This study aimed to evaluate the effect of using different high-grain diets on the carcass characteristics and tissue composition of the meat of feedlot-finished lambs. Thirty-two male castrated Texel lambs born from single births and weaned at approximately 50 days of age were allotted to treatments that consisted of different unprocessed grains, as follows: corn grain, white oat grain, black oat grain, or grain of rice in the husk. The animals were slaughtered upon reaching the pre-established slaughter weight of 32 kg, which corresponds to 60% of the mature weight of their mothers. Lambs fed the high-corn grain diet had higher weights and yields of hot and cold carcass and larger loin-eye areas than those finished in the feedlot receiving high-grain diets based on white oat, black oat, or rice in the husk. Additionally, they had a higher degree of fatness and a thicker subcutaneous fat layer at slaughter, which lead to decreased cooler shrink loss. The neck, shoulder, ribs, and leg cuts were heavier in lambs fed the high-corn grain diet. By contrast, these lambs had a lower proportion of leg, more rib, and higher meat fat content, which may be undesirable for the consumer market. The use of high-corn grain diets, in comparison with high-grain diets based on black oat, white oat, and rice in the husk, may be recommended for finishing lambs in the feedlot when they are slaughtered at similar weights.

AbstractThis study investigated the effects of the percentage of Texel or Rouge de l’Ouest (Rouge) genes in lambs (0, 50, 75 or 100%; the remainder being Greyface (Border Leicester × Scottish Blackface)) on lamb carcass characteristics and meat quality. Ewe lambs were slaughtered at 34, 40, 46 and 52 kg and ram lambs were slaughtered at 40, 46, 52 and 58 kg live weight. Dressing proportion increased (P < 0·001) by 0·53 and 0·27 g carcass weight per kg live weight for each 1% increase in Texel or Rouge genes respectively. Carcass conformation classification increased (P < 0·001) by 0·016 and 0·007 units (on a five-point scale) for each 1% increase in Texel or Rouge genes respectively. Carcass fat depth measures were reduced by Texel and Rouge genes such that at a constant fat depth end point, carcass weight could be increased by 0·029 and 0·023 kg for each 1% increase in Texel or Rouge genes. Carcass lean content increased (P < 0·001) by 0·99 and 0·27 g/kg for each 1% increase in Texel or Rouge genes. Subcutaneous fat content was reduced (P < 0·001) by 0·36 and 0·29 g/kg for each 1% increase in Texel or Rouge genes. Intermuscular fat content was reduced (P < 0·01) by 0·38 g/kg per 1% increase in Texel genes, whereas Rouge genes had no effect. Similarly, bone content was reduced (P < 0·01) by Texel genes only (0·31 g/kg per 1% increase in Texel genes). Warner-Bratzler shear force values showed a quadratic effect with increasing Texel and Rouge genes, with an initial decrease from 0 to 50% followed by an increase to 100%. Cooking loss increased (P = 0·05) as the percentage of Rouge genes in lambs increased. Increasing the percentage of Texel or Rouge genes significantly increased L* values (P < 0·01 and P < 0·05 respectively), b* values (P = 0·05 and P< 0·05 respectively) and H° values (P < 0·001).

The aim of this study was to assess the influence of different finishing systems on the in vivo measurements, quantitative and qualitative carcass characteristics, commercial cut ratio, and shoulder tissue composition of lambs. Thirty-two male lambs were distributed in four finishing systems with eight replications each, as follows: suckling lambs on pasture; suckling lambs in confinement, with access to creep-feeding containing corn bran and soybean meal; weaned lambs fed roughage, characterized by ad libitum supply of alfalfa hay; and weaned lambs fed concentrate, composed of oat grain and soybean meal. The lambs were slaughtered as they reached the pre-set live weight at slaughtering of 30 kg. Most of the in vivo biometry variables were not significant (P > 0.05) when comparing the finishing systems, except for hindlimb height and thoracic perimeter. Regarding the quantitative carcass characteristics, all variables differed (P < 0.05) between systems, except for carcass length, leg width, and subcutaneous fat thickness. For the qualitative carcass characteristics, only the fatness and carcass conformation presented significant differences (P < 0.05). Most in vivo measurements and the proportion of carcass cuts were not influenced by finishing systems. Weaned lambs fed an exclusive concentrate diet presented leaner carcasses with an inferior conformation when compared to the other finishing systems. Suckling lambs in confinement presented shoulders with a higher fat deposition when compared to those weaned. Suckling lambs both on pasture and in confinement presented a superiority in the quantitative carcass characteristics when compared to weaned lambs.

One hundred and fifty crossbred pigs (Camborough × Canabrid, equal numbers of gilts and barrows) at an average live weight of 64.2 kg were randomly assigned to diets containing 17 or 20% crude protein (with 0.8 or 1.1% lysine, respectively) and 0 or 20 ppm ractopamine. Pigs were slaughtered at an average live weight of 102.2 kg. Supplementation of ractopamine in pig diets significantly increased average daily gain (P < 0.005) and decreased feed to gain ratio (P < 0.001), with no effect on daily feed intake. Ractopamine feeding increased total lean (P < 0.001) and decreased total bone (P < 0.05) and total fat content (P < 0.001) of carcasses. The decreased fat content was largely due to the reduction of subcutaneous fat (P < 0.001). Cartilage visual scores and cartilage uronic acid concentrations of weight-bearing areas of humeral and femoral condyles were not affected by feeding ractopamine. Correlations between visual scores and uronic acid concentrations of joint cartilage and performance parameters and carcass characteristics were not significant. These results demonstrated that feeding ractopamine can increase pig growth rate and carcass leanness without detrimental effect on joint cartilage. A study was conducted with 192 pigs of three sex types with treatments according to slaughter weight (65 kg to 144 kg). The main statistical differences observed were for slaughter weight with significant (P < 0.05) and highly significant (P < 0.01) differences describing more than 10% of variance observed for all characteristics (liveweight, warm carcass weight, dressing percentage, eye muscle area, subcutaneous fat thickness, intramuscular fat area, subcutaneous fat : eye muscle area, intramuscular fat : eye muscle area, fat thickness, muscle depth, carcass length, ham circumference, ham length and chest depth) measured. Sex differences (P < 0.05) were also observed for dressing percentage, fat measurements and muscle depth measured between the 5th and 6th lumbar vertebrae. Sex type differences, in all instances, accounted for 10% or less variance except for subcutaneous fat : eye muscle area ratio (18.47%). It was shown that although significant sex type differences (P < 0.05) existed; slaughter weight had the largest effect on carcass characteristics in the given circumstances accounting for most of the observed variance.

AbstractWhile crossing of specialized sire and dam breeds can be biologically efficient overall, a by-product is produced in the form of (crossbred) males of the dam line that are unwanted for breeding. In the UK sheep industry, most commercial females are first crosses between males of ‘longwool’ crossing sire breeds, predominantly the Bluefaced Leicester, and females of hill breeds. Genetic improvement of carcass quality in longwool breeds would benefit the surplus F1 males as well as filter through to the terminal sire cross lambs produced by the F1 ewes. As a first step, this paper aims to describe the growth and carcass characteristics of crossbred ‘Mule’ wether offspring of Bluefaced Leicester sires and Scottish Blackface and Hardy Speckled Face dams, and relate the crossbred performance to the ‘lean’ index and live conformation score of the sires and the breed of the dams. In each of 3 years, 1500 hill ewes divided over three sites were mated to 15 ram lambs, selected using an elliptical design to best represent the full spectrum of lean index (designed to improve muscle and decrease fat content while keeping live weight unchanged) and live conformation score present in the Penglas Bluefaced Leicester Group Breeding Scheme. Full growth and slaughter records were available on 2192 Mule wether lambs slaughtered after reaching finished condition, defined as the borderline between MLC fat class 2 and 3L. Measurements included live weight, ultrasonic muscle and fat depth, live conformation score, carcass hot and cold weight, MLC fat score (on the standard seven-point scale) and conformation score (EUROP and 15-point scale) and a visual estimation of subcutaneous fat cover. Nearly 800 carcasses were dissected; 20% had a full side and 80% a shoulder dissection. In part-dissected carcasses, shoulder dissection results were used to predict the fat and lean content of the other joints. Fat and lean percentages and absolute weights were then regressed on the lean index and the residual live conformation score of the sire. At the same finished condition, Scottish Blackface offspring were heavier, older, and had less fat and more lean based both on ultrasound and on carcass dissection measurements compared with Hardy Speckled Face offspring. The index score of the sire had a positive effect on the lean content and a negative effect on fat content of all joints. Conformation of the sire did not have a significant effect on any of the carcass composition measurements, but most conformation traits measured on the animal itself (live or on the carcass) were positively related to fat and negatively to lean content in the carcass. When taking into account differences in visually assessed subcutaneous fat percentage, the carcass conformation traits persisted only in having a positive effect on carcass fat content; none of the conformation traits had an effect on carcass lean content. The results show that selection of sires on lean index is an effective way to improve carcass composition in Mule wethers, but selection on conformation is ineffective.

AbstractThe performance of British Saanen, Boer × British Saanen and Anglo-Nubian kids from weaning to slaughter at 28, 33 or 38 kg live weight (LW) was examined in a 3 × 3 factorial experiment. Kids were reared on a concentrate and hay ration, after weaning at 8 weeks of age. Intakes were measured individually. At slaughter, carcasses and body fractions were weighed, left half-carcasses were dissected into muscle, fat and bone, and the carcass and non-carcass fractions were analysed chemically. There ivas no significant effect of breed type on mean daily intakes, but there was a significant breed-type effect on mean daily LW gains in the order British Saanen > Boer × British Saanen > Anglo-Nubian kids. Compared with the pure British Saanen kids, the Anglo-Nubian kids produced heavier carcasses yielding more muscle and less subcutaneous and intermuscular fat at each slaughter weight. By contrast, the Boer × British Saanen carcasses contained proportionately more fat, mainly intermuscular fat, than the British Saanen when slaughtered at 28 or 33 kg LW. When taken on to slaughter at 38 kg LW, the Boer × British Saanen kids showed little further increase in fat deposition at the internal and intermuscular sites compared with the British Saanens, resulting in carcasses with slightly more subcutaneous fat but lower overall carcass fat content.

Half-carcasses of 108 wether and ewe lambs from six genotypes, slaughtered at 34, 44 and 54 kg liveweight, were dissected into subcutaneous fat, intermuscular fat, muscle, bone and connective tissue. The six genotypes were the progeny of Dorset Horn and Border Leicester rams mated to Merino, Corriedale and Border Leicester x Merino first-cross ewes. As carcass weight increased, the proportion of subcutaneous and intermuscular fat increased (b > 1 ; P < 0.05) and the proportion of muscle and bone decreased (b < 1; P < 0.05). Lambs sired by Border Leicester rams had more subcutaneous fat (12.7%), more intermuscular fat (7.6%) and more bone (5.7%) than lambs sired by Dorset Horn rams at the same carcass weight (P< 0.05). Similarly, lambs sired by Dorset Horn rams had more muscle (7.2%) than lambs sired by Border Leicester rams at the same carcass weight (P < 0.05). Breed of dam had no effect on carcass composition. Wether lambs had a greater proportion of bone (5.7%) than ewe lambs at the same carcass weight (P < 0.05). The breed of sire effect and the lack of a breed of dam effect on carcass composition, in conjunction with estimated mature weights for the breeds, suggest possible differences between sire and dam breeds in the partitioning of fat between the carcass and non-carcass depots. ____________________ *Part I, Aust. Abstract Probiotics are live microorganisms that, when administered in adequate amounts, confer a health benefit on the host. Many studies have demonstrated that probiotics could enhance the growth performance of swine, but rare evidence on meat quality. Therefore, a combination of Lactobacillus and Bacillus strains, SYNLACTMLeanAd (SLA), on carcass characteristic, meat quality and cecal microbiota of pig was conducted. 60 LYD weaned pigs were randomly allotted to control (corn-SBM based diet, CT), antibiotic (basal diet with 200 ppm Amoxicillin, AB), and multi-strain probiotics (basal diet with SLA at 106 CFU/g feed, SLA). Pigs fed treatment diets from 7 to 130 Kg BW (24 wks) with 20 pigs/TRT, and individual pigs used as experimental unit for carcass evaluation. There were no differences on carcass weight and carcass yield. Lean percentage of CT, AB and SLA were 54.01, 51.54, and 54.75%, respectively (P &gt; 0.05) with subcutaneous fat 21.59, 21.21, 17.22%, and backfat 3.08, 3.21, 2.76 cm, individually (P &gt; 0.05). However, the longissimus muscles area was improved (62.77 vs. 68.42 vs. 91.59 cm2, P &lt; 0.05), loin weight increased (3.52 vs. 3.49 vs. 4.52 Kg, P &lt; 0.05) with greater marbling score (2.38 vs. 1.80 vs.2.78, P &lt; 0.05) in SLA. Sensory evaluation showed pigs fed SLA had higher juiciness score (3.55 vs. 3.18 vs. 3.91, P &lt; 0.05) with better overall acceptance. It is unclear pork quality was different between treatments; however, cecal microbiome gene sequencing suggested a potential linkage of gut microbiota modification and pork quality by AB or SLA feeding.

Performance and quality traits were measured in carcasses from combinations of genotype, diet supplement, slaughter weight, and carcass chilling regime. Iberian-crossed pigs had lower live animal performance than Duroc and Lacombe. From 70 to 115 kg, Lacombe pigs grew slightly faster than Duroc. Duroc carcasses had a higher lean percentage, heavier ham and picnic primals, and lighter loins and bellies, compared with Lacombe and Iberian. Heavier carcasses had lower lean yield, except those from Iberian-crossed pigs, and bigger bellies. Meat from Duroc-crossed pigs was lighter in colour and higher in marbling, with intermediate values for fat hardness. Iberian carcasses displayed dark meat with intermediate marbling and the hardest fat. Meat from Lacombe pigs was the leanest although, like in all three breeds, marbling scores were higher in heavier carcasses. Generally, supplementing with canola and flax decreased and blast chilling increased fat hardness values. Dietary canola also seemed to affect meat colour traits, but these effects were not consistent among breeds and slaughter weights. The commercial combination of Duroc breed, control diet, and 115-kg slaughter weight showed a balance in terms of performance, carcass, and quality traits. Other combinations evaluated in this study showed potential to efficiently produce differentiated pork.
