The aim of this experiment was to evaluate the effect of different fattening systems from pasture to concentrate and temperament on animal welfare (AW) and meat quality (MQ). Eighty-four Hereford steers were randomly assigned to the following groups: T1, pasture (4% of animal live weight: LW); T2, pasture (3% LW) plus concentrate (0.6% LW); T3, pasture (3% LW) plus concentrate (1.2% LW); T4, an ad libitum concentrate treatment. Temperament was assessed by three individual tests: crush score, flight time, and exit speed, building a multicriterial temperament index (TIndex). The flight zone was also registered for each treatment. AW was assessed through the integration of indicators of productivity, physiology, and behavior, as well as by monitoring the health status within each treatment. Shear force was registered for MQ. Differences in average daily gain were due to the different energetic composition of the diets (T4 > T3 > T2 > T1) and were not attributable to animal welfare problems. Animals from T4 had the higher average daily gain (ADG) but welfare was negatively affected, being evident through physiological indicators, the restriction or deprivation of relevant behaviors, diet-related diseases, and mortality. T1, T2, and T3 did not appear to compromise animal welfare. However, strict preventive measures and monitoring should be taken during the habituation process and when using any new diet that includes concentrate, because of possible dietary diseases. Shear force values were lower in T1. None of the animals in our experiment were excitable or aggressive, but there was a positive response to handling in all treatments. In addition, regardless of diet, calmer animals had higher average daily gain and lower shear force values; thus, temperament appears to have a significant influence on productivity and meat quality.

The degree to which growth patterns are modified after a period of food restriction affects the compositional changes of the carcasses(Carstens et al., 1992), furthermore, the growth rate has a direct effect on the physical properties of meat (Fishell et al., 1985). The objective of this experiment was to evaluate the effects of a severe food restriction at a early stage of maturity on the slaughter characteristics and meat quality of Belgian Blue bulls.Twelve Belgian Blue bulls (dual purpose type) weighing 233 kg were offered two different planes of nutrition during the growing period. Six bulls (Group-) received a restricted diet so that their average daily gain was 0.34 kg/d (Group+) during 202 days. By contrast six other bulls were given a more conventional growing diet and their average daily gain was 1.13 kg/d. Both Groups were fattened with similar diet and slaughtered when the live weight was close to 600 kg. Carcass weight was measured and killing-out proportion calculated, the composition of the carcass was estimated after dissection of ribs 7, 8, 9 removed 48 h post-mortem.

This study aimed to characterise progeny of sires representing major families in the Poll Nellore breed. Fourteen Poll Nellore sires, two Angus sires and one Brahman sire were mated by AI to ~400 multiparous Poll Nellore dams. Calves were raised and stocked on pasture in central Brazil until reaching ~18 months of age, then fed a sugarcane bagasse-based diet on an ad libitum basis until reaching market weight and finish (average 23 months). There were 236 Poll Nellore (N), 38 Angus × Poll Nellore (AN) and 31 Brahman × Poll Nellore (BN) calves born in total. The weaning and 423-day weight weights, and growth rates and pre- and post-weaning were greater (P < 0.05) in males than in female calves, and were influenced by breed and by sire within the N animals. The weaning weights were higher (P < 0.05) in AN and BN than in N calves. The 423-day weight weights were greater (P < 0.05) in AN calves, followed by BN, with straightbred N being lightest. Feedlot average daily gain was unaffected (P > 0.05) by sex or by sire within N, but was lowest (P < 0.05) in N cattle, and highest in AN and BN animals, which did not differ (P > 0.05). Heifers reached the end of the study with lower bodyweight (BW) and dressing percentage than steers, resulting in lower carcass weights, smaller longissimus muscle areas (LMA), but greater 12th to 13th rib backfat (BF) and similar marbling score and mean shear force. However, the proportion of carcasses grading Choice or Prime was numerically greater in heifers than in steers (23.6% vs 9.8%). AN cattle reached greater harvest weights than BN, and those were heavier than N cattle (P < 0.001). However, dressing percentages were lowest in AN animals, so that there was no significant difference in carcass weight between AN and BN cattle. AN carcasses also had greater LMA, BF and marbling scores than the N carcasses. The proportion of carcasses grading Choice or Prime was numerically greater in AN cattle than in the BN and N groups (25.9%, 11.8% and 15.9%, respectively). Steaks from AN calves were more tender than N steaks, with the BN steaks being intermediate. There was significant variation among N sires for final BW, dressing percentage, carcass weight, LMA and marbling score, but not for BF or mean shear force. The percentages of carcasses of N cattle grading Choice or Prime ranged from 0% to 61.5%. Three N sires produced progeny with greater than 40% of carcasses grading Choice or above (Berílio OB, Furador OB, and Litoral OB). Likewise, three N sires (Blitz OB, Furador OB and Sossego OB) had progeny with 67%, 62% and 75%, respectively, of steaks classified as tender. This study confirmed that Zebu cattle have inferior carcass and meat quality relative to AN crossbreds under tropical conditions, however there is substantial variation within the N breed for these traits, and several sires have a proportion of their progeny comparable in terms of meat tenderness to those of Angus sires.

The effects of nutritional management regimen and breed on growth performance, carcass attributes, and meat quality were evaluated in 68 British (BRIT) and Continental (CONT) crossbred steers, managed on one of three nutritional regimens: (1) ad libitum access to a 77% corn diet (ALGRAIN), (2) limit feeding initially of the 77% corn diet, followed by ad libitum access to the 77% corn diet (LFGRAIN), and (3) limit feeding initially of a 90% haylage diet, followed by ad libitum access to the 77% corn diet (LFHAYL). Nutritional regimen by breed interactions (P<0.02) were present for average daily gain, dry matter intake (DMI), gain to feed, and shear force. LFHAYL regimen decreased gains to a greater extent for BRIT steers than CONT steers managed on ALGRAIN or LFGRAIN. Feed intakes were similar across nutritional regimens for CONT steers, while DMI was depressed in BRIT on LFHAYL as compared with steers started on ALGRAIN or LFGRAIN. Gain to feed was greater in BRIT cattle on LFGRAIN vs. ALGRAIN, while gain to feed was similar in CONT started on grain (ALGRAIN, LFGRAIN). Shear force was lower for beef from LFHAYL BRIT vs. beef from BRIT on ALGRAIN or LFGRAIN, while the converse was true for CONT. Limit feeding of a high-energy diet may be appropriate for cattle of British background to reduce feed input costs, while ensuring tenderness.

Entire male (EM) pigs (152; ∼30 kg body weight) were used to examine immunocastration using Improvest and feeding ractopamine on growth performance, carcass and meat quality, and fatty acid composition. Timing for administering second dose of Improvest compared dosing at 4 and 8 wk pre-slaughter. A factorial arrangement evaluated two genotypes [Large Whites and Duroc crossbreds (Durocs)] by five management regimens (EM fed control diet, EM fed ractopamine, second dose Improvest 4 wk pre-slaughter, second dose Improvest 8 wk pre-slaughter, second dose Improvest 4 wk pre-slaughter plus ractopamine). Average daily gain and gain to feed (G:F) were generally greater (P ≤ 0.01) in Durocs. Immunocastration increased (P < 0.01) dry matter intake (DMI); feeding ractopamine decreased (P < 0.02) DMI and increased (P < 0.03) G:F. Immunocastration decreased (P < 0.04) carcass and lean yields; feeding ractopamine increased (P < 0.04) carcass weights, lean yield, muscling, and longissimus shear force while decreasing (P < 0.01) backfats. Immunocastration did not affect loin pH, color, drip loss, and shear force. Timing for second Improvest dose did not affect most growth performance, carcass, and meat quality traits except for greater (P < 0.02) backfats when administering dose 8 wk pre-slaughter. Effects of immunocastration and (or) feeding ractopamine were relatively consistent in both genotypes evaluated.

The objective of this experiment was to evaluate the effect of two different pasture-based finishing strategies and lairage time on steers welfare in Uruguayan conditions. Sixty Hereford (H) and Braford (B) steers were assigned to two different diets for finishing purposes: (D1) native pasture plus corn grain (1% of live weight) (H n = 15, B n = 15) and (D2) high-quality pasture (H n = 15, B n = 15). The average daily gain was registered every 14 days, and temperaments were individually assessed one week before slaughter by three individual tests: crush score, flight time and exit speed, building a multicriterial temperament index (TIndex). Animals were slaughtered the same day in two groups (50% from D1 and 50% from D2 in each group) after traveling for 3.5 h and staying 15 (long lairage) and 3 h (short lairage) in the lairage pens, respectively. The behaviors were observed during lairage, and physiological indicators were used to assess stress at the farm after transport, after lairage and at slaughter. Bruises incidence and final pH were registered at the abattoir as a means of assessing the overall animal welfare. Calmer animals had higher average daily gains with no differences either between diets or between breeds. Calmer animals also had a lower stress response during all preslaughter stages, regardless of the time in lairage. Transport did not imply psychological stress (cortisol) for any slaughter group, but physical stress was evident after transport in both groups through NEFA and CPK increases. Bruise incidences did not differ between lairage groups. The short lairage group did not have enough time to cope with the environment before slaughter, with the consequent deleterious effects on the carcass pH. Animals from the long lairage group had a higher metabolic response shown through NEFA values, but they had enough time to rest and recover overnight, reaching final pH values lower than 5.8, considered the upper limit of the normal range. According to this experiment, with pasture-based animals without fasting on the farm and after 3.5 h of transportation, a resting period of 15 h in lairage should be better than a 3-h one.

Thirty-two double-muscled Belgian White-blue bulls, within a liveweight range of 542 (± 37) to 722 (± 31) kg, daily received 0 or 60 μg cimaterol kg−1 liveweight in a corn silage diet for 136 (± 29) d. Cimaterol slightly improved average daily gain from 1.28 to 1.38 kg (P > 0.05). Cold carcass weight and dressing were increased by cimaterol from 497.0 to 514.6 kg (P < 0.05) and from 71.0 to 72.9% (P < 0.001), respectively. Even in extremely meaty animals, cimaterol exerted a significant repartitioning effect towards more meat and less fat, both in the carcass and in the longissimus thoracis muscle. Cimaterol increased the shear force value from 37.1 to 52.7 N (P < 0.001) but had no effect on other organoleptical traits. Key words: Cimaterol, double-muscled bulls, growth, carcass, meat quality

The study determined the production performance and meat quality of broilers using different kinds and levels of bio-organic supplements. Four hundred fifty broiler chicks were randomly distributed to fifteen dietary treatments. Five birds in each treatment were used for meat quality evaluation following a 3 x 5 factorial in Completely Randomized Design (CRD). No significant differences were observed in the production performance of broilers supplemented with different kinds of bio-organic fertilizers except average daily gain and final live weight. Broilers supplemented with higher levels of bio-organic supplements including antibiotic significantly affected the production performance except for average daily water intake and dressing percentage. Feed cost per kilogram of broiler produced, feed cost per average daily gain and return above feed, chicks and supplement costs were not significantly affected by the different kinds of bio-organic supplements but significantly affected by the different levels of bio-organic supplements. Meat quality was significantly affected by the different kinds of bioorganic supplements except for taste and overall acceptability but was not significantly affected by increasing the levels of bio-organic supplements including those broilers supplemented with antibiotics in the drinking water. Better production performance was observed on broilers supplemented with different kinds and levels of bio-organic supplements in the drinking water but did not affect the meat quality.

Yak, a unique bovine species on the Qinghai-Tibetan Plateau, has provided pastoralists with the basic materials of production and life for thousands of years. Existing literature showed that yak meat is of high nutritional value for humans whereas the growth performance is relatively low. As it has been demonstrated, lysine and methionine are the two key limiting amino acids in ruminants. Therefore, this study was conducted to investigate the effect of supplementary levels of rumen-protected lysine (RPL) and methionine (RPM) on growth performance, carcass traits, and meat quality in feedlot yaks. Thirty-two male yaks, with initial body weight (IBW) of 237.5 ± 13.99 kg were randomly assigned to four dietary treatments (n = 8), including control group (CON; basal diet without adding rumen-protected amino acid (RPAA)), low RPAA supplementation group (Group Low; basal diet supplemented with RPL (30.0 g/animal/day) and RPM (7.5 g/animal/day)), medium RPAA supplementation group (Group Medium; basal diet supplemented with RPL (50.0 g/animal/day) and RPM (12.5 g/animal/day)), and high RPAA supplementation group (Group High; basal diet supplemented with RPL (70.0 g/animal/day) and RPM (17.5 g/animal/day)). The average daily gain was increased linearly (p < 0.001) and quadratically (p < 0.01) while feed to gain ratio was decreased linearly (p < 0.001) and quadratically (p < 0.001) with the increasing RPAA supplementation, and the average daily gain was higher while feed to gain ratio was lower in RPAA than CON (p < 0.001). Meat color L* values and b* were decreased linearly (p < 0.01) with the increase of RPAA supplementation, and b* was lower in RPAA than CON (p < 0.05). Meat color a* value was increased linearly (p < 0.05) with the increasing RPAA supplementation, and a* was higher in RPAA than CON (p < 0.05). The 24 h drip loss and shear force were decreased quadratically (p < 0.01) with the increasing RPAA supplementation, and drip loss and shear force values were lower in RPAA than CON (p < 0.05). The glycine concentration in longissimus dorsi (LD) increased linearly (p < 0.05) with the increasing RPAA supplementation. These results demonstrated that both the growth performance and meat quality characteristics were improved in feedlot yaks as an effect of the dietary supplementation with RPL and RPM, and the medium supplementary level is recommended, since it showed the most promising results.

The most perspective genotype in our region is Red White-belted breed, which has high performance both under pure breeding and under crossing with other breeds. The results of complex evaluation of Red White-belted swine of the herd bred in SE "RF Zoryane" breeding farm are presented. It was revealed that animals of the farm comply with elite class and the first class. The main breeding boars used at the farm belong to such genealogical lines: Deviz, Division, Dantist, Debut, and Dobryak. In the structure of the herd, the most numerous was Dobryak line, which part was 58.8%, Division, Debut, Devis lines – 11.8% per line, Dantist line – 5.8%. The herd sows belong to 7 families: Drabowka, Dekada, Dyktsiya, Doina, Dylema, Delta, Dogma. Average prolificacy of the sows was 10.0 piglets. Litter weight at 60 days’ age was 181.0 kg, and live weight of piglet – 19.0 kg. The performance of sows as prolificacy increased by 0.6 head on average. The complex appraisal index for the herd was 104.1 points. The average daily gain of the replacement pigs was 570 g. The highest daily gain was from five to six months – 611.2 g, and the figure of compactness index characterized a certain elongation of animals, increasing meat traits. Further work with Red White-belted breed aims at preserving and expanding the breeding base and genealogical structure, as well as increasing the reproductive, fattening and meat traits.

AbstractA total of 384 piglets from a three-way cross Yorkshire ♂ × (Finnish Landrace ♂ × Dutch Landrace♀) ♀ in the live-weight range of 11 to 25 kg were used in a feeding trial. The effect of supplementary microbial phytase from Aspergillus niger var. Van Tieghem on performance (average daily gain (ADG), average daily food intake (ADFI) and food conversion ratio (FCR)) and apparent digestibility of total phosphorus (P), in comparison with a non-supplemented basal diet or a diet supplemented with one or two levels of monocalcium phosphate (MCP), were studied.The piglets were allotted to 12 blocks. Within each block, four experimental diets were offered ad libitum for a period of 4 weeks i.e. (1) basal diet; (2) basal diet + 1·0 g P, from MCP per kg diet; (3) basal diet + 1·9 g P, from MCP per kg diet; and (4) basal diet + 1450 phytase units (PTU) per kg diet. The diets, with added chromium III oxide as a marker, were cold pelleted without steam at a temperature not above 60°C to avoid a possible inactivation of the phytase. In all diets the ratio calcium: digestible P was intended to be constant.Adding 1450 PTU of Aspergillus niger phytase enhanced the apparent digestibility of P by proportionately 0·216 when compared with diet 1 and by proportionately 0·100 compared with diet 3. In addition, significantly higher ADG and ADFI and better FCR were noted in pigs receiving supplementary microbial phytase than in pigs on any other treatment. The content of digestible P of the diet with added phytase, however, zvas between the two levels of the diets with added MCP.
