The regional meat market is part of the all-Russian meat market and part of the agricultural and food markets. A market forecast is a scientific foresight of the prospects for the development of demand, supply and prices. Its main role is determined by the large volumes of manufacture and consumption of this group, as well as the importance of meat and meat products as the main sources of animal proteins in the human diet. The structure of meat consumption in Russia and in the Kursk region until 2020 was investigated. The consumption of basic food in thousand tons per capita per year was given, the provisions characterizing the meat market of the Kursk region were determined. The conjuncture of the meat market of the Kursk region is characterized by the ratio of supply and demand for meat and meat products, as well as by the level and ratio of prices. A market analysis of the meat market of the Kursk region was carried out, taking into account external factors (level and structure of income, national production, imports, etc.). The supply and demand curves of the meat market were obtained for the last 5 years. The interrelationship of demand for a product and its determinants is reflected by the general demand function and is presented in the form of a multiple regression model. The regressive addiction of the volume of demand was made up using the MathCADProfessional package. The solution to the system of linear equations is presented in matrix form. The vector of estimates of the regressive model was obtained and an additive function was compiled on the basis of this vector. The forecast оf the demand for meat in the Kursk region was obtained using neural networks (NN). The configured network was used for forecasting using the Neural Network Emulator softwares llike magnm, calciumesium, potassiu, zinc, copper, molybdenum, sodium and chlorine, increased.

The article below discusses and compares changes in the beef market, occurring in the EU, to the global market. Global beef market is going through endless changes, although direction and rate of these changes vary depending on which region the analysis applies to. In recent years Polish beef market has been slowly becoming marginalized on the internal market, mainly because of the decreasing importance of beef consumption in the balance of meat consumption. The poultry market is becoming more and more important, both on the supply and demand sides. The study also draws attention to the fact that agricultural markets, the meat market in particular, are susceptible to the cyclical fluctuations on international markets. Because of that the EU policy, as well as the policy of a given country, play a big part to the individual agricultural markets.

The main objective of this paper is to prove a theorem according to which a method of successive elimination of unknowns in the solution of systems of linear equations in the semi-rings with iteration gives the really smallest solution of the system. The proof is based on the graph interpretation of the system and establishes a relationship between the method of sequential elimination of unknowns and the method for calculating a cost matrix of a labeled oriented graph using the method of sequential calculation of cost matrices following the paths of increasing ranks. Along with that, and in terms of preparing for the proof of the main theorem, we consider the following important properties of the closed semi-rings and semi-rings with iteration. We prove the properties of an infinite sum (a supremum of the sequence in natural ordering of an idempotent semi-ring). In particular, the proof of the continuity of the addition operation is much simpler than in the known issues, which is the basis for the well-known algorithm for solving a linear equation in a semi-ring with iteration.Next, we prove a theorem on the closeness of semi-rings with iteration with respect to solutions of the systems of linear equations. We also give a detailed proof of the theorem of the cost matrix of an oriented graph labeled above a semi-ring as an iteration of the matrix of arc labels. The concept of an automaton over a semi-ring is introduced, which, unlike the usual labeled oriented graph, has a distinguished "final" vertex with a zero out-degree.All of the foregoing provides a basis for the proof of the main theorem, in which the concept of an automaton over a semi-ring plays the main role. The article's results are scientifically and methodologically valuable. The proposed proof of the main theorem allows us to relate two alternative methods for calculating the cost matrix of a labeled oriented graph, and the proposed proofs of already known statements can be useful in presenting the elements of the theory of semi-rings that plays an important role in mathematical studies of students majoring in software technologies and theoretical computer science.

This study was conducted to determine the consumers’ perceptions and factors influencing offal meat consumption in Amathole District in the Eastern Cape Province of South Africa. A total of 202 consumers from Amathole District were randomly sampled from three municipalities. The study revealed that consumers were more influenced by the freshness, price, and availability of the product and these factors determine the point of purchase. The most preferred purchase-point for offal meat in this study was butchery. However, sheep offal was more preferred to cattle offal. The point of purchase, however, remains a prominent factor among other factors that could influence decision making for any consumer. When it comes to offal meat, the results showed that the majority of consumers purchased more liver, intestine, and tripe, which is because they are often sold in a combo at the butchery. Furthermore, it was revealed that consumers have nutritional knowledge of the offal meat products before making their purchase but health reasons emerged as a factor that the consumers considered the least at the point of purchase.

Based on a large volume of observational scientific studies and many summary papers, a high consumption of meat and processed meat products has been suggested to have a harmful effect on human health. These results have led guideline panels worldwide to recommend to the general population a reduced consumption of processed meat and meat products, with the overarching aim of lowering disease risk, especially of cancer. We revisited and updated the evidence base, evaluating the methodological quality and the certainty of estimates in the published systematic reviews and meta-analyses that examined the association between processed meat consumption and the risk of cancer at different sites across the body, as well as the overall risk of cancer mortality. We further explored if discrepancies in study designs and risks of bias could explain the heterogeneity observed in meta-analyses. In summary, there are severe methodological limitations to the majority of the previously published systematic reviews and meta-analyses that examined the consumption of processed meat and the risk of cancer. Many lacked the proper assessment of the methodological quality of the primary studies they included, or the literature searches did not fulfill the methodological standards needed in order to be systematic and transparent. The primary studies included in the reviews had a potential risk for the misclassification of exposure, a serious risk of bias due to confounding, a moderate to serious risk of bias due to missing data, and/or a moderate to serious risk of selection of the reported results. All these factors may have potentially led to the overestimation of the risk related to processed meat intake across all cancer outcomes. Thus, with the aim of lowering the risk of cancer, the recommendation to reduce the consumption of processed meat and meat products in the general population seems to be based on evidence that is not methodologically strong.

High levels of meat consumption are increasingly being criticised for ethical, environmental, andsocial reasons. Plant-based meat substitutes have been identified as healthy sources of proteinin comparison to meat. This alternative o?ers several social, environmental and health benefitsand may play a role in reducing meat consumption. However, there has been a lack of researchon how specific meat substitute attributes can influence consumers to replace or partially replacemeat in their diets.Research demonstrates that in many countries consumers are highly attached to meat. They considerit as an essential and integral element of their daily diet. For these consumers which arenot interested in vegan or vegetarian alternatives to meat, so-called meathybrids could be a lowthresholdoption for a more sustainable food consumption behaviour. In meathybrids only afraction of the meat product (e.g. 20% to 50%) is replaced with plant-based proteins. In this paper, the results of an online survey with 500 German consumers are presented with focuson preferences and attitudes relating to meathyrids. The results show that more than fifty percentof consumers substitute meat at least occasionally. Thus, about half of the respondents reveal aneligible consumption behaviour in respect to sustainability and healthiness to a certain degree.Concerning the determinants of choosing either meathybrid or meat it becomes evident that thehighest e?ect is exerted by the health perception. The healthier meathybrids are perceived, thehigher is the choice probability. Thus, this egoistic motive seems to outperform altruistic motiveslike animal welfare or environmental concerns when it comes to choice for this new productcategory

Determining the quality of honey in procurement, trade organizations and food markets does not always correspond to the level of the requirements set by the current standards for this product, and the large gap between supply and demand for it, as well as the high cost of the product, often leads to various kinds of falsifications. The aim is to assess the quality of honey obtained in the Republic of Colombia and the Russian Federation on the basis of veterinary and sanitary researches. The article presents data on the veterinary and sanitary examination of natural honey from Colombia and Russia. The conducted study made it possible to establish that good organoleptic indices, the presence of pollen in honey samples and reliable establishment of the botanical and geographical origin of honey do not guarantee the quality of the product.

Determining the preferences of food consumers is key for adapting supply and demand. This adaptation of supply is dynamic rather than static, given that it develops over time and is influenced by both social and economic factors. This work presents an analysis of the development of lamb meat consumption at two points in time, 2004 and 2014, before and in the midst of the economic crisis in Spain (2007–2017). Our findings show that together with the external appearance and against the backdrop of an economic recession, price has a greater impact on consumers’ purchasing decisions than origin and quality seals, despite these being attributes that are traditionally used as a guarantee of food safety and traceability. This suggests that in times of economic crisis consumer preferences shift towards attributes that are less related to product quality. Nonetheless, the comparison of the consumer segments for each of the years under study revealed that age and level of education are the socioeconomic factors that most influence the preferences of lamb meat consumers.

This chapter aimed to discuss population, meat production, and quality characteristics of camels. Camels are considered environmentally friendly and well adapted to the desert's harsh arid and semiarid environment due to their high movability, adequate fodder demand, and water regulation. Camels are most populous in the East Africa and Middle East. Although approximately 250,000 camels are annually slaughtered in many countries and camels as a producer of meat is becoming much more significant, camel meat market has not yet developed. In 2019, the global camel meat production in Africa was leading with 419,933 tonnes production, followed by Asia (210,000 tonnes) and Europe (179 Tonnes). An important feature that characterizes camelid meat products is the low level of intramuscular and subcutaneous fat compared to red meat sources. Pre- and post-mortem factors should be carefully considered to improve camel meat quality characteristics. According to the health aspects and quality of camel meat, it can be successfully marketed alongside cattle, dear, sheep, and goat.
