Consumer perception of traditional foods in Ghana

Purpose – The purpose of this study is to identify the various traditional foods available in two towns in Ghana and to assess consumer perception about these traditional foods. Traditional foods provide nutritional and health benefits, but their consumption keeps declining, such that some are becoming extinct. Design/methodology/approach – The level of knowledge of consumers and their attitude toward the consumption of traditional foods were determined. A cross-sectional survey was conducted in Sekondi and four areas in Kumasi, with a sample size of 200 in each of the two towns. The data obtained were analyzed using Pearson correlation and Chi-square test for independence. Findings – While consumers had very good general knowledge of the traditional foods, most of them had little knowledge on nutrient compositions of the foods. About 95.5 per cent of respondents in Sekondi consumed traditional foods relative to those in Kumasi (62.5 per cent). There was no linear relationship existing between respondents’ knowledge, attitude and consumption of traditional foods (r < 0.50). More so, respondents’ attitude, knowledge and consumption of traditional foods, mostly, did not depend on the demographic factors (age and education). Other factors such as convenience, economic status of respondents and safety of traditional foods may be contributory factors to the low patronage and consumption of traditional foods. Originality/value – Most researches on traditional foods in Ghana have mostly focused on food ingredients; therefore, there is little or no available information on consumer perception of prepared traditional foods. Because consumer opinions change over time, there is a need to consistently gather data to help food industries and food service operators meet consumer needs and expectations.

PurposeThe purpose of this paper is to analyze the attitudes of meat consumers in Rio Grande do Sul, Brazil, concerning cultured meat. This State is characterized by its strong cultural identity and social practices, barbecue being its typical dish.Design/methodology/approachThe authors applied a cross-sectional survey with meat consumers residing in Porto Alegre/RS, the sample of which, composed of 538 individuals, expressed the population heterogeneity. The data were analyzed using the Pearson chi-square, Cramer's V, and correspondence analysis.FindingsThe results demonstrate that although six of ten people were willing to try cultured meat, only four of them responded positively to the willingness to consume it over conventional meat. Young individuals demonstrated a favorable attitude towards the product, expressing a greater propensity both to try it and to include it in the diet regularly. However, the rejection of cultured meat gradually intensified after 40 years old. The previous knowledge and familiarity with the investigated subject are not predictive of the intention of experimentation so that almost two-thirds of the individuals who did not know the product were positively willing to try it.Originality/valueDespite the recent intensification of studies about consumer behavior towards cultured meat, its analysis in a context in which meat historically plays a fundamental role in socioeconomic development is still little explored. The originality of our research is circumscribed by the understanding of the behavior of meat consumers, members of a culture where it plays a central role.

AbstractObjectiveTo describe patterns of food consumption associated with overweight/ obesity (OW/OB) and their links to socio-economic status (SES) and urbanization.DesignA nationwide cross-sectional survey.SettingSecondary schools in cities, towns and villages in Botswana, Africa.SubjectsA total of 746 adolescent schoolchildren.ResultsOW/OB is associated with greater SES, city residence and a snack-food diet pattern. Students belonging to higher SES compared with those from a lower SES background reported significantly (P< 0·01) more daily servings of snack foods (1·55v. 0·76) and fewer servings of traditional diet foods (0·99v. 1·68) and also reported that they ate meals outside the home more often (90 %v. 72 %). Students in cities ate significantly (P< 0·01) more servings of snacks (1·69v. 1·05v. 0·51) and fewer servings of traditional foods (0·67v. 1·52v. 1·61) compared with those in urban and rural villages. The odds of OW/OB were increased 1·16-fold with a snack-food diet, a result that was diminished when controlled for SES.ConclusionsThese data suggest that nutritional transition occurs at different rates across urbanization and SES levels in Botswana. In cities, increasing the availability of fruit while reducing access to or portion sizes of snack items is important. Emphasis on continued intake of traditional foods may also be helpful as rural areas undergo economic and infrastructural development.

Purpose – The purpose of this paper is to examine the socioeconomic determinants of profitability of fresh fish marketing in Ogun State, Nigeria. Design/methodology/approach – The study was a cross-sectional survey of 120 fresh fish marketers selected randomly from four major fish markets in Ado-Odo Local Government area of Ogun State, Nigeria. Data were collected using structured questionnaire which was designed to solicit information on the marketers’ socioeconomic and marketing characteristics, operating costs and returns, and problems associated with fish marketing in the study area. A combination of descriptive statistics, marketing margin, budgetary and ordinary least square regression analyses were employed to analyze the study data. Findings – The study showed that female (85.8 percent) dominated fresh fish marketing. The percent marketing margin of fresh fish was 34.55 percent. The percent marketing investment of 20,906.03, 20,453 per month and 1.43 were realized, respectively. The result of the regression analysis revealed that profit from fresh fish was significantly determined by education, proportion of household members involved in fresh fish marketing, marketers experience, capital, number of sales outlet and purchase price. Research limitations/implications – The findings was based on information supplied by the fresh fish marketers in the study area based on the authors memory recall since most of the respondents do not have diary where records of activities were kept before the survey. Practical implications – This study contributes to the existing literature in fish marketing and will provide empirical information to policy makers in the formulation of appropriate policies. It will also serve as a guide to practicing and prospective fresh fish marketers and to researchers who may investigate further into the subject matter. Social implications – The social implications from the findings on the return on investment of 1.43 implies that for every one naira invested by fresh fish marketers, a return of 1.43 and a profit of 0.43 were obtained. The study concludes that fresh fish marketing is an economically rewarding and profitable venture in the study area. It also recommends the need to provide credit facilities to finance storage facilities of this group of marketers. Originality/value – The study is original in nature and revealed the economic status of fresh fish marketing in Ogun State, Nigeria.

Background: People with chronic diseases are more likely to have depression than those without any physical illness. Lack of adherence to treatment, poor compliance to life style modification therapy and lost to follow up are major concerns raised in the management of hypertension among subjects with co-morbid depression. Hence it is very important to explore the epidemiology of depression among hypertensives. Methods: The study was conducted in Medical College health unit area of urban Trivandrum as a cross sectional survey among adults >18 years who were diagnosed to have hypertension. The subjects were interviewed using a semi structured questionnaire to collect the socio-demographic variables and the 9 item Patient Health Questionnaire (PHQ 9) to capture depression. Data from a sample of 432 hypertensive individuals collected were analyzed and Chi square, t test, was done to find the associated factors. Results: Mean age of the study subjects was 62.47 years. Among the study subjects the blood pressure was under control among only 33.8% of the study population. The prevalence of depression was found to be 33.3% (144) with 95% C.I (27.98-39.14). Gender, Socio economic status, marital status, low educational status, regular physical activity, duration of hypertension, uncontrolled BP, were found to be significantly associated with depression. Conclusions: The prevalence of depression among hypertensive individuals is high in this study population. Adequate control of BP along with awareness among primary care physicians in identifying those with hypertension and co-morbid depression is essential.

Background: The world’s adolescent population is facing a series of serious nutritional challenges which are not only affecting their growth and development but also their livelihood as adults. Yet, adolescents remain a largely neglected, difficult to measure and hard to reach population, in which the needs of adolescent girls in particular, are often ignored. Anemia in adolescent girls contributes to maternal and foetal mortality and morbidity in future. The objective of the study was to estimate the frequency of anemia among adolescent girls, to study the socio-demographic factors associated with anemia and to evaluate the cause and type of anaemia.Methods: A cross-sectional survey was conducted in an urban area in a school. A total of 300 girls (12-18 years) were included in this study. Statistical analysis was done using percentage, standard error of proportion, Chi-square test and student’s t-test.Results: The prevalence of anemia was found to be 90%. A significant association of anemia was found with socio-economic status and literacy status of parents. Mean height and weight of subjects with anemia was significantly less than subjects without anemia. A high prevalence of anemia among adolescent females was found, among those whose parents were less educated.Conclusions: The overall prevalence of anemia among adolescent females was found to be 90%. There is significant association of anemia with socio-economic status and parents' educational status. There is need to increase awareness of anemia in adolescent girls and parents.

Purpose The purpose of this paper is to examine the influence of satisfaction from romantic relationships on social media usage, with computer-mediated communication (CMC) motives and self-disclosure dimensions acting as mediators of the relationship. Design/methodology/approach The data were collected from 420 individuals active on social media. Data were analysed with confirmatory factor analysis, Pearson correlation, hierarchical multiple regression and mediation analysis based on Baron and Kenny’s (1986) conditions. Findings The result from a cross-sectional survey of 420 individuals reveals how relationship satisfaction leads to the use of six social media channels directly and indirectly through five dimensions of CMC motives and four dimensions of self-disclosure. Out of 54 possible mediations, 17 were found to be significant. Originality/value The present study fulfils the need to identify how satisfaction in a romantic relationship impacts self-disclosure and social media selection and usage.

Purpose The purpose of this paper is to identify the relationships between structural empowerment and patient identification behaviors of nurses. Design/methodology/approach The present study was a descriptive survey using a self-reported questionnaire, following a quality improvement project at a hospital in South Korea. The participants included 984 registered nurses, who administer medication and transfusions to patients in the hospital. Data were analyzed using the t-test, ANOVA, Scheffé’s test, Pearson correlation coefficients and multiple regression analysis. Findings The patient identification behaviors of nurses were significantly correlated with opportunity, support, information, resources, formal power and informal power of structural empowerment. The support, information and informal power of structural empowerment, as well as the age and gender of the participants explained 10.7 percent of the variance in the patient identification behaviors of nurses. Research limitations/implications The present study has some limitations. Although the data collected by the cross-sectional survey were analyzed, causal analysis could not have been conducted. Nursing managers can promote safety by creating a work environment that facilitates access to the support, information and resources needed for nurses to perform their duties effectively; providing opportunities for nurses to learn and develop professionally; acknowledging the achievements of nurses; and expanding their duties, so that nurses can demonstrate greater work flexibility. Future studies should investigate structural empowerment in multiple nursing organizations, and particularly the organizational characteristics that affect structural empowerment. Originality/value The present study confirms that structural empowerment influences the patient identification behaviors of nurses.

Background. Each year, not less than three million women are circumcised, and more hundred million females have already been circumcised. In many African societies, the practice of female genital mutilation (FGM) is a serious cultural practice. Aim: This current study is aimed at identifying the socioeconomic predictors of female genital mutilation in Ghana. Methods. The design adopted for this study was a descriptive cross-sectional survey relying on data from the Ghana Multiple Indicator Cluster Survey (MICS) 2017/18. SPSS software was used for data analysis. Chi-square and binary logistic regression were used for associations. Results. Overall FGM prevalence, this study recorded was 11.7%. The region with the highest (50.5%) prevalence was the Upper West Region. Area of residence predicted rural ( AOR = 2.30 ,   95 % C . I . = 1.75 – 3.00 ) Upper West/western Region ( AOR = 1.84 , 95 % C . I . = 1.23 – 2.75 ). In terms of ethnicity, the tribes that predicted FGM when compared with the Akan tribe were Guan ( AOR = 8.91 , 95 % C . I . = 3.53 – 22.51 ), Gruma ( AOR = 6.45 , 95 % C . I . = 2.91 – 14.31 ), Mole-Dagbani ( AOR = 38.10 , 95 % C . I . = 21.20 – 68.49 ), Grusi ( AOR = 45.30 , 95 % C . I . = 24.47 − 83.49 ), Mande ( AOR = 68.58 , 95 % C . I . = 30.85 − 152.42 ), and other tribes ( AOR = 29.33 , 95 % C . I . = 16.11 – 53.39 ). Women in the richest/poorest wealth index quintile ( AOR = 1.80 , 95 % C . I . = 1.19 – 2.72 ). Conclusion. The study prevalence of FGM is still high in the northern part of Ghana, and the predicted factors were residence region, ethnicity, educational level, and economic status.

Introduction: The implementation of Therapeutic Patient Education (TPE) remains a challenge. An exploratory study highlighted two tendencies among practitioners of TPE, which could hamper this implementation: an oscillation between identities (as caregivers versus as educators) and an inclination towards subjective psychological health objectives. Objectives: To verify whether these tendencies can be observed among an informed audience in TPE. Next, to explore the variables associated with one or other of these tendencies. Method: A quantitative cross-sectional survey by a self-administered questionnaire was carried out among 90 French-speaking healthcare professionals. Statistical analyses (chi-square, logistic regression) were then conducted. Results: Sixty percent of respondents displayed identity oscillation, which was found to be linked to task oscillation, patient curability, scepticism towards medicine and practising in France. Fifty-six percent pursued subjective psychological health objectives, which was found to be associated with health behaviour objectives and a locus of power in the healthcare relationship distinct from those seen in the pre-existing health models (biomedical, global). This tendency seems to constitute an alternative model of TPE. Discussion & conclusion: Identity oscillation and subjective psychological health objectives can be both observed. This study stresses the need to deliberate on the form(s) of TPE that is/are desired.

Background: Indoor air pollutants are increasingly being associated with respiratory illnesses leading to high degree of morbidity and mortality. There are not sufficient epidemiological studies from Pakistan which assess level of awareness of indoor air pollution resulting in respiratory diseases in population. Methods: This cross sectional survey was carried out on general population of Rawalpindi/Islamabad. Sample size was 223 study subjects selected by non-probability convenient sampling. Knowledge of the study subjects was determined with regard to indoor air pollution, its effects on health and different sources of indoor air pollution with the help of a questionnaire. The influence of age, gender, educational status and socio economic status on the level of awareness was also analyzed. Results: Out of total 223 participants, 115 were males and108 females. Participants aware of indoor air pollution were 91.5% and adequate awareness about its sources was 80.7%. Those who knew indoor air pollution is detrimental to health were 95.1%. Awareness about building construction dust as source of indoor air pollution was maximum (84.8%). There was significant difference in awareness among participants with different monthly incomes and educational status and also between males and females. Conclusion: This study concludes that general population of Rawalpindi/Islamabad has fairly good awareness about sources of indoor air pollution. Use of harmful material causing indoor air pollution should be limited or substituted with better ones where possible.
