The dairy industry in the United Kingdom to-day is of a size which few, even of those working in the industry, fully realize. In this industry one must include milk production on the farm, the handling, processing and distribution of liquid milk, the manufacture of milk products such as butter, cheese, dried and condensed milk, the manufacture and distribution of feeding stuffs for dairy stock, the manufacture of dairy equipment and machinery and other minor ancillary industries. Including the dependents of those actually engaged in milk production or utilization, approximately 5 % of the total population of this country is supported by the dairy industry. In monetary values, the present annual turn-over, in liquid milk alone, considerably exceeds £200 million. Measured in volume of liquid milk consumed per head of the population—a value more easily translatable into the coinage of national health— no less than 31 gal. of liquid milk per head were consumed on the average by every individual in this country during 1949.

The adoption of information communication technologies (ICT) in rural regions of Gujarat by the Gujarat Cooperative Milk Marketing Federation Limited (GCMMFL) can be considered as an iconic practice in the dairy industry in India. It is typically assumed that the efforts associated with the investment of ICT in rural area are not as effective as expected, though in the case of Amul, it was proved otherwise. Amul is a dairy farming company that produces a variety of milk products and GCMMF takes responsibility of distributing and marketing of the products of it. Amul has been a forerunner of rural India's adoption of ICT in dairy industry. This chapter shares the success story of Amul and how they utilized ICT in the dairy industry. The application of IT enabled Amul to get better control for the accumulated milk from scattered suppliers. The Amul case is a prime example for the enabling role of the technology for innovation.

ω3-polyunsaturated fatty acids (PUFA) are known to have several beneficial effects, such as preventing the occurrence of cardiovascular events in adults and improving the development of the central nervous system during fetal life and childhood. Dairy products enriched in PUFA are now available on the market and can help consumers to meet the ω3-PUFA daily intake recommendations. Although PUFA are prone to oxidation, little information exists regarding the alterations they undergo when products containing PUFA are stored. In this study, five infant formulae (IF) and five ω3-PUFA enriched Ultra High Temperature (UHT)-milk products were examined during storage at room temperature in terms of fatty acid (FA) composition and trans fatty acid (tFA) content until the end of shelf life by chromatography techniques. The IF included two follow-on formulae, two first-age formulae and a special medical purpose formula with different fat contents (from 2.6% to 27.7%). In the ω3-PUFA enriched UHT-milk products the milk fat was replaced by eicosapentanoic fatty acid (EPA) and docosahexaenoic acid (DHA) rich oils. The fatty acid content of all samples remained stable whereas some variations were observed for the tFA isomer content (p < 0.05) in the UHT-milk samples.

With the rise of factory farming, milk is now almost an unnatural operation. The modern dairy farm can have hundreds, even thousands of cows. Today’s average dairy cow produces six to seven times as much milk as she did a century ago. Currently, the United States is the largest producer of milk in the world, followed by India and China. India being one of the largest milk producer around the world, has to import a part of Milk products and its exports are negligible in the World Export Share. This paper tries to examine the issues regarding ‘Export Performance of Dairy Industry of India’: Trends, Challenges and suggestions for improving the trade situation. The existing Literature has been reviewed accordingly comprising Trade Exports, Imports and the factors which are affecting the Milk Production in country. The Objectives of the study is to find out the reasons for the low per unit production, Imports and negligible exports. In Nutshell, it can be said that there are many unexplored areas in which researchers can explore the findings which can be helpful in achieving trade balance of the Indian Economy.

Recent changes in the structure of the UK dairy industry are leading to closer specification of milk protein concentration (MPC) by customers. Accurate prediction of MPC from feed input variables is needed to allow producers to meet this demand. Previous attempts to predict MPC have been relatively unsuccessful (e.g. Rook et al., 1992). However, recent advances in feed description such as the AFRC (1993) protein system may allow further progress.
