Antihypertensive peptides (AHTPs) are a group of small peptides with the main role to block key enzymes or receptors in the angiotensin genesis pathway. A great number of AHTPs have been isolated or digested from natural food resources; however, comprehensive studies on comparisons of AHTPs in various species from the perspective of big data are rare. Here, we established a simplified local AHTP database, and performed in situ mapping for high throughput identification of AHTPs with high antihypertensive activity from high-quality whole proteome datasets of 18 fish species. In the 35 identified AHTPs with reported high activity, we observed that Gly-Leu-Pro, Leu-Pro-Gly, and Val-Ser-Val are the major components of fish proteins, and AHTP hit numbers in various species demonstrated a similar distributing pattern. Interestingly, Atlantic salmon (Salmo salar) is in possession of far more abundant AHTPs compared with other fish species. In addition, collagen subunit protein is the largest group with more matching AHTPs. Further exploration of two collagen subunits (col4a5 and col8a1) in more fish species suggested that the hit pattern of these conserved proteins among teleost is almost the same, and their phylogeny is consistent with the evolution of these fish species. In summary, our present study provides basic information for the relationship of AHTPs with fish proteins, which sheds light on rapid discovery of marine drugs or food additives from fish protein hydrolysates to alleviate hypertension.

A high-throughput method was employed to effectively obtain the cross-scale relationship of elastic copper alloys. Firstly, a Cu–Ni–Ti–Cu25Al–Cu35Sn diffusion multiple was prepared and heat-treated under a specified condition to form a series of diffusion layers with the concentration gradient at the multielement metal interface. Then, the compositions, elastic moduli, and hardness of the Cu–Ni–Al and Cu–Ti–Al ternary copper alloys were tested. Meanwhile, the solid phase sequences in the diffusion zones were predicted by the CALPHAD (CALculation of PHAse Diagram) method. Through these experimental and calculated results, the composition–phase–property relations of the Cu–Ni–Al and Cu–Ti–Al ternary systems were established.

The article presents a study of the process of isolation of natural blue pigment – phycocyanin from the biomass of blue-green algae Spirulina platensis by water extraction, followed using its water solution as a natural food colorant in the production of milk chocolate. Recently, modern food enterprises are pursuing their policy towards expanding the range of products, which is closely related to the increasing needs of the population in food of a new kind. One of the solutions to this problem is the use of food additives of both natural and synthetic origin. Among the similar components widespread found dyes synthetic origin, which have high coverage rates and relatively low cost. However, many of the permitted in our country synthetic food dyes are banned in several developed countries as potentially dangerous to health. Synthetic dyes of red, yellow and green color have many natural analogues – carotenoids, lutein, chlorophyll, etc., except for the blue dye, the analogue of which is only anthocyanins, which are unstable depending on the pH conditions. In this article were identified phycobiliproteins and chlorophyll a in a water extract of spirulina. The mass concentration of phycobiliproteins and chlorophyll a was determined by spectrophotometric method before and after the addition of ammonium sulfate. A comparative analysis of the effect of fractionation (salting out) on the degree of purification of the phycocyanin solution. Presented and described the technological scheme of extraction of phycocyanin which allows to use it in food technologies as an extract or a dry powder. Established the concentration of phycocyanin extract from blue-green algae spirulina to produce milk blue chocolate. Determined organoleptic and hygienic characteristics of the finished product

AbstractThis study attempts to identify the significant role played by the secondary structure of collagen-derived peptides that are involved in lipid peroxide quenching in food products. Collagen was extracted from the skin of Perch and swim bladder of Rohu at 45-78% efficiency. It was identified as type-I based on a high molecular weight (110kDa) and its ion-exchange elution profile. The collagen samples were enzymatically hydrolyzed and collagen hydrolysate (CH) was extracted with an efficiency of 0.67-0.74g/g of collagen. The CH samples displayed a molecular weight in the range of 8.2-9.7kDa and exhibited a higher abundance of charges resulting in higher solubility. The structural studies revealed that the CH peptides existed in polyproline-II helix and formed a mimic-triple helix in a wide range of pH. In neutral and alkaline pH, the mimic helices joined to form a hierarchical quasi-fibrillar network that was smaller than collagen fibrils but also more dynamic. The CH exhibited >95% degradation in 15h through simulated digestion. The CH were able to decrease peroxide formation by 84.5-98.9% in commercially available cod liver and almond oil and increased the shelf life of soya bean oil by a factor of 5 after 6 months of storage. The addition of CH to cultured cells quenched peroxide ions generated in situ and decreased stressor activity by a factor of 12. The reason behind the high efficacy of CH was deciphered to be the proximal charge stabilization by the quasi-fibrillar network, which allowed efficient peroxide quenching and long-term stability.

Methods of prevention of fish diseases are aimed at destroying parasites in the host body and in the fish habitat — in the reservoir (chemoprophylaxis, increasing fish resistance), at preventing parasites from entering the reservoir (limiting the import of fish, import of healthy fish, quarantine measures, etc.), as well as preventing their spread and entry into the host body. It is shown that polyculture is not only the most effective method of using the natural forage base of the reservoir and, as a result, increasing fish productivity, but also a means of preventing mass infectious and other fish diseases. To prevent mass infectious diseases of fish and death from them both in safe and unfavorable ponds of carp fish farms, it is advisable to grow other fish species together with carp that do not suffer from diseases peculiar to carp. As a result, so-called sparse species plantings of fish are created in the ponds, while the total biomass remains high. At the same time, the natural food supply of ponds is most fully used and a kind of biological buffer is created that prevents the emergence and spread of contagious diseases. Polyculture can play a particularly important role in pond farms that already have certain problems with rubella, filometroidosis, botryocephalosis, carp pox, etc. Long-term studies of breeding herds in pond farms have shown that most of them have single foci of diseases, which, if there are optimal conditions for the pathogen, are ready to immediately respond with an outbreak of the disease or are generally quarantined for a particular fish disease. When determining the objects of polyculture, it is necessary to reduce the proportion of fish species that have a significant number of common diseases.
