Determinations of the Ca, Mg, Na, K, P and Cl content were made and the ratios of calcium, magnesium and phosphorus oxides suggest the presence of calcium and magnesium metaphosphates in the ash of the flesh, calcium metaphosphate in that from the skin and tribasic calcium orthophosphate in that from the bone.

Ashes of composite samples of canned sockeye, pink and blueback salmon and canned pilchard were analyzed for Ca, Mg, Na, Ka P. Cl, S and traces of Cu and Mn. Comparison of the relative amounts of these elements with their concentration in sea water indicates selective absorption of Ca and K over Mg and Na respectively. The presence of Cu and Mn in trades is important for dietetic purposes.

Samples of canned coho (blueback) salmon (Oncorhynchiis kisutch), from fish caught each month of the fishing season (May-September) in a limited area on the coast of British Columbia, were subjected to analysis from which nutritive values were determined by the calculation of calorific values. The average percentages of constituents in composite samples of the entire contents were: water, 72.8; fat, 4.50; protein, 19.9; sodium chloride-free ash, 1.37; sodium chloride, 1.13; calorific value per pound of contents, 562. Percentages of fat, protein, sodium chloride-free minerals, and consequently the food value, reached a maximum in cans containing fish caught in mid-July.

Proximate analyses of samples of canned pilchard from fish caught early and late in the season in one vicinity on the west coast of Vancouver island are tabulated. The average calorific value per pound of content was 747 and 1074 Calories, respectively. The percentage of fat (18.5) in the late-caught fish was almost twice as great as that in the early-caught fish. Separate proximate analyses of the flesh, skin, and bone disclosed significant changes in the percentages of fat, protein, and minerals in these components between the beginning and end of the season.

Proximate analyses were made at bi-monthly intervals during 1933–34 on samples of Ostrea lurida, O. virginica, and O. gigas grown under identical conditions in the strait of Georgia. The proportions of glycogen and protein are shown to be approximately reciprocal and the greatest variation to occur during the summer. The energy content varies slightly, attaining a maximum in late fall and early winter, O. gigas having the highest and O. lurida the lowest values.

The total oil in samples of canned British Columbia sockeye (Oncorhynchus nerka) and pink (O. gorbuscha) salmon, each from three different localities, contained respectively 50, 67, 67 and 50, 67, 67 international units of vitamin D per gram, equivalent to average contents of 1700 and 880 international units in the oil per pound of contents for the sockeye and pink samples respectively. The oil in the cans of sockeye salmon from two of the localities contained approximately 2.5 and 2.0 A.D.M.A. units of vitamin A per gram respectively. A composite sample of the oil in all the cans of pink salmon contained no appreciable amount of vitamin A. Several physical and chemical characteristics of the oil samples are given.

The present study was carried out to evaluate the variations in serum minerals ( viz. calcium, magnesium and phosphorus) and transaminases in ketotic buffaloes. Results of blood analysis revealed a significant (P<0.05) reduction in serum phosphorus in ketotic buffaloes whereas nonsignificant (P>0.05) difference occur in serum calcium and magnesium in ketotic buffaloes as compared to control. At the same time significant increase in transaminases GPT, GOT and GGT have been observed .

Yield and nutritive value of three summer annual forages, hybrid forage sorghum (Sorghum spp. hybrid cv. Zulu), bulrush millet (Pennisetum typhoides cv. Tamworth) and white panicum millet (Echinochloa crusgalli var. edulis) were determined in three experiments. Uninterrupted growth was measured every 2 weeks between 4 and 12 weeks after sowing, and leaf, stem and inflorescence components analysed for nitrogen, phosphorus, calcium, magnesium, sodium and potassium and dry matter digestibility by an in vitro technique. The value of 10-week-old herbage, from crops grown with 50 kg ha-1 N, was determined by grazing with 18 Jersey cows and by feeding chopped material to 12 cows indoors. White panicum was the lowest yielding forage (up to 6,360 kg ha-1 at 10 weeks) but contained the highest concentration of nitrogen, phosphorus, calcium and magnesium in both leaf and stem fractions at all stages of growth. After 10 weeks growth this feed contained a high proportion of seed and was eaten in arger quantities than zulu sorghum or bulrush millet. Cows grazing white panicum produced the highestr lmilk yields (6.5 and 7.1 kg cow-1 day-1 indoors and grazed) and milk from these cows contained a highe solids-not-fat and protein content than milk from cows fed bulrush millet or sorghum. Zulu sorghum was highest yielding (1 1,240 kg ha-1 at 12 weeks in experiment 1 and 81 50 kg ha-1 at 10 weeks in experiment 2). With advancing maturity stem content increased (>80 per cent from 8 weeks onwards) and the nitrogen content of both leaf and stem fractions rapidly declined to sub-optimum levels. Milk production of cows feeding on zulu sorghum was low, averaging 4.7 and 6.0 kg cow-1 day-1 for indoor and grazing experiments. Bulrush millet produced high forage yields with a higher leaf content than zulu sorghum and milk yields were higher. Butterfat content of milk from cows feeding on bulrush millet was lower than when cows were fed the other forages. It was concluded that these three forages are capable of providing a large bulk of feed but their feeding value at a semi-mature stage of growth is similar to perennial tropical pastures.

The composition of breast milk from brazilian mothers delivering low birthweight infants and its adequacy as a source of nutrients for this group has not yet been fully elucidated. A total of 209 milk samples from 66 women were analysed. The mothers were divided into three groups: G1, mothers delivering term babies of low birthweight (TSGA, n=16); G2, mothers delivering preterm babies of appropriate birthweight (PTAGA, n=20); G3, mothers delivering term babies of appropriate birthweight (TAGA, n=30). The following factors were analysed: osmolarity, total proteins and protein fractions, creamatocrit, sodium, potassium, calcium and magnesium. Milk samples were collected 48 h and 7, 15, 30 and 60 days after delivery. The groups did not differ significantly in terms of osmolarity, total proteins and fractions, creamatocrit, calcium, magnesium or potassium throughout the study period. Sodium levels were higher in all samples from mothers of TSGA infants and in samples from mothers of PTAGA infants on the 7th, 15th and 30th days than in milk from the TAGA group. The authors consider the needs of the low birthweight and TAGA infants and that these high sodium levels may be necessary for growth of low birthweight infants.

Leakage of calcium, magnesium and potassium from discs of cortical apple fruit tissue was followed through fruit development and ripening. Leakage of potassium always exceeded that of calcium and magnesium and was little affected by the external presence of the divalent ions. Calcium and magnesium leakage was markedly increased by the external presence of either ion. In tissue from both freshly picked fruit and that taken from storage, potassium and magnesium leakage increased when the fruit was in an advanced state of senescence, but calcium leakage decreased. During fruit development, leakage of all cations was closely related to availability as expressed in tissue concentration. There was a marked increase in potassium leakage in association with the respiratory climacteric.
