The consumption of food has a significant impact on the environment, individuals and public health. This study aims to investigate the integrative effects of consumers’ personal and situational factors on their attitude and purchase behavior of organic meat. The consumption of this product has been widely regarded as contributing towards sustainable food practices. The study was conducted in an emerging market economy, i.e., Vietnam. Data were collected using a customized and validated survey instrument from a sample of 609 organic meat consumers at four food outlets in Hanoi. The findings suggested that consumers’ concerns regarding the environment, health, food safety and their knowledge of organic food, all significantly impacted their attitude towards the purchase behavior of organic meat. Interestingly, their positive attitude did not necessarily translate into their actual purchase of organic meat. Additionally, food stores’ green marketing practices significantly enhanced consumers’ actual purchase behavior. Conversely, premium prices of organic meat were certainly a deterrent for the actual purchase of organic meat. The findings of this study have several important implications for organic food producers, retailers, policy makers and socio-environmental organizations that seek to develop intervention strategies aimed at increasing organic meat consumption in Vietnam.

Promoting sustainable food consumption contributes to the achievement of the United Nation’s Sustainable Development Goals. This study investigated the key determinants of consumer intention to purchase organic meat in an emerging market and a unique model was developed by incorporating environmental concern and guilt with the key components of the Theory of Planned Behavior. This model was then validated by obtaining data from a sample of 402 Vietnamese consumers at five food stores in Ho Chi Minh City, using a paper-based survey. The findings reveal that consumers who are concerned about the environment are likely to formulate favorable attitudes and downplay monetary barriers associated with organic food purchase. In addition, while attitudes and guilt about buying conventional meat have a positive effect on organic meat purchase intention, perceived monetary barriers significantly reduce the intention. These findings highlight both the rational and emotional aspects of organic food purchase intention and have important implications for key stakeholders and the encouragement of organic meat consumption.

Today's food industry is under great consumer attack. Consumer demands have served to increase the number of food products to 7,800; about 3,300–3,500 new products are introduced annually. Nearly all new products can be classified as convenience foods. With such a rapidly changing market, consumer confidence in the food industry has been lost and, because of confusion created, the consumer has become increasingly fearful of chemically contaminated foods. This fear is substantiated by increased public interest in so-called organic foods or organically-grown foods, proliferation of health food stores, and introduction of health food sections into supermarket chains. It is estimated that there are some 7 million organic food consumers, and that sales of natural foods (organic) will reach $500 million in 1972. Today only a limited number of organic farms and wholesalers of organic foods exist. The opportunity for fraud is great. A sign over an organic food section, or a label claiming “organic,” does not guarantee that the food was produced by organic methods. Since there is nothing unique about organic foods that differentiates them from products grown by conventional means, governmental agencies are reluctant to issue standards controlling movement of these products.

PurposeThe concept of green marketing has emerged as a panacea for reducing the negative impact of business activities on the environment. Many studies have investigated the impact of green marketing on green purchase behavior, sustainable competitive advantage, etc., without much being explored about how green marketing translates into firms' profitability, particularly among small and medium enterprises (SMEs) in emerging markets. This study, therefore, investigates the influence of green marketing on perceived SME profitability alongside the mediating effect of green purchase behaviour.Design/methodology/approachA quantitative research approach was adopted, where a cross-sectional survey design was employed to collect the data from 400 SME owners/managers in Ghana. Using Statistical Package for Social Science, the data were analysed through descriptive statistics, correlation and macro Process version 3.4.1.FindingsThe results reveal that the dimensions (environmental knowledge, environmental concern, green price, green advertising and green product) of green marketing distinctively have significant positive effect on perceived SME profitability as well as green purchase behaviour. Furthermore, green purchase behaviour significantly mediates the relationship between green marketing dimensions and perceived SME profitability such that the indirect effects are far greater than the direct effects.Practical implicationsSME managers should include the green marketing dimensions in their business plans and develop strategies to implement them in order to enhance green purchase behaviour of their products and services which will, in turn, lead to profitability.Originality/valueIn augmenting green marketing literature, this study provides an insight into how SMEs can leverage on the distinct dimensions of green marketing to influence green purchase behaviour and profitability in an emerging market context.

The purpose of the research isto examine relationship between Green Marketing Tools (GMT), Environmental Attitudes (EA), Religiosity and Green Purchase Behavior (GPB) and test Religiosity moderates between Environmental Attitudes (EA) and Green Purchase Behavior (GPB). This study employs samples using a questionnaire instrument. The result of the collected 268 questionnaires of respondents were processed using descriptive and quantitative analysis data using SEM (Strutural Equation Model) analysis techniques with Stata 13. The results  showed that millennial generation in shaping their engagement behavior on environmental issues is influenced by environmentally friendly advertisements, attributes or labels used on a product, then perceptions of environmentally friendly brands and trust in environmentally friendly advertisements, trust in compliance or environmentally friendly labels and brands that are on the products they know.The findings of this study suggest that individual factors in the form of religious and situational factors in the form of green marketing tools in the form of eco labels, eco brands, trusts or trust in eco labels and eco brands, and environmental advertising affect green behavioral.

Objectives: Global environmental challenges demand sustainable behaviours and policies to protect human and planetary health. We aimed to summarize the evidence about the factors related to Sustainable Food Consumption (SFC) behaviours of university students, and to propose an operational categorization of SFC behaviours.Methods: Seven databases were searched for observational studies evaluating Sustainable Food Consumption (SFC) among university students and that reported at least one behavioural outcome measure. Qualitative synthesis was conducted, and PRISMA guidelines for reporting were followed.Results: Out of 4,479 unique references identified, 40 studies were selected. All studies examined personal factors, while 11 out of 40 also measured social or situational factors. Except for food waste, females had higher levels of SFC behaviours, but situational factors moderated this association. Knowledge and attitudes showed mixed results. Overall, sustainable food consumers reported healthier lifestyles.Conclusions: Healthy lifestyle of sustainable food consumers suggests possible synergies between human health and sustainability in terms of motivations for food choice. Moderation effects of social and situational factors on personal factors reveal opportunities to design and examine the effects of choice architecture interventions.

The aim of the present study was (1) to investigate what consumers include within the concept of food sustainability and its link with sustainable consumption, by identifying meaningful consumer typologies from the concept of food sustainability and food choice factors framed by SDG 12, and (2) to know how different farm systems attributes affecting purchase behavior are associated with such typologies. Consumers from two Spanish regions (n = 403) answered a paper questionnaire to know their degree of knowledge of sustainability, and beliefs, behavior, attitudes and preferences towards food sustainability, and the importance given to product characteristics and shopping practices. A principal component analysis was conducted to identify groups with similar answers, to average some of the questions before the final analysis of variance, which includes demographic classes as fixed effects. A cluster analysis using the most representative questions identified two clusters. cluster 1 (68.4%) responded to more sustainability-related attributes, and cluster 2 (31.5%) presented a less-expanded concept of sustainability. The origin of the product and quality certification (local, organic) was important for food purchase practices. The place of residence and gender differences of the consumers were the most influential factors. In the conjoint study, regarding the purchase of Iberian pork, cluster 1 remained unwilling to sacrifice outdoor systems and local breed at the expense of the price, in the case of the Iberian pig production. The most important demographic differentiator was the region of residence of the consumer. In conclusion, consumers are not aware of the wider aspects included in the sustainability concept. Moreover, the concept of sustainability elicits different meanings to the segments of the consumers identified.

Alternative health practices have become increasingly popular in recent years. Many patients visit specific complementary practitioners, while others attempt to educate themselves, trusting advice from employees at local health food stores or the Internet. Thirty-two retail health food stores were surveyed on the nature of the information provided by their staff. A research assistant visited the stores and presented as the mother of a child in whom Crohn’s disease had been diagnosed. Seventy-two per cent (23 of 32) of store employees offered advice, such as to take nutritional and herbal supplements. Of the 23 stores where recommendations were made, 15 (65%) based their recommendation on a source of information. Fourteen of the 15 stores using information sources used the same reference book. This had a significant impact on the recommendations; the use of nutritional supplements was favoured. In conclusion, retail health food stores are not as inconsistent as hypothesized, although there are many variances in the types of supplements recommended for the same chronic disease.

Organic agriculture is a promising and increasingly demanded direction of “greening” agricultural activity, which has a great potential due to natural production technologies. Significant segments of organic products have been formed in the food markets of the developed countries; various institutional systems of the industry have been functioning for decades. Russian agribusiness is globally lagging behind in these matters, but the development of the economic environment has led to the objective necessity of adopting a law and a state standard that would define the requirements for the organic agriculture. Research on the prospects of the Russian food market in the global organic production system is becoming relevant. This work is a two-sided quantitative and qualitative approach to the study of existing production systems of organic food from the standpoint of the results and dynamics, on the one hand, and their organizational and economic structure, on the other. The findings and results are confirmed by the presented and systematized absolute and relative indicators of land areas certified for organic agriculture, the number of market entities, the consumption of organic food per capita and retail sales in the domestic markets. The qualitative characteristic of organic agriculture systems was reflected in constructing a set of schemes that clearly illustrate national features of the conduct methods, state regulation of production and turnover, research support, regulatory and supervisory support of the business under study. As a result, a comparative analysis of the leading world markets for organic food (USA, Germany, Canada and Austria) in comparison with the emerging market of Russia. The study is addressed to the global business community operating in the organic food market and to special research institutions.

ResumoObjetivou-se desenvolver e validar um instrumento adequado para avaliar o impacto de um programa piloto de intervenção no ambiente alimentar local para promoção da alimentação saudável em comércios de varejo de alimentos da Zona Noroeste em Santos/SP, região caracterizada como deserto alimentar. Foi realizada pesquisa formativa para validação do instrumento, incluindo reuniões de pesquisadores, varredura no território estudado para identificação dos comércios de alimentos, visitas a atores do canal de distribuição de alimentos, oficinas comunitárias com a comunidade local e entrevistas em profundidade com proprietários dos estabelecimentos para validação de conteúdo e validade aparente. Foi testada confiabilidade do instrumento por coeficiente de alfa de Cronbach. O desenvolvimento do questionário incluiu questões para avaliação da Identificação e Caracterização do Comércio; Parâmetros de Comercialização, incluindo importância de fatores para a inclusão de um novo alimento, frequência de aquisição de produtos, rentabilidade; e Escala de Fatores Psicossociais, incluindo expectativa em relação às vendas de alimentos saudáveis, expectativa em relação ao impacto, e autoeficácia em relação à comercialização de alimentos saudáveis. A validação permitiu revisão de todas as questões e alternativas de resposta do questionário, com alfa de Cronbach variante de 0,440 a 0,967 nas questões do instrumento final. Este resultado indica que o instrumento proposto foi capaz de identificar características relevantes do sistema de distribuição de alimentos á nível local e pode ser utilizado em estudos epidemiológicos para avaliação de políticas públicas territoriais elaboradas para aumento do acesso a alimentos saudáveis.Palavras-chave: Estudos de Validação; Saúde da População Urbana; Ambiente Alimentar AbstractThe objective was to develop and validate a culturally appropriate instrument to evaluate the impact of a pilot intervention program in the food environment to promote healthy eating in small food stores in an urban food desert. A formative research was carried out for the validation of the instrument, including meetings of researchers, visits to all the streets in the study's region to identify food stores, visits to food distribution system agents', community workshops with the local community and in-depth interviews with food store owners for content and apparent validity. Instrument reliability was tested by Cronbach alpha coefficient. The development of the instrument included questions to evaluate the Identification and Characterization of Store; Marketing Parameters (i.e. influencers for including new food itens and frequency of product acquisition and profitability); and Psychosocial Factors Scale (i.e. expectations regarding healthy food sales, expectations regarding impact of intervention, and self-efficacy in relation to the marketing of healthy foods). Validation process allowed a review of all questions and questions' responses, with Cronbach alpha between 0.440 to 0.967 in the final instrument questions. It can be concluded that the instrument was developed to identify relevant characteristics of the food distribution system and can be used in epidemiological studies and public policies to evaluate increase access to healthy foods.Key words:Validation Studies; Urban Health; Food Environment
