Research on the antioxidant lycopene of tomato fruit (Solanum lycopersicum L.) blended in frying fat from catfish (Clarias sp) oil has been done. The purpose of this research is to determine the antioxidant activity of tomato lycopene before and after being grounded into frying fat and determine the quality of frying fat after being grounded with tomato lycopene. The antioxidant activity of tomato lycopene is determined by the DPPH (2,2-diphenyl-1-picrylhydrazyl) method. Analysis of frying fat quality includes determination of pH, determination of FFA (free fatty acid) levels, determination of total fat content, measurement of water content, peroxide number and organoleptic observation. Antioxidant activity of tomato lycopen was very high, namely with inhibition value of 89.79%; 90.34%; 91.49% and 92.10%. Frying fat analysis showed high antioxidant activity of lycopene tomatoes with 50.67% inhibition; 51.63%; 51.39% and 51.23%. The results of the analysis of the quality of frying fat are nearly same with SNI quality standards, except for peroxide numbers. Keywords: tomato, lycopene, antioxidants, frying fat, catfish, DPPH

Tomato (Solanum Lycopersicum L. (or) Lycopersicon esculentum Mill.) is being a very nutritious and health protective food, are highly perishable nature. Its sensitivity to postharvest loss due to poor handling, diseases and physical injury limits its successful marketing. Therefore, simple technology is required to reduce the postharvest loss of this commodity. The use of edible coatings with bio-extracts appears to be a good alternative preservation technique to extend the mature tomato fruits. This study was, therefore, initiated to investigate the effect of using bio- extracts garlic bulba and capsicum incorporation with coating materials (maize starch and beeswax on physicochemical quality of tomato fruit stored at ambient conditions (temperature 15.5 to 20.2oC and relative humidity of 55.5 to 67.3%). The experiment was conducted using complete randomized design of two varieties (Fetane and Melkashola) and six treatments. The tomato fruits were coated by dipping into solution for 3 minutes. The treatments prepared were on coating solution of MGE( 9.5% maize starch with 0.5% garlic extract), MCE (9.5% maize starch with 0.5% capsicum extract), BCE (9.5% beewax mixed with 0.5% capsicum extract), BGE (9.5% beewax mixed with 0.5% garlic extract), 10% maize starch without bio-extract, 10% beewax without bio- extract and control. The treatment means were tested at significance level of P ≤ 0.05. The effectiveness of bio-extracts with coating materials on physicochemical quality of tomato fruits were evaluated at three days intervals for 30 days. There was a significance difference (P<0.05) between coated and uncoated fruits. All coatings delayed tomato ripening and improved the keeping quality parameters but best results were exhibited by 9.5% with 0.5% BCE followed by 9.5% with 0.5% MGE by maintaining the mature tomato fruit for 30 days. The study showed that the Fetane variety has maintained more quality attribute than Melkashola variety during storage.

In this work, we report the phytochemical composition and antioxidant activity of methanol extracts of leaves and fruits (acorns) ofQuercus coccifera(kermes oak). Forty-one compounds were characterized using high-performance liquid chromatography with electrospray multistage mass spectrometry (HPLC-ESI-MSn) with an ion trap mass spectrometer. A high percentage of the detected compounds were gallic acid derivatives, although some saccharides and flavonoids were also present. This phytochemical pattern is typical inQuercusspecies, which are rich in gallotannins. These compounds are partially responsible for the cardioprotective effects observed in different food samples containing them. We evaluated the antioxidant activity by ABTS and DPPH assays. In both cases, high antioxidant activity was observed, being higher in acorns than in leaves. The high antioxidant potential of the extracts, which is related to the high total phenolic content, indicates the potential benefit of the use of this species as a source of bioactive compounds.

The quality of drinking water in Ethiopia is an influential environmental factor of health and water can use as a medium for disease transmission in countries on all continents; all are affected from the poorest to the richest. Moreover, in our globe millions of people are unprotected to unsafe concentration of chemical pollutants in the drinking water. Dichlorohenols are considered as key water pollutants that are destructive to creatures at stumpy concentrations and many of them have been clustered as detrimental pollutants because of their probable to damage human health even in low concentration. This research aimed to determine phenolic compounds from drinking water of Jimma town which is found south west of Ethiopia, by using 4-Aminoantipyridine (AAP). The sample of drinking water before and after treatment was collected for determination of pollutants which classified as raw water (RW), treated water (TW) and system distributed water (SDW). The sample of water was preserved by phosphoric acid and sulfuric acid under pH 4 and distillation was carried out in order to remove sulfur containing compounds by addition of CuSO4 solution. In the analysis of water using 4-Aminoantipyrine the treated water and the system distributed water have been contained 2.73 ppb and 3.64 ppb which had more phenolic compounds as compared to raw water of 1.18 ppb. Therefore, the existence of phenolic compound in both treated and system distributed water of Jimma town drinking water has more phenolic compounds as compared to the permissible level of both Ethiopian Standard, 2 ppb and EPA Standards, 1 ppb.

Objective: The purpose of this research was to determine antioxidant activity of green tea leaf extract, the value of sun protection factor (SPF),physical properties, and stability of green tea cream.Methods: Green tea leaf extract was obtained by maceration using 96% ethanol. Cream was prepared in three formulas with various concentrationof the green tea leaves extract. The physical evaluations included organoleptic, pH, viscosity, adhesion, spreadability, and stability tests weredone. The determination of the SPF value is calculated using the Mansur equation. Extract of green tea leaf has strong antioxidant activity(IC50 2.19 μg/ml).Results: The green tea leaf extract showed high antioxidant activity (2.19 μg/m). All formulas are organoleptically creamy brownish-green to brown,with a distinctive green tea odor and homogeneous. All formulas met the requirements of physical properties of cream. The creams showed significantchange while they were stored at 4°C and at 40±2°C, but showed no difference when they were stored ad 26°C. SPF values of cream are 0.54; 2.03,and 2.41, respectively.Conclusions: It is clearly indicated that the sunscreen cream of green tea leaf extract is potential to be further developed as cosmetic preparations.
