Abstract Objectives This study aimed to explore the perceived barriers to fruit and vegetable intake among Korean young adults in their 20s, and the potential to increase it. Methods An on-line survey was conducted from February 18th to 24th, 2020 to a total of 1, 277 Korean young adults in their 20s. An on-line survey questionnaire was developed to assess respondents’ preference, acceptance, perceived daily intake level of fruit and vegetables, and perceived barriers in each step from planning, purchasing, storing, to preparation/cooking. Descriptive statistics were calculated, and significant differences in fruit and vegetable consumption (i.e., preference, acceptance perceived daily intake level) were measured according to respondents’ socio-demographic characteristics (gender, education level. income level, and type of household) by using t-tests and ANOVA. Significant differences in perceived barriers were analyzed across three groups (low, medium, and high) based on perceived daily intake level of fruit and vegetables. Multiple linear regression analyses, adjusted for gender, income/education level and household type, were performed to examine the associations between barriers and perceived daily intake level of fruit and vegetables. Results On an average, preference and acceptance exceeded perceived daily intake level of both fruit and vegetables. The perceived daily intake level of both fruit and vegetables were significantly lower in female, low-income, and single-person household groups. The perceived barriers to each step from menu through preparation/cooking were rated significantly higher in low-intake groups of both fruit and vegetables. The results of multiple regression analyses revealed that menu planning was the major barrier to both fruit and vegetable consumption, followed by storing. Conclusions This study suggests that future interventions address perceived barriers associated with menu planning and storing of both fruit and vegetables to boost the consumption among Korean young adults. Special attention needs to be paid to those who are female, with lower incomes, and living in single-person households. Research attributes low fruit and vegetable consumption to problems of access, availability and affordability. We conducted, for the first time, a case study with three families designed and analysed using the sustainable Livelihoods Framework. The benefit of such an approach is that we moved away from identified barriers and towards identifying the capabilities and resources low-income families use to incorporate fruit and vegetables into their diets. Mitigating cost and access, we provided families with a box of fresh fruit and vegetables free of charge for up to 10 weeks and observed and recorded how/if the contents were used. Results identify the importance of social networking, organizational skills, knowledge of health benefits, and social structures. This paper demonstrates an effective methodology for understanding the capabilities of, rather than barriers to, low-income families increasing fruit and vegetable intake. Additionally, we provide a ‘how to’ and ‘lessons from the field’ for researchers interested in conducting research of this nature.

AbstractObjectiveTo assess the intake frequency of fruit and vegetables, serving sizes, reasons for and barriers to consumption, and the potential for increasing fruit and vegetable intake.DesignA nationwide postal questionnaire survey was conducted in 2006 over all four seasons. The participants were stratified according to occupation and sex. The response rate for 5130 questionnaires sent out was 52·7 %.SettingAustria.SubjectsAustrian adults, aged 19–64 years.ResultsDaily fruit consumption was reported by 57·1 % of the participants and daily vegetable consumption by 36·2 %. On average, 2·1 (sd 1·9) servings (250 (sd 225) g) of fruit and 1·7 (sd 1·3) servings (198 (sd 159) g) of vegetables were consumed daily. Women ate fruit and vegetables both more frequently and in greater quantities than men. Both intake frequency and the number of fruit and vegetable servings were largely independent of seasonal fluctuations. The primary reason for the consumption of both fruit and vegetables was taste. The greatest barrier to higher intake was the perception that current individual consumption was already sufficient. Price did not constitute a relevant barrier in Austria. At present, the potential for increasing fruit and vegetable intake can be estimated at two servings.ConclusionsAustrian adults still consume less fruit and vegetables than recommended. Strategies to increase intake should pay more attention to the taste instead of the various health aspects.

Abstract Daily consumption of fruit and vegetables is encouraged as important for human health and nutrition because the vitamins, minerals, essential micronutrients, fibre, vegetable proteins and bio-functional components they provide are crucial for bodily function. The FAO/WHO expert consultation (2004) on diet, nutrition and the prevention of chronic diseases recommended a daily intake of 400 g (five portions) of fruits and vegetables (excluding potatoes and other starchy tubers) to prevent heart disease, cancer, diabetes and obesity. However, despite this recognition, world-wide per capita consumption of fruits and vegetables is estimated to be 20-50% short of the minimum recommended level. In 2013 an estimated 5.2 million deaths worldwide were attributable to inadequate fruit and vegetable consumption. Adhering to the WHO recommendations for fruit and vegetable intake can prevent morbidity and mortality caused by micronutrient deficiencies, birth defects, mental and physical retardation, weakened immune systems, blindness and even death. Improving the dietary diversity through horticulture-based food intake is an effective and sustainable approach to combating micronutrient malnutrition in both developed and developing countries (Kennedy et al., 2003).

AbstractObjective:To examine the contribution to fruit and vegetable eating in children of potential predictive variables within the domains of demographics, parental feeding practices and personality traits.Design:Cross-sectional survey.Setting:Questionnaires were distributed to parents through 22 London nursery schools.Subjects:Questionnaires were completed and returned by 564 parents or principal caregivers of 2–6-year-old children.Results:Significant predictors of children's fruit and vegetable intake emerged from all three domains examined. Demographic variables associated with child's vegetable consumption were mother's education and child's age and gender. Only ethnicity was significantly associated with fruit consumption. Parental consumption, breast-feeding and early introduction to fruit and vegetables were related to intake of both. Family mealtimes were associated with higher intake of vegetables, but not of fruit. Two characteristics of children themselves (food neophobia and enjoyment of food) were strongly related to the consumption of fruit and vegetables. Subsequent multivariate analyses revealed that parental intake and child food neophobia independently predicted intake of both foods. In the presence of these, fruit consumption was affected by breast-feeding and early introduction to fruit, whereas vegetable consumption was related only to child's gender and enjoyment of food.Conclusions:These findings may be used to inform future interventions aimed at increasing children's consumption of fruit and vegetables. Parents should be made aware of the possible impact of their own behaviour on the eating habits of their children.

Purpose: We explored whether Canada's diverse ethnic population consumes an adequate daily amount of fruit and vegetables. We also examined the association between fruit and vegetable consumption and long-term diseases. Methods: The Canadian Community Health Survey, Cycle 2.2 (CCHS 2.2), was used to determine the fruit and vegetable intake (FVI) of 13 racial groups, as well as of the entire population. Specifically, we determined median intake and proportions of the group consuming five or more daily servings. Multiple pairwise comparisons among the proportions were performed to detect ethnic groups with significantly low FVI. Logistic regression was also used to describe the risk of longterm diseases associated with FVI and ethnicity. Results: The percentages of Southeast Asian, Aboriginal (offreserve), and Chinese people who consumed five or more daily servings of fruit and vegetables were significantly lower than percentages in all other ethnic groups surveyed. Aboriginal people with the lowest FVI demonstrated the highest propensity for developing most of the long-term diseases. Conclusions: The majority of Canada's ethnic groups identified in the CCHS 2.2 fell short of the recommended FVI target. This low-intake status might be a risk factor for common long-term diseases.

AbstractThe present review provides an investigation into the food choice decisions made by individuals in relation to fruit and vegetable consumption. A comprehensive body of evidence now exists concerning the protective effect of fruit and vegetables against a number of diseases, particularly cardiovascular disease and certain forms of cancer. Current UK recommendations are to increase intakes of fruit and vegetables to 400 g/person per d. In the main body of the review the factors that affect food choice decisions of adults in relation to fruit and vegetable consumption are studied, following a suggested framework of food choice. Factors covered include sensory appeal, familiarity and habit, social interactions, cost, availability, time constraints, personal ideology, media and advertising and health. The content of the review shows just how complex the food choice process can be. Health promotion techniques can be better targeted towards certain groups of individuals, all holding similar sets of values, when making food choice decisions. Food choice, in relation to fruit and vegetable intake, needs to be studied in more depth, in order to provide effective nutrition education programmes, in particular the sets of priorities that different sub-groups of the population consider when making food choice decisions.

AbstractObjectiveTo examine the sociodemographic, parental and child factors that predict fruit and vegetable consumption in 7-year-old children.DesignDiet was assessed using three 1d unweighed food diaries. The child’s daily fruit and vegetable consumption was calculated by summing the weight of each type of fruit, fruit juice and vegetable consumed. The various others factors measured were assessed by a questionnaire at different time points.SettingThe Avon Longitudinal Study of Parents and Children (ALSPAC).SubjectsA total of 7285 children aged 7 years residing in the south-west of England during 1999–2000.ResultsMedian daily fruit and vegetable consumption (201 g) was below the recommendations for this age group (320 g). Girls ate more fruit and vegetables per unit energy (30·3 g/MJ) than boys (26·7 g/MJ;P=< 0·001). The predictors of fruit and vegetable consumption were mostly similar. Fruit and vegetable consumption was associated with maternal consumption, maternal education status and parental rules about serving fruit/vegetables every day, food expenditure per person and whether the child was choosy about food. Vegetable consumption was also associated with the other characteristics of the child, such as whether the child enjoyed food and whether the child tried a variety of foods.ConclusionsChildren are not eating recommended amounts of fruit and vegetables, particularly boys. Consumption of fruit and vegetables appears to be influenced by parental rules about daily consumption and parental consumption and by the child’s choosiness. Parent’s actions could influence this. These findings may prove useful for those planning healthy eating campaigns for children.

The aim of the present study was to evaluate the association between parenting styles and own fruit and vegetable consumption among Portuguese mothers of school children. A cross-sectional study was performed in Portugal as part of the Pro Children cross-sectional European survey. Portuguese mothers (n 1601) of 11–13-year-old school children were included in the present study. A self-administered questionnaire was developed to assess fruit and vegetable consumption as well as the parenting styles. Fruit and vegetable consumption was assessed by a validated FFQ. Parenting styles based on two dimensions – strictness and involvement – were classified into authoritative, authoritarian, indulgent and neglectful. The higher mean intakes of fruit, vegetables and total fruit and vegetables were observed for mothers classified as indulgent, whereas the lower mean intakes were observed for mothers classified as neglectful. Differences in intake among parenting styles were significant for fruit, vegetables and total fruit and vegetables. When partial correlations were calculated between the two dimensions, strictness and involvement (controlled one for the other), and intakes, only involvement was positively associated with fruit, vegetables and total fruit and vegetable intake. Findings from the present study show that fruit and vegetable consumption of Portuguese mothers of school children seems to be related to their own parenting styles, especially with the dimension involvement. Future interventions to promote fruit and vegetable intake should take into account these variables.

Abstract:Background: Despite recommendations to increase fruit and vegetable consumption within the UK population, intakes are still too low. In order to stimulate dietary behaviour change the determinants of food choice need to be explored.Objectives:To investigate how the priorities of high consumers of fruit and vegetables differ from those of low consumers, with respect to food choice motivations, and to identify what value high and low consumers place on different aspects of food choice behaviour.Design:A 4-day food diary and a questionnaire, including The Food Choice Questionnaire (FCQ) and a measure of Stage of Change (SOC) for fruit and vegetable consumption, were administered to subjects. Motivation scores from the FCQ were compared with fruit and vegetable intake and SOC data.Subjects:Nine hundred and ninety-eight females, aged 35–69 years, participating in the UK Women's Cohort Study.Results:In a multiple linear regression model, including age, education level and all FCQ motivations, the strongest motivations specifically affecting fruit and vegetable intake were health and natural content. It was found that, for a one point increase (measured on a scale of 0–4) in health and natural content scores, fruit and vegetable consumption increased by 1.11 portions (95% confidence interval (CI) 0.5–1.7) and 0.84 portions (95% CI 0.4–1.3), respectively (P>0.01). The SOC evaluation showed significant associations with portions of fruit and vegetables consumed (P>0.01). Women whose SOC was classed as maintenance phase were found to score higher on health, natural content, weight control and ethical concern factors (P>0.01). These women also scored lower on convenience questions (P>0.01).Conclusion:In this particular group of women the most important motivating factors for food choice, within the high fruit and vegetable consumers, were health and natural content of the food.

Fruit and vegetables make an important contribution to health, partly due to the composition of phytonutrients, such as carotenoids and polyphenols. The aim of the present study was to quantify the intake of fruit and vegetables across different European countries using food consumption data of increasing complexity: food balance sheets (FBS); the European Food Safety Authority (EFSA) Comprehensive Database; individual food consumption data from the UK National Diet and Nutrition Survey (NDNS). Across Europe, the average consumption of fruit and vegetables ranged from 192 to 824 g/d (FBS data). Based on EFSA data, nine out of fourteen countries consumed < 400 g/d (recommended by the WHO), although even in the highest-consuming countries such as Spain, 36 % did not reach the target intake. In the UK, the average consumption of fruit and vegetables was 310 g/d (NDNS data). Generally, phytonutrient intake increased in accordance with fruit and vegetable intake across all European countries with the exception of lycopene (from tomatoes), which appeared to be higher in some countries that consumed less fruit and vegetables. There were little differences in the average intake of flavanols, flavonols and lycopene in those who did or did not meet the 400 g/d recommendation in the UK. However, average intakes of carotenoid, flavanone, anthocyanidin and ellagic acid were higher in those who consumed >400 g/d of fruit and vegetables compared with those who did not. Overall, intakes of phytonutrients are highly variable, suggesting that while some individuals obtain healthful amounts, there may be others who do not gain all the potential benefits associated with phytonutrients in the diet.
