On the basis of the conducted researches on factors of formation of consumer properties of emulsion products, recipes and technology of low-calorie emulsion sauces have been developed. On the basis carried out of the studies the factors of the formation of consumer properties of emulsion products of special purpose, recipes and technology for obtaining low-calorie emulsion sauces were developed. The expediency and effectiveness of the use of deodorized refined vegetable oils of JSC "Shymkentmai" were substantiated. An organoleptic evaluation of the experimental emulsion products were carried out in comparison with the traditional ones, which were evaluated according to the following parameters: appearance, consistency, odor and taste. It has been established that a of fat content 35% emulsion product on the basis of sunflower oil produced by JSC «Shymkentmai» with a plant additive were characterized by a higher value of the total quality index due to the delicate taste and absence of foreign flavors. It is revealed that the calorie content of the new emulsion product is significantly reduced by reducing the prescription amount of vegetable oil, while maintaining high organoleptic parameters. Low amounts of protein in the formulations of the new emulsion product should be considered as a positive moment, as emulsion product is a sauce that is served to the main dish, including meat, fish and poultry. Key words: emulsion product, functionality, sunflower oil, consumer value.

The article is devoted to the issues of placing seed production in the conditions of world export of vegetable oils. In 2019, the volume of Russian exports of sunflower oil exceeded 3 million tons for a total of $ 2,2 billion, which is about 30% of the vegetable oil produced in the country. In Russia, the main oilseeds are sunflower, rapeseed, and soy. Less common crops include oilseed flax, ginger, mustard, and safflower. It is stated that in 2001–2019, the acreage of all types of oilseeds in the country increased by more than 2 times, and the gross harvest – by 3,3 times, while the yield increased by 1,4 times.

The growth in the production of vegetable oils in recent years has created an opportunity to increase their exports. Exports in 2020 increased in all major groups of goods that Russia supplies abroad: grain, fat and oil, meat and dairy products, as well as food and processing industry products. Foreign supplies of fat and oil products increased by 12%, to 8.1 million tons, in physical terms and by 22%, to $ 5 billion, in monetary terms. The growth was provided primarily by the export of sunflower oil, of which 3.7 million tons (+ 19%) were shipped for $ 2.8 billion (+ 28%). Sales were particularly strong in the first half of 2020 after a record sunflower harvest in 2019. In 2020, foreign exchange earnings from the export of sunflower and rapeseed oils could have been higher, if not for the restrictive measures taken by the government. Foreign exchange earnings from the export of vegetable oils from Russia can be significantly increased by reducing the sale of oilseeds. At the same time, additional jobs can be created in Russia, and most importantly, the most valuable by-product (meal) will remain to ensure livestock breeding in the country. This requires the modernization of the material and technical base of the processing industry and the restoration of domestic seed production of oilseeds.

Pure vegetable oils have the greatest promise for alternative fuels for internal combustion engines beside the depletion of conventional petroleum resources. Among various possible options, pure vegetable oils present promising of greener air substitutes for fossil fuels. Pure vegetable oils, due to the agricultural origin, liquidity, ready availability, renewability, biodegradability are able to reduce the CO2 emissions in the atmosphere. Also, in Vietnam, pure vegetable oils such as soybean oil (SoO100), coconut oil (CO100) and sunflower oil (SuO100) are available. The paper presents the results of using heated pure vegetable oils for diesel engine D243 with power of 80 hp (58.88) kW. The results of determining the power (Ne), specific fuel consumption (SFC) and efficiency (n) are used to evaluate the performance of engine. The results show that, the engine power (Ne) is 10%-15% lower, the SFC of engine D243 using pure vegetable oils is 3%-5% higher and the η is 2.5%-6.2% lower compared to diesel oil (DO). Among the pure vegetable oils, the best performance results for D243 diesel engine are obtained from heated pure sunflower oil up to 135oC.

Relationship between polymerised triacylglycerols formation and tocopherols degradation was studied during heating of four commercially accessible vegetable oils (rapeseed oil, classical sunflower oil, soybean oil and olive oil) on the heating plate with temperature 180°C. The content of polymerised triacylglycerols 6% (i.e. half of maximum acceptable content) was achieved after 5.3, 4.2, 4.1, and 2.6 hours of heating for olive oil, soybean oil, rapeseed oil and sunflower oil, respectively, while decrease in content of total tocopherols to 50% of the original content was achieved after 3.4, 1.6, 1.3, and 0.5 hours of heating for soybean oil, rapeseed oil, sunflower oil and olive oil, respectively. Because of the high degradation rate of tocopherols, decrease in content of total tocopherols to 50% of the original content was achieved at content of polymerised triacylglycerols 0.6%, 1.9%, 2.8% and 4.9% for olive oil, rapeseed oil, sunflower oil and soybean oil, respectively, i.e. markedly previous to the frying oil should be replaced.

Abstract Objective Good quality microscopy is critical for accurate detection and confirmation of malaria parasite infections. Microscopy relies on the skills of technicians to prepare and read slides, high quality reagents, and a good program of internal and external quality control (EQA), which are lacking in most malaria endemic settings. This study was undertaken between January 2016 and December 2018 to pilot an EQA of microscopy for improved diagnosis of malaria and patient care in Tanzanian Military health facilities. Results Of all blood smears crosschecked (n = 4000) at baseline, only 38.5% were incorrectly diagnosed by laboratory staff with false positive and negative rates of 46.7% and 16.4%, respectively. During the implementation of EQA, false positive and negative results decreased due to increased quality index of slide preparation and reading through supportive supervision, and retraining of laboratory personnel. There was a gradual increase of quarterly and annual total quality index for all laboratories, from 60% in 2016 to 78% in 2017 and 90% in 2018. The mean proficiency testing performance scores also increased from 75% in 2016 to 82% in 2017 and to 90% in 2018. Poor blood smear preparation and staining contributed to high false positive and negative rates while EQA helped in improvement of diagnostics.
