Abstract: Strenuous physical activity can increase the activity of enzymes AST (aspartate aminotransaminase) and ALT (alanine aminotransaminase) in the blood as a sign of hepatic dysfunction caused by oxidative stress as a result. Excessive free radicals that damage macromolecules in cells. The supplementation of black soybean (Glycine max L) contains anthocyanin as an antioxidant is expected to reduce the formation of free radicals thus the activity of liver enzymes and the levels of SOD enzymes as intracellular antioxidant can be maintained. The purpose of this study was to determine the effect of using extracts of black soybean (Glycine max L) on the activity of liver enzymes (AST-ALT) and the antioxidant superoxide dismutase (SOD) of white rats that were given a maximum of physical activity. The research was control group post test design in vivo that used black soya extract treatment given to white rats (Rattus norvegicus) Wistar strain given maximum physical activity. The results indicated black soybean extract 40% was the most powerful retaining the activity of liver enzymes and blood levels of antioxidants SOD. The conclusion is there is an effect of black soybean extract against the activity of liver enzymes (AST-ALT) in rats given maximal activity, whereas SOD enzymes can inhibit the decline of SOD enzyme level to 37.8% but statistically there is no significant influence.Keywords: AST-ALT enzymes; antioxidants SOD; Soybean black; Physical activity maximum.

Black soybean (Glycine max (L.) Merr.) is a plant that is widely planted and consumed in Indonesia. In addition, black soybean has unique content of isoflavones, such as daidzein, which is one of the active compounds that have the effect of fighting free radicals and can inhibit the aging process. The purpose of this study is to analyze the antioxidant potency possessed by black soybean extract (BSE) and daidzeinin inhibiting aging of the skin. The method used is a colorimetric test. The type of antioxidant test used is H2O2 scavenging and inhibiting the activity of the hyaluronidase enzyme for antiaging. BSE has better effectiveness of H2O2 scavenging (IC50: 286.24±11.16 (µg/mL)) than daidzein compound (IC50: 366.16±2.54 (µg/mL)). In the inhibition of hyaluronidase enzyme, the daidzein has more effective activities (IC50: 95.80±3.98 (µg/mL)) compared to BSE (IC50: 152.56±13.98 (µg/mL)). The antioxidant and anti-aging activities possessed by BSE make it possible to be used as a cosmetic ingredient for skin aging therapy.

Background: Skin aging occurs along with age. Genetic, nutrients, hormones, and sun exposure can affect directly and indirectly the structure of the skin. These things will induce an increase in free radicals which disrupts one of the most important enzymes in the extracellular matrix which is elastase enzyme. High enzyme synthesis will cause skin wrinkle. Free radicals can be inhibited by the presence of antioxidants. The plant contains natural phytochemical compounds which act as antioxidants and anti aging. Black soybeans are rich in daidzein compound, which protect against free radicals and prevent premature aging.Objective: This research evaluates the antioxidant and antiaging potential of Black Soybean (Glycine max L.) extract and its compound, daidzein.Methods: Analysis of antioxidants from black soybean extract and daidzein were carried out using ABTS scavenging activity assay. The antiaging assay was carried out through inhibition of elastase enzyme.Results: Black soybean extract had lower IC50 value of ABTS scavenging activity around 77.39±4.05 μg/ml better than daidzein with IC50 of 83.34±3.89 μg/ml. The results of elastase inhibition activity assay showed that daidzein compound has a lower IC50 value, 57.35±5.64 μg/ml compared to black soybean extract with IC50 value, 93.36±6.39 μg/ml.Conclusion: Black soybean extract had higher antioxidant. Daidzein had better elastase inhibition activity compared to black soybean extract.

Soybean (Glycine max (L) Merr) is needed as an alternative diversification in order to increase protein consumption. Soybean can be processed into variety of foods and drinks. The most popular drink from soybean is soya milk which is made from soybean extract yielded from the addition of water. The amount of water added determine the quality of soya milk due to its effect on the chemical and physical properties of soya milk. This research was intended to find out the proper ratio of soybean and water in the processing of soya milk to yield the best quality. A completely randomized design was used with eight treatments of soybean and water ratio as follows, ratio of 1 : 6, ratio of 1 : 8, ratio of 1 : 10, ratio of 1 : 12, ratio of 1 : 14, ratio of 1 : 16, ratio of 1 : 18 and ratio of 1 : 20. Result showed the soybean and water ratio 1 : 10 in the processing of soya milk yielded milk having good quality according to its chemical with protein content of 2.53%, fat of 1.20%, sugar total of 1.60%, pH of 7.1, and organoleptic characteristies of both somewhat sweet taste and viscous texture.

Abstract High blood cholesterol is often called hypercholesterolemia is a risk factor for the emergence of pathological conditions such as heart and blood vessel disease. Hypercholesterolemia has an important role in the occurrence of damage to the endothelial cells is mainly caused by oxidized LDL. Oxidation of LDL triggers the formation of TNF - ?. Leaves messengers that allegedly contains flavonoids can improve the situation of hypercholesterolemia through the barriers specifically the expression of TNF - ? increased due to hypercholesterolemia. Plants messengers known to contain alkaloids, flavonoids, tannins, saponins, polyphenols, calcium oxalate, fats, and essential oil. Flavonoids which has the ability to bind the atom to form free radicals not to excess free radicals, thereby inhibiting the oxidative modification of LDL become ox-LDL so it will not be formed atherosclerosis. This study uses the Randomize pattern Pre and Post Test Control Group Design, using white rats (Rattusnovergicus) with Wistar strain aged 3-4 months, weighing 175-200 grams. Divided into four groups: Group I as a control with placebo, Group II treatment using extracts of ethanol leaves a messenger at a concentration of 10%, Group III treatments using extracts of ethanol leaves a messenger at a concentration of 20%, Group IV is to use the extract ethanol leaves errand at a concentration of 30%. It can be concluded at 4 dose group 30% messengers leaf extract significantly different, p <0.05, so it can be said that the provision of effective messengers extract at a dose of 30%.
