A muscadine grape (Vitis rotundifolia) planting was established in 1996 at the Southwest Research and Extension Center in Hope, Ark., to provide information on the performance of muscadine grape cultivars in a region where cold hardiness is not a major limitation. This research evaluated harvest parameters, fruit and juice quality, and nutraceutical potential of selected muscadine cultivars grown in southwestern Arkansas. The cultivars evaluated were `Black Beauty', `Carlos', `Cowart', `Doreen', `Early Fry', `Fry', `Granny Val', `Ison', `Jumbo', `Late Fry', NC67A015-17, NC67A015-26, `Nesbitt', `Scarlett', `Southern Home', `Sterling', `Sugargate', `Summit', `Supreme', and `Tara'. Muscadine cultivars differed in productivity and fruit quality. In 2002 and 2003, juice was produced from `Carlos', `Granny Val', `Ison', `Nesbitt', `Southern Home', `Summit', and `Supreme' grapes. `Black Beauty' was also produced into juice in 2003. In 2002, `Nesbitt' grapes had the highest juice yield, 520 L·t–1 (124.6 gal/ton). `Ison' and `Supreme' juice had the highest soluble solids level. In 2003, `Granny Val' grapes had the highest juice yield, 551 L·t –1 (132.0 gal/ton). `Southern Home' juice had the highest soluble solids. The press materials of muscadine grapes were a potential source of high levels of nutraceutical compounds. Dried seeds had the highest total phenolic and oxygen radical absorbance capacity (ORAC) levels followed by the dried skins, the grapes, and then the juice. The skins of the black cultivars had the highest total anthocyanins level. `Supreme' seeds had the highest total phenolic and ORAC levels while `Ison' skins had the highest total anthocyanin levels. Based on yield, harvest, and juice quality, cultivars recommended to growers in southwestern Arkansas and other areas with a similar climate include `Black Beauty', `Carlos', `Fry', `Granny Val', `Nesbitt', `Southern Home', `Summit', and `Supreme'.

AbstractThe study evaluated some agro-morphological (fruit weight, fruit flesh ratio, fruit skin colour, number of fruits per raceme, number of racemes per bush), biochemical (vitamin C, soluble solids content, organic acids), and bioactive (total phenolics, total anthocyanins, total flavonoids, and antioxidant capacity) characteristics of the fruit of a number of selected European Cranberrybush (Viburnum opulus L.) genotypes grown in the Sivas province of Turkey. To evaluate the antioxidant capacity, ferric reducing antioxidant power (FRAP) assays were performed. The results showed genotype-specific differences in most of the agro-morphological, biochemical and bioactive characteristics. The range of fruit weight, number of fruits per raceme, and number of racemes per bush was between 0.67 and 0.82 g, 40.7 and 57.1, and 470 and 581, respectively. The highest vitamin C and soluble solids contents were found in the fruits of genotypes SIV-9 and SIV-6 as 39 mg per 100 g and 12.6%, respectively. Tartaric acid was the main organic acid in all the genotypes; it ranged from 120 to 144 mg per 100 g of fruit FW. Total phenolic, total anthocyanin and total flavonoid contents ranged from 621 to 987 mg gallic acid equivalents per 100 g, 15 to 51 mg cyanidin-3-rutinoside equivalents per 100 g, and 202 to 318 mg rutin equivalents per 100 g, respectively. Genotype SIV-10 had the highest antioxidant capacity (34.90 μmol Trolox per g, based on FRAP assays). The present study shows the potential of the evaluated European Cranberrybush genotypes for improving the nutritional value through germplasm enhancement programmes.

Juice, fresh fruit and pomace of 10 selected Nova Scotia-grown grape cultivars (five table and five wine cultivars) were evaluated for their physicochemical parameters and major phenolic compounds to determine their suitability in use for developing functional beverages. Colour intensity, total soluble solids, total anthocyanin concentration and antioxidant capacity were significantly higher in juice of wine grape cultivars than in juice of table grape cultivars. Titratable acidity was not significantly different among the juice of the two categories. In juice, a high positive correlation was observed between total phenolic concentration measured using Folin-Ciocalteu assay and antioxidant capacity measured using oxygen radical absorbance capacity (ORAC) (r = 0.87) and ferric reducing antioxidant power (FRAP) (r = 0.95). Flavan-3-ols, stilbenes and anthocyanin concentrations were significantly higher in fruits of wine grape cultivars, while the distribution of flavonols was highly variable in two categories. The descending order of total phenol concentration in fruits was: Lucie Kuhlman > Baco Noir > Marechal Foch > Castel 19637 > Sovereign Coronation > Leon Millot > Van Buren > Swenson Red > Suffolk Red > Reliance. The average overall concentrations of flavan-3-ols, flavonols, stilbenes and anthocyanins in pomace were 40, 90, 60 and 50% higher than that of the fresh fruits. Among the cultivars evaluated, Castel 19637 and Lucie Kuhlman showed the greatest potential for the development of a functional beverage; however, further characterization on sensory quality attributes is required.Key words: Grape, juice, pomace, antioxidant capacity, anthocyanin, stilbenes, flavan-3-ols, flavonols

Extraction of tropical fruit juice using simple, efficient, and environmentally friendly technologies is gaining importance to produce high quality juices. Juice from pink-fleshed guava, pink-fleshed pomelo, and soursop was extracted using direct and indirect thermosonication methods by varying intensity, time, and temperature, and compared to those extracted using water bath incubation. Improvised models of juice yield, ascorbic acid, and total soluble solids responses were generated by eliminating insignificant model terms of the factors in full quadratic model using backward eliminating procedure. Main effects, 3D, or 4D plots for each response were developed based on factors that influenced the response. Results showed that the best extraction method for guava and pomelo juices were within indirect thermosonication method of 1 kW, 55 °C and 30 min, and 2.5 kW, 54 °C and 23 min, respectively. Direct thermosonication method at 10% amplitude, 55 °C for 2 to 10 min was more suitable for soursop juice. Thermosonicated extraction of tropical fruit juice can improve its juice yield, ascorbic acid content, and total soluble solids content.

Biochemical juice attributes and color-related traits of muscadine grape genotypes have been investigated. For this study, 90 muscadine genotypes, including 21 standard cultivars, 60 breeding lines, and 9 Vitis x Muscadinia hybrids (VM), were evaluated. The biochemical properties of total soluble solids (TSS), titratable acidity, and TSS/Acid (T/A) ratio showed modest diversity among genotypes with a range of 10.3 °Brix, 2.1 mg tartaric acid/L, and 4.6, respectively. Nonetheless, the pH trait exhibited a tight range of 0.74 among the population with a minimum and maximum pH of 3.11 ± 0.12 and 3.85 ± 0.12. Color-related traits showed more deviation between individuals. Total anthocyanin content (TAC), luminosity index (L*), hue angle (h°), and chroma index (C*) displayed a range of 398 µg/g DW, 33.2, 352.1, and 24, respectively. The hierarchical clustering map classified the population into two large groups of colored and non-colored grapes based on L* and h°, suggesting the predominance of these two characters among the population. The colored berries genotypes clade was further divided into several sub-clades depending on C*, TAC, and TSS levels. The principal component analysis (PCA) separated the four-color characteristics into two groups with a negative correlation between them, L* and C* versus TAC and h°. Further, PCA suggested the positive influence of acidity in enhancing the different nutraceutical components. Despite the nature of anthocyanins as a member of phenolic compounds, a lack of significant correlation between TAC and nutraceutical-related traits was detected. The dissimilatory matrix analysis highlighted the muscadine individuals C11-2-2, E16-9-1, O21-13-1, and Noble as particular genotypes among the population due to enhanced color characteristics.

This work studied the effects of centrifugal block freeze crystallization (CBFC) on physicochemical parameters, total phenolic compound content (TPCC), antioxidant activity (AA), and process parameters applied to fresh murta and arrayan juices. In the last cycle, for fresh murta and arrayan juices, the total soluble solids (TSS) showed values close to 48 and 54 Brix, and TPCC exhibited values of approximately 20 and 66 mg gallic acid equivalents/100 grams dry matter (d.m.) for total polyphenol content, 13 and 25 mg cyanidin-3-glucoside equivalents/100 grams d.m. for total anthocyanin content, and 9 and 17 mg quercetin equivalents/100 grams d.m. for total flavonoid content, respectively. Moreover, the TPCC retention indicated values over 78% for murta juice, and 82% for arrayan juice. Similarly, the AA presented an increase over 2.1 times in relation to the correspondent initial AA value. Thus, the process parameters values were between 69% and 85% for efficiency, 70% and 88% for percentage of concentrate, and 0.72% and 0.88 (kg solutes/kg initial solutes) for solute yield. Therefore, this work provides insight about CBFC on valuable properties in fresh Patagonian berries juices, for future applications in health and industrial scale.

Blueberry is a fruit consumed fresh and as an ingredient in formulations such as jam, juice, and wine. Wine is a widely consumed beverage and produced from different berries and fruits. Blueberry wine contains bio-compounds that could have a beneficial effect on health. Therefore, this study aimed to optimize blueberry wine by two response variables (total soluble solids and fermentation time) to obtain the highest alcohol percentage, pH, and lightness. In order to optimize the fermentation process, a central composite design was used. The optimized blueberry wine was obtained at total soluble solids of 25°Brix and fermentation time of 16 d. The optimized blueberry characteristics estimated were: alcohol percentage of 11.91%, pH of 2.98, and lightness (L*) of 26.22, and the optimized blueberry characteristics experimental were: alcohol percentage of 11.93±0.02%, pH of 2.97±0.01, and L* of 25.42±1.80. The optimized blueberry wine had a total phenolic content of 360.27±18.09 mg of gallic acid equivalents L-1, total anthocyanin content of 46.27±3.66 mg cyanidin-3 glucoside L-1, antioxidant capacity by ABTS and DDPH assays of 1,539.8±92.18 and 1,688.07±57.57 mM Trolox equivalent L-1, respectively. The results suggest that optimized blueberry wine can be considered a drink with potential health applications.

Strawberries are one of the most important food crops grown in Florida, with a harvested area of ≈10,000 acres. The University of Florida strawberry breeding program develops cultivars adapted to this region and its particular weather conditions, with a major aim of increasing overall quality. The objective of this study was to compare the fruit of advanced breeding selections to those of commercial cultivars, for compositional attributes. Seven different strawberry genotypes were compared at harvest and after 7 days at 4 °C across multiple harvest dates during two consecutive years. Compositional attributes were highly influenced by year, harvest date within a year, genotype, and storage. Overall, compared with other genotypes, selection FL 09-127 exhibited consistently higher soluble solids and total sugar (TS) contents at harvest and after cold storage. Higher ascorbic acid (AA) and phenolic contents at harvest were observed in selection FL 07-193. However, its anthocyanin content was among the lowest. In contrast, FL 10-47 exhibited relatively low AA content at harvest but consistently high total anthocyanins (TACs) and total phenolic (TP) contents after storage. Overall, results from this study provide valuable information to the breeding process by identifying new genotypes with improved compositional attributes combined with suitable quality characteristics after cold storage.

Anthocyanin content and composition and CIE 1976 (L*, a*, b*) color space (CIELAB) color coordinates were examined for the skin of 22 muscadine grape (Vitis rotundifolia Michx.) cultivars and Muscadinia Planch germplasm. Analysis of berry skin extracts by high-performance liquid chromatography (HPLC) determined that anthocyanin content varied from less than 100 μg·g−1 in bronze and pink berries to over 5500 μg·g−1 in highly pigmented black berries. The anthocyanins delphinidin, cyanidin, petunidin, pelargonidin, peonidin, and malvidin were detected in their 3,5-diglucosidic forms. Analysis of berry color with a colorimeter revealed chroma (C*) ranged from 2.4 to 22.8 with the highest values occurring in bronze- and red-colored berries. As anthocyanin concentration increased, lightness (L*) decreased to a low of 20 to 23 in black-colored berries. Pink and red skin colors were primarily a result of lower levels of total anthocyanins, although there was also a shift away from delphinidin and petunidin production toward more cyanidin and peonidin. Malvidin, the most important anthocyanin for muscadine wine and juice color stability, was only abundant in a few clones, all of which had V. munsoniana (Simpson ex Munson) Small or V. popenoei (Fennell) Small in their pedigree. The interspecific hybrid ‘Fennell’s 3-way Hybrid’ had the largest proportion of malvidin, contributing ≈58% of the total anthocyanin content. This clone also had low levels of delphinidin and high total levels of anthocyanin, making it a promising source for the improvement of muscadine grape pigment profiles.

The total anthocyanin and total phenolic content of wild (samples from 4 populations) and cultivated (samples from 32 populations) Pacific Northwestern American Vaccinium species (V. membranaceum, V. ovalifolium, and V. deliciosum) were evaluated. The total monomeric anthocyanin content of all huckleberry samples analyzed ranged from 101 to 400 mg/100 g (expressed as cyanidin-3-glucoside), and the total phenolics varied from 367 to 1286 mg/100 g (expressed as gallic acid). Cluster analysis separated the samples into four different groups based on their anthocyanin and total phenolic content. Two groups had greater anthocyanin pigment and total phenolics; one consisted entirely of cultivated V. ovalifolium (LIG10, VAC485, VAC487, LIG33, LIG9, LIG2, and VAC349) and the other consisted of just cultivated V. membranaceum (LIG25). Significant variations in total anthocyanins, total phenolics, and the ratio of the total anthocyanins and total phenolics were observed among the different V. membranaceum, V. ovalifolium, and V. deliciosum populations cultivated in the Willamette Valley, Ore. The profile of the individual anthocyanins of the wild V. membranaceum, wild V. ovalifolium, and V. corymbosum `Rubel' were conducted by high-performance liquid chromatography. The chromatograms of V. membranaceum, V. ovalifolium, and `Rubel' were distinctly different in the amounts of delphinidin, cyanidin, and malvidin glycosides.

The haskap has been successfully cultivated in many geographical zones in Canada. We investigated whether the latitude has any impact on the anthocyanin accumulation and total antioxidant capacity in the haskap berry. The measured quality attributes were compared with that of the blueberry. Haskap ‘Aurora’ berries were collected from Yukon, British Columbia, Saskatchewan, and Nova Scotia in Canada, and blueberries were collected from Nova Scotia. Cyanidin-3-O-glucoside (C3G), the most abundant anthocyanin of haskap berry, the total anthocyanins, the total polyphenols, the soluble solids (°Brix), the pH value, the total antioxidant capacity, and the moisture content were determined. The results revealed that the total anthocyanin, total phenolic content, and antioxidant capacity of the haskap range between 88 to 273 mg C3GE/100 g fresh weight (FW), 256 to 442 mg GAE/100 g of FW, and 27 to 52 µmol TE/g FW, respectively. The liquid chromatography-mass spectrometry (UPLC/MS) analysis revealed that the C3G contained in the haskap berry is highly dependent on the harvest stage. Among the samples, the haskap berry harvested on July 19, 2019, from the Yukon had the highest C3G content. Interestingly, the total anthocyanin content of the haskap berry is comparable to that of the lowbush blueberry, but higher than the highbush blueberry. A systematic multi-year experiment employing many cultivars and growing locations is recommended to better understand the latitude effect.
