Solving the current problems of improving the quality and safety of food fish products is possible only if modern and objective methods of analysis are used. Ensuring the proper quality and safety of wild fish products produced by enterprises is possible through compliance with interstate and national standards and regulatory documents. Currently operating GOST 30812 "Raw materials and food products. The method of identifying sturgeon fish caviar "based on the establishment of morphological features of sturgeon fish caviar is the result of research work carried out by the Kasprybtestcenter and the Russian Academy of Sciences for the period 1997-1998. The morphological features of sturgeon fish caviar specified in the standard depend on various factors, and do not allow to establish belonging to the species. Morphological signs of caviar (grain size, cytogenetic structure) are changing indicators that depend on many factors that affect the physiological state of fish during cultivation. Modern studies conducted by the standardization and rationing group of the Volga-Caspian branch of Russian Federal Research Institute of Fisheries and oceanocraphy together with the laboratory of molecular genetics of Russian Federal Research Institute of Fisheries and oceanocraphy indicate that the more reliable way to identify caviar is to establish molecular genetic features. Genetic features are a stable criterion that reflects the hereditary material of parents. Developed an updated standard "Fish food products. Method for identifying the caviar of fishes of the sturgeon family. " The development of identification methods is based on the use of a complex of visually detectable signs of the macro and microscopic structure of the eggs of sturgeon and paddle-bearing fish species and the molecular genetic method Updated standard "Raw materials and food products. The method of identification of sturgeon fish caviar", supplemented by the modern molecular genetic method of identification of sturgeon fish and oatmeal, will provide a regulatory and technical basis for the functioning of the traceability system from the place of obtaining raw caviar to the store counter, which will significantly reduce the share of illegal, counterfeit and falsified products the functioning of the traceability system from the place of receipt of raw caviar to the store counter, which will significantly reduce the share of illegal, counterfeit and counterfeit products.

Aim. The purpose of this work is to substantiate the problem of increasing the efficiency of using the genetic potential of agricultural animals and birds in specific agroecological conditions of the south of the Russian Federation to increase the production of high-quality meat, dairy and poultry products. Material and Methods. The research was conducted using analysis of statistical materials, compari-son method, analogy and systematization, analysis and comparison of empirical material. Discussion. Application of the achievements of advanced science in the field of studying the complex molecular genetic structure, genetic variation, and detailed characterization of populations of breeds of farm animals and birds bred in certain geographical and climatic conditions is an im-portant area of animal husbandry. Scientific research involves the creation of resource-saving tech-nologies aimed at the expansion and rational use of genetic farm animals and birds bred in the southern territories of the Russian Federation, the development of mechanisms and methods to in-crease the efficiency of production and processing of livestock products, including production of functional food products based on regional raw materials. The novelty of the development in this di-rection lies in the fact that such detailed studies of the characteristics of genetic resources in Russian livestock and poultry farming, with the involvement of famous foreign scientists, are carried out on the basis of scientifically based approaches, methods and mechanisms for improving adaptive abili-ties productive animals and birds, breeding and their rational use in the southern regions of the Russian Federation, using modern molecular genetic methods, with the introduction of new ap-proaches to create optimal zoo-hygienic conditions for feeding and keeping will be carried out for the first time. Conclusion. The planned research is primarily aimed at obtaining high-quality food products, in-cluding functional ones, based on regional dairy, meat and poultry raw materials.

The global market of special foods has grown by 75 % in 2003–2008, that indicating a trend towards individualized diets and healthy lifestyles. Gluten-free foods are popular today due to the increase in the number of people with celiac disease and the general idea of healthy lifestyle. Thus, the production of such products increases due to the intensification of marketing activities. Because the only treatment for celiac disease is a lifelong gluten-free diet, people with this problem need to carefully read food labels for wheat, barley and rye, as well as so-called “hidden” gluten – barley-made malt and hydrolyzed vegetable protein (often contains wheat), as well as to exclude from the diet foods containing these cereals and select alternative foods for full life. However, given the number of people with individual gluten intolerance in Ukraine, the difficult economic situation and the high cost of gluten-free products, not every consumer with this problem can afford to buy certified specialized products labeled “gluten-free”. The aim of the research was to evaluate meat and fish products for gluten content. The article presents information of the results of monitoring gluten in meat and fish products (sausages, canned fish) from different regions of Ukraine by molecular genetic method for 2018–2020 using R-Biopharm diagnostic kits. According to the results of research, fish products that were not labeled “gluten-free” and were not certified as “gluten-free” met the requirements of current legislation of Ukraine and EU Regulation № 41/2009 on gluten-free products. Gluten was not detected in 29.4 % of meat products of various producers; 58.8 % of meat products contained gluten in trace amounts – less than 2 mg/kg; and 11.8 % of meat products contained gluten – more than 20 mg/kg. Prospects for further research are to monitor gluten in sweets and dietary products of domestic production and analyze the results of research on compliance with current legislation and safety for people with individual intolerance to gluten.

We analysed the raw materials in various food products, including additives, carrier solvents and end product for several selected organic pollutants. We analysed these food products for the type of chlorinated hydrocarbon pesticides, polychlorinated biphenyls and other currently used pesticides.We analysed three product categories: bakery products, canned mushroom and meat products. The analysis of the bakery products and of the canned mushroom did not conclude in positive findings, which means that these products contained the agents given during the production of the product and the environmental pollutants in undetectable low concentration.However, the results for meat and fish products indicate that polychlorinated compounds are persistent and are of a lipophyl character, as some of these components have been detected in these food products, the concentration of the PCBs were detected in the range of 9.8-24 μg/kg.

Развитие молекулярно-генетических технологий оценки пивоваренного сырья актуально с позиции их внедрения в систему идентификации и прослеживаемости в контексте расширения оценочных критериев менеджмента качества. Целью настоящей работы являлось моделирование ДНК-технологии видовой идентификации растительного сырья для пивоварения. Подобраны протоколы экстракции нуклеиновых кислот, постановки ПЦР и ПДРФ-анализа с соответствующими комплектами реагентов, направленные на практическое воспроизведение генетического тестирования пробоподготовленного биоматериала. Представлены результаты выравнивания и рестрикционного картирования амплифицируемых нуклеотидных последовательностей локуса хлоропластной ДНК ячменя, пшеницы, ржи, кукурузы, риса и хмеля. Установлено, что наличие видоспецифичных нуклеотидных замен и инделей в анализируемом локусе позволяет идентифицировать растительное сырье для пивоварения методом прямого секвенирования ПЦР-продукта. Последующий совокупный анализ данных in silico моделирования ПЦР-ПДРФ-профилей по трем эндонуклеазам рестрикции подтвердил диагностическую ценность подобранных ферментов. The development of molecular genetic technologies for evaluating brewing raw materials is relevant from the point of view of their introduction into the identification and traceability system in the context of expanding the evaluation criteria of quality management. The purpose of this work was to simulate the DNA technology of species identification of plant raw materials for brewing. Protocols for the extraction of nucleic acids, PCR and RFLP analysis with the corresponding reagent kits were selected, aimed at the practical reproduction of genetic testing of the prepared biomaterial. The results of alignment and restriction mapping of amplified nucleotide sequences of the chloroplast DNA locus of barley, wheat, rye, corn, rice and hops are presented. It was found that the presence of species-specific nucleotide substitutions and indels in the analyzed locus makes it possible to identify plant raw materials for brewing by direct sequencing of the PCR product. Subsequent aggregate analysis of the data in silico modeling of PCR-RFLP profiles for three restriction endonucleases confirmed the diagnostic value of the selected enzymes

The article deals with the results of sensory analysis of semi-finished minced fish products with non-traditional raw materials (seeds of chia) by the flavor profile method, and establishing their compliance with the hypothetical standard. It is shown the expediency of its use to assess the overall impression about the combination of freshwater fish with plant materials for the diversification of biologically valuable food products. The obtained positive results of organoleptic studies have shown the expediency of combining the chia seeds with freshwater fish, and it is proved by high indicators of such descriptors as: the overall impression, harmonious, fishy, sweet-salty taste. As for the consistency, fish cutlets are plastic and dense on the cut. The article deals with the results of the chemical composition, organoleptic evaluation and physical and chemical changes in semi-finished minced products with the addition of non-traditional raw materials and the establishment of their shelf life. The expediency of combining a freshwater fish with plant material to expand the range of biologically valuable food products is presented in the article. The research has established that the use of non-traditional raw materials in a production of semi-finished minced products allows not only to improve the technology of production, but also to solve the problem of obtaining the product of a high nutritional value. The author found that the developed technology of production of semi-finished fish products will significantly expand the range of products of functional purpose based on natural components, which will allow, to some extent, to expand the actual problem of processing raw materials from domestic reservoirs in Ukraine.

The article raises the problem of ensuring metrological traceability of the measurement results of indicators of quality and nutritional value for food products and food raw materials: water (moisture), nitrogen (protein, crude protein), fat, ash and carbohydrates. The problem under consideration can be solved by applying reference materials of food composition, traceable to state primary measurement standards GET 173-2017 and GET 176-2019 and primary reference measurement procedures (PRMP), for attestation of measurement procedures and accuracy checking of measurement results. The article discusses the results of the PRMP development of mass fraction of fat, ash and carbohydrates in food products and food raw materials, as well as mass fraction of crude fat (oil content) in oil crops seeds and products based on them. The paper also presents metrological characteristics of reference materials of composition of dry dairy products, grain-milk dry porridges for nutrition of babies, grain dry porridges for nutrition of babies, egg powder, freeze-dried meat products, animal feed. The results of the work allow for building a chain of metrological traceability from GET 173-2017, GET 176-2019 and PRMP to routine measurement procedures, thereby ensuring the uniformity of measurements of nutritional value of food products.

В статье представлено описание семейного случая миотонической дистрофии Россолимо-Штейнерта-Куршмана-Баттена. Диагноз подтвержден в результате ДНК-диагностики: выявлено увеличенное число копий CTG-повтора гена DMPK, ответственного за развитие миотонической дистрофии. A family case report of Rossolimo-Steinert-Curschmann myotonic dystrophy is presented. An increased number of copies of CTG-repeats of the DMPK gene responsible for the development of MD, i.e., the diagnosis was confirmed by molecular genetic method.
