Abstract. The purpose – to study under cultural conditions in the Bashkir Cis-Urals three samples of Allium nutans L.: Bashkir, Novosibirsk (broadleaf and narrow-leaved form). Studied: phenology, biomorphology, reproduction, agricultural technology and biochemical composition. Methods. The study was conducted in 2017–2020 at the collection site of onions in the South Ural Botanical Garden-Institute of the UFRC RAS. Analysis of the seasonal rhythm of growth and development, winter resistance, resistance to adverse weather conditions, pests and diseases, reproduction rate and seed productivity was carried out according to generally accepted recommendations. Results. Drooping onion is a long-lasting medium-late-flowering plant. Spring growth of A. nutans samples occurs in the 2nd–3rd decade of April, leaf growth in the spring is initially expressed in accelerating the growth processes of last year's etiolated leaves, and only then new young leaves come to the soil surface. The appearance of the flower arrow occurs in mid-June, the beginning of budding falls on the 2nd–3rd decades of June and lasts 30–35 days. Novosibirsk samples bloom in mid-July, the Bashkir sample – a week later. The flowering phase lasts an average of 35–41 days. Seeds ripen in August-September. In Novosibirsk samples, seeds mature in 16–19 days, in the Bashkir sample – in 25 days. The maximum number of seeds forms the Bashkir sample 647–1031 pcs. (average 835.0 ± 53.5). Scientific novelty. For the first time, the biochemical composition of samples of this onion was made and analyzed. According to the maximum accumulation of vitamin C and carotene, the Bashkir sample differs (104.92 mg% and 166.4 mg/kg, respectively). In the Novosibirsk sample (narrow-leaved form), the maximum amount of sugar and starch (8.8 and 6.12%, respectively) and the minimum amount of vitamin C (41.53 mg%) were found. The Novosibirsk sample (broadleaf form) contains more protein (17.06%) and a minimum amount of carotene (83.2 mg/kg). According to other indicators (solid, nitrogen, raw fat), the studied samples differ little from each other.

Autumnal tints are one of the most manifest and fascinating natural phenomena, but the mechanism of chlorophyll (Chl)-breakdown in deciduous trees has not been fully elucidated. In this study, we analyzed the composition of Chl-related compounds and determined the activities of initial Chl-degrading enzymes in Ginkgo leaves at various stages in the process of autumnal coloring. Only pheophytin a (Pheo a, Mg-free Chl a) was detected in yellow leaves by HPLC analysis, and the activity of Mg-dechelatase in yellow leaves was found to be higher than in green leaves. These findings showed that the removal of magnesium from Chl a occurred in advance of dephytylation in the Ginkgo.

The content, component composition, and main directions of the use of monoterpenes of wild rose petals compounds are considered in the research. The study on six wild rose species was carried out in the collection of M.M. Gryshko National Botanical Garden of the National Academy of Sciences of Ukraine. Volatile organic compounds were isolated by steam distillation, and their determination was performed by means of gas chromatography. R. rugosa petals contained the highest number of monoterpenoids, while R. canina petals – the lowest. In our research twentyone different (acyclic, monocyclic, bicyclic) monoterpenoids were identified, including alcohols, aldehydes, ethers, and ketones. All groups of monoterpenoids are biologically active substances and have a significant effect on the aroma of the studied plants.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Currently, there is an increase in the world’s population against the background of a reduction in land suitable for growing traditional agricultural crops. This is especially true for Asian countries. Due to a number of factors, the areas of fertile land are decreasing, and the areas of saline land are increasing; arid areas of the planet are expanding. In this regard, it is important to introduce plants into the culture that can grow on poor, arid, saline soils. The purpose of the research is to study vegetable raw materials from fruits Caragana arborescens and C. frutex, undergoing introduction tests in the arboretum of the Tsytsin Main Botanical Garden of Russian Academy of Sciences, to find out the possibilities and advantages of their use in the food industry in a comparative aspect. A comparative assessment of the size and weight characteristics of the fruits and seeds of C. arborescens and C. frutex studied by us indicates the possibilities of their industrial food use in the future, along with a good introduction, and, probably, plantation potential of these plants.

Aim. The paper presents the results of assessment of the indigenous nature and  degree of similarity of apricot cultivars growing in the collection of the Mountain  Botanical Garden, Gunib, Dagestan, Russia based on a comparative analysis of the  variability of leaf morphological characteristics.   Material and Methods. The material assessed consisted of 33 apricot cultivars of  various ecological and geographical origins aggregated in the following groups: (a)  Dagestan – traditional cultivars; (b) Moscow ‐ selection from the Tsytsin Main Moscow Botanical Garden, Russian Academy of Sciences based on wild forms of Tajikistan and Kyrgyzstan; (c) European and (d) Asian ‐ from Central Asia, Tajikistan, China  and Altai.   Results. The closeness of Dagestan and European varieties in comparison with Asian  and Moscow varieties was shown. Most Dagestan (16 of 19) and European varieties  have round‐shaped leaves (leaf shape index 80‐ 100%), while those from Asia and  the Moscow Botanical Garden have leaves which are elongated elliptical and oval  (60‐80%). Using the method of principal component analysis (PCA), it was established that most cultivars of Dagestan origin have similar leaf shapes and sizes, of  which Tlama kurak (wide‐round), Hekobarsh (elongated) were distinguished by leaf  shape and Esdelik by leaf size.   Conclusion. Based on a discriminant analysis (Squared Mahalanobis Distances), it  was found that the indices of indicators of leaf attributes (width/length of leaf lamina; petiole length/length of lamina; apex angle/corner of leaf base) are more reliable criteria for differentiating apricot varieties into ecological and geographical  groups than their morphological characteristics.
