One of the factors that determines the nutritive value of fishmeal as a protein concentrate for ruminants is its ruminal degradability, which varies with processing methods. It is possible that this variation could be related to the chemical modification of the amino acids/protein or to the change in protein solubility during the industrial processing. The objective of this work was to examine the effect of heat treatment of fishmeal on its ruminal degradability, protein solubility and the oxidation state of methionine.

In two digestibility and balance trials with growing pigs, whey protein concentrate (WPC) was compared as a protein supplement with casein (CAS) and dried skim milk (DSM), and, 30 % lactose (40 % dried whey, DW) was compared as a sugar supplement with the same amounts of hydrolysed lactose (HYLA) and sucrose (SUC). The effects of these supplements on protein and mineral metabolism of the pigs were investigated, WPC contained 42.2 % crude protein and had a high content of lysine, 8.6 g, and sulphur containing amino acids: cystine 2.8 and methionine 2.2g/16 g N, These exceeded the values for DSM. The hydrolysing degree of the enzymatically treated lactose syrup was 73 %. WPC had high crude protein digestibility, 99.1 % as compared to 95.4 for CAS and 95.0 % for DSM. Dried whey had low crude protein digestibility, 72.5 %. The amino acids in the WPC diet were highly digestible, but low values were obtained for the DW diet. On the WPC diet, nitrogen retention was higher than with the other protein supplements (P > 0.05), urinary urea excretion was low and the biological value very high. On a combination of WPC and HYLA protein utilisation was higher than on dried whole whey. On the diets supplemented with different sugars, none of the blood parameters differed statistically significantly (P > 0.05) and all values lay within the reference range. Water intake was on average 49 % greater on diets with sugar supplements than without. Urinary excretion of reducing sugars averaged 40.2, 8.3 and 6.6 g/d on the HYLA, SUC and DW diets, while on the diets without sugar supplements the values were 0.8—1.2 g/d. The following mean daily mineral retention values were obtained: P 4.0 g, Ca 5,9 g. Mg 0,4 g, Na 1.9g, K 2.9 g, Fe 27 mg, Cu 6.4 mg, Zn 65 mg and Mn 4.0 mg. The surplus Na and K on the DW diet were excreted in the urine and the pigs did not have diarrhoea.

Many plant species contain condensed tannins (CT), but lotus is one of the few herbages of agricultural importance to contain CT. Lotus has a high nutritive value (NV) despite a moderate protein content and nitrogen digestibility, and this can be explained by the activity of CT during digestion. CT binds plant proteins in the rumen, reducing their solubility and degradation by rumen bacteria. Condensed tannins increase the passage of plant protein to the intestine, and have increased the availability and absorption of essential amino acids by 60% compared with equivalent CT-free forage. Condensed tannins prevent bloat. Dietary concentrations as low as 0.17% CT in the dry matter (DM) can affect protein solubility in the rumen, but concentrations up to about 2-3% of dietary DM are probably optimal for maximising NV. Values exceeding 5.5% of DM inhibit microbial activity excessively and depress voluntary intakes. Ruminant production of milk, meat and wool could be increased by l0-15 % if grazed pasture contained 2-3%CT. These levels would be achieved if white clover could be engineered to contain 7-8% CT in its foliage. Keywords condensed tannins, lotus, nutritive value, herbage, ruminant digestion

The work carried out by us on the nutritive value of commercially sterilized milk shows definitely that certain factors are injured in the course of the heat treatment. The biological value of the proteins is slightly but unmistakably decreased, most probably because of the partial destruction of one or more essential amino-acids. Of the vitamins, vitamin C is the most markedly affected. It is decreased by half and, in view of the severity of the heat treatment, it is remarkable that the loss is not greater. The anaerobic conditions which exist during the application of the highest sterilizing temperatures may account for the survival of a part of this labile factor. Vitamin B1 also suffers serious loss, the destruction amounting to 30 % of the original value. Neither vitamin A and carotene nor vitamin B2 (flavin) are affected by the heat treatment. The fate of other components of milk was not studied by us, but experiments on rats on the effect of sterilization on the total nutritive value of milk indicates that vitamin B1 was the first limiting factor of sterilized milk.

The digestibility and nutritive value of rapeseed meal processed in different ways were studied with adult rams fed on alkali-treated straw. The rumen degradability was determined by the nylon bag technique. The rapeseed meal feeds were: 1) untreated rapeseed meal, 2) heat-treated rapeseed meal (2—5 sec. at over 100°C), 3) heat-treated rapeseed meal + 5 % urea phosphate and 4) heat-treated rapeseed meal + 10 % rapeseed hulls. The heat treatment reduced the rumen degradation and in vivo digestibility of the rapeseed meal, although not significantly (P > 0.05). Addition of urea phosphate to the heat-treated rapeseed meal increased the ruminal degradability of the crude protein and improved the digestibility of all the constituents of the rapeseed meal, especially that of crude fibre (P > 0.05). The rapeseed hulls had no noticeable effect on digestibility.

The data on feeding dairy cows of an energy protein concentrate (EPC) are presented. EPC consists of grain of narrow-leaved lupine, flax, triticale, subjected to heat treatment on a press extruder. The effect of EPC on the change in milk production of cows was determined. The inclusion of extruded concentrate based on lupine grains in the diets of cows made it possible to obtain an increase in milk. Concentrate based on lupine, flax, triticale is equal in biological value to full-fat soy, and at a much lower cost.

Polyodon spathula sturgeon breed is successfully reared in Romania in many fishery farms for meat production and it is capitalized on domestic market as consumption fish. In the current paper were studied a number of 1400 sturgeons from Polyodon spathula breed (1200 individuals of one summer - P.s.0+ and 200 individuals of fourth summers - P.s.3+). From this flock were weighted around 10%, for each age group, and for laboratory determinations were chosen 10 fishes for each age with the corporal mass close to the group mean. After analysing the fillets gathered from the studied fishes for establishing the chemical characteristics, nutritive and biological values of proteins were drawn some interesting conclusions. So, regarding chemical composition we notice that in the meat of analysed fishes water is in a rate of 75.41% at P.s.3+ and 78.37% for P.s.0+; proteins - between 18.08% for P.s.0+ and 19.89% for P.s.3+, values which place those fishes in the group of protein fishes; lipids - between 2.45% and 3.45%, values which situated those sturgeons in category of fishes with a low content in lipids; collagen � 3.83% at P.s.0+ and 4.14% at P.s.3+ which indicate low values for proteins of weak quality in the meat of those sturgeons. Study of nutritive value for the analysed fishes indicate the fact that fishes P.s.0+ have a mediocre nutritive value, having the ratio w/p of 4.33 while sturgeons P.s.3+ were placed in the 2nd category � fishes with a good nutritive value (rate w/p = 3.79). Energetic value of the studied fillets was 97.39 kcal/100 g for P.s.0+ and 114.31 kcal/100 g for P.s.3+, which enlightened an increase of nutritive value with aging, fact especially due to accumulation of adipose tissue. Study of proteins quality, through the presence of those 8 essential amino-acids in the meat of analysed fishes, show the fact that at sturgeons P.s.0+ proportion of essential amino-acids was 20.88% from total amino-acids, while at sturgeons P.s.3+ was 26.23%, fact which enlightened an increasing of proteins� biological value with fish aging. This fact was also shown by calculation of proteins� biological value through chemical methods (EAA index); calculated value for sturgeons P.s.0+ was a little bit lower (118.73) than the one calculated for sturgeons P.s.3+ (118.79).

Abstract Rumen degradability of crude protein (CP) of feed is a major factor that determines the utilization of CP in ruminant production. This study briefly reviewed the findings from six international studies of microwave (MW) heat treatment effect on feed CP rumen degradability and intestinal CP digestibility. Six in vitro studies of concentrate feed (canola seed, canola meal, soya bean meal, cottonseed meal, corn, and barley) showed a decrease in effective rumen degradability of dry matter and protein by 4–40% and 17–40%, respectively compared to control group (untreated concentrate feed). Among the six studies, four studies identified the MW heat treatment effect on intestinal protein digestibility. Due to MW heat treatment, canola seed, canola meal, soya bean meal, and cottonseed meal showed an increase in intestinal CP digestibility by 17%, 20%, 21%, and 19%, respectively. Overall the briefly reviewed studies showed that, MW heat treatment substantially reduced feed CP ruminal degradability and increased in vitro CP digestibility of ruminally undegraded CP.

The functional properties of protein isolate and major protein fractions prepared from Changbai Mountain pine nuts were investigated. Albumin, globulin, glutelin, and protein isolates were obtained after the Osborne method and alkaline dissolution and acid precipitation, and protein contents of the fractions are 48.02%, 81.93%, 83.02%, and 89.69%, respectively. For the sulfhydryl contents, albumin is the highest, and glutelin is the lowest. In a disulphide bond, the protein isolate content is the highest with a value of 28.74 μmol/g, and the glutelin content is the lowest with the value of 13.46 μmol/g. For the four kinds of proteins, the essential amino acids in percentage of total amino acids are 31.13%, 34.22%, 30.30%, and 34.54%, respectively. The pH dependent protein solubility profile reveals that the minimum solubility is at pH 5.0, which corresponds to the isoelectric point. Protein isolate has the minimum water absorption capacity with a value of 0.59 ml/g. On the other hand, albumin has the minimum oil absorption capacity with a value of 2.11 ml/g. The emulsifying activity and stability and the foaming activity and stability increased with increasing concentration of four kinds of proteins. SDS-PAGE results showed that these four kinds of proteins have different molecules.
