Tendencies in food and feed industries deal with a permanent need to develop innovative products, tailored to consumer demands and, in the near future, to scarcity of food resources. Sustainable food production and food products as health and wellness promoters, and the use of alternative ingredients or by-products in designed thought food or feed formulations following circular economy principles, are hot topics that act as driving forces for innovation. This special issue offers a comprehensive forum for exchanging novel research ideas or empirical practices covering discussions from healthy foodstuffs enriched with functional ingredients, with special emphasis on those targets for populations with specific requirements, to consumer attitudes towards new ingredients and end products.

New trends in the cereal industry deal with a permanent need to develop new food products that are adjusted to consumer demands and, in the near future, the scarcity of food resources. Sustainable food products as health and wellness promoters can be developed redesigning traditional staple foods, using environmentally friendly ingredients (such as microalgae biomass or pulses) or by-products (e.g., tomato seeds) in accordance with the bioeconomy principles. These are topics that act as driving forces for innovation and will be discussed in the present special issue. Rheology always was the reference discipline to determine dough and bread properties. A routine analysis of cereal grains includes empirical rheology techniques that imply the use of well-known equipment in cereal industries (e.g., alveograph, mixograph, extensograph). Their parameters determine the blending of the grains and are crucial on the technical sheets that determine the use of flours. In addition, the structure of gluten-free cereal-based foods has proven to be a determinant for the appeal and strongly impacts consumers’ acceptance. Fundamental rheology has a relevant contribution to help overcome the technological challenges of working with gluten-free flours. These aspects will also be pointed out in order to provide a prospective view of the relevant developments to take place in the area of cereal technology.

The global trend is to minimize losses by using by-products from slaughterhouses as part of sustainable food production, both for human and animal consumption. Another growing trend is the development of pet feed with properties beneficial to the consumer's health. Another trend is the development of feeds with beneficial properties for the health of animals. Thus, the objective of this study was to use mechanically separated pork meat and by-products (trachea) to produce a pet snack containing the encapsulated probiotic yeast Saccharomyces boulardii. The experimental design followed in three main stages: 1) development of a pet pork snack (trachea snack); 2) microencapsulation of the probiotic and insertion in the pet snack; 3) Shelf life evaluation and palatability of the pet snack. S. boulardii was microencapsulated by extrusion technique and remained viable after 120 days of shelf life. The acceptability index of the probiotic pet snack was 77.8%.  We concluded that S. boulardii provides beneficial probiotics characteristics to pet snack whose composition has high levels of protein (57.50%). Thus, the novel pet product has a good appeal to the functional products market.

AbstractThis special issue presents the outcomes from “Designing sustainable and circular agricultural systems for the year 2100,” the joint scientific workshop of ISOFAR, the Thünen-Institute, and INRA-Morocco, which was held from November 14 to 16, 2019 in Marrakesh, Morocco. Nineteen scientists from a broad array of background and nationalities came together with the understanding that food security globally is at risk, especially in the post-2050 timeframe. Current concepts, strategies, measures, and scientific efforts carried out by governments, NGOs, businesses, and societies do not deliver satisfying solutions for how to sustainably produce enough healthy and affordable food to support the global population. With the economic and social impact of the Covid-19 pandemic in 2020, it became even more evident that food security is a challenge. This workshop took an innovative approach to addressing the challenges of future agriculture by considering sustainable, circular agricultural systems. Participants presented research results on algae-based food, edible insects, mushrooms, novel concepts for nutrient management, bioreactor-based farming, sustainable food culture, as well as sensor- and remote-controlled automatic food production. This special issue presents the papers contributed to the workshop and the results of the discussions.

The agricultural community has a challenge of increasing food production by more than 70% to meet demand from the global population increase by the mid-21st century. Sustainable food production involves the sustained availability of resources, such as water and energy, to agriculture. The key challenges to sustainable food production are population increase, increasing demands for food, climate change, and climate variability, decreasing per capita land and water resources. To discuss more details on (a) the challenges for sustainable food production and (b) mitigation options available, a special issue on “Water Management for Sustainable Food Production” was assembled. The special issue focused on issues such as irrigation using brackish water, virtual water trade, allocation of water resources, consequences of excess precipitation on crop yields, strategies to increase water productivity, rainwater harvesting, irrigation water management, deficit irrigation, and fertilization, environmental and socio-economic impacts, and irrigation water quality. Articles covered several water-related issues across the U.S., Asia, Middle-East, Africa, and Pakistan for sustainable food production. The articles in the special issue highlight the substantial impacts on agricultural production, water availability, and water quality in the face of increasing demands for food and energy.

With the growing insurrections in Syria in 2011, an exodus in large numbers have emerged. The turmoil and violence have caused mass migration to destinations both within the region and beyond. The current "refugee crisis" has escalated sharply and its impact is widening from neighbouring countries toward Europe. Today, the Syrian crisis is the major cause for an increase in displacement and the resultant dire humanitarian situation in the region. Since the conflict shows no signs of abating in the near future, there is a constant increase in the number of Syrians fleeing their homes. However, questions on the future impact of the Syrian crisis on the scope and scale of this human mobility are still to be answered. As the impact of the Syrian crisis on host countries increases, so does the demand for the analyses of the needs for development and protection in these countries. In this special issue, we aim to bring together a number of studies examining and discussing human mobility in relation to the Syrian crisis.

This article addresses three research questions: How does climate change impact food production? What are the governance challenges associated with managing such impacts? What are the conditions for future success in managing the impacts of climate change on food production? To answer these questions, the researcher undertook a document review and analysis to address these various aspects with a major focus on East Africa. The study finds that climate change affects food production largely through its physical impacts on precipitation and increased the frequency of extreme weather events. Within a context of weak governance; climate change further challenges governance institutional structures and mechanisms. The study concludes that specific aspects of the prevailing climate change governance regime require major reforms (particularly the role of the state, corporations and civil society) while other climate governance mechanisms need to be completely overhauled (for example through establishment of a new World Environment Organization).

AbstractWith the Convention on Biological Diversity conference (COP15), United Nations Climate Change Conference (COP26), and United Nations Food Systems Summit, 2021 is a pivotal year for transitioning towards sustainable food systems. Diversified farming systems are key to more sustainable food production. Here we present a global dataset documenting outcomes of diversified farming practices for biodiversity and yields compiled following best standards for systematic review of primary studies and specifically designed for use in meta-analysis. The dataset includes 4076 comparisons of biodiversity outcomes and 1214 of yield in diversified farming systems compared to one of two reference systems. It contains evidence from 48 countries of effects on species from 33 taxonomic orders (spanning insects, plants, birds, mammals, eukaryotes, annelids, fungi, and bacteria) of diversified farming systems producing annual or perennial crops across 12 commodity groups. The dataset presented provides a resource for researchers and practitioners to easily access information on where diversified farming systems effectively contribute to biodiversity and food production outcomes.

Abstract Population rise, climate change, soil degradation, water scarcity, and food security require efficient and sustainable food production. Aquaponics is a highly efficient way of farming and is becoming increasingly popular. However, large scale aquaponics still lack stability, standardization and proof of economical profitability. The EU-INAPRO project helps to overcome these limitations by introducing digitization, enhanced technology, and developing standardized modular scalable solutions and demonstrating the viability of large aquaponics. INAPRO is based on an innovation a double water recirculation system (DRAPS), one for fish, and the other one for crops. In DRAPS, optimum conditions can be set up individually for fish and crops to increase productivity of both. Moreover, the integration of digital technologies and data management in the aquaculture production and processing systems will enable full traceability and transparency in the processes, increasing consumers’ trust in aquaculture products. In this paper, the innovations and the digitization approach will be introduced and explained and the key benefits of the system will be emphasized.
