Effects of Nisin and Ε-Polylysine Combined with Ascorbic Acid on the Quality Characteristics, Microbial Communities, and Biogenic Amine Formation in Chinese Dry Sausages

The effect of various blends of banana (B) and mushroom (M) as well as storage time on theoverall quality characteristics of jam at ambient temperature were studied for three months of storageperiod. All the treatments were analysed for physicochemical properties (total soluble solids (°Brix), pH,reducing sugars (%), non-reducing sugars (%), ascorbic acid (mg/100 g) and percent acidity) and sensoryproperties (taste, colour, texture and overall acceptability). Significant (P < 0.05) increase were examinedin total soluble solids (67.94-69.78 °brix), percent acidity (0.71-0.87%) and reducing sugars (18.17-29.33%)during the storage period. While, significant (P < 0.05) reduction in pH (3.45 to 3.26), non reducing sugars(44.90-30.83%), ascorbic acid (7.81 to 5.52 mg/100 g), colour (7.34 to 4.84), taste (7.27 to 4.51), texture(7.06 to 4.60) and overall acceptability (7.17 to 4.69) were observed. Physicochemical and sensory analysesshowed that jam prepared from BM6 (400 g banana + 600 g mushroom + 1kg sugar + 2 g citric acid) wasof good quality attributes among the treatments.

The effect of fertigation with N-NO3 at 3, 6, or 12 mmol·liter-1, and 0, 3, or 6 dS·m-1 chloride ions on fruit quality of three pepino dulce selections was studied. Genotypes varied considerably in their response to mineral treatments in most quality characteristics. Variation in fruit size was greatly reduced when clusters were thinned to three fruit. Increasing chloride concentration in the nutrient soltuion reduced fruit size significantly and ascorbic acid concentration relative to the control, but fruit shape was not affected. Increases in NaCl salt, but not N concentration, resulted in significantly higher soluble solids concentration (SSC) and firmness in all three genotypes. Electrical conductivity, acidity, and pH were significantly affected by the two mineral treatments in the first trial, but remained unchanged in the second season. Fruit firmness, SSC, and acidity declined by 12% to 30%, whereas ascorbic acid content increased during 14 days storage at room temperature. These changes depended on genotype and environment during fruit growth and development. Organoleptic ratings were highest in salt-treated plants. Fruit quality of pepino dulce may be manipulated by crop management, thus improving its acceptability in Western markets.

The article concerns the research of the herb Common Agrimony (Agrimonia eupatoria L.) use in the kvass manufacture, because the plant has a high content of flavoring and biologically active substances (flavonoids, tannins, arbutin, etc.). Researchers used standard, adopted in the brewing and soft drinks industry test methods and methods of processing obtained results. To produce kvass with the best quality characteristics, a man has to use Agrimonia eupatoria L. extract. In order to obtain this extract with the maximum amount of flavoring and biologically active substances (polyphenolic substances, ascorbic acid) a man must macerate 3-5 mm cut grass using purified water as a solvent in a ratio of 1:10 at a temperature of 40 ± 3 °C for 5-6 hours. Agrimonia eupatoria L. extract is an opaque brown liquid with a weak greenish tint, weakly expressed sweet-apricot aroma and taste; the mass fraction of dry substances is 3.0 ± 0.1 %; acidity – 2.5 ± 0.2 units; the content of polyphenolic substances is not less than 13.5 mg / 100 cm3; the content of ascorbic acid – not less than 4.5 mg / 100 cm3 . The authors developed kvass technology, including the preparation of kvass wort and Agrimonia eupatoria L. extract separately, its blending, fermentation, cooling, clarification and bottling. Based on the organoleptic and physical and chemical parameters obtained during the study, the researchers recommended the optimal ratio of kvass wort and Agrimonia eupatoria L.: 90:10 – 80:20. They developed regulated quality indicators of the new kvass: appearance – a transparent foaming liquid with opalescence, without foreign inclusions; color – brown with greenish tones; aroma and taste – refreshing, sweet and sour, bread, with light tones of Agrimonia eupatoria L. extract. The use of an aqueous extract from the herb Agrimonia eupatoria L. in the kvass production enables to get products with original organoleptic characteristics

Investigating the microbial communities and biogenic amine (BA) formation in silage is of vital for improving the quality and safety of oat silage. The present study evaluated the effects of propionic acid (P) and sodium benzoate (SB) on the quality properties, microbial communities, and BA formation in oat silage. Oat was harvested at boot stage and ensiled using P and SB as additives in mini silos, followed by 14 days of aerobic exposure. The results showed that P and SB improved fermentation quality of oat silage, increased the lactic acid content, and decreased pH value and ammonia nitrogen content. Putrescine, cadaverine, and tyramine were the dominant BAs in oat silage; spermidine and spermine were not detected. The control silage had the highest content of total biogenic amine (TBA, 2506.7 mg kg–1 DM), and decreased by 51.1 and 57.7% after adding P and SB, respectively. Moreover, a lower putrescine, cadaverine, and tyramine content and undesirable microbes, such as Caproiciproducens, Stenotrophomonas, Herbinix, and Enterobacter genera, were observed in P and SB silages, which was beneficial for oat silage quality. The fungal community of P silage was dominated by Monascus fuliginosus, and the temperature, pH and ammonia nitrogen content increased after exposure to air. Sedimentibacter, Herbinix, Caproiciproducens, Enterobacter, and Escherichia-Shigella were found to be positively correlated with BA formation in oat silage. Overall, P and SB effectively inhibit the undesirable microbes and BA formation in oat silage, the P silage exhibited lower aerobic stability than the SB silage.

The influence of organic fertilizers (biostimulants) “Bio-Algo”, “Bio-Mix” and “Bio-Fish” made from Kam-chatka’s marine organisms on the indicators of generative and vegetative productivity of large-fruited straw-berries were represented. Comparison of organic biostimulants effect on such indicators as winter hardiness, general condition and pathogen damage revealed that the most effective biological product is “Bio-Algo”, the use of which had a positive effect on the development of strawberry plants and subsequent recovery pro-cesses after overwintering, increasing their generative and vegetative productivity. When processing straw-berry plants with the preparation an increase in the mass of the berry was noted, this ultimately increases generative productivity, without reducing the quality characteristics of the fruit – the content of ascorbic acid and soluble dry substances. It was stated that the use of organic fertilizer Bio-Algo increases the generative productivity of large-fruited strawberries by 1.3 times and the generative productivity by 1.6 times.
