Abstract Quality of the tuber is an important factor determining utilization and economic values of the potato (Solanum tuberosum L.) plant. The acceptance of potato variety for industrial processing is determined by the dry matter, starch and reduced sugar contents as well as market acceptance of the products. These characteristics are influenced by the potato variety and cultivation season. This research aimed to evaluate the tuber and organoleptic properties of chips from four potato varieties grown during off-season, in Sajang Village of Sembalun District (at ca. 900 m above mean sea level). A plantation was undertaken at the end of rainy season in 2021, and comprised of four potato varieties, designated as McRusset, Ranger Russet, Chitra and Atlantic. After harvesting and stored at ambient temperature for 2 weeks, raw tubers were characterized for the dry matter, starch, and reduced sugar contents. The tubers were fried as french fries and chips, and sensory analysis were undertaken for likeliness in color, flavour, crispness and overall appearance. The different in properties of these four varieties and its industrial utilization is be presented and discussed in this paper.

The main problems of grape storage are berry dehydration and rot. One of the solutions to reduce rot and preserve the quality of grapes during storage is the use of aerosol treatment with calcium content before storing. The aim of the study was to evaluate the effect of physiologically active substances based on calcium in various concentrations on the quality and organoleptic characteristics of table grape cvs. ‘Italia’ during long-term storage. The effectiveness of the studied systems of treatment was evaluated according to the content of sugars and titratable acids, the activity of the redox enzymes of polyphenol oxidase and peroxidase, weight loss of bunch and organoleptic properties. The greatest effectiveness established by using preparation of Master Green Ca, Brentax KCa, and Brentax Ca (in concentration 150g / 20l). Experimental treatments significantly decreased the weight loss of bunch (less than 4%), and preserved organoleptic properties of berry at a high level (8.2-8.9 points). Decrease in the activity of oxidative enzymes had a positive effect on the quality of table grapes and contributed to its better preservation. The data obtained make it possible to rationalize the system of long-term storage of grapes by using of aerosol treatment with calcium-based preparation.

Summary The paper presents the results of three-year research on technological properties of fruits and quality of compotes made of four Novi Sad (NS) apricot cultivars (NS-4, NS-6, Novosadska rodna and Novosadska kasnocvetna) and five selections (SK-1, SK-3, SK-5, SK 13a and SK 16a). Apricots for this research on technological properties and making compotes were harvested in a collection of apricot genotypes of the Department of Fruit Growing, Viticulture, Horticulture and Landscape Architecture of the Faculty of Agriculture in Novi Sad, in the site “Rimski šančevi” (45º 20̓ 00ˮN,19°51̓ 100ˮE). Technological properties were investigated at the Faculty of Technology in Novi Sad and a laboratory of “Soja-Protein, AD Bečej” company. The investigated technological properties were: the amount of dry matter, total and reducing sugars, total acids, sucrose, total pectins, cellulose and mineral matter. These properties of NS cultivars and selections were compared to Hungarian Best (as a standard). The fruits of the NS cultivars and selections expressed better technological properties than Hungarian Best. The properties such as colour, aroma, taste, condition and consistency were sensory evaluated, with a method of giving points, used at the Novi Sad International Agricultural Fair. The compotes of the NS cultivars and selections were given more points than the compote made of standard. As for the total organoleptic properties, the compotes of selections SK-3, SK 13a and SK-5 stand out.

Non-meat ingredients are used to impart flavor, slow bacterial growth, and increase the yield of the sausage production. To study the quality of chicken sausage incorporated with non-meat ingredients namely, soy protein powder, non-fat milk powder and potato starch at the rate of 2% (w/w) concentration. Sausage samples were analyzed for physical, nutritional, and sensory properties during refrigerated storage at -4 ℃. The nutritional, physical and sensory characteristics were analyzed, at day 1, week 1, week 2 and week 3 of storage. Moisture, ash, dry matter, fat, pH, texture, and color were significantly difference (p<0.05) among the treatments at day one. During storage the ash, pH content and dry matter content were significantly (p<0.05) increased, and fat content and moisture content was significantly (p<0.05) decreased storage period. At week one, the higher hardness value showed in soy protein powder incorporated chicken sausage and least value showed in without added non-meat ingredient (control) sausage. As results of organoleptic characteristics revealed that, 2% of potato starch incorporated chicken sausage had the highest mean score of overall quality of all sensorial properties namely, color, taste, texture, flavor, and overall acceptability.

Представлены результаты исследований с новыми сортами картофеля в 2017-2019 годы на дерново-подзолистой легкосуглинистой хорошо окультуренной почве в севообороте ИП Глава КФХ «Анкинович». Цель работы – выявить эффективность применения гуминовых препаратов для некорневых подкормок новых сортов картофеля с сине-пестрой и фиолетовой мякотью клубней при их возделывании по экологически безопасной технологии. В трехфакторном опыте изучали факторы: А – сорт: Скарб, Северное сияние, Аметист; В – фон минерального питания: 1 – NPK на урожай 30 т/га, 2 – NPK на урожай 40 т/га; С – некорневые подкормки: 1 – вода (контроль), 2 – Гуматадор, 3 – Гумат+7, при высоте растений 15-20 см и в фазу бутонизации. Сорт Северное сияние имеет сине-пеструю; Аметист – фиолетовую мякоть клубней. Исследования выполнены по существующим современным методикам. В результате изучения особенностей роста и развития не выявлено существенных различий между сортами и вариантами некорневых подкормок в прохождении фаз развития. Разница в показаниях не превышала 1-2 дней. Применение гуминовых препаратов повышает суточные приросты клубней, клубнеобразование, массу клубней с одного растения, крупность клубней и урожайность сортов картофеля. Наибольший прирост урожая обеспечивают некорневые подкормки препаратом Гумат+7: на умеренном фоне в среднем по сортам 5,63 т/га (14,9%), на оптимальном – 13,55 т/га (32,24%). Наибольшая урожайность, в среднем за три года, (62,4 т/га) получена у сорта Аметист на оптимальном фоне при опрыскивании растений препаратом Гумат+7. Гуминовые препараты повышали содержание питательных веществ в клубнях: на умеренном фоне в большей мере Гуматадор, на оптимальном – Гумат+7.Более высоким содержанием сухого вещества и крахмала в клубнях отличался сорт Северное сияние, сырого протеина – сорта Скарб и Аметист. Увеличение доз NPK на оптимальном фоне повышает содержание сырого протеина в клубнях на 0,82% и незначительно снижает содержание сухого вещества (на 0,13%) и крахмала (на 0,1%). The results of studies with new varieties of potatoes in 2017–2019 are presented. on sod-podzolic light loamy well-cultivated soil in the crop rotation IP, Head of the Ankinovich farm. The purpose of the work is to identify the effectiveness of using humic preparations for foliar feeding of new varieties of potatoes with blue-motley and purple pulp of tubers when cultivating them using environmentally friendly technology. In three factorial experiments, factors were studied: A – varieties: Scarb, Severnoye siyanie, Ametist; В – background of mineral nutrition: 1– NPK for yield 30 t/ha, 2 – NPK for yield 40 t/ha; C – foliar top dressing: 1 – water (control), 2 – Gumatador, 3 – Gumat + 7, with a plant height of 15-24 cm and in the budding phase. The Severnoye siyanie variety has a blue-motley; Ametist – purple tuber pulp. The studies were performed according to existing modern methods. As a result of the study of growth and development features, no significant differences were found between varieties and variants of non-root feedings in the course of development phases. The difference in readings did not exceed 1-2 days. The use of humic preparations increases the daily growth of tubers, tuberization, the mass of tubers from 1 plant, the size of tubers and the yield of potato varieties. The highest yield increases are provided by non-root fertilizing with Gumat + 7: on a moderate background, the average for varieties is 5.63 t/ha (14.9%), on an optimal one – 13.55 t/ha (32.24%). The maximum yield, on average for 3 years, (62.4 t/ha) was obtained for the amethyst variety on an optimal background when spraying plants with Gumat + 7. Humic preparations increased the content of nutrients in tubers: on a moderate background, more Gumatador, on an optimal background – Gumat + 7. The Severnoye Siyanie variety had a higher content of dry matter and starch in the tubers, while the raw protein varieties were Skarb and Ametist under increasing NPK doses on optimal background.

A field experiment was carried out at Breeder seed Production Centre (BSPC), Debiganj, Panchagarh during the Rabi season of 2016-2017 to study the effect of five levels of sulphur application on yield and quality attributes of three potato varieties. The main objective of the experiment was to determine the effect of sulphur on the yield and quality of potato varieties. There were five treatments comprising different levels of sulphur such as T1 (control-no sulphur), T2 (75% RDS), T3 (100% RDS), T4 (125% RDS) and T5 (150% RDS). Three BARI released potato variety; BARI Alu 36 (4.26 R), BARI Alu 40 (4.45W) and BARI Alu 25 (Asterix) were used in this experiment. The experiment was laid out in a randomized complete block design (RCBD) with three replications. The tuber yield and yield contributing characters were significantly influenced by the application of sulphur. Maximum tuber yield (39.28 t/ha) was recorded in BARI Alu 40 (4.45 w). Highest dry matter content, specific gravity and starch content were found in BARI Alu 40 (4.45 w), which was followed by BARI Alu 36 (4.26 R) in case of specific gravity and starch content. Sulphur application in potato varieties showed significant influence on tuber yield of potato. This parameter increased with increasing dose of sulphur up to 100% RDS. Thereafter, further increase in sulphur did not showed any remarkable influence. Besides, sulphur application in potato varieties showed significant influence on tuber quality of potato. The maximum dry matter yield and starch yield were recorded in the treatment T3, which was followed by all other  treatments except T1. The minimum dry matter yield and starch yield were recorded in the treatment T1. Combined effect showed insignificant influences between varieties and sulphur levels. BARI Alu 40 (4.45 w) was found superior over other varieties in terms of yield and quality attributes. Treatment T3 (100% RDS) was found superior over other treatments in terms of yield.

В статье отражены результаты изучения влияния сорта и различных систем механической очистки клубней на качество картофеля в вакуумной упаковке. Исследования проводились в 2015–2018 годах на экспериментальной базе ФГБНУ ВНИИКХ (Московская область, Люберецкий район). Опыт двухфакторный: фактор А – сорт (110 сортообразцов), фактор Б – тип механической системы очистки клубней (ножевая, абразивная и перфорированная ячеистая). Качество продукта по показателям устойчивости мякоти к потемнению и сохранности тургора клубней определяли через 5, 10 и 15 дней после вакуумирования при переработке в сентябре, январе и апреле. Температура хранения сырья 5–7 °С, относительная влажность воздуха в хранилище 90–95%. В результате исследований установлено, что сорта картофеля для вакуумной упаковки должны соответствовать следующим требованиям: содержание сухого вещества не ниже 20%; отходов при механической очистке не более 20% при сентябрьском сроке переработки и использовании системы очистки ножевого типа; устойчивость мякоти клубней к потемнению не ниже 7 баллов через 15 дней хранения в вакуумной упаковке; предпочтительный цвет мякоти – кремовый и желтый. Выявлено, что глубина выреза более 5 мм на поверхности клубней при ручной доочистке крайне негативно влияет на качество вакуумированного картофеля. Из 110 изученных сортов для вакуумной упаковки рекомендованы 40, соответствующие вышеуказанным требованиям, например, такие, как Лилея, Ломоносовский, Люкс, Утенок, Холмогорский, Амур, Бриз, Былина Сибири, Гала, Горняк, Манифест, Памяти Лорха, Русский сувенир, Лина, Барин, Златка, Надежда, Сиреневый туман, Фаворит, Фрителла. Установлено, что использование рекомендуемых сортов и механической системы очистки ножевого типа (режим работы 80 сек.), по сравнению с абразивным и ячеистым, способствует снижению отходов при переработке в среднем за сезон на 4,8% при одновременном сохранении высокого качества конечного продукта. The article presents the results of studying the influence of potato varieties and various mechanical tuber peeling systems on quality of vacuum-packed potato. Researches were conducted in 2015–2018 at the experimental base of Lorch Potato Research Institute (Moscow region, Lyuberetsky district). Two-factor experiment: factor A – potato variety (amount 110), factor B – type of mechanical tuber peeling system (blade, abrasive and perforated cellular). The quality of the product according to the indicators of pulp darkening resistance and the safety of the tuber turgor was determined 5, 10 and 15 days after vacuuming when processing in September, January and April. Potato store temperature was 5–7 °C, the relative humidity in the storage – 90–95%. As a result of research, it was found that potato varieties suitable for vacuum packaging must meet the following requirements: dry matter content not less than 20%; losses during mechanical peeling not more than 20% when processing in September and using a blade-type peeling system; resistance of the tuber pulp to darkening not less than 7 points after 15 days of storage in a vacuum package; the preferred color of pulp is cream and yellow. It was found that the depth of the cutout more than 5 mm on the surface of tubers during manual post-peeling has a severe negative effect on the quality of vacuumed potatoes. From 110 studied varieties, 40 ones which meet the above mentioned requirements were recommended for vacuum packaging, such as Lilea, Lomonosovsky, Lux, Utenok, Holmogorsky, Amur, Briz, Bilina Sibiri, Gala, Gornyak, Manifest, Pamyaty Lorcha, Russky suvenir, Lina, Barin, Zlatka, Nadezhda, Sirenevy tuman, Favorite, Fritella. It was found that the use of recommended varieties and a mechanical peeling system of blade type (operating mode 80 sec.), in comparison with abrasive and cellular, helps to reduce losses while processing by an average of 4.8% per season and lets to maintain the high quality of the final product.

An experiment was conducted to study the effect of harvesting dates and variety on the yield and processing quality of potato tuber. Three processing potato varieties (BARI Alu-25, Asterix; BARI Alu-28, Lady Rosetta and BARI Alu-29, Courage) were used as test crops and they were harvested at different days after planting [80, 90, and 100 days after planting (DAP)]. The three processing potato varieties showed higher tuber yield of Grade A (9.12 t ha-1) and B (13.64 t ha-1). The highest tuber yield (Grade A+B) [29.62 t ha-1] and total tuber yield (35.97 t ha-1) was found in Courage at 90 and 100 DAP harvest, respectively. The variety Lady Rosetta attained the highest percent of processable tuber yield (86.8% of the total tuber yield), the maximum dry matter content (26.37%), specific gravity (1.102) at 90 DAP harvest and this variety also contained the highest mean starch content (111.75 mg g-1 FW) followed by Courage (111.17 mg g-1 FW) and Asterix (103.95 mg g-1 FW). Optimum dry matter content (24.07%), specific gravity (1.091), starch content (110.15 mg g-1 FW), processable tuber yield (26.62 t ha-1) and total tuber yield (32.76 t ha-1) was found at 90 DAP harvest and therefore, it could be mentioned as suitable harvesting date for processing purposes. Among the varieties, Lady Rosetta and Courage were found preferable potato varieties that could be used for processing of potato products. Bangladesh J. Agril. Res. 44(1): 179-193, March 2019

Innovative active packaging has the potential to maintain the food quality and preserve the food safety for extended period. The aim of this study was to discover the effect of active films based on commercially available polylactic acid blend (PLAb) and natural active components on the shelf life and organoleptic properties of chicken fillets and to find out; to what extent they can be used as replacement to the traditional packaging materials. In this study, commercially available PLAb was compounded with citral and cinnamon oil. Active films with 300 µm thickness were then produced on a blown film extruder. The PLAb-based films were thermoformed into trays. Fresh chicken breast fillets were packed under two different gas compositions, modified atmosphere packaging of 60% CO2/40% N2, and 75% O2/25% CO2 and stored at 4 ℃. The effect of active packaging materials and gas compositions on the drip loss, dry matter content, organoleptic properties, and microbial quality of the chicken fillets were studied over a storage time of 24 days. The presence of active components in the compounded films was confirmed with FTIR, in addition the release of active components in the headspace of the packaging was established with GC/MS. Additionally, gas barrier properties of the packages were studied. No negative impact on the drip loss and dry matter content was observed. The results show that PLAb-based active packaging can maintain the quality of the chicken fillets and have the potential to replace the traditional packaging materials, such as APET/PE trays.

A two-year experiment (2009-2010) included four potato varieties (Desire, Romano, Bistra and Kis Sora). Experiments were conducted in Butmir (about 500 m/ asl) and Glamoč (approximately 900 m/ asl) region. The aim was to select new varieties for our area of cultivation. Productive characteristics of potato varieties (yield, weight and number of tubers per box) were examined. In the frame of qualitative properties, dry matter content and starch were examined. Trials were performed by randomised block design with four replications, and the results were analysed using the analysis of variance. Higher average yield was achieved by Romano cultivar by 8% compared to Desire and Kis Sora. Dry matter content ranged from 21.80% in Romano to 22.20% in Desiree. Examining varieties should be continued in the upcoming period in order to determine the most favourable conditions for cultivation in the area of Bosnia and Herzegovina.
