The storage method is one way to maintain coffee quality. Storage with aluminum foil and plastic (PP) packaging is an effective and safe technology to protect coffee grounds. Specialty coffee powder cannot be accepted if the organoleptic score is below 80, for that it is necessary to estimate the shelf life. This study aims to analyze the quality degradation of Bondowoso arabica coffee powder based on specialty standards using the SCAA protocol during storage with aluminum foil packaging and compare it with plastic packaging (PP) and estimated the shelf life of Bondowoso arabica ground coffee products based on flavor value parameters using the arrhenius method. Coffee powder quality degradation with plastic packaging (PP) is faster than aluminum foil packaging. This is because plastic packaging on the fourth day with a temperature of 40°C is not meet specialty standards. The greater the temperature used, the greater the decrease in quality. The shelf life of coffee powder uses aluminum foil packaging, which is 3 days at 40°C, 2 days at 50°C, and 1.3 days at 60°C. Whereas with plastic packaging (PP), the shelf life is shorter, which is 2 days at 40°C, 1.2 days at 50°C and 1 day at 60°C. Keyword: accelerated Shelf-Life Testing (ASLT), aluminum foil, arabica coffee, packaging, shelf

The purpose of this research is to estimate the shelf life of egg rendang  that is packed with High Density Polyetilen (HDPE) plastic, aluminium foil, and vacuum aluminium foil. Estimation of shelf life using the acceleration method by storing the egg rendang for 30 days at three different temperatures, i.e, 30°C, 35°C, and 40°C. The parameters observed during the storage process were sensory assessments of rancidity and thiobarbituric acid (TBA) values of egg rendang. Data were analyzed using linear regression and the equations obtained were used to calculate the shelf life of egg rendang at normal temperature, which is 27°C. The egg rendang stored using vacuum aluminium foil packaging have a longer shelf life compared to HDPE packaging and non vacuum aluminum foil. The egg rendang shelf life packed with aluminium foil vacuum based on rancidity sensory test was 100 days, with the regression equation y =-7241,9x+20,317, an activation energy (Ea) of 14.382,4 kal.mol-1, and the value of quality degradation (k) was 0.021 quality unit per day. The egg rendang shelf life packed with aluminium foil vacuum based on the TBA value was 99.50 days, with the regression equation y =-6995,3x+18,577, the activation energy (Ea) of 13.892.7 kal.mol-1, and the value of quality degradation (k) was 0.008 quality unit per day.

This research was conducted at the Laboratory of Fisheries Products Processing, Faculty of Fisheries and Marine Sciences, Padjadjaran University, Jatinangor. The purpose of this research is to determine the shelf life of Nori from Gracilaria sp. with the Accelerated Shelf Life Test (ASLT) method Arrhenius Model using Aluminum Foil packaging. Aluminum foil packaging is a package composed of hermetic, flexible, and opaque metal so that it has high protection properties against water vapor, light, grease and gas. The determination of the shelf life of the ASLT method is carried out using parameters of environmental conditions that can accelerate the process of product quality degradation, namely by storing the product at several temperatures above normal storage temperature. The observations used in determining the shelf life of Gracilaria sp. using a sensory test and a water content test with storage for 35 days, at a temperature of 25oC and 35oC. The result of the Arrhenius model calculation, the appearance parameter is selected as the critical parameter because it has the lowest Activation Energy (Ea) in determining the shelf life of Gracilaria sp. which is packaged using PE plastic. The results show that the parameters used to determine the shelf life of the product are the taste parameters based on the order 1 reaction with the Arrhenius Plot Ln K = 0.026 – 1318.4 (1 / T) and Ea of 2619.66 Kj/mol. The shelf life of Nori Gracilaria sp. if stored at 25oC temperature is 89 hari 7 jam.

Abstrak : Bumbu Masam Keueng kering instan dibuat dari rempah-rempah seperti cabai merah, bawang merah, bawang putih, asam sunti, kunyit dan jahe. Semua bahan tersebut dicuci kemudianndihaluskan dengannmenggunakan blender dengan penambahan air sebanyak 280 ml selanjutnya bahan dikeringkan dalam oven pengering pada suhu 50oC dalam waktu 9 jam, bahantersebut kemudian dihaluskan kembali menggunakan blender dan dikemas kedalam kemasan alumium foil sebanyak 20 gr. Dalam industri pangan perlu dilakukan penentuan umur simpan sehingga konsumen dapat mengetahui kondisi produk. Umur simpan adalah rentang waktu suatu produk mulai dari proses produksi hingga produk mengalami penurunan mutu atau tidak layak untuk dikonsumsi. Penelitian ini dilaksanakan menggunakan metode akselerasi penentuan umur simpan semi empiris dengan model Arrhenius. Pendugaan umurnsimpan ditentukan melalui perubahan mutu Bumbu Masam keueng kering instan yang dikemas dengan kemasan aluminium foil berdasarkan faktor suhu (S) yang terdiri atas 3 taraf yaitu : S1 = suhu ruang (27-30oC), S2 = 40oC, dan S3 = 50oC dan lama penyimpanan (P) yangnterdiri atas 5 taraf yaitu : P1 = 0 hari, P2 = 14 hari, P3 = 28 hari, P4 = 42 hari, dan P5 = 56 hari. Setiap kemasan sampel (20g) yang dipakai dianalisis sebanyak 2 kali ulangan. Umur simpan masam keueng berdasarkan parameter kritis kadar air jika disimpannpada suhunruang (27-30oC) akan bertahannselama 558 hari, padansuhu 40oC akan bertahan selama 384 hari, dan pada suhu 50oC akan bertahan selama 271 hari.Abstract : Instant dry Masam Keueng seasoning is made of spices such as red chili pepper, garlic, and red onion, sunti acid, turmeric and ginger. All of the ingredients are cleaned and mashed up with blender by adding 280 ml of water, then dried in an oven at 50oC during nine hours, after that re-mashed up in a blender and packed in an aluminum foil packaging for 20gr. In a food industry the shelf life determination is needed so that the consumer can know the condition of the product. Shelf life is a time span of a product from thenbeginning ofnthe production until encounter a quality degradation of unfeasible for consumption. This study is conducted with semi empirical shelf life estimation acceleration method and Arrhenius equation. Shelf life estimation is determined by the quality degradation of instant dry Masam keueng seasoning that is been packaged with aluminum foil packaging based on the temperature factor (S) which consists of three levels specifically: S1 = room temperature (27-30oC), S2 = 40oC. and S3 = 50oC, along with storage time (P) which consists of 5 levels specifically: P1 = 0 day, P2 = 14 days, P3 = 28 days, P4 = 42 days, and P5 = 56 days. Every sample packing (20g) used in analysis is two repetition as much. Thenshelf lifenof masam keueng seasoning basedoon the water content criticalnparameter at room temperature of 27-30oC will last for 558 days, at 40oC will last for 384 days, and at 50oC will last for 271 days.

A novel active bio-based pressure-sensitive adhesive incorporating cinnamon oil (Bio-PSA/CO) obtained from the mixture of natural rubber (NR), xyloglucan (XG), and cinnamon oil (CO) for food antimicrobial applications were successfully developed by using a two-roll mill mixer. The effect of the main process factors (i.e., nip gap and mastication time) and XG content on the adhesion properties of the obtained PSA were investigated with different coated substrates including kraft paper, nylon film, polypropylene (PP) film, and aluminum foil (Al). The results suggested that the developed NR-PSA/CO could be applied well to all types of substrate materials. Peel strength and shear strength of the NR-PSA/CO with all substrate types were in the ranges of ~0.03 × 102–5.64 × 102 N/m and ~0.24 × 104–9.50 × 104 N/m2, respectively. The proper processed condition of the NR-PSA/CO was represented with a nip gap of 2 mm and a mastication time of 15 min. An increase in XG content up to 40–60 phr can improve the adhesion properties of the adhesive. The resulting material could be used as an active sticky patch to extend the shelf-life of food in a closed packaging system. The shelf-life of the food samples (banana cupcake) could be extended from 4 to 9 days with NR-PSA/CO patch.

This paper reports on the chemical compounds in arabica coffee beans with a high Specialty Coffee Association (SCA) cupping score, especially those in specialty coffee beans. We investigated the relationship between the chemical compounds and cupping scores by considering 16 types of Coffea arabica (arabica coffee) beans from Guatemala (SCA cupping score of 76.5–89.0 points). Non-targeted gas chromatography-mass spectrometry-based chemometric profiling indicated that specialty beans with a high cupping score contained considerable amounts of methyl-esterified compounds (MECs), including 3-methylbutanoic acid methyl ester (3-MBM), and other fatty acid methyl esters. The effect of MECs on flavor quality was verified by spiking the coffee brew with 3-MBM, which was the top-ranked component, as obtained through a regression model associated with cupping scores. Notably, 3-MBM was responsible for the fresh-fruity aroma and cleanness of the coffee brew. Although cleanness is a significant factor for specialty beans, the identification of compounds that contribute to cleanness has not been reported in previous research. The chemometric profiling approach coupled with spiking test validation will improve the identification and characterization of 3-MBM commonly found in arabica specialty beans. Therefore, 3-MBM, either alone or together with MECs, can be used as a marker in coffee production.

Specialty arabica coffee productivity could be improved by land extensification, optimizing the use of family labor, increase cost of organic and chemicals fertilizer, land use (intercropping and/or multistrata), increase in the price of parchment, increase in premium coffee prices, increase in liquidity of financial of household farmer, an increase in the practice of coffee pruning, and control of coffee berry borer (CBB). The application of good agriculture practices (GAPs) can increase the quality of the coffee produced in the Simalungun highlands. Increased productivity and quality is very prospective in the LED based on specialty coffee, mainly farmers' net income and local employment indicator. As the acceleration factors to increase productivity and quality of specialty arabica coffee is necessary: (1) re-mapping the areas of unique production, including the revision of Kepmenhut 44/2005; and (2) introduce and implementation of selected development programs at the farm and the regional level. Specialty arabica coffee contributed by 3.27%; 5.99%; and 13.17o% in the regional income of Simalungun District, agriculture sector, and estate crop subsector, respectively. Base on indicators of absorption of local labor, specialty arabica coffee is able to contribute about 8.29,%; 14,47%; and 24,86%o in the total workforce, agriculture sector, and estates crop subsector. Specialty arabica coffee farm able to give a US$2.05 per capita per day, so it is able to reduce the poverty level in the rural region. It is recommended that the Simalungun local government adopt the model of LED specialty arabica coffee commodity-based.

Aceh noodle seasoning was made from red chili, red onion, garlic, cardamom, turmeric, ginger, cumin, candlenut, coriander and pepper. All ingredients were mashed and then sauteed in a frying pan with the addition of cooking oil. In the food industry it is necessary to determine the shelf life so the consumers know the quality of the product. Shelf life is the periode of a product from the production process until the product has decreased in quality or is not suitable to consumption. This research was conducted using a semi-empirical accelerated shelf-life testing method with the Arrhenius equation. The estimation of shelf life was determined through the quality change of Aceh noodle seasoning which packed with aluminum foil packaging and stored based on temperature factor (room temperature, 40o C, and 50o C). Each sample was analyzed of thiobarbituric acid test, flavour and descriptif test in duplicate. The results show that Aceh noodle seasoning shelf life based on the critical parameters  stored at room temperature (27-30oC) was 71 days, at 40oC was 49 days, and at 50oC was 35 days.

Manggis merupakan salah satu buah yang memiliki umur simpan yang relatif singkat, setelah itu manggis akan menjadi busuk dan tidak layak lagi bila di simpan di ruangan, Oleh karena itu perlu dilakukan pengemasan dan penyimpanan pada suhu dingin untuk mempertahankan masa simpan buah manggis. Penelitian ini bertujuan untuk melihat pengaruh kemasan plastik dan suhu penyimpanan terhadap masa simpan buah manggis.Abstract. Is one of the commodities fruits that have economic value and much-loved community. Mangosteen is a fruit that has a relatively short shelf life, after that mangosteen will be rotten and unfit when stored in the room, therefore it is necessary for packaging and storage at cold temperatures to preserve the shelf life of the mangosteen fruit. This study aims to look at the effect of plastic packaging and storage temperature on the shelf life of the mangosteen fruit.

Specialty coffee is generally found in areas with an altitude around 1000 meters above sea level (m a.s.l.) and is known to have a different distinctive flavor. One of the coffee plantations in South Sulawesi that has the potential to upgrade its status as a specialty coffee is the Sinjai regency. The sensory quality and chemical characteristics are the most important component of specialty coffee. The purpose of the study was to evaluate the chemical compounds and sensory quality in Manipi coffee beans in South Sulawesi, which has the potential to be classified as specialty coffee. The coffee cherries were collected from two locations based on different altitudes namely MA1 = 1200 m a.s.l. and MA2 = 1400 m a.s.l. The coffee cherries directly processed the wet method referring to Enrekang Arabica as a reference sample EA1 = 1200 m a.s.l. and EA2 = 1400 m a.s.l. The results showed that the chemical content and quality of sensory in Manipi Arabica coffee beans were affected by altitude. MA2 had the highest protein content (13.26%), lipid (7.67%), and caffeine (1.42%), whereas green arabica coffee beans with the highest carbohydrate content was MA1 (23.38%). The Enrekang Arabica were similar in terms of Manipi Arabica coffee beans had the highest protein, lipid, and caffeine content at an altitude of 1400 m a.s.l. respectively (12.41%), (10.73%), and (1.32%). The sensory quality of MA1 is 85.75, relatively similar to MA2 is 85.25. The Manipi Arabica coffee beans showed a specific flavor, namely brown sugar and vanilla notes from both altitudes. It had the potential to be developed into specialty coffee with a cup test score > 80.
