Abstract Objectives To determine the effect of a policy, systems, and environmental (PSE) intervention, Students Take Charge! (STC) among 4th and 5th grade students from low-income communities on 1) fruit and vegetable (FV) intake, and 2) FV variety, PSE and FV knowledge, and self-efficacy (SE) to ask for FV at school and home. Methods A quasi-experimental design was used involving six schools over two years. Schools were purposely selected; two schools each year either received STC or standard instruction. The study sample includes students (n = 326 intervention; n = 351 comparison) providing pre and post data (baseline and post-assessment at week 18). SNAP-Ed educators provided the 8-lesson STC curriculum across 18 weeks; comparison students received standard instruction. STC is a school-based PSE intervention focusing on empowering students to make FV based changes at school and at home. STC taught students about wellness policies, persuasive messages, and making requests; it cumulated with a vote to add a student submitted FV-based recipe to the school lunch menu. In addition, STC provided information about the importance of FV intake and variety. Students completed the STC survey at both time points assessing FV intake, variety, knowledge and SE. Analyses compared intervention and comparison students from baseline to post-assessment using ANCOVA (1) and MANOVA (2). Results From baseline to post-assessment, there were significant differences (P < 0.01) between intervention and comparison students; intervention students decreased fruit intake and variety, increased PSE knowledge and SE in school.There were no differences in vegetable intake, variety or FV knowledge between intervention and comparison students. There was a trend (P = .09) towards increased student SE to ask parents for FV in the home in the intervention students compared to the comparison students. Conclusions STC was associated with an increase in PSE knowledge and student SE to ask for FV in school. STC may require additional strategies, including home-based strategies, to increase FV knowledge, intake, and variety behavior changes. Funding Sources USDA SNAP-Ed.

Research attributes low fruit and vegetable consumption to problems of access, availability and affordability. We conducted, for the first time, a case study with three families designed and analysed using the sustainable Livelihoods Framework. The benefit of such an approach is that we moved away from identified barriers and towards identifying the capabilities and resources low-income families use to incorporate fruit and vegetables into their diets. Mitigating cost and access, we provided families with a box of fresh fruit and vegetables free of charge for up to 10 weeks and observed and recorded how/if the contents were used. Results identify the importance of social networking, organizational skills, knowledge of health benefits, and social structures. This paper demonstrates an effective methodology for understanding the capabilities of, rather than barriers to, low-income families increasing fruit and vegetable intake. Additionally, we provide a ‘how to’ and ‘lessons from the field’ for researchers interested in conducting research of this nature.

The purpose of this study was to identify indicators of parent engagement in early learning that would be relevant for children’s academic success; equitable for all families regardless of social, educational, or economic backgrounds; and actionable for urban school districts seeking to promote parent engagement with limited resources. Using a Delphi technique, a panel of parents, school staff, and researchers rated 106 parent engagement indicators extracted from stakeholder interviews. After multiple Delphi rounds and panel discussion, 30 indicators were retained. Retained indicators focused on home-based activities and home-school relationships/communication; no school-based activities met criteria for relevance, feasibility, and actionability.

Abstract Objectives To describe and compare fruit and vegetable intake by level of variety among children in What We Eat in America (WWEIA), NHANES. Methods One-day dietary intake data of children 2–19 years (N = 5920) in WWEIA, NHANES 2013–2016 were used. Fruit and vegetable (FV) variety was the count of foods consumed that contributed to total FV intake. To be counted, at least 0.1 cup equivalent (CE) FV of each single FV item and 0.2 CE FV from a mixed dish had to have been consumed. Each FV was counted only once; a mixed dish counted as one. The Food Patterns Equivalents Database was used to determine the CE of FV intake. Individuals were classified for variety of intake as High (H) (5 + items); Moderate (M) (3–4 items); Low (L) (1–2 items). Percentage contribution of WWEIA Food Categories to FV intake was estimated. Differences in FV intakes between variety levels were compared by t-test. Those with a count of ‘0’ (N = 466) were excluded. Results Percentage of children in each variety level was: H: 15, M: 33; L: 44; none: 8%. Mean FV intakes (CE/1000 kcal) by variety level were H: 1.9; M: 1.4; L: 0.8 (P &lt; 0.001). Distributions of 2–5y, 6–11y and 12–19y, respectively among variety levels were: H: 18, 16, 13%; M: 40, 32, 30%; L: 37, 44, 48%; none: 6, 8, 9%. For H, M, and L levels, respectively, fruit variety counts were 2.5, 1.5, and 0.5, and vegetable variety counts were 3.5, 2, and 1 (P &lt; 0.001). Among all 2–19y, single FV items (excl 100% juice) contributed 64% to FV intake of the H vs M (55%) and L (50%), whereas Mixed Dishes contributed 12% to intake of H vs M (15%) and L (21%). The percentages of H, M and L groups reporting intake from WWEIA Food Categories were 89, 65 and 40 for Vegetables; 86, 65, and 35 for Fruit; and 79, 79, and 77 for Mixed Dishes. Conclusions FV variety was highest for very young children and lowest among adolescents. Children with more variety of FV intake were more likely to include single FV and in higher amounts than those with less FV variety. These results support suggestions for boosting FV intake of children by encouraging their consumption at snacks and including vegetable side dishes at meals. Funding Sources ARS-USDA.

Fruit and vegetable intake is indicated among the features of sustainable diets, while children’s intake is strongly associated with the intake of their parents, as well as the availability of food products and their accessibility at home. The aim of the study was to analyze the mother-related determinants of children at-home fruit and vegetable dietary patterns in a Polish national sample of children aged 3–10 years. The random quota sampling (with quotas for age, education, and place of residence) was conducted to recruit the national representative sample of Polish mothers of children aged 3–10 years (n = 1200) who were interviewed using a Computer-Assisted Telephone Interviewing (CATI) method. They were asked about their children’s at-home fruit and vegetable dietary patterns, which were later compared in sub-groups that were stratified for age, educational background, marital status, place of residence, occupational status, and total net income in households. The indicated features, but not marital status, were indicated as determinants of children at-home fruit and vegetable dietary patterns. Children of younger mothers more often than others consumed fruits, whereas those of older mothers consumed vegetables. Children of mothers who had a lower level of education more commonly than others consumed fruits alone as a dish, and they had a higher preference for them, while those of mothers who had a higher level of education had a higher consumption of vegetables than others, although they had a medium preference for them. Children of mothers from villages had a lower consumption of vegetables and fruits than others, although they had a higher preference for fruits. Children of mothers with no professional job had a lower consumption of vegetables than others and more often consumed them processed, although they had a higher preference for fruits and vegetables. Children of mothers with low income had a lower consumption of vegetables than others and more often consumed fruits in a dish with other products, although they had a higher preference for fruits and vegetables. To summarize, an indication of a high preference for fruits and vegetables by mothers is not accompanied by the higher consumption and recommended dietary patterns for fruit and vegetable intake by their children. In particular, the sub-samples of mothers who had a low level of education, were from villages, did not have a professional job, and had low income may either overestimate the fruit and vegetable preference of their children or do not offer them sufficient amount of fruits and vegetables, although they indicate a higher preference. In order to encourage more sustainable diet following, in terms of the fruit and vegetable intake, it is essential to introduce actions toward the properly planned nutritional education for the indicated target groups.

Abstract Objectives To evaluate the relationship of home fruit and vegetable (F&V) availability and maternal feeding practices (restriction, pressure, modeling, monitoring) with preschoolers’ F&V intake. Methods Hispanic mothers (n = 238) of 2-to-5-year-old children from low-income neighborhoods participated in the study. Mothers reported home availability of F&V (whole fruit, fruit juice [FJ], total fruit [FJ and whole fruit combined], and vegetables) in the past month, their feeding practices and their children's F&V consumption (cups) in the past month. Data were collected using one-to-one interviews in English or Spanish. Logistic regression models tested associations of availability of F&V groups and feeding practices with children's intake of ≥ 1 cup per day of total fruit and vegetables as per MyPlate minimum daily recommendation for preschoolers. Results Availability of total fruit and maternal modeling increased the odds of child's consumption of ≥ 1 cup of fruit: Odds ratio (OR) = 2.41; 95% confidence interval (CI), 1.56-3.70; P < 0.0001, and OR = 1.73; CI, 1.10-2.74; P < 0.020, respectively. Concurrently, maternal pressure and child's being a female increased the odds of child's consumption of ≥ 1 cup of vegetables: OR = 1.44; CI, 1.10-1.90; P < 0.009, and OR = 1.91; CI, 1.07-3.40; P < 0.028, respectively. Having more children in the home reduced the odds of child's intake of ≥ 1 cup of vegetables: OR = 0.78; CI, 0.61-0.99; P < 0.037. There were no significant associations between children's Body Mass Index (BMI) percentile and children's consumption of F&V or maternal feeding practices. Conclusions Environmental factors within the home appears to influence Hispanic preschoolers’ intake of F&V differently. To increase children's intake of fruit, family interventions should promote home fruit availability and maternal food modeling practices. However, since maternal pressure to eat has not been associated with F&V intake, the significant association between vegetable intake and pressuring children to eat found in this study must be further examined in similar cultural samples to replicate this finding. A few studies in Japan have demonstrated positive attitudes, self-efficacy, social support, and perceived barrier were associated with fruit and vegetable (F&V) intake in adults; however, limited evidence addresses the association of psychosocial factors with F&V intake in adolescents. A cross-sectional study through a questionnaire survey was conducted at junior and senior high schools, and 933 students completed the questionnaire. Data were analyzed by X2 test and Student t-test. The findings demonstrated 2.7% of participants were aware of the current recommendations for vegetable and 2.0% for fruit. Only 4% and 8.1% of participants reported they consumed recommended amount of vegetables and fruits. In comparison with males, females showed higher scores of attitude (p < 0.01), responsibility (p < 0.01), and social support (p < 0.01). The barriers to vegetable intake were “I’m eating enough now”, “not always available when eating away from home”; the barriers to fruit intake were “don’t have a habit of having 100% juice or fruit in the morning”, and “cost too much”. The findings suggest the change of adolescents’ knowledge about what they should eat is needed in boosting F&V consumption. The development of an intervention program for adolescents needs to target socio-environmental factors such as family support, and nutritional education for early healthy habit formation.

This paper has two main aims: (1) to describe the design, implementation, and testing of a protocol to assess longitudinal changes in F&V plate waste conducted as part of a quasi-experimental study, (2) to provide baseline descriptive data on school demographics and study participants. This paper describes the protocol development and implementation, and presents baseline data of a longitudinal fruit and vegetable (F&V) plate waste study. The protocol was developed to determine the preliminary impact of Brighter Bites, a 16-week school-based nutrition intervention, on F&V wasted and nutrients wasted from school lunches. We measured plate waste using a quasi-experimental design (n = 2 intervention schools receiving Brighter Bites, n=1 comparison school; n = 115 4th and 5th grade children). We measured plate waste for five days at each of four time points over the 2017–2018 academic year (baseline prior to intervention, three additional time points). Data collectors measured lunch F&V waste using digital scales and recorded weights on a data collection app. This study was conducted in three central Texas public elementary schools serving predominantly low-income families (>89% of children on free/reduced lunch program). On average, at baseline, 59.1% of all F&V were wasted and children tried <1 F&V at meals. Foods most wasted were legumes and foods least wasted were par-fried baked potatoes. Final retention rate across the four time points was 75.70%. Measurement inter-rater reliability was 100% (r = 0.99). Our study presents a protocol for detailed, individual-level, longitudinal plate waste assessment in elementary schools.
