Rice bran is an agro-industrial waste with excellent nutritional value and a considerable content of bioactive compounds. Biotransformation processes by fermented milk drink fermentation increase the interest in obtaining products from agro-industrial wastes with good biological properties. The viability of introducing rice bran (RB) into fermented milk drinks to improve the structural stability and sensory was studied. Fermented milk drink supplemented with 0, 0.1 %, 0.3 %, 0.5 %, 0.7 % amount of RB were studied. Samples were stored for 28 days at 4 ± 1 °C. Samples composition was studied, Physicochemical properties (total titratable acidity, apparent viscosity, and pH) and consumer’s acceptability of fermented milk drinks were determined at 0, 7th, 14th, 21th and 28th days of storage. Studies showed that rice bran wan rich in dietary fiber (28.57 %), fat (21.56 %), and protein (11.18 %). The introduction of RB showed a significant influence on these parameters (P < 0.05). The introduction of RB would significantly improve the value of titratable acidity and apparent viscosity and decrease pH value. The more rice bran was added, the higher the values of titratable acidity and apparent viscosity were. The lower the pH value was, which could shorten the fermentation time, improve the texture stability, save production cost. The storage period could significantly influence the value of titratable acidity, pH, and apparent viscosity. The longer the storage period was, the higher the titratable acidity values were, the lower the pH value was caused by the post-fermentation of fermented milk drink. The apparent viscosity showed a trend of rising first and falling then during the storage period. The introduction of RB could significantly influence the sensory characteristic (color, consistency, sour, and texture). The introduction of RB would lead to whey separation and rough structure. Fermented milk drink supplemented with 0.1 % RB showed higher sensory acceptance. The best shelf life of the sample is 14 days,during which time fermented milk drink was of the best quality. RB is a kind of raw material with bright application prospects in a fermented milk drink.

The paper considers the peculiarities of the non-traditional vegetable raw materials of Skolivshchyna in the production of Galician cuisine with health-improving properties. We studied the experience of scientists in improving the quality of food and increasing their biological value through the addition of functional plant materials. The authors of the article described the results of the improvement of three dishes of Ukrainian cuisine, in the recipes of which there are non-traditional vegetable raw materials of high nutritional and biological value. This is a characteristic feature of modern trends in the food industry, which supports the main trends of rational and healthy eating and allows you to adapt traditional Ukrainian dishes to the consumer preferences of today's residents. The publication substantiates the use of Agropyrum repens, Urtica dioica L. and Oxalis acetosella as raw components of updated dishes. The aim of the work was to improve the technology of cooking Galician cuisine with partial replacement of several traditional recipe components. The research was conducted on the basis of the Department of Hotel and Restaurant Business and Food Technologies of Ivan Franko Lviv National University. The raw materials used met the quality and safety requirements of current regulations.

The article presents the results of research of honey as a dessert in hotel and restaurant complexes of Bila Tserkva region. The analysis of researched samples of honey with the use of laboratory researches which were carried out in the conditions of scientific laboratory of chair of safety and quality of foodstuff, raw materials and technological processes of Bila Tserkva national agrarian university is carried out. The research was conducted in accordance with the national standard of Ukraine DSTU 4497. according to generally accepted methods. Color, taste, aroma, consistency, crystallization, signs of fermentation were determined organoleptically using the sensory method of analysis of honey. It was found that in all samples the color of honey was from light yellow to yellow, with a pleasant taste and aroma, without signs of fermentation and the content of mechanical and other impurities. The diastasis number of honey samples used by hotel and restaurant complexes is 14, 10 and 8 units, respectively. Goethe, which indicates the heating of part of the honey. Thus, the results of research have shown that honey, which is used in hotel and restaurant complexes of Bila Tserkva region as a dessert in terms of organoleptic indicators, meets the requirements of the national state standard.

Formulations of yogurt flavored with coffee with a sugar content of 4 and 6 % and instant coffee Nescafe Gold in the amount of 0.5, 0.7 or 0.9 % were developed. The possibility of including in the formulation of low-fat yogurts protein enrichments, namely dry whey protein concentrate WPC 80 Milkiland in the amount of 1.5 %. A five-point scale has been developed to assess the organoleptic characteristics of new types of yogurt. It was found that the score of the consistency of the samples differed and decreased with increasing coffee content from 0.5 to 0.9 %. The sugar content did not affect the consistency, but higher taste scores were obtained with coffee-flavored samples with the addition of 5 % sugar compared to 4 %. Yogurts with 0.7 % coffee and 4 % sugar and both yogurts with 0.9 % coffee had the lowest scores compared to other yogurt samples. Changes in titratable acidity during yogurt fermentation and during storage were studied. It was found that the highest rate of increase of titratable acidity was registered for sample 3, which at 4 h of fermentation reached 98 °T compared to others, which is explained by the content of 2.2–4.5 % chlorogenic acid and other organic acids in instant coffee. It was found that lactic acid accumulated during storage of yogurts with coffee. On the first day of storage, its content ranged from 0.135–0.200 %, and on the 15th day increased to 1.22–1.42 %. Such changes are natural, because lactic acid is a product of lactic acid microflora metabolism during lactose fermentation. It was investigated that the active acidity at the end of fermentation was 4.56 units. pH against control – 4.72 units. pH and had a higher rate of decline compared to control. This can be explained by the mass fraction of lactose, which in the whey protein concentrate is 36 %. Also, this protein enrichment contains a large number of carboxyl groups, which increases the acidity of the clot and the finished product. All test samples were found to have better rheological properties due to the use of 1.5 % whey protein concentrate and sugar in the formulations. The parameters of technological operations in the production of yogurt with coffee are substantiated.

The ice cream market is one of the developed segments of the food industry of Ukraine. Ice cream is a frozen product that is consumed all over the world. The work aimed to investigate the quality of parfait ice cream with vegetable fillings. The selection and justification of the components of the system, namely quail eggs, celery root, spinach leaves, was based on literature data and regulatory documentation, as well as laboratory data. Celery and spinach puree was chosen as one of the recipe components of ice cream, and the peculiarities of its preparation were studied. Parfait ice cream recipes with different ratios of vegetable fillers and pumpkin flour have been developed. The physiological and organoleptic parameters of ice cream with additional pumpkin flour, celery, and spinach puree were studied. According to the obtained results, the optimal content of pumpkin flour in ice cream is equal to 2–4 %, and vegetable puree – 25–35 %. It has been proved that pumpkin flour significantly affects the structural characteristics of ice cream mixes. They were melting resistance increases from 100 to 145 minutes. When increasing the flour content to 4 %. The dry matter content in ice cream varies depending on the amount of vegetable puree and pumpkin flour. However, the mass fraction of fat and dry nonfat milk residue does not change because the experimental samples were developed based on the composition of the control sample. Studies show that the new frozen dessert retains microbiological stability for six months. The combination of vegetable and dairy raw materials with pumpkin flour and quail eggs in the production of parfait ice cream provides the necessary whipping. It allows obtaining a product with specified rheological and physicochemical parameters.

The problem of correct, exact calculation and selection of the optimal heat exchange equipment at use in it of nanoliquid heat carriers was investigated in the work. Classical numerical equations, which are widely used in the calculation and selection of heat exchangers with nanofluids, especially at temperatures above 50 °C, give an error of (15–20) % or more. This leads to the fact that the selected heat exchange equipment may not work efficiently with excessive consumption of thermal energy. A new approach to heat transfer processes is considered, taking into account the theory of J. Businesque, which gives an idea of turbulent viscosity and thermal conductivity, as well as comparing the resistance of the coolant flow to the nanoparticle with surface forces and considering turbulent fluid as Newtonian. It is shown that the consideration of the behavior of a nanoparticle in a turbulent liquid coolant without taking into account surface forces is inaccurate and erroneous. The physical content of the previously obtained new numbers of similarity Bl and Blturb is considered and the possibility of their effective application in the new numerical equation obtained by us for the calculation of heat exchangers using nanofluid coolants is shown. The existing express method of estimating the efficiency of nanorluids use in heat exchangers on the basis of classical numerical equations is analyzed and a new express method on the basis of a new numerical equation and new numbers of similarity Bl and Blturb is proposed. The proposed express calculation method shows that a mixture of H2O + EG (60:40) improves the heat transfer properties of water by + 12.86 %, and a mixture of (H2O + EG (60:40) + 1.5 % TiO2) and (milk) + 0.5 % pumpkin seed oil) – by +16.75 %, which corresponds to the experiments and our calculations, and the known express method based on classical numerical equations shows a deterioration of – 4.5 % and, accordingly, by – 1.2 %. An example of calculating the optimal shell-and-tube heat exchanger according to the new algorithm when heating milk with hot water with the addition of mixtures (H2O + EG (60:40) + 1.5 % TiO2) and accordingly (milk + 0.5 % pumpkin seed oil) fully confirms the correctness of the new express –method.

The issue of healthy eating has always been relevant, especially this problem has been exacerbated by the rapid development of food technology and the production of a significant number of semi-finished products. As a result, there is a need to develop new types of food, including unleavened and low-calorie bread, bakery products enriched with vitamins, minerals, plant supplements. The aim of the work was to substantiate the technology of bread production with the use of beet kvass and to investigate the physico-chemical quality indicators of experimental samples of finished products. Technological indicators that characterize the quality of bread: moisture, porosity, crumbliness, acidity were determined by generally accepted methods. Bread made with beet kvass has been found to have well-developed crumb porosity, does not crumble for a long time, hardens slowly, and is resistant to microbiological spoilage. The crumb is not deformed and elastic when pressed. Replacing part of the water during the kneading of wheat dough with beet kvass (50 % by weight of flour) makes it possible to intensify the maturation of semi-finished products, both in traditional and accelerated technologies, to create a more complete nutrient medium for yeast activation, to obtain high quality bakery products storage. It has also been found that during the storage of bread, the hydrophilic properties of the crumb, its crumbliness changes slightly. The drying process is most intense during the first day, then slows down.

In the current context, significant changes are taking place in the structure of Ukrainian industry. Powerful productions of some spheres of activity lose their urgency and, on the contrary, acquire the development of power of other branches, namely, craft productions, to the composition of which the company belongs. The result of the activity of the businesses complex is the formation of significant volumes of food waste (about 160 thousand ton), discharges of concentrated wastewater, wastewater discharges. The wastes of the restaurant industry have a wide nomenclature and a specific composition, under the conditions of their placement in the components of the environment form the ecological aspects of the negative effects. Food wastes of facility in this branch contain a significant amount of nutrients, organic substances and require complex processes of their processing. Meanwhile, according to their composition, production wastes can be involved in the transfer process with the removal of secondary raw materials and energy sources. Thus, there is a need to improve existing and new technologies for the transfer of hazardous waste in order to reduce the load on the environment. The results of the analysis of world and domestic developments in the field of technologies for the utilization of food waste allowed to determine the main methodological approaches to the transition. In the case of the utilization of food waste, biotechnological methods represent a significant interest. Thus, the work is devoted to the connection of the actual scientific-practical task, which consists in the scientific substantiation and improvement of the technology of the transfer of the population's needs.

To improve public health, it is necessary to produce products that include natural ingredients with antioxidant properties. In foreign and domestic practice, there is a significant number of multifunctional additives of plant origin, which combine the ability to improve the antioxidant and flavoring properties of finished products. The development of the technology of meat and fish formed semi-finished products of the Ayurvedic direction is relevant today. The main raw materials for the production of batches of meat and fish formed were poultry meat, sea fish – hake, pollock, ocean saithe, haddock, which have the greatest amount of protein. As a result of a comparison of the chemical composition of fish and meat raw materials, organoleptic studies, it was found that the most optimal ratio was the samples in which chicken fillets and ocean fish fillets – haddock were used in a ratio of 50 : 50 %; pollock – In a ratio of 60 : 40 %. To extend the shelf life of the developed meat and fish formed, we have chosen extractive cardamom oils and a mixture of rosemary and thyme. Four variants of formulations were developed with the addition of extractive oils of cardamom and a mixture of rosemary and thyme in the amount of 2, 3, 5 and 8 % to the mass of raw minced meat. As a result of organoleptic studies, a comparative analysis of the average ratings of each sample using different amounts of fish raw materials, it was found that among the additives presented, the best is a mixture of extractive oils of rosemary and thyme with, namely, a sample of meat and fish formed semi-finished products using haddock fish fillets and a sample in the composition which includes pollock fillet with a blend of rosemary and thyme extractive oils. Also, microbiological studies of samples of meat and fish formed were carried out with the addition of a mixture of extractive oils of rosemary and thyme. Based on the results of microbiological studies, the safety and quality of the developed products have been confirmed.

Foods must contain all the nutrients necessary to maintain human health, development and life. These components include protein, fats, carbohydrates, vitamins, minerals and other biologically active substances, which must be in sufficient quantity and ensure the proper functioning of the body. One such food that contains significant amounts of nutrients is peanuts. Peanuts are a source of protein, carbohydrates, fats, fiber, trace elements and vitamins. The nutrients of the product are easily absorbed. The article presents the results of a study of the nutritional value of roasted salted peanuts of various manufacturers, which are used for consumption in hotel and restaurant complexes in the Kiev region. The studies were carried out in the laboratory of the State Research Control Institute of Veterinary Drugs and Feed Additives (Lviv). Nutritional value was determined according to different methods, which are intended for each indicator, and also used statistical methods. According to the research results, it was revealed that the content of moisture, protein, fat and fiber in peanuts Big Bo, Felix Peanuts and Cossack Slava ranges, respectively, in the range from 0.73 to 1.37 %, from 26.3 to 26.9, from 46.01 to 48.6 g/100 g of product and 3.56 to 3.92 %. According to organoleptic parameters, prototypes of peanuts from different manufacturers meet the standard requirements. Promising research is the study of trace elements in roasted salted peanuts from various manufacturers.
