Antioxidant properties and quality attributes were evaluated for 10 melon (Cucumis melo L.) cultivars grown under conventional and certified organic conditions in a 2-year field study. Differences among cultivars, produced either by conventional or organic methods, contributed the largest sources of variation in antioxidant properties. A 2.1- to 2.2-fold difference was seen between groups of cultivars with the highest and lowest levels of ascorbic acid when produced by organic and conventional methods, respectively. Choice of cultivar using conventional and organic production, respectively, enabled a 1.7- and 1.6-fold gain in total phenolics, a 2.6- and 4.2-fold gain in radical scavenging capacity determined by 2, 2′-azinobis (3-ethylbenzthiazoline-6-sulfonic acid), and a 1.8- and 2.4-fold gain determined by the 2,2-diphenyl-1-picrylhydrazyl assay. Based on an antioxidant index, cultivars with the highest antioxidant properties were Savor, Sweetie #6, Early Queen, Edonis, and Rayan. Organic melons had significantly higher ascorbic acid over both years, whereas total phenolics content was higher only in the first year. Percent dry matter and soluble solids content also varied widely among cultivars but were unaffected by production system. Choice of cultivar provides a viable option for growers interested in producing melons with high antioxidant properties. Cultivars with high antioxidant levels may provide a competitive marketing and supply niche for producers, but the full extent of diversity for antioxidant attributes requires further evaluation of cultivars and germplasm.

<p>The aim of this work was to evaluate the change in the quality of litchi juice treated by DMDC combined with Nisin during storage of 4 °C. Results found that addition of 250 mg/L of DMDC combined with 100 IU/mL of Nisin can ensure the microbiological safe of litchi juice during storage at 4 °C. Compare with heat treatment (95°C, 1 min), the treatment of DMDC combined with Nisin can retain a more value of sensory attributes, but a more loss in the content of total phenolics, ascorbic acid, and antioxidant capacity was observed during storage at 4 °C because of the ineffectiveness of DMDC and Nisin to the oxidase of litchi juice. Moreover, no significant change (<em>P </em>&gt; 0.05) was observed in the value of <em>L</em><em>∗</em>, <em>a</em><em>∗</em>, <em>b</em><em>∗</em>, and △E in the heat-treated litchi juice, and yet the litchi juice treated by DMDC and Nisin gradually turned into light red at the end of storage because of the oxidation of phenolics by residual POD in the litchi juice, which resulted in a significant changes (<em>P </em>&lt; 0.05) in the value of <em>L</em><em>∗</em>, <em>a</em><em>∗</em>, <em>b</em><em>∗</em>, and △E in the litchi juice. This study would provide technical support for commercial application of DMDC combined with Nisin in litchi juice processing.<strong></strong></p>

AbstractSweet rowanberries originated by the crossbreeding of wild rowanberries with other fruit species such as apples, medlars or black chokeberries. They are highly resistant to cold climate. In contrast with wild rowanberries, they have sweet mild taste and show less parasorbic acid toxicity, which can be eliminated, when the consumption is excessive, by heating. The objective of the work was to determine selected antioxidant properties in 6 cultivars. The analyses showed that the contents of total phenolics, total flavonoids and ascorbic acid were high. Similarly, antioxidant capacity (6.58–9.62 g of ascorbic acid equivalents kg−1) was also high. The work brings novel data, in particular, when comparing the cultivars; moreover, results regarding reactive oxygen and nitrogen species scavenging activity in sweet rowanberries are being published for the first time. The sweet rowanberry extracts (10%) showed inhibitory ability on hydroxyl radical (16.12–24.73%), superoxide anion (26.74–34.02%), nitric oxide (24.75–31.39%), and lipid peroxidation (7.93–13.12%). The values obtained are even many times higher than those found in common commercial fruit species like apples. Therefore, sweet rowanberries appear to be a promising fruit species for human nutrition, especially due to their high content of bioactive substances and ease of cultivation in worse climatic and soil conditions.

Natural antioxidants effectively counteract changes caused by UV radiation in human skin cells. However, their action is limited due to their lipo/hydrophilicity. Therefore, the aim of this study was to analyze the mutual protective action of hydrophilic ascorbic acid and partially lipophilic rutin against UVA/UVB-induced changes in membranes phospholipid and endocannabinoid system in keratinocytes and fibroblasts. Obtained results clearly showed that, despite the stronger antioxidant properties of ascorbic acid, the lipid membranes were more effectively protected against UV-induced oxidation by rutin, including changes in phospholipid fatty acid levels, prevention against reactive aldehydes formation and endocannabinoids degradation. Ascorbic acid more strongly prevented UV-induced endocannabinoid receptors expression in fibroblasts, especially CB1. However, the combined action of used antioxidants resulted in the greatest cytoprotective effect, which was evident in the inflammatory marker TNFα down-regulation and increased cell viability following cell irradiation. The applied mixture of antioxidants showed a stronger protective in relation to membrane phospholipids in keratinocytes and in the endocannabinoid system in fibroblasts. In conclusion, it can be suggested that combined antioxidant capacities of ascorbic acid and rutin protects against lipid peroxidation but also decreases the UV-induced inflammation by direct interaction with the endocannabinoid system, thus increasing skin cell viability.

The effects of polysaccharide elicitors such as chitin, pectin, and dextran on the production of phenylpropanoids (phenolics and flavonoids) and naphtodianthrones (hypericin and pseudohypericin) inHypericum perforatumshoot cultures were studied. Nonenzymatic antioxidant properties (NEAOP) and peroxidase (POD) activity were also observed in shoot extracts. The activities of phenylalanine ammonia lyase (PAL) and chalcone-flavanone isomerase (CHFI) were monitored to estimate channeling in phenylpropanoid/flavonoid pathways of elicited shoot cultures. A significant suppression of the production of total phenolics and flavonoids was observed in elicited shoots from day 14 to day 21 of postelicitation. This inhibition of phenylpropanoid production was probably due to the decrease in CHFI activity in elicited shoots. Pectin and dextran promoted accumulation of naphtodianthrones, particularly pseudohypericin, within 21 days of postelicitation. The enhanced accumulation of naphtodianthrones was positively correlated with an increase of PAL activity in elicited shoots. All tested elicitors induced NEAOP at day 7, while chitin and pectin showed increase in POD activity within the entire period of postelicitation. The POD activity was in significantly positive correlation with flavonoid and hypericin contents, suggesting a strong perturbation of the cell redox system and activation of defense responses in polysaccharide-elicitedH. perforatumshoot cultures.

Определен биотехнологический потенциал топинамбура сортов Новость ВИР, Скороспелка, Интерес, произрастающего в Краснодарском крае и Республике Адыгея, урожаев 2011 2018 гг. Установлено, что клубни топинамбура сорта Интерес превосходят сорта Новость ВИР и Скороспелка по содержанию, : общих сахаров на 22,41 и 14,34 инулина 41,82 и 32,99 пектиновых веществ 22,39 и 49,75 аскорбиновой кислоты 35,27 и 39,29 хлорогеновой кислоты 3,66 и 18,29 оротовой кислоты 88,89 и 84,89 соответственно. Сорт Интерес в сравнении с сортами Новость ВИР и Скороспелка содержит на 245,24 и 243,33 меньше никотиновой кислоты и на 100,0 и 108,33 кофейной кислоты соответственно. Содержание гистидина в клубнях топинамбура сортов Интерес, Новость ВИР и Скороспелка составляет 132,36 44,83 и 88,21 мг/кг аргинина 2017,2 958,56 и 460,44 мг/кг соответственно. В комплексе с аскорбиновой кислотой органические кислоты клубней топинамбура обладают выраженными антиоксидантными свойствами. Установлено, что в результате бланширования антиоксидантная активность топинамбура сорта Интерес возросла на 15,6. Таким образом, сорт Интерес наиболее перспективен для переработки в условиях предприятий общественного питания. It was found that Jerusalem artichoke tubers of the Interes variety are superior to Novost VIR and Skorospelka varieties in content, : total sugars by 22,41 and 14,34 inulin 41,82 and 32,99 pectin substances 22,39 and 49,75 ascorbic acid 35,27 and 39,29 chlorogenic acid 3,66 and 18,29 orotic acid 88,89 and 84,89, respectively. Variety Interes in comparison with Novost VIR and Skorospelka varieties contains 245,24 and 243,33 less nicotinic acid and 100,00 and 108,33 coffee acid, respectively. The content of histidine in the tubers of Jerusalem artichoke varieties of Interes, Novost VIR, Skorospelka is 132,36 44,83 and 88,21 mg/kg arginine 2017,2 958,56 and 460,44 mg/kg, respectively. In a complex with ascorbic acid, organic acids of Jerusalem artichoke tubers have pronounced antioxidant properties. It was found that as a result of blanching, the antioxidant activity of Jerusalem artichoke of the Interes variety increases by 15,6. Thus, the Interes variety is most promising for processing in public catering facilities.
