of new logistics, including the Northern sea route and polar move. Analyzed manifested opportunities for the development of new practices of co-organization of business ecosystems integrated their use with a view to preserving traditions of indigenous peoples of the North, weak coupling areas and the high significance of the projects. The hypothesis is tested that the most successful for the development of such territories will be the formation of cooperative-network business ecosystems in relation to the goals and objectives of socio-economic development, in the cooperation of the resources of the state, business and the population. The possibilities of cooperation of digital technology resources of large corporations, the state and local communities for the implementation of new interactions for the sustainable development of territories are shown. The approaches implemented in the article can be used in research and practical projects for the development of sparsely populated, loosely connected territories of new development.

The article discusses the issues of interaction between participants in the retail footwear market. Strong competition in the footwear retail market encourages a full analysis of the environment in which the main players interact. The main emphasis in the study is made on the analysis of the characteristics of functioning between the leading participants in the retail footwear market in the state. The authors of the study singled out market participants, described their main goals, objectives, tools and interaction criteria. A scheme for the functioning of the state economy is proposed, based on mutually beneficial relations between the seller and the buyer, as well as their relationship with the state, the Chamber of Commerce and the Russian Union of Industrialists and Entrepreneurs. The main objects of the considered by the authors in the field of retail trade in footwear are the relationships of market participants, their form and characteristics, as well as the principles that the participants follow when performing any actions.

The article considers the possibility of using linseed flour for the production of wheat-rye bread "Flax Strength" of increased nutritional value in order to correct the diets of residents and workers in unfavorable living conditions. Studies of the quality of a new type of wheat-rye bread, depending on the amount of linseed flour added, were based on the scientific developments of Russian researchers in the field of improving bread quality using additives from plant raw materials (I. E. Minevich, M. I. Begeulov, T. V. Sanina and others). The subjects of the study determined yeast dough from wheat-rye flour with the addition of linseed flour in various combinations and baked wheat-rye bread from them. Linseed flour is characterized by a high content of vegetable protein, fiber, polyunsaturated fatty acids (ω-3, ω-6), antioxidants, vitamins E, B1, B2, B6, trace elements (potassium, magnesium, zinc). During the study, organoleptic, physicochemical methods were used. As a result of the work, it was established that the introduction of linseed flour into the recipe composition of bread up to 15 % of the total weight of flour forms high consumer qualities of finished products (organoleptic indicators), increases the nutritional value of bread compared to the traditional recipe (protein content increased to 13.3%, pectin substances - up to 2.15%, calcium - up to 38.88 mg%, iron - up to 0.93 mg%). This process is explained by the high water-retaining ability in the process of dough formation and baking of protein, fiber, pectin substances. A promising area of practical use of scientific work is the ability to produce bread "Flax Strength" of increased nutritional value for workers in the oil and gas industry working on a watch basis in the Arctic region of the Russian Federation.

The development of competition in the retail sales market determines the development of methodological and practical approaches to the formation and diagnosis of the assortment of goods sold. The issues of optimizing the assortment policy are reflected in the works of both foreign and domestic researchers for a significant period of time, but there is a possibility to expand the tools of such studies. In practice of retail enterprises, due to various sales formats, location, volumes of activity and other factors, in many cases it is difficult to use knowledge-intensive econometric models for assortment diagnostics, and therefore there is a need to form tools that are user-friendly in a variety of operating conditions. The aim of the study is to develop approaches to the diagnosis of the formation of the assortment of a retail enterprise based on the synthesis of existing methods and techniques. The article defines the concept of sales profitability in the framework of assortment diagnostics, taking into account the specifics of income generation in trade. In addition, basic methodological approaches to the formation of a retail assortment from the standpoint of merchandising, marketing and category management are summarized and structured, that enabled to prove the possibility of an assortment diagnosis using a matrix combining the ABC-analysis of profitability and XYZ-analysis of the stability of sales for the formation of the basic classes of goods. The proposed methodology will expand the tools for diagnosing the assortment of retail trade enterprises and will allow making adequate management decisions on its optimization to increase the effectiveness of the functioning of retail sales entities.

The problems of safe use of packaging for contact with food are discussed. In particular, the possibility of migration of low molecular weight chemicals from packaging materials to a consumer product, which above a certain established threshold value, represents a significant risk, has been investigated. Particular attention is paid to packaging that contains recycled materials. The problems that need to be solved for the safe use of recycled materials in packaging are discussed. An example of the use of polyethylene terephthalate (PET), which has passed the stages of controlled aging in mechanical recycling, is considered. The change in the microstructure of the polymer from cycle to cycle, its chemical composition and physical parameters were assessed by methods: physico-mechanical, optical and electron microscopy with X-ray microanalysis, FT-IR spectroscopy, viscosity (melt flow rate), biotesting. A noticeable effect of the aging process on both the original primary polymer and the recycled one is shown. Moreover, the biotesting method revealed sufficient toxicity of both secondary PET, which has a certificate, and PET flakes. As the oxo-degradable packaging, two samples of industrial polymer packaging were chosen, which contained different oxo-degradable additives: d2w and "REVERTE". The ciliates Tetrahymena pyriformis were used as test objects. Research has shown that a declared supplement can only be a declaration. The analysis of the microstructure and chemical composition of the films by X-ray diffraction microanalysis revealed the absence of transition metal ions. The test objects of the ciliates behaved practically the same in control solutions and in the presence of the studied films with the d2w oxo additive, which reliably indicates the absence of these additives in the films. The prospects of using the methods of biotesting of packaging materials have been proved as they allow, without the use of model environments and sanitary-chemical studies, to give a relatively quick conclusion about the safety of the material and its suitability for contact with food.

The efficiency of public procurement today is considered all over the world as a complex of effects that ensure sustainable socio-economic development of the country. Among these effects, a special role is played by budget savings obtained as a result of tenders. In this case, the average number of submitted bids for one purchase is considered as the main criterion for competition in purchases and a condition for the growth of financial savings. We assume that this criterion is not sufficient for a qualitative analysis of such savings and balanced management of all the beneficial effects of public procurement. Using a systematic and risk-based approach, we have formulated an extended list of indicators that allow us to identify opportunities for increasing savings and risks of deterioration of other characteristics of procurement. The study of the proposed indicators by statistical methods was carried out on the example of purchases by the Kaliningrad customs. A differentiated analysis of the savings obtained as a result of auctions with different numbers of bids submitted showed a relationship between the initial contract price, the level of competition in procurement and the amount of saved financial resources. At the same time, it was revealed that a significant share of auctions in value terms is held without competition, and among those held with high competition, the share of the risk zone is too high, where the winner of the auction reduces the initial contract price by 25% or more. Further testing of the approaches we have formulated to a multidimensional assessment of the budget savings will reveal patterns in ensuring the efficiency of procurement for government organizations of various territorial and departmental affiliations.
