Lilac aldehydes are considered as principal olfactory molecules of lilac flowers. We have designed, prepared, and evaluated a set of racemic seco-analogues of such natural products. The synthesis employs commercially available α-chloroketones as substrates that are transformed in four steps to target compounds. Their qualitative olfactory analysis revealed that the opening of the tetrahydrofuran ring leads to a vanishing of original flowery scent with the emergence of spicy aroma accompanied by green notes, and/or fruity aspects of novel seco-analogues. These results suggest the important osmophoric role of THF moiety for the generation of the typical flowery aroma associated with lilac aldehydes.

Complex matrices, such as wine, provide a challenge in the quantification of compounds. There exists a high likelihood of co-elution in these matrices, thereby artificially increasing the observed concentration. This can often lead to confusing data where compounds are above aroma detection thresholds, but are not detected by olfactory analysis. Additionally, the lack of sensitivity in assays can lead to the non-detection of sub-aroma threshold concentrations and contrasting data when olfactory analysis detects these aromas. To eliminate these pitfalls and gain a better understanding of the role that methoxypyrazines impart green character to wine, a quantitative method using headspace solid-phase microextraction coupled to heart-cutting multidimensional gas chromatography mass spectrometry was developed. The method can quantitate the three common methoxypyrazines found in wine at the picogram per liter level while resolving co-eluting compounds. The proposed method was validated using model wine and wine solutions and was ultimately used for the comparative analysis of white, rosé, and red wines.

Abstract Alzheimer’s disease (AD), a neurodegenerative condition, is one of the most prevalent kinds of dementia, whose frequency doubles for every 5 years of age in elderly. Objective: To determine the correlation between AD and olfactory alterations, identifying the most affected domains and exploring the utility of olfactory tests for complementing early diagnosis. Methods: Databases were searched using the terms “olfactory OR smell OR olfaction AND alzheimer” for articles related to the proposed theme. The selected studies were categorized and evaluated separately depending on the method of analysis of the olfactory tests: identification of odors, discrimination and recognition, and a meta-analysis was carried out. Results: Fifty-one articles were selected for analysis. The effect size for most studies was large, as were the summary values for each category of individualized olfactory analysis. Conclusion: Among the olfactory domains, except memory, identification appears to be the most altered in AD. The possibility of including tests that specifically evaluate the identification of odors as an item in early diagnostic evaluation should be explored. PROSPERO registration: CRD42018089076.

Abstract Odorous volatile organic compounds (VOCs) were analysed via a thermal desorption gas chromatograph coupled with a mass spectrometer and olfactory detection port (TD-GC-MS/ODP) to characterize odour emissions from a wastewater treatment plant (WWTP). Three trained ODP assessors, screened according to the European dynamic olfactometry standard (EN: 13725), were used for the olfactory analysis. Their sensitivity to n-butanol varied within the acceptable limits. VOC samples from the WWTP were collected onto Tenax TA sorbent tubes in triplicate and each assessor analysed one tube in the same sample desorbing and analysing conditions. Intensities of odours detected from ODP were scaled from 1 to 4. The ODP assessors used their own odour descriptors based on their own experience as well as referenced descriptors on published compost and wastewater odour wheels. The ODP assessors detected a total of 32 different odorous VOCs; however, the intensities assigned by each assessor to particular VOCs varied. Moreover, some odorous VOCs were not detected by all assessors. For example, geosmin was detected by only two assessors. The use of a TD-GC-MS/ODP system for the analysis of odorous VOCs is valuable when analysed by different assessors, allowing a range of responses to specific odorants in a populations to be investigated.

Abstract In 2012-2013 a series of laboratory and field experiments were carried out to check out, if beers can be used as olfactory attractants in the fight against harmful slugs Arion lusitanicus. Six brands of lager beer were used for olfactory analysis (Goolman Premium, Harnas Jasne Pełne, Tatra Mocne, Kasztelan Niepasteryzowane, Lezajsk Niepasteryzowane, Wojak Jasny Pelny). During laboratory and field tests it was evidenced that beers of all types were more attractive for slugs than water.

The essential oils of four chemotypes of Thymus vulgaris L. (Lamiaceae) were analyzed for their composition and antibacterial activity to assess their different properties. GC-MS and GC-FID analyses revealed that the essentials oils can be classified into the chemotypes thymol (41.0% thymol), geraniol (26.4% geraniol), linalool (72.5% linalool) and 4-thujanol/terpinen-4-ol (42.2% cis- and 7.3% trans-sabinene hydrate, 6.5 % terpinen-4-ol). The olfactory examination confirmed the explicit differences between these chemotypes. Furthermore, antibacterial activity was investigated against several strains of two Gram-positive ( Brochothrix thermosphacta and Staphylococcus aureus) and four Gram-negative food-borne bacteria ( Escherichia coli, Salmonella abony, Pseudomonas aeruginosa and P. fragi). All essential oil samples were demonstrated to be highly effective against Gram-positive strains, whereas the impact on Gramnegative microorganisms was significantly smaller, but still considerable. The results obtained indicate that, despite their different properties, the essential oils of selected T. vulgaris chemotypes are potent antimicrobials to be employed as useful additives in food products as well as for therapeutic applications.
